Spa Getaways R&R When You Need It Most Customized to your goals and schedule, Spa Getaways offer a special way to dive into selfcare and renewal. We will help you design just what you are looking for, whether you come alone, as a couple, or with a group of friends for a special occasion. Your getaway includes access to all the offerings of the center and spa, including therapies, steam rooms, personal consultation, yoga classes, creative time exploring pottery in the studio, and, of course, the pure mountain air and beautiful views. Your home away from home, our accommodations offer a warm and inviting place to rest while you are here. We feature two types of housing: retreat accommodations and hotel accommodations. You’ll find a variety of room options, from the simple to the elegant, to cater to a range of tastes. A number of rooms in both categories feature views of the mountains, the surrounding forest, or the beautiful sunrise, and all rooms offer private bathrooms. Accommodations are separate from tuition and include three meals a day, as well as access to our amenities and offerings.

Meals for Body, Mind & Spirit We understand how important good food is to any vacation experience and we have made the culinary component of our center one of the key priorities. Our food is not only delicious, it is wholesome, varied, balanced, and beautifully served. Our chefs focus on creating meals that nourish the whole person and support them on their journey of growth, healing, and transformation. Drawing on influences from the local harvest in Boone to Bombay and even the Caribbean, our chefs aim to please the palate with three plant-based meals a day that will leave you deeply satisfied.

Schools of Yoga & Ayurveda School of Yoga Founded by Sri Sri Ravi Shankar Sri Sri Yoga Teacher Training Program Our Sri Sri Yoga Teacher Training provides you with a comprehensive and multidimensional yoga education and training. Rooted in science, experience, and a lineage of yoga masters, it promotes excellence in teaching through self-practice, service, and expansion of the self. The training will prepare you to: • Develop and lead group yoga classes for a variety of audiences • Embody an experiential understanding of yoga philosophy • Understand Ayurveda and its relationship with yoga • Be qualified to pursue specialized advanced modules • Facilitate workshops in any part of the world. Successful graduates will qualify to take home a 200-hour Yoga Alliance accredited teaching certificate. This program will also be among the first in North America to be eligible for accreditation through the Quality Council of India, a new international standard for yoga teaching. This training will be led by Krishan Verma, who has been teaching for more than 30 years and developed the Sri Sri Yoga Program in 2000. He has trained more than 2,000 yoga teachers in more than 20 countries across Europe, Africa, Asia, and North and South America. He previously served as the global director of Yoga Research and Training of the Art of Living. Bringing a depth of wisdom and experience, Krishan guides his students to capture the true experience of yoga through the outer study of the ancient discipline and the inner study of the self. School of Ayurveda Sri Sri Ayurveda, Ayurvedic Wellness for Our Time Launching in the fall of 2017, we will offer online courses for those interested in learning more about Ayurveda for themselves and for aspiring Ayurveda educators and practitioners. Completion of the 600-hour training qualifies you to apply for certification as an Ayurveda Health Counselor. Our faculty draws from Sri Sri Ayurveda’s extensive professional network, knowledge base, and Ayurveda college, which is thriving in India. Butternut Squash Soup A Vata-calming Ayurvedic recipe INGREDIENTS

PREPARATION

2 tbs. ghee 1 medium butternut squash, peeled, seeded, and cut into 1 inch chunks 1 medium sweet potato or 2 large carrots, peeled and chopped 1 inch piece of fresh ginger, finely chopped 1 tsp. ground cinnamon ¼ tsp. ground cloves 1 tsp. ground cumin ½ tsp. turmeric 3 cups water 1 cup coconut milk Salt and pepper to taste Minced parsley for garnish

Melt 1 tbs. ghee in a large deep sauté pan. Add squash and sweet potato.  Sauté, stirring very little at first, then more frequently, for 7 or 8 minutes or until all ingredients turn golden brown.

Reduce heat to low and continue cooking until vegetables are a rich caramel color, about 10 minutes. Remove from heat. In a separate soup pot, add 1 tbs. ghee, the ginger, and the rest of the spices except the turmeric.  Sauté until fragrant. Add water and vegetables to soup pot.  Bring to a low boil over medium heat.  Reduce to simmer for about 10 minutes, partially covered, until squash is tender. Puree in blender or food processor until smooth. Return to soup pot.  Pour in enough coconut milk so that the mixture flows easily, yet is thick and hearty.  Add salt and pepper to taste.  Heat through and garnish with parsley.
