Quick quinoa salad

Cook some quinoa according to the packet instructions, then set aside to cool. For the salad dressing, whisk together 3 parts olive oil to 1 part red wine vinegar, plus a handful of chopped fresh parsley. Put the quinoa in a large serving bowl with some sliced radishes, carrots, mangetout and deseeded red pepper. Add some cooked sweetcorn and some rinsed and drained canned kidney beans. Mix together. Drizzle with the dressing, to serve.
