VARIETIES The apricot originally came from China. Cuttings from the apricot made their way from the Persian Empire to the Mediterranean. Credit can be given to the Spanish explorers for the introduction of the apricot to the New World; the fruit flourished in the gardens of Spanish missions in California. Relative to peaches, apricots are small, golden, orange fruits, with velvety skin and flesh. They are not too juicy but definitely smooth and sweet. Some describe their flavor as almost musky, with a faint tartness that lies somewhere between a peach and a plum.

APRIUM

An aprium, a relatively recent creation that was produced in the late 1980s by Floyd Zaiger. Apriums are complex crosses of plums and apricots, requiring several generations of crosses to create a new fruit.

CASTLEBRITE

Bright orange color apricot with moderately tart flavor. It has a good firm texture and is very aromatic. It is the largest volume variety shipped from California.

PATTERSON

Patterson apricots are well known because of their yield more than their flavor, and are more durable and easier to transport through the country. Patterson apricots are one of the larger variety of apricots with firm-flesh and bright orange-red skin.

Comprised genetically of ¼ plum and ¾ apricot, the aprium represent apricots on the outside. The flesh is usually dense. Apriums are noted for their sweet taste (due in part to their vast content of fructose and other complex sugars) and flavorful mix of aromatic apricots and plums.
