Kale/Bean soup 2 bunches organic kale, one green, one Russian red 3 celery stalks w/leaves, generous 2 medium onions oregano one cup mixed beans/veggies one cup french lentils one cup split green peas one cup orange peas OR one can Eden no salt-added cannelini beans one can Eden no salt-added black beans White bits are garlic. Simmer dry beans 1 1/2 to 2 hrs. Cook the greens and onions unti tender. Add garlic and salt-free seasoning to greens; mix. Do not discard water. Add beans, and mix the whole thing together. It can be the consistency of refried beans if not enough H2O - more like burrito filling!
