EDITOR’S LETTER Welcome to the issue

I

t’s finally here: longer days, lots of sunshine, and pleasantly warmer temperatures. And as we enjoy what is arguably the prettiest (and most comfortable) of seasons, we here at Asian Fusion Magazine are very excited to begin our third year of publication. And we’d like to take this opportunity to say “Thanks!” to all our friends, readers and advertisers for your continued support and for making Asian Fusion the New York area’s number one Asian lifestyle magazine. In this issue, we are, as always, pleased to introduce and spend some time with our cover girl, Ms. Aurelia Dagorn. She is a multi-talented individual who shares with us her love of Asian culture in both pictures and words. You’ll have a front-row seat at the China Institute Young Associate’s “Night of Fashion Then & Now”, held at Chelsea’s Cue Art Foundation. Then it’s on to the exciting and fun-filled grand opening of Hair Toto’s Beauty Complex. And after getting primped and pampered, we’ll give you a close-up look at Cody Sai’s latest fashions. Then it’s on to a fun and enjoyable day at Queens Crossing in Flushing, Queens. From the amazing beauty of Liuligongfang’s glass works of art, to a fashion catch-up with Mango’s women’s (and brand new Men’s) line of

ready-to-wear, to a soothing and relaxing cup of tea at Rose House, this is one beautiful shopping trip! Then come sit a little closer as we spend some personal time with our friends and celebrity chefs Peter How and Chris Cheung. Too tired to cook or go out to eat? Then just sit at your computer and we’ll tell you how to click on CFoodOnline.com to have your favorite local Asian food delivered right to your home. As the warm Summer months quickly are upon us, we’ll check in with our beauty expert Everylyn Ho for some beauty tips to follow in the upcoming months. And, probably like you, the warmer climate tells us to get out and see the world. This issue of Asian Fusion will get you to Taiwan and the exotic city of Nepal, along with a brief ‘stopover’ to check in on all the action happening at the Mohegan Sun Casino and Resort located in nearby southern Connecticut. So until next time, when in response to overwhelming requests, Asian Fusion will feature the culture, lifestyle, and delicious food of New York’s Thai community, we here at Asian Fusion want you to get out and experience our world...and be sure to bring us along with you!

ctress, television host, model, make-up artist, and body/face painting artist, Aurelia Dagorn has traveled the world building experience and catching the aesthetic eyes of both Paris and New York. She is a graduate of the Make-Up Forever Academy in Paris. During her studies, Damien Dufresne, a well-respected French notable in the make-up scene, noted her talent, and with that praise, Aurelia began to work with him. She has worked for L’Oréal Paris, Les Galeries Lafayette, Fashion Week Paris, along with a variety of photo shoots, television shows, film, and theater covering a wide variety of topics such as fashion, beauty, and body/face painting. While staying steadily employed in the glamorous world of television and film, she continued to work for her alma mater, Make Up Forever Paris, throughout her rise to fame. 16 www.asianfusion-mag.com

Aurelia Dagorn Her passion for make-up began as soon as she held her first lipstick, which she secretly “borrowed” from her mother. She instantly knew who and what she wanted to be. Since then, Aurelia has been fascinated by the fashion world and followed her dream to be part of it. This ambition has lead Aurelia from the comforts of Paris to New York. Coming to New York has been a new challenge for her, and she has brought her French sensibilities and fresh outlook to the Big Apple. Currently, she works as a freelance make-up artist building her American reputation and already has a very busy schedule. Since she arrived in New York City, she has worked for numerous face-friendly media outlets such as magazines, commercials, music videos, films, shows, and fashion events. Always smiling, she is a positive person and enjoys this fast-paced life with a passion, so you can clearly see why she is so popular. Drawing inspiration from meeting new people, learning new cultures, and living in different ways, Aurelia wants to enrich the world with her art. Bubbling over with creativity, she constantly searches for and tests new concepts and techniques in make-up and ideas of beauty. In her quest to learn, her open-mindedness compels her to travel around the world – a bit of wanderlust to stimulate her creativity. One of her most prized experiences recently has been her trip around Asia. She traveled from Thailand to China, stopping in Singapore and Malaysia along the way. Hong Kong has particularly kept her attention balancing a modernized way of life with traditional Chinese practices. Quoting Aurelia, “This is a beautiful and amazing city - the markets, the cultural activities, the night life, and the show of buildings’ lights make this city a magicical entertainment hub. Asian people are so nice and welcoming; Asian food is so tasty and healthy, I would definitely like to live there for a while to learn more about this interesting culture.” A Parisian past - a New York minute, what’s next for Aurelia Dagorn in her global journey of growth? THEN & NOW The Cultural Evolution of Historic Fashion

he China Institute Young Associates, an organization comprised of students and young professionals, hosted “Night of Fashion: Then & Now”, where they fascinated fashion enthusiasts with traditional Chinese dresses tempered by the contemporary styles of four rising stars in the fashion world Asian-American designers Ann Yee, Arbitrage, Cody Sai, and Janet Zheng. CUE Art Foundation, located in the heart of Chelsea, provided the venue for this evening of fashion. The event’s unique theme was to showcase the Chinese cultural evolution from the costumes of the Zhou dynasty, the longest dynasty in China’s history, starting roughly in 1046 BC and lasting through 246 BC, to the 21st century. The new, young Asian-American trendsetters brought a fresh look to old styles, some showcasing pieces from their 2011 lines. Food, libations, and flashing cameras circulated throughout the entire night. The guests were delighted by an endless stream of cocktails and a variety of dim sum. Goodie bags filled with Popchips, the new fad in healthy junk food, as well as copies of our very own Asian Fusion magazine. Designer Cody Sai entertained the evening’s event guests in addition to the catwalk surprises. Clothing was not the only aspect of fashion being showcased during the event. The high-contrast white space provided a simple, yet fabulous background for accessories as well as clothing. From the row of seating lining the runway, guests could stay close to the action and still be able to see the additional wares available. and language of body decoration, showcased an extensive array of fashionable jewelry to accompany the clothing alongside the runway. The glittery gems and baubles caught the eye of not only the audience and press, but designers gravitated towards the one-of-akind designs, perhaps finding inspiration for a future clothing creation. The evening’s crowning jewel from the historical lineup was a traditional Chinese wedding gown embroidered with silver and gold thread. While guests and press alike were attracted to the wide variety of historical Chinese fashion from the Zhou Dynasty through to the Early Republic period, the highlight of the night were the young AsiaAmerican designers’ clothing lines. It began with Cody Sai’s pieces: a casual, ready-towear line, focusing on subtle details, comfortable fabrics, and natural colors, and proved just as relaxed and beautiful as the show itself. Janet Zheng’s refined, yet avant-garde menswear followed in quick succession. After Arbitrage showed off the best-fitting and most flattering dress shirts for all body types, which come with exceptional customer service from their FIT experts, the show closed with architectural cuts juxtaposed against soft draping women’s wear by Ann Yee. Ms. Yee’s line was visually provocative, yet completely wearable! Everyone in attendance made use of the opportunity to enjoy the emerging designer’s big night firsthand. Models and designers mingled with the guests, chattering away until the lights went out, signaling the end of the evening. A successful, fashion-filled and educational night was had by all.

ith star-like quality, make-up free natural beauty, white free-flowing jacket and a clean, simple modern look, Catherine Lee, the gallery owner of Crossing Art, greets every visitor as if they were a good friend. As we entered the gallery, her warm smile said “welcome” before even a word was spoken. Displaying a true love for the art in her gallery, Ms. Lee is both sweet and humble, and truly loves what she does. Although her working experience has been in real estate development and private equity, with a masters degree in Real Estate Development from Columbia University, Ms. Lee is extremely comfortable and has a passion for the Asian art that surrounds her. Along with all this, Ms. Lee is the distinguished managing director for F & T Group, the developer that was responsible for Queens Crossing. Crossing Art is Flushing’s largest and only contemporary art gallery. It serves as an active platform for the multicultural community in Flushing to interact with artworks and artists from abroad and those located locally. Crossing Art’s mission is to enable critical social, cultural, and aesthetic dialogue at an international level through art. Known for its highly successful Flushing Cow Parade in 2009, Crossing Art continues to play an important role in displaying art that stimulates both the visual and cerebral senses. Ms. Lee is a strong believer in making art more publicly accessible to the local community. Many Flushing residents still talk fondly of the 2009 “Home for the Holidays” public sculpture by Benjamin S. Jones and the 2010 “Relight your Recyclables” green initiative public art project conceived

by Lin Shih Pao. “Relight your Recyclables”, with help from the community, resulted in a 28’ high tree that was made of more than 10,000 recycled water bottles on display outdoors in the heart of Flushing. Crossing Art’s upcoming exhibition, “Going Green”, will be on view from August 13 - September 11, 2011. “Going Green” will present innovative artworks and proposals that integrate natural systems with human patterns while celebrating continuity, uniqueness, and place making. The exhibition will feature local and international artists, architects, and designers whose artworks, architectural models, and design explore contemporary meanings of “green”. Ms. Lee takes great pride in being able to bring noteworthy contemporary artists here to New York from such faraway places as China, India, Korea and Japan, to name a few. Ms. Lee gets the most satisfaction when she is able to present and discover emerging, ground-breaking and talented artists in her gallery. The variety of art found at Crossing Art can include photography, sculpture, film, video instalations and other cutting edge mediums. She is an active member of the Queens community serving on the board of directors of the Queens Council of Arts and the Queens Library Foundation. Ms. Lee is pleased by the encouragement and support she receives from both the community at large as well as the business and community leaders in and around Flushing. Crossing Art is the destination to see exhibitions of Asian and Asian-American contemporary art...admission is free and can come with a personalized curatorial tour from Catherine herself! MANGO

MANGO W

idely known in the retail industry as a premium brand of fashion and design, MANGO offers style and fashion for the modern woman. Dressing the urban woman, meeting her daily needs, and carefully applying and adapting to local demands, continues to be one of Mango’s major keys to success and prestige. Currently, MANGO consists of over 2,015 stores in 103 countries, widely spread across five continents. MANGO is truly a brand with a vast international presence and influence. Located on the second floor, MANGO has become even more of a style destination since introducing their signature men’s line “HE”, a couple of years ago. For MANGO’s second store in New York — the first unit opened in November 2010 in SoHo — the retailer didn’t choose the affluent Upper East Side or Upper West Side. Nor did the Barcelona-based fast-fashion chain select the popular Meatpacking District or edgy Lower East Side. For that matter, MANGO didn’t select a location in Manhattan at all. It picked Flushing, N.Y., a densely populated Queens

38 www.asianfusion-mag.com

neighborhood with a large Asian population. The 7,200-square-foot MANGO store bowed in May 2008 at Queens Crossing Mall. The new MANGO unit, the largest on the East Coast, is spread over two levels, with window displays on the first floor, surrounded by bronze mirrors. A staircase leads to the second floor, which is divided into two sections. One area has light wood floors and furniture, six large wire lamps shaped like dress forms and two outsized mustard-colored flowerpots. Suits and evening dresses, including summer halter numbers and short sequin tank dresses, along with a collection of LBDs, are also featured here. In the other area, which has black floors, white walls and a striking ceiling effect where three-dimensional black strips bisect the white ceiling. More casual looks such as leggings, T-shirts, sweaters and tunics can be found. Accessories & HE collection are also featured. The Flushing unit brings MANGO’s store count in the United States to 19. MANGO said it will continue to expand and consolidate its position in the North American market. At the opening of the SoHo unit, Jose Gomez, vice president of business development at MANGO, said the retailer eventually might open as many as 270 U.S. stores. “The market will tell us how many stores we can open,” he said. “In Spain, we have 270 stores. We could replicate that number.”

he men’s collection is aimed at the young man who is in tune with current fashion trends. This is exemplified in the acronym which gives the brand its name, a shortening of the Latin expression Homini Emerito, “a man who enjoys his rewards in keeping with his merits.” The H.E. logo is a unicorn. Mango H.E., the first men’s line from MANGO, hit stores in 2008. The 2011 Spring and Summer H.E collection has a new image: Gerard Piqué. His success and professionalism, as well as his imposing and elegant image, were key to this signing. Style, charisma, and a winning attitude were key characteristics the brand considered when they chose Piqué, who in 2010 won the World Cup with Spain in South Africa. He embodies the type of man the brand wishes to dress: a young and carefree man with personality and his own style. With this collaboration, the men’s fashion brand, which until now has counted on the presence of young models for its campaigns, is moving towards the strategy adopted by MANGO, which since the beginning, has chosen famous faces to star in its advertising campaigns.

t’s 11am, and we’re standing in front of the Rose House. The story of Rose House began in 1990. Robert Huang, the founder of Rose House, always has had great inclinations to roses, English afternoon tea, pottery and the art of the rose. Hence, Rose House was born. Mr. Huang himself is also an artist widely celebrated for his rose paintings. Today, Mr. Huang’s paintings enjoy a huge amount of success in international art auctions and are highly appreciated by collectors in more than 80 countries. He constantly keeps his visions and dreams alive by creating artistic works and promoting afternoon tea. To date, Mr. Huang’s Rose House is not only a quintessential representation of art and afternoon tea, but also the biggest chain of Tea

& Art in Taiwan. Rose House serves over 50 varieties of tea. Sitting down for tea with Mr. Gu, General Manager of Rose House, he told us how the teas are imported from England and are some of the same teas served by the Royal family. Mr. Gu said Rose House is the perfect place for a small business meeting, birthday parties, or just getting together and catching up with friends. On the 21st of every month, Mr. Gu told us Rose House celebrates it’s opening day anniversary by giving every female guest a rose. All this seems natural, since Rose House’s motto is “Send a Rose to Everyone’s Heart.” Of special note here is the limited edition tea cup and plate commemorating the recent wedding of Prince Andrew and Kate Middleton available exclusively at Rose House.

Koreana

Koreana Restaurant & Bar By Ching Yu Lin

alk into Koreana Restaurant & Bar and you will instantly smell the irresistable scents of Korean BBQ, making your mouth water and your taste buds yearning for satisfaction. On their brand new menu you can find a $24.95 or $34.95 all-youcan eat meal, including unlimited tender and juicy beef imported from Japan. I satisfied my appetite with the $34.95 Korean BBQ - one of the menu’s most popular items. What made my meal even more enjoyable was knowing that Koreana BBQ uses solar energy power so there is no trace of smoke in the restaurant, and hence your clothes will smell as fresh as when you walked in the door. Located on the second floor, this elegant Korean - Japanese restaurant caters to an international audience. You still will find savory traditional Korean and Japanese cuisine and the quality service that traditional restaurant goers have come to expect and love. KOREANA uses only the highest quality and freshest ingredients to maintain the authenticity of traditional Korean dishes. Entrees range from Korean ginseng BBQ to Japanese sushi and sashimi; drinks range from a full, top-shelf bar to afternoon refreshments and coffee. Private VIP rooms and karaoke are available for business meetings and birthday parties. Some customers may make an initial comparison between KOREANA’s Unlimited Korean BBQ and local Korean BBQ buffets. 46 www.asianfusion-mag.com

What they usually neglect in their calculation is how KOREANA serves exactly the same quality of meat and marinade you would find in standard individual servings. While other Korean BBQ buffets might offer low-quality meat and marinade to compensate for their expenses, KOREANA serves the utmost best quality in town—of course, limitlessly. Koreana’s manager, Shin, expressed his thoughts this way: “Slowly but surely, Flushing is becoming a hub for scrumptious cuisines to compete with the restaurants located in Manhattan. While Flushing is able to compete in terms of taste, some restaurants can severely lack in ambiance, which turns off many restaurant goers. KOREANA Restaurant & Bar however, never had a problem impressing customers with its elegant décor and sophisticated atmosphere.” A truly beautiful place for an absolutely delicious dining experience!

Mulan

Mulan By Cheryl Xue

I

A Hidden Gem in Queens Crossing

f you ask me what’s new in Flushing, I have to share with you the latest, best-kept secret I discovered recently – Mulan Restaurant located in Queens Crossing Mall in Flushing! I was totally amazed by the first impression of this fantastic restaurant! Before we get to the decor and food, we should start with the name. Mulan is a name that carries multiple meanings – the name of the magnolia flower in Chinese as well as a heroine who served in an all-male army in place of her old age father. The story of our heroine has captivated generations of Chinese poets, writers, artists, and playwrights. It first appeared as a poem entitled The Song of Mulan, composed sometime between 420 and 589. As the story goes, when Mulan's father received an order to join the imperial army, the family worried, for although once a great warrior, he was now too old and ill to fight. To refuse the Khan's (ruler's) order, however, would bring dishonor and punishment upon the entire family. There was no question that Mulan's father had to go, for his only son, who might have served as a substitute, was much too young. Mulan, though, thought of another way. To protect her father and her family, Mulan decided to join the army in his place. Disguised as a man, she distinguished herself in battle as a brave warrior and a clever strategist. In capturing the spirit of our heroine, the Mulan Restaurant in Queens Crossing embodies a perfect meld between Eastern and Western cultures. Mulan's cuisine, disguised as art masterpieces almost too-good-to-be eaten, vividly reflects the splendor which surrounds the restaurant. Both upscale and modern, every inch is elegantly decorated to match the chef’s

48 www.asianfusion-mag.com

artwork. The focal point of the dining floor is a square gazebo with water curtains. The elevated seating and leathered-in booths are ingeniously complemented with traditional oriental liuli crystals and motifs. The see-through over hanging curtains provide a romantic and pleasant dining ambiance when warm lighting pours down upon the windows. Subtle shifts in lighting within the dining area create an air of sophistication. Now, to the kitchen. What distinguishes Mulan’s kitchen from other restaurants in Flushing – the chefs do everything from the heart! The menu changes every 6 months in order to provide consumers “the best of the season” – the freshest ingredients and the latest culinary trends reflective of New York’s wellknown and established locavore and slow food movements. Mulan’s chefs are working hard on ‘less salt, less sugar’ while still insisting on supplying the most delicious dishes to its customers. The kitchen standard is “Beyond Flushing, over Manhattan” – which means that the chefs are working on not only being one of the leading restaurants in Flushing, but also using Manhattan’s standard to measure everything, from decor, service, food to atmosphere, customer satisfaction and ingredients. Although by such a high standard, Mulan is a price-friendly and neighborhood-friendly restaurant. It is a wonderful place for family, friends, and couples. It also provides VIP private rooms for your convenience. The most innovative and creative part of the Mulan restaurant is its excellent selection. You will be amazed as soon as you sit down, soak in the atmosphere, and open up the menu. Mulan’s chefs insist on keeping the

Queens Crossing

Great wine selection ingredients as close to its original state and minimally processed, which gives consumers that LOHAS (Lifestyle of Health and Sustainability) lifestyle that is so sought after right now. The smoked salmon and teriyaki eel salad and lobster avocado fruit salad are the new items on the spring/summer that are must-try. As for soups, the sea cucumber and fish mousse potage and seasonal vegetable chicken broth are two new soups along with the popular Four Treasure fish maw potage and cod with mushroom and tofu potage. The different selections of soup can restore your body’s balance this spring. If you feel your body is too “hot,” that is, having had too much meat and few vegetables, you can order a salad and one of the delicious soups to refresh yourself. Who doesn’t love soup and salad? For a bit more protein, check out the entrees in the “Four Legs” section of the menu, which includes beef, lamb and pork. For instance, the spicy Moroccan rack of lamb combines the sweet spices found in savory dishes around the Mediterranean with a tasty amount of heat to give the lamb tenderness and depth. Continuing with the fusion theme, the filet mignon with foie gras truffle butter tips its hat to the French again. Can you imagine getting a course that has filet mignon and foie gras in the same dish or the Mulan dry-rubbed, aged ribeye for only

28 bucks? Well, you can find it at Mulan. Vegetarians as well as vegans will be able to find something delightful in this section. Eating more vegetables and less meat is a sign of a healthy, modern society, and the chefs from Mulan dedicate themselves to delivering flavorful, vegetarian entrees. If you are feeling more like something from the sea, try the crispy salmon with mango salsa or baked banana leaf wrapped sea bass under this section of the menu. The new long chien tea sea bass dish is very popular at Mulan. Every bite is a little taste of heaven! If you can’t decide, let the chef help you. Choose from the chef’s selections which are updated monthly. The lobster with spring vegetable and saffron stock and miso glazed Alaskan black cod are new this spring. Leave room for dessert. the epitome of fusion cuisine can be found in this sweet section. Mulan’s pastry chefs make everything from scratch from the chocolate lava cake with raspberry sauce to the summer strawberry and coconut parfait. Dive into the deep end and take the trip out to Flushing! The menu is well worth that ride to the end of the 7 line. rriving in the midst of setting up for Hair Toto’s official grand opening, I am warmly greeted by Allen, the general manager. Allen hands me a cup of green tea and asks that I sit and relax while while wait for the events of the day to begin. It was extremely cold outside, but the sheer kinetic energy of the hustle and bustle of getting ready for the blessing and celebration of the new space created a warm and inviting atmosphere. Trays and trays of food are steadily ushered in from the street. In true Hong Kong style, a variety of round fruits,

Every staffer is perfectly coiffed and picture perfect. The grand opening celebration gives the Hair Toto Group’s friends of 20+ years the opportunity to celebrate their crowning achievement. ASK THE EXPERT

By Sophia Hsu

I

Summer Beauty Tips & Trends

asked our resident skincare expert, Everlyn Ho of La Peau Day Spa in SoHo, what her top five recommendations were for keeping your skin healthy during the summer season. There is much you can do to protect your skin while getting other things done around the home. Here are her tips: 1) Stay hydrated. Between the heat and humidity of summers in New York, you and your skin need to stay hydrated, and it starts from within. Drink plenty of fluids. Your skin and your body will thank you. If you start feeling thirsty or feel the faint dullness of a headache coming on, you have not had enough hydration. It is your body’s way of telling you to drink something! 2) Cleanse your face before bed. After you remove your makeup for the evening, wash your face thoroughly one more time. A lot of residue still remains even after you have lifted away the colors. When you sleep, your pores tend to relax allowing a lot of the dirt, grime, and residue from makeup to settle into them. 3) Apply a moisturizing face mask 2-3 times a week. The frequency varies with skin type, but dry skin and oily skin both benefit from a moisturizing mask as both are signs of a moisture imbalance. For dry skin, there is a 56 www.asianfusion-mag.com

complete lack of both moisture and oil. For oily skin, the oil is trying to make up for the lack of moisture. If you don’t think you have the time, just put it on after you have washed your face for the evening, then, do other chores for the next 15 minutes like pack your lunch for the next day, update the family calendar, or write out your ‘honey-DO’ list. 4) Wear sunscreen. An SPF between 30 and 50 will last you about 3 hours before reapplication under the hot New York City sun. An SPF 15 will only last you about an hour. Continual sun damage will cause you to look older than you really are. You can still enjoy the summer sun, just don’t over do it. All you need is somewhere around 15 minutes of sun a day to create an adequate amount of vitamin D for healthy bones. 5) Get a facial. A professional spa facial helps you replenish nutrients directly into the skin. It will help you keep a healthy glow all summer long. You can get a spa facial 1-3 times a week, again, depending on skin type and need. ADDED BONUS: Summer trends straight from the source: accent that side-pinned hair with juicy lip colors in cantaloupe or watermelon.

ongratulations to our very own celebrity chef Mr. Peter How, who has been selected to be the new President of the Asian-American Restaurant Association! Peter How is the Culinary Director and Executive Chef of the magnificent Jade Restaurant in Flushing, Queens. He has been in the culinary field for 40 years. His specialty includes, but is not limited to, Asian Fusion, French, Italian and Mexican cuisines. Mr. How is also the selected Master Chef for James Beard Foundation’s 2011 Chinese New 60 www.asianfusion-mag.com

Year Banquet. He performed his exquisite culinary skills and delivered an excellent banquet to New Yorkers from all fields on February 24th, 2011. Despite so many honors to his credit, Mr. How is in fact a very easy-going person full of fun. He was very willing to share with me his success story and what he’s looking forward to in 2011. As the new President of the Asian-American Restaurant Association, Mr. How is going to organize chefs from all over the United

States to develop new dishes and increase the brand of Chinese cuisine in America. As the leader, he will organize global trips for chefs to travel, either back to China, Hong Kong, or other Asian countries and Europe to observe, taste and discuss the new culinary skills, dishes and global food trends. “This is the key to get inspired and develop new dishes.” Peter said, “New elements can bring us together. In the culinary trips, chefs can communicate well with each other, from different fields and countries. This is how we make progress.” Actually, besides being the executive chef for Jade Restaurant, Mr. How himself is a traveler. “Basically I travel to a new place every two months,” he said, grinning, “so I can gain a hands-on experience on how the other great chefs are doing.” Mr. How is also concerned with the current situation of Chinese cuisine in New York. “So far no hotels in New York have owned a Chinese restaurant. To improve the status of Chinese cuisine in New York, we are working hard on introducing Chinese restaurants into hotels.” Thus, with this goal in mind, Mr. How

is actively working with several hotel owners and managers in New York, using his influence in the Asian-American Restaurant Association. Although he has been super busy with his career and carrying on the responsibilities of the Asian-American Restaurant Association, Mr. How is also very much a family guy: his children have grown up and have begun to pursue their own dreams. Nowadays Mr. How enjoys cooking for his wife and himself at home. “At home I usually use Malaysian spices to cook,” he told me with a warm smile, “Because this is where I grew up. I love my hometown flavor!” I’m sure that his wife is one of the happiest women in the world by looking at how happy Peter is when he talks about cooking for his family. With his incredible ambition, and strong mobility, we are certain that Mr. How will continue to achieve great culinary heights in 2011. This is a great chef who loves his family and is consistently working hard on elevating Chinese cuisine and Asian cuisines in America.

Mr. Lee takes good care of what his customers eat: The chef uses non-fat oil, and as little salt and sugar as possible to deliver the tasty food to the audience. For your health, Asian Bistro also provides fried brown rice to replace fried white rice. The best choice for you in Asian Bistro is its Bento Box: it has two pieces of avocado rolls, two pieces of sweet potato rolls, two pieces of steamed vegetable dumplings, a spring salad with ginger dressing, rice, and miso soup. Scott Wong THE BEAUTY IN SUGARÂ

By Loren Chaffee

W

aiting at the famous clock at the information booth at Grand Central Station, people are rushing past searching for loved ones who are arriving early for the weekend. Scott Wong walks up to me and asks if I am with Asian Fusion magazine. I answer positively, and he apologizes for his tardiness. In such a crowd flooding the central hall, I was more surprised he could locate me. We walk a few blocks in the chilly late afternoon to CafĂŠ Zaiya in the Kinokuniya bookstore facing Bryant Park. We grab a couple of bento boxes and green tea lattes for dinner and sit facing the park, watching the ice skaters and the frantic energy of the late winter afternoon. After a few bites and comments on the bento boxes, we get down to business. For a little background, Scott Wong is Chinese who lived in Vietnam until his parents decided to move the family to the United States for a better life as many parents have before them and will continue to do so. When they got to the US, they were placed in the Bronx where there is a surprisingly large Vietnamese population. Following in the footsteps of many Asian-American kids before him, Scott studied information technology (IT) in college and took a job in the field in Manhattan straight out of college. After a few years in IT, Scott decided to take some cooking classes at the French Culinary Institute and fell in love with the beauty of sugar. Sugar can be sculpted into almost anything, and Scott found his passion in transforming sugar into works of art. He had always enjoyed eating, but he learned to appreciate the art of food through the classes. This new spark had Scott leaving the IT world behind and throwing caution to the wind. He 64 www.asianfusion-mag.com

began his own baking business, starting with a dog treat bakery in Brooklyn, which he sold, and now has a by-appointmentonly, specialty cake business called Sugar Palette. When I asked him what the first dessert he transformed into his own after he finished his courses, he had taken the traditional Southeast Asian dessert of fresh mango over sweet, glutinous rice with a drizzle of coconut milk and made it his own. First, he replaced the fresh mango with a fresh, homemade mango sorbet. The glutinous rice was steamed in the traditional banana leaf. Micro tapioca pearls, (aka sago), was introduced into the coconut milk, and a sprinkling of crushed peanuts and sesame seeds rounded out the dessert. For Scott, food is no longer just a staple for survival, but a medium to convey edible beauty. Sugar Palette is based in Queens with a consultation space to meet with couples to design their cakes for their special day. The cakes are designed to complement the textures of the reception decor and even the bride’s wedding dress. The flavors of cakes and filling are numerous and are more than just the average chocolate and vanilla with Asianinspired mango and pineapple. To schedule an appointment or just to peruse previously designed cakes, go to http://www.sugarpalette. com. As Scott expands his customer base, keep an eye out for a Sugar Palette storefront which may include inspired cupcakes.

CHRIS CHEUNG A New York Legend By Sophia Hsu

W

aiting outside of Lair, the hot, new night spot in SoHo - so exclusive that you have to be on the guest list to even get in, I look over the unassuming exterior. It is a plain building with no confirmable evidence that this is Lair. Chris pulls up to the curb, parks his car, and greets me, and is all smiles. As we enter Lair, the venue is dimly lit, but still bright enough to distinguish the posh interior and the equally posh service staff. Chris tells me to wait a moment while he goes to check the kitchen. Chris Cheung is the executive chef at Lair, and he is currently working on another project in Midtown, Wall-E with Wally Chin of Chin-Chin. Wall-E’s menu will focus a lot on Chinese barbecue, something Chris has been perfecting last summer. On a different note, Lair has a limited but exquisite pan-Asian menu designed by Chris and focuses on 4 to 5 dishes. With the ability to be flexible and having a global palate, he has helped many restaurants in the New York area start and succeed. His family was one of the original Hong Kong Cantonese families to establish Manhattan’s Chinatown. His earliest memory of truly enjoying food was the he fen or chow fun at this one restaurant

66 www.asianfusion-mag.com

near his grandfather’s shop. To this day he continues to search for that perfect bite of wide, chewy rice noodle, beef, and leafy greens. Chris has worked with notable chef such as Jean-Georges Vongerichten, Wylie Dufresne, Daniel Angerer, and Morimoto. After graduating the now defunct New York Restaurant Academy, he made his way up the cooking ladder starting as a line chef to sous chef at such notorious NYC staples as Nobu, Ruby Foo’s, Monkey Bar, Almond Flour Bakery, and China 1, eventually making it to his current role as Executive Chef consulting all over New York City. When Chris and I sat down, we discussed travel because I had just returned from a trip to Taiwan. We indulged ourselves in discussing night market foods, especially food on a stick, grilled over hot charcoals. He told me about his recent trip to Shanghai and the surrounding villages he visited to learn how to make noodles by hand in the Lanzhou style, handshaved by knife and hand-pulled. One of the best meals Chris has ever had was during one of these village visits where the chicken was so fresh that he had just seen it pecking in the yard mere minutes before the feast. Traveling for fogap from cheap take-out to an elegant evening such as Japanese, Korean, Spanish, and Cuban, America has always seen Chinese-American food as cheap and filling. With thousands of years of cultured civilization and recipes that reach back just as far to the royal courts, Chinese food still struggles to become an elegant addition to fine dining culture, not just a cure for a drunken night out.

reen Curry Pizza. Are you serious? Yes, and it tastes amazing! Like many of the unique Thai fusion dishes on this very diverse menu at Reserve, Green Curry Pizza both surprises and satisfiies. Reserve is actually the first Thai-inspired Tapas and wine bar that boasts 55 different international wines. I’m sure by now you’re probably a little curious ...and hungry! This little secret on 3rd Ave. (between 2829th Streets) in Kips Bay, was really a surprise. I sat down with the very young and extremely busy restaurant owner “Luk”. She and I chatted while her pleasant staff brought out Reserve’s tasty dishes one by one. It was hard to concentrate on the interview because the food was pleasantly intoxicating me as I glanced outside our window seat looking directly at the Empire State Building. We were also sitting with the other members of the Asian Fusion staff sharing food and having conversation in a cozy and friendly atmosphere without a hint of preten-

They have a great wine list that works well in any price range, a few surprising beers and a good selection of liquor with some very desirable specialty cocktails. “Our wine list is made up of spicy, sour, salty, and sweet. We specialize in bold flavors,” Luk said. Food was particularly satisfying and tasted rather excellent. Despite a few common dishes, the menu reads nothing like a normal New YorkThai restaurant and the food tastes superior to any similar Thai eateries in this price plane. The curries were all phenomenal and exceptionally priced. Luk told me that, “most curry dishes are $10 dollars, here they are $5.00”. The spicy food went really well with the big bodied wines that we were having. There was a really delightful salad of minced pork and shrimp marinated in spicy zesty sauce, served with little rice puffs. The noodle dishes were also far from commonplace. We also ate mieng klum Shrimp, khauo thung, gratong tong, smoke salmon deviled eggs, shumai, and beef avacado tomato. Luk told me that the best sellers and signature dishes are the Khauo Thung, which is minced shrimp and pork coconut relish on crispy jasmine rice crackers, green currie pizza with fontaine cheese, and the spicy spinach artichoke. Executive Chef Monchai Boonchim, a native of southern Thailand who has high-end cooking experience (Brasserie and Atlas), has enabled him to create world-infused Thai dishes that truly rock!

A Perfect Pair

SPICY FOODS &BEERLAO By Shu Min Xu

O

ne of the best beers that pairs well with spicy foods is Beerlao from Laos, a sparsely populated country in Southeast Asia. For being one of the poorest countries in Asia, they manage to produce upwards of 80,000 cases of beer per day. The Lao did not always have such an affinity for beer, let alone brewing. The Lao Brewery was originally started by the French while they were under colonial rule. Once the communists took over, the Lao took over the brewery. The old French

72 www.asianfusion-mag.com

recipe was thrown out for being too bitter. The current brewmaster, Sivilay Lasachack, studied in Prague and Berlin, stars of Eastern European brewing, to bring Beerlao its distinct flavors and ultimate drinkability. Beerlao Lager is a pilsner style lager that is great for pairing with spicy foods. The jasmine gives the beer a mild crispness and light body, which makes it refreshing and especially easy to drink when you accidentally bite into a hot chili pepper while having some larb gai (warm chopped chicken salad with cilantro, chilis, and lime) or some Szechuan chicken with real, numb-your-mouth Sichuan peppercorns. For meatier, heavier comfort food dishes, Beerlao Dark Lager is a rich companion with chocolate and coffee flavors from the dark roasted malt barley. Though much lighter on the palate than you would expect for a lager as dark as a stout, it plays well with the grilled meat dishes like a Thai satay, a Korean bulgogi or any assortment of Vietnamese grilled meats. I have noticed that my guy friends really enjoy the Beerlao Dark Lager for its rich complex flavors as well as its smoothness. Paleewong Trading has made Beerlao available on the East Coast since 2008. So take the opportunity to enjoy the distinct flavors of these Southeast Asian beers the next time you are out on the town or pick up a few at Udom Corp. on Bayard Street the next time you are in Chinatown.

TAIWAN

When in Taiwan, be sure to try the local foods. Taiwan offers celebrity chefs, traditional cuisine, and Taiwanese snacks, dazzling its international visitors. Night markets in Taiwan are the pinnacle of Taiwanese culture. Almost all major cities and even villages in Taiwan have a night market. Here are Taipei’s most well known sites: Shihlin Night Market: Shihlin Night Market is the epitome of the Taipei night market scene, the largest night market in all of Taiwan. A variety of dazzling snacks are both plentiful and cheap. Famous snacks include: crepes filled with shaved peanut brittle, taro and vanilla ice cream, fresh cilantro, hand-sliced noodles, shaved ice, oyster omelets, stinky tofu, fried quail’s eggs, fried sweet potato puffs, and so on. River Street Night Market: River Street Night Market near Taipei’s Songshan train station is approximately 600 meters (~656 yards) in length, and is another popular night market in Taipei with more traditional snacks and crafts which are a major feature. It brings together Taiwan snacks, from stinky tofu, meatballs, oyster noodles, green onion pancakes, and beef noodles to the newer imports of Turkish ice cream, medicine bowl of soup, and kimchi hotpot.

Many people think that South Korea and Hong Kong are Asia’s major shopping destinations. However, Taiwan has a lot of internationally famous brand stores and duty-free shops. For the tourists who love to shop check out Chung Hsiao East Road, SoGo, and the Lutheran. Department Stores: The generally wellknown department stores in Taipei are Big Takashimaya, SoGo, Shin Kong, Mitsukoshi, and the Tienmu district. Chung Hau, Chung Hsiao East Road, SoGo, Breeze, the Xinyi district, and New York, New York are ideal for tourists. The shopping malls in Taipei tend to have major bargains during holiday seasons as well as huge promotional activities. The Night Market: Not only well-known overseas for the best snacks, also allows you to fully enjoying shopping on the cheap. Here, both young and old alike prefer the NIKE, Levi’s and other popular fashion brand stores. There are roadside stalls, NT$100 (~US$3) t-shirts, and small accessories starting at about NT$20 (less than US$1). When planning your first, or next trip to Asia, be sure to make Taiwan your #1 stop. For more information, check out http://www. formosa-travel.net. SUMMER ISSUE 9 81

A Peek at Nepal By Joe Meny

N

epal is among one of the major tourist destinations in the world. It has a rich, if not awe-inspiring, geography. Nepal declared the year 2011 to be celebrated as 'Nepal Tourism Year - 2011'. The primary objective of this campaign is the substantial growth of its tourism industry, and to attract more than a million tourists to this enchanted

region. Eight of the world's ten tallest mountains, including the highest point on earth - Mount Everest - are found in Nepal's mountainous northern region. Nepal is a thoroughly colorful slice of Asia. Ice-topped mountains soar to the heavens as rainbows of prayer flags shimmer in the bright sunlight. If there were ever a hiker's paradise, this would be it. Nepal's generous chunk

of the Himalayas offers unsurpassed hiking terrain, from leafy Annapurna to the distinguished Everest. But spiritual and nature-rich Nepal is certainly not only for mountaineers with their sight set on Everest Base Camp. From the lime-green grasses found in Chitwan National Park, to the bohemian cafes and eclectic vibe of lake-side Pokhara, Nepal is an intriguing and welcoming destination for all. Situated at an altitude of 1,336 m above sea level, and measuring 218 square miles, Kathmandu Valley is one of the most enthralling cities in all of Nepal. The historic seat of royalty. Kathmandu Durbar Square is a UNESCO World Heritage Monument which epitomizes the social, religious, and cultural life of the Nepalese people. It is the place where the kings of Nepal are crowned and their coronation solemnized. South of Durbar Square, on the western side of the road, is the Rato Machhendranath Temple. Rato (Red) Machhendranath, the god of rain and plenty, comes in a variety of incarnations. Found in a large courtyard, the three-story temple dates from 1673. The temple's four carved doorways are each guarded by lion figures and at ground level on the four corners of the temple plinth are reliefs of curious-looking yelti-like demons known as 'kyah'. The Golden Temple, also known as the Hiranya Varna or Suwarma Mahavihara, is just north of Durbar Square. Legend has it that this unique Buddhist monastery was founded in the 12th century, although the earliest records of its existence date back to 1409. The gaudy painted guardian lions on either side of the doorway lead to an inner courtyard with a railed walkway. Remember

to remove shoes and other leather articles if you leave the walkway to enter the inner courtyard. Also north of Durbar Square is Kumbeshwar Temple, one of the valley's three five-story temples. Dating from 1392, the temple dominates the surrounding streets and is the oldest temple in Patan. The temple is noted for its graceful proportions and intricate woodcarvings, and is dedicated to Shiva, as indicated by the large Nandi, or bull, facing the temple. An annual ritual bath in the Kumbeshwar Temple's tank is claimed to be as meritorious as making the arduous walk to Gosainkund. Nepal is a land of remote mountain villages, where people survive by growing their own food on the thousands of hill terraces that dot even the steepest slopes. Water buffalo or oxen plow the fields, and corn and wheat are threshed by hand and grounded by water mills. Nepal's geographical conditions make for some of the most exciting and breathtaking hiking the world has to offer. It is truly one of the world's most beautiful countries, not just in nature but in its culture, architecture and peoples who live there. It's an amazing place. Viewed by many as one of the best exotic destinations in the world, you need to experience Nepal at least once in your life.

AUTO City Smart: aris The Car for New York

Y

Y

aris is Toyota’s most affordable car. Yaris is offered as a 3-door or 5-door hatchback as well as a 4-door sedan with room for all of your friends. Just a few years ago, you couldn’t buy a small economy car without facing big shortcomings in areas like feature content and refinement. These days, many models offer stylish cabins, agreeable driving dynamics and upscale amenities like Bluetooth and satellite radio. The 2011 Toyota Yaris is a car that’s in step with this trend. Budget-conscious car shoppers are looking for a choice that’s frugal to operate and easy to live with, and the Yaris delivers on both these fronts. While its 106-horsepower, 1.5-liter engine is no overachiever when it comes to performance, the four-cylinder boasts as much as 32 mpg EPA combined, and this makes the Yaris a strong candidate for those who prefer inexpensive trips to the gas station. This small car also has a comfortable ride, and once you factor in its attractive interior, wide variety of body styles (the lineup consists of a sedan and two hatchbacks) and Toyota’s reputation for reliability, it’s easy to see why the Yaris is a worthy pick among economy-car alternatives in 2011. The 2011 Toyota Yaris is a subcompact economy car that is available as a three-door hatchback, five-door hatchback and four-door sedan. Each body

style comes in just one trim: base. Standard features include 14-inch steel wheels, intermittent windshield wipers, air-conditioning, four-wayadjustable front seats and a tilt steering wheel. one of its strongest selling points. At an EPAestimated 29 mpg city/36 mpg highway and 32 mpg combined, the manual-equipped Yaris sips less gas than most of the competition. Standard safety features include antilock brakes and side curtain airbags, as well as traction and stability control. The Insurance Institute for Highway Safety awarded the Yaris sedan its highest score of “Good” for frontaland side-impact protection for all occupants. Every Yaris model features a center-mounted instrument panel. Relative to sedan models, Yaris hatchbacks offer certain advantages when it comes to design and storage capacity. They feature three gloveboxes to the sedan’s single bin, and they also receive a chic, narrow center stack. On the open road, the 2011 Toyota Yaris feels solid, while in the city, the quick, light-effort steering makes parking-lot maneuvers a breeze.

ENTeRtAINMENT Welcome to Mohegan Sun, a World at Play!

Mohegan Sun, a World at Play! By Rachel Min

I

f I say, I don’t gamble but I’m giving Mohegan Sun five stars, that tells you something, right? I hope it does. When I was informed that my assignment would be to experience Mohegan Sun, an enormous casino less than 3 hours away in Connecticut artfully designed with a Mohegan tribe motif, I had a hard time envisioning how I would enjoy such a place if I did not gamble at all. Mohegan Sun is not only a spectacularly themed gaming and entertainment complex in southeastern Connecticut, the heart of the state’s tourism offering, but it is also a place of Asians, by Asians, for Asians. The hotel operates over 50 buses every day for Asian guests from New York and Massachusetts. In New York City, we can simply hop on the bus from any of the Chinatowns - Brooklyn, Flushing, or Manhattan. It took me less than three hours from Manhattan Chinatown, but travel hours could be even shorter from Flushing. According to Ayesha Ma, Mohegan Sun’s Asian advertising and public relations manager, an extensive variety of inclusive bus packages is very attractive for their Asian guests. Just by paying $15 for round trip transportation, taking advantage of the bonus value package which includes $40 worth of play and one full meal voucher equivalent to $20 at their amazing Seasons Buffet or Sunburst Buffet (or redeem the voucher for a $15 credit at any of the

90 www.asianfusion-mag.com

on-site restaurants) - it’s a $60 value for a $15 investment. So to begin with, this is already a winning bet! Upon my arrival at Mohegan Sun, I entered a bus lobby specifically designed to welcome Asians. This entrance directly connects to Sunrise Square, an Asian experience featuring a variety of authentic Asian games that opened in 2007. A unique signature of Mohegan Sun was that we could taste all different kinds of Asian cuisines from Chinese, Japanese, Korean, and Vietnamese all the while enjoying the games traditional to these cultures. In fact, Mohegan Sun is dedicated to Asian market development with an Asian marketing department comprised of over 20 staff members. This kind of dedication from the owners of the casino makes it possible for the staff to pay great attention to all of the details that welcome the Asian community such as making bird’s nest soup and ginseng as was told to us by Kelly Leung, vice president of Asian marketing. With the highest investment in the customer loyalty program in the industry, it shows how much effort Mohegan Sun puts into catering and caring for their Asian guests. In addition to convenient transportation packages and an Asian-oriented gaming environment at the second largest casino in the United States, an excellent language service is another big attraction for Asian visitors. Ernie Wu, vice president of international marketing, pointed out that more than half of the

staff members at Mohegan Sun speak a variety of Asian languages and dialects. I, indeed, could always find a staff member who spoke fluently in my native tongue at any booth of the Player’s Club as well as at many game tables. NonEnglish speakers need not worry about language barriers here - somebody will always be there to assist so that you can maximize your enjoyment at Mohegan Sun. Experiencing a world-class casino is not the only attraction at this premier gaming and entertainment destination. There were more exciting and relaxing activities that tempted my palate and my senses. If you have ever seen the movie “Mystic Pizza”, then I recommend that you take the half hour drive to the famous Mystic Seaport to discover the diversity that thrives within a fairly small geographical area. I had the privilege of seeing a moving bridge and tasting uniquely New England style seafood with an amazing river view. Touring the breath-taking landscapes unique to New England, Newport, and Rhode Island, I found a world of exceptional elegance and inspiration in architecture, art, and interior design. Mohegan Sun will gladly arrange a car service for this must-do visit upon request. After the outdoors adventure, it was time to relax and invigorate my body! I had a 50 minute Swedish massage, my muscles manipulated with aromatic oils at the world-class Elemis Spa. Aside from a comprehensive range of treatments, I took pleasure in a large jacuzzi, sauna, and relaxation areas with an abundance of beverages, fruits, books, and magazines available. Relaxed and rejuvenated, I needed nourishment. At Mohegan Sun, numerous dining options are available to all guests ranging from upscale gourmet to casual convenience which includes buffets or a food court with fast-food selections. Normally, I am skeptical of any celebrity chef establishment, but Bar

Americain exceeded my expectations with overall top-notch quality. Once I entered, the decor and lighting gave it a very upscale feel. The waitress introduced herself and, without hovering, she was available whenever we needed her throughout the meal. I chose 1/2 dozen oysters and spicy tuna tartar with classic garnishes for appetizers and for entrees, rib-eye steak and steamed lobster with roasted lemon butter with Bar Americain’s signature fries – the excellent flavor and freshness made me speechless. The seafood appetizers were unreal. The steak and lobster were tender and cooked perfectly, and the steak sauce was extremely tasty. Chef Bobby Flay did not disappoint and made the dining experience wonderfully exquisite. I also enjoyed just walking around the facilities. For those who are not big gamblers, Mohegan Sun has them covered as well, with tons of places to hang out including an entire mall area with shops that are open late, not to mention bars every couple of steps. By putting the two together, who would not love a drink with your shopping? Each year, during the week of Lunar New Year, everyone’s favorite “Fortune Guy” will be returning to hand out red envelopes to guests. A traditional Chinese lion dance and concerts round out the New Year’s events. Just for New Year’s, guests can enjoy special bus packages. Simply stated, in this writer’s humble opinion, this place rocks! For more information, check out their website @ http:// mohegansun. com.
