Letter from the Managing Editor Celebrating growth — and gearing up for a big 2026 I am thrilled to step in as the new Managing Editor of the Anglo‑Ecuadorian Society — and what a year to join. 2025 has been an amazing year for AES: record membership, packed‑out events, and a community that is stronger and more connected than ever.

If there is one theme running through our year, it is simple: growth, creativity, and real togetherness.

In this edition, you will get a first look at our bold plans for 2026, straight from our co‑chairs, Juan Carlos Yépez and Juan Terán Jurado. We are also honoured to feature insights from H.E. Ambassador Luis Vayas on the UK‑Ecuador relations — a must‑read for anyone following our countries’ growing partnership.

Letter from the Co-Chairs

Dear Members and Friends of the Anglo-Ecuadorian Society, As the year draws to a close and we enter the holiday season, we wish you a wonderful Christmas and exciting plans for 2026. For many, the season evokes nostalgic thoughts of our family and relatives back in Ecuador, while for others it recalls many experiences of our time spent there. Although many of us have made the UK our new home, forming our own family and community here, Ecuador will remain significant in our minds and hearts. The Anglo-Ecuadorian Society honours this by celebrating our UK-Ecuador link.

We do this through interesting events, charitable work and creating real community connections. Accordingly, we would like to share with you some of our achievements in 2025 and the plans for 2026.

2025 was an active year. We organised 11 events, our highest number of events registered in a year to date. This amazing achievement was only possible with the support of our Honorary President and Vice President, the hard work and commitment of our Committee members and the participation of (and engagement with) our members.

Together, we are taking these steps into a more active and inclusive Anglo-Ecuadorian Society. Some of our events were focused on Ecuadorian food and drinks, having Ecuadorian cuisine set menus, wine and chocolate as our champions!

We also organised cultural social events where we were able to meet new members and catch up with old friends while raising funds for charities in Ecuador. This year, we reached a record number of 130 members, and we expect this number to grow.

All of this was made possible because of your support and kindness.

We have all raised the bar high, so our only option now is to do more in 2026! Our members love Ecuadorian cuisine related events, so it only makes sense to start 2026 with a visit and tasting of a set menu at Palmito restaurant in Brighton. Owned by Ecuadorian Chef Diego Ricaurte, Palmito is listed in the Michelin guide, and it is considered one of the best places to eat in Brighton. People need to make a reservation many weeks in advance to get a table here.

Please check our social media and emails for announcements, there will only be 22 seats available and we believe they will go very fast. We will plan more cultural activities involving visits to emblematic buildings and institutions in London and other cities in the UK. For our Summer Drinks, we will have ‘better than ever’ prizes and many more surprises. Our goal is to reach 200 members in 2026 and we are absolutely sure we will get there with your help and support.

We would like all members to know that we are listening, and we wish to create more content and events based on your ideas. The AES Committee is open to suggestions for events, collaborations and partnerships, so please reach out. Again, we would like to wish you a Merry Christmas and a very Happy 2026!

Around town with AES: 2025 highlights

We kicked off the summer with our annual drinks at Paladar, where members gathered for a balmy evening of conversation, laughter, and bocadillos.

A special highlight came when Ecuadorian artist Ulises Valarezo generously donated one of his incredible works for our raffle — a gesture that perfectly captured the generosity and creative spirit of our community.

Members were treated to a behind-the-scenes tour of the famous Lloyd’s of London building, where we learned about the fascinating history and architecture of this iconic landmark.

We also said goodbye to our amazing Managing Editor, James McKeigue, who left us to pursue exciting new opportunities in the Cayman Islands.

We are ever grateful for his humour, expertise, and collaboration — James, we will miss you!

Later in the year, we raised a glass to Ecuadorian wines with tastings at Paladar and Miko’s, featuring selections from Bodega Dos Hemisferios.

As summer turned to autumn, we celebrated Fiestas de Guayaquil at El Inca Plebeyo, where Chef Jorge Pacheco prepared a vibrant menu showcasing the rich, coastal flavours of Ecuador.

On 1 November, members joined us for a walking tour of Elephant & Castle, exploring the area’s vibrant Latin American community and its many small businesses. We finished the day at Miko’s with colada morada and guaguas de pan, before sitting down together for a delicious lunch.

November was also a month for celebrating Ecuadorian cacao, with an inspiring evening spent with Susana Cárdenas as she launched her new book Tierra Hermosa: An Ecuadorian Tale of Chocolate. We were treated to a captivating talk in which Susana shared her deeply personal journey of discovery with cacao and its centurieslong history, hosted at the lovely Eight Club in Moorgate. Executive Chef Daniel Cunin delighted us with an exquisite array of Ecuadorian bites, including mini llapingachos with quail eggs, prawn ceviche, and patacones with chicharrón, rounding off a memorable night honouring one of Ecuador’s most treasured ingredients.

We ended the year with our annual Christmas Drinks at the Embassy of Ecuador. Thanks to the generosity of our members, the evening’s raffle helped raise funds for the Good Shepherd International Foundation — a wonderful way to celebrate the season and give back.

2025: A year of achievements The strengthening of ties between the Republic of Ecuador and the United Kingdom of Great Britain and Northern Ireland

H.E. Ambassador Luis Vayas, Ambassador of the Republic of Ecuador to the United Kingdom, reflects on a landmark year for Ecuador–UK relations, marked by high-level political engagement, expanded cooperation, and deepening people-to-people ties.

ith only a few days left on the calendar, 2025 will conclude as an especially positive year for relations between Ecuador and the United Kingdom. High-level engagements and the deepening of an ambitious bilateral agenda stand out as two of the fundamental pillars of this successful period.

The most significant milestone was undoubtedly the official visit of President Daniel Noboa to the United Kingdom on 6 and 7 May 2025. The President was accompanied by First Lady Lavinia Valbonesi, Minister of Foreign Affairs Gabriela Sommerfeld, and other members of the Cabinet.

During this visit, a historic moment took place for both countries: for the first time, a President of the Republic of Ecuador was received at Buckingham Palace by His Majesty King Charles III, Head of State of the United Kingdom.

This remarkable gesture reflected the importance of Ecuador as a strategic ally for the United Kingdom.

During the meeting, President Daniel Noboa held a highly productive dialogue with the British monarch, resulting in new bilateral commitments. Among these was a promising cooperation initiative with the Circular Bioeconomy Alliance (CBA) — an organisation founded

by His Majesty when he was Prince of Wales — aimed at strengthening organic cocoa production, promoting local development, and generating employment opportunities for young Ecuadorians. In this context, on 15 October 2025, I had the honour of personally presenting King Charles III with a replica of the emblematic

Palanda vessel, a symbol of Ecuador as the birthplace of cocoa domestication more than 5,300 years ago.

As part of the President’s official visit in May, Minister of Foreign Affairs Gabriela Sommerfeld held a meeting with the UK Minister for Latin America, Baroness Jenny Chapman. During this meeting, they signed a Memorandum of Understanding establishing a mechanism for Bilateral Political Consultations. This instrument — typical of countries that share a common vision for the future and shared objectives — will allow for the monitoring of progress and the strengthening of all areas of the bilateral agenda.

Additionally, on 23 May 2025, UK Minister for Security Dan Jarvis and Ecuador’s Minister of the Interior John Reimberg signed a cooperation agreement on security in Guayaquil.

This new mechanism has strengthened the investigative capacity of Ecuador’s law enforcement agencies in the fight against organised crime and drug trafficking, as part of a broader framework of joint collaboration.

Bilateral cooperation has also been reflected in the field of environmental protection, an area in which Ecuador and the United Kingdom share a common vision and have positioned themselves as globally committed actors in sustainability. In addition to financial support provided by the UK for conservation initiatives in the Amazon, the British Government has offered firm and sustained backing for Ecuador’s aspiration to host the Diplomatic Conference for the adoption of the future legally binding global treaty on plastic pollution, recognising Ecuador’s leadership in this process.

Another priority for the National Government has been Ecuadorian youth. Throughout the year, the Embassy of Ecuador in the United Kingdom has promoted new academic opportunities. Thanks to an

unprecedented partnership with the FuturED Institute, in 2026 Ecuadorian young people will be able to apply for 200 scholarships for virtual courses in various fields of interest.

These scholarships will cover tuition fees, materials, academic support, and access to an international community, and will be available to Ecuadorians residing in the United Kingdom and around the world.

In the economic and trade sphere, 2025 was also a year of progress. According to the Central Bank of Ecuador, by September the non-oil bilateral trade balance recorded a surplus of USD 152 million, with exports amounting to USD 268 million and imports totalling USD 116 million. The Trade Agreement between Ecuador and the United Kingdom continues to open opportunities and expand markets for Ecuadorian products.

A special chapter deserves the relationship between the diplomatic mission and the Ecuadorian community residing in the United Kingdom, which remains a priority for the National Government. In 2025, various activities were carried out to strengthen the capacities of the migrant community and create spaces for engagement. These included youth workshops in collaboration with Amazon and Google, discussion forums for entrepreneurs, as well as multiple cultural events alongside Ecuadorian athletes, artists, and organisations.

Likewise, the Consulate General of Ecuador in London has provided uninterrupted, high-quality service throughout the year. The Government’s commitment to the community was also reflected in the launch of a new digital platform for consular services, designed to reduce costs and facilitate procedures in a fast, secure, and accessible manner from anywhere in the world.

This is a general overview of the progress achieved in 2025. The objective for the coming year will be to deepen these achievements and further expand the spaces for bilateral cooperation.

In summary, 2025 reaffirms the excellent state of

In my capacity as Ambassador of Ecuador to the United Kingdom, I would like to express my conviction that the year ahead will offer renewed opportunities to further strengthen the ties that unite our countries and to continue promoting the wellbeing and development of both nations, whose states and societies share an unequivocal commitment to a more prosperous and sustainable future.

ACHIEVEMENTS IN TOURISM

In the tourism sector, prestigious international events in the United Kingdom highlighted Ecuador’s vast potential. At the NatGeo Food Festival, the World Travel Market (WTM), and the International Food and Drink Event (IFE) 2025, Ecuador’s gastronomy, culture, export offerings, and tourism wealth enjoyed a strong presence. In addition, renowned publications awarded significant recognitions to our country.

The Warm Season Wonders of the Galápagos Islands

A Naturalist’s Dream from January to April David Horwell, AES Tourism Director and longtime Galápagos explorer, takes us on a journey through the islands…

The remote Galápagos Islands, straddling the equator in the Pacific Ocean, are a living laboratory of evolution and biodiversity. Whilst there is plenty to see all year-round, the warm season—beginning in January and stretching through April—ushers in a spectacular array of natural events that captivate scientists, nature lovers, and adventurers alike.

During these months, the islands transform under the influence of tropical rains, rising temperatures, and the rhythms of reproduction and migration.

From nesting birds to vividly coloured iguanas, and from sea turtles laying eggs to the arrival of the majestic, waved albatross, the warm season is a time of vibrant life and dramatic change.

Let’s take a journey through this season month by month, exploring the marvels that make the Galápagos truly unique.

January: The revival of life January marks the beginning of the rainy season in the Galápagos, a time when the islands begin to bloom with life. Though the term “rainy season” might suggest constant downpours, the reality is more nuanced.

Tropical showers are sporadic, often followed by intense sunshine, creating a humid and warm environment that triggers a cascade of biological activity.

Iguanas in technicolor On Española Island (also known as Hood Island), adult marine iguanas undergo a stunning transformation. Males become brightly coloured—flushed with red, green, and black hues—as they prepare for mating. This dramatic change is not just for show; it plays a crucial role in attracting females during the breeding season. These “Christmas iguanas,” as they’re affectionately called, are among the most visually striking reptiles in the archipelago.

The nesting season begins One of the first signs of the season’s shift is the behaviour of land birds. With the first rains, species such as Darwin’s finches and Galápagos mockingbirds begin their nesting cycles. The moisture brings new vegetation and insect life, providing the food necessary to support their young. Birdsong fills the air as males display and defend territories, and nests begin to appear in shrubs and trees across the islands.

January also heralds the arrival of green sea turtles to the beaches of the Galápagos. These ancient mariners return to the islands to lay their eggs in the warm sand. Under the cover of night, females haul themselves ashore, dig nests with their flippers, and deposit dozens of eggs before retreating to the sea. The nesting process is a delicate and vulnerable time, and conservation efforts are crucial to protect these endangered creatures.

Land iguanas begin their cycle On Isabela Island, land iguanas begin their reproductive cycle. These plump reptiles, with their yellowish scales and dragon-like appearance, engage in territorial displays and mating rituals. The males become more aggressive, and competition for mates intensifies. The reproductive success of these iguanas is closely tied to the seasonal availability of food and water, making January a critical time in their life cycle.

They are rather partial to prickly pear fruit.

Snorkelling paradise With both air and water temperatures rising— often reaching comfortable highs of 25°C (77°F)—January is an ideal time for snorkelling.

The warm waters are teeming with life, offering encounters with sea lions, rays, reef sharks, and a kaleidoscope of tropical fish. Visibility is excellent, and the calm seas make for safe and enjoyable underwater exploration. The sharks present no danger due to the abundance of tastier food than humans.

February: courtship & Colour February continues the warm season’s momentum, with temperatures remaining high and wildlife activity intensifying. The islands are alive with courtship, nesting, and the vibrant interplay of species adapting to the changing climate.

Flamingos and Pintails begin to nest

On Floreana Island, greater flamingos begin their nesting season. These elegant birds, with their vivid pink plumage, gather in shallow lagoons to build mud nests and lay eggs. Their synchronized movements and communal nesting behaviour are a spectacle to behold.

Santa Cruz Island becomes a hotspot for marine iguana nesting in February. Females dig burrows in the sand and lay eggs, which will incubate for several weeks. The nesting process is energyintensive, and females often fast during this period. The survival of the next generation depends on the stability of the nesting sites and the absence of predators. In some places feral dogs and cats have been a problem.

Penguins retreat to cooler waters February also sees a decline in penguin sightings at Bartolomé Island. The Galápagos penguin, one of the few species to live near the equator, follow the cool waters westward or toward areas of upwelling. Their absence is a reminder of the delicate balance between ocean currents and wildlife distribution in the archipelago.

The Galápagos dove reaches the peak of its nesting season in February. These ground-nesting birds exhibit a beautiful plumage. Their nests are often hidden among rocks and vegetation, and their chicks grow rapidly in the warm, food-rich environment.

Meanwhile, white-cheeked pintail ducks start their breeding season. These ducks are less conspicuous than flamingos but equally important to the island’s ecosystem.

Nazca Boobies wrap up nesting On Española Island, Nazca boobies are nearing the end of their nesting season. These striking seabirds, with their stark white feathers and black masks, have spent the previous months raising chicks. March: The Height of the Warm Season March is the climax of the warm season in the Galápagos. The rains are at their most intense, the sun is scorching, and the islands are buzzing with life. It’s a time of abundance, transformation, and dramatic natural events.

The arrival of the Waved Albatross One of the most anticipated events of the season is the arrival of the waved albatross to Española Island around the time of the summer equinox (March 21st). These magnificent birds, with their massive wingspans and graceful flight, return to the island to begin their elaborate courtship dances. The albatross is a symbol of endurance and fidelity, and their presence marks the beginning of a new breeding cycle.

Before they return to land, they can be seen ‘rafting’ offshore in groups.

Tropical rains and high humidity Though it doesn’t rain every day, March sees the highest precipitation levels of the season.

Tropical showers can be sudden and intense, followed by blazing sunshine. Air temperatures can soar to 30°C (86°F), and humidity levels are high. This climate fuels the growth of vegetation and supports the reproductive cycles of many species.

Snorkelling in the West Even the western islands, typically cooler due to ocean currents, experience warm waters in March. Punta Vicente Roca on Isabela Island offers exceptional snorkelling opportunities.

Here, visitors can witness the surreal sight of Galápagos penguins swimming alongside tropical fish—a rare and delightful juxtaposition of coldwater and warm-water species. One of the most bizarre is the Mola mola or Sunfish, which looks like a huge head with no body.

April: Transition and Transformation As April unfolds, the Galápagos Islands begin a subtle shift from the peak of the warm season toward cooler currents and changing wildlife patterns. Though the rains start to taper off, the islands remain lush and vibrant, offering a final flourish of activity before the dry season sets in. The humidity begins to ease, and temperatures remain warm, with air hovering around 28°C (82°F) and water temperatures still ideal for snorkelling. The landscape remains green and fertile, sustaining the last wave of seasonal reproduction.

Sea turtle hatchlings emerge On beaches across the archipelago, green sea turtle hatchlings begin to emerge from their sandy nests. Under the cover of night, these tiny creatures make their perilous dash to the ocean, guided by moonlight and instinct. Predation is high, but those that survive begin their long journey through the Pacific. Witnessing this moment is both heartwarming and humbling.

Surge from northern currents Some northern-facing shores experience deep surge (ola de fondo) from northern currents. This can make wet landings at sites like Puerto Egas, Gardner Bay, and Bartolomé more challenging.

Visitors should be prepared for rougher conditions, but the rewards—such as pristine beaches and rich marine life—are well worth the effort.

Long snorkelling sessions With water temperatures still warm and visibility excellent, snorkellers often spend extended periods in the water. The abundance of marine life, from playful sea lions to graceful rays, makes every dive an unforgettable experience.

Isabela Island sees the emergence of land iguana hatchlings. These young reptiles, miniature versions of their robust parents, begin foraging and exploring their volcanic surroundings. Their survival depends on the availability of vegetation and the absence of invasive predators, making conservation efforts especially vital during this time.

Waved Albatross courtship intensifies On Española Island, the waved albatrosses that arrived in March are now fully engaged in their elaborate courtship rituals. Pairs perform synchronised dances—clacking beaks, bowing, and circling one another in a display of lifelong bonding. These rituals are among the most iconic wildlife spectacles in the Galápagos.

These young reptiles face immediate challenges, from predators to harsh terrain, but their emergence marks the successful completion of the nesting cycle that began months earlier.

This is when the racer snakes ambush the new arrivals.

Snorkelling remains superb April continues to offer excellent snorkelling conditions. With visibility still high and waters warm, encounters with sea lions, turtles, and tropical fish remain frequent. Sites like Devil’s Crown and Punta Vicente Roca are particularly rewarding, offering dramatic underwater landscapes and rich biodiversity.

A season of spectacle and science The warm season in the Galápagos Islands is a time of extraordinary natural events. From the vivid colours of marine iguanas to the nesting rituals of flamingos and albatrosses, every moment offers a glimpse into the intricate web of life that defines this unique ecosystem.

For travellers, photographers, and wildlife enthusiasts, January through April is an ideal window to explore the islands. The combination of warm weather, active wildlife, and excellent snorkelling conditions creates an immersive experience that is both educational and awe-inspiring.

Roast turkey with Ecuadorian relleno Elevate your Christmas table with Eight Club Executive Chef Daniel Cunin’s vibrant twist on a classic roast, featuring succulent turkey rolled with an Ecuadorian-inspired relleno bursting with spices, apples and herbs.

Ingredients Serves 5 people 600gr Turkey breast escalope 250 gr streaky bacon

Method: Stuffing mix: 1. Melt the butter in a pan, add achiote oil for colour.

2. Gently sweat the diced onions and garlic until it is soft and translucent.

3. Add diced apple, red pepper, spices and herbs.

4. Transfer the cooked mixture to a bowl and combine it with the pork sausagemeat. Season well with salt and pepper.

5. Cover it and set aside.

Turkey roll: 1. Lay each turkey escalope on a sheet of cling film and cover with a second sheet.

2. Beat with a rolling pin to flatten out the meat to thin slices.

3. Place the stuffing in the middle of each slice.

4. Pull up the sides and roll it.

Stuffing 20gr butter 500gr Pork sausage meat 1 white onion 1 Garlic clove 10 ml achiote oil ½ tsp cumin 1 diced apple 20 gr raisins 2 spring fresh herbs (thyme, oregano, parsley) 1 pinch cinnamon powder 1 pinch nutmeg 10 gr walnuts 20 gr olives ½ red pepper Salt and pepper

Wrap in bacon: 1. Tightly wrap a slice of streaky bacon around each turkey roll, ensuring the seam is covered. And wrap tightly with cling film.

Cook: 1. Place the turkey rolls in a steamer or water bath for approximately 30 – 40 min.

2. Remove from the steaming or water bath and rest for 5 – 10 min.

3. Remove the cling film, sear in the pan and finish in the oven for 5 – 7 minutes at 180 degree.

4. Serve with your favourite trimmings like roast potatoes, roast vegetables, and gravy.

From Quito to Britain: How Arch-BIO is redefining sustainable architecture on a global stage

Ecuadorian architect Santiago Morales Flores went to the UK seeking world-class training and returned with a vision that is transforming how buildings are designed, operated and valued across continents.

Sustainable construction has become one of the most urgent challenges for the built environment, yet around the world many projects still treat sustainability as an optional add-on rather than a structural principle. At the same time, climate demands, rising energy costs and stricter environmental regulations are redefining how buildings must perform. A new generation of architects is responding to that shift by merging design with science, data and user wellbeing.

Among the voices leading that transformation is Ecuadorian architect Santiago Morales Flores. From Latin America to Europe, Morales has built a career proving that sustainability and profitability are not opposing forces: when architecture is aligned with climate, human comfort and measurable performance, efficiency becomes a natural result rather than an extra cost. His company, Arch-BIO, is now influencing how developers, universities and industries rethink the future of buildings.

A global perspective born in Nottingham When Santiago Morales arrived at the University of Nottingham in 2015 to study Renewable Energy and Architecture, he entered a sustainability ecosystem where data, energy modelling and climate-responsive design were embedded into every layer of architectural education. The campus, recognised as one of the greenest in the United Kingdom, served as a realworld demonstration of efficiency and comfort rather than a set of theories in isolation.

Arch-BIO’s mission is to transform the way buildings are conceived by integrating bioclimatic design, resource efficiency and user comfort with strong financial results. The firm combines advanced simulations, environmental analysis and sustainability certifications with a clear focus on profitability and long-term value.

Morales describes Nottingham as the turning point in his professional philosophy. Sustainable architecture became, for him, a discipline rooted in applied science, comfort and measurable results rather than idealism or aesthetics.

Founding Arch-BIO: Science, comfort and return on investment In 2018, Morales and fellow Nottingham alumnus Mauro Cepeda founded Arch-BIO, short for Architecture with a Bioclimatic Approach. Their motivation was clear: Latin America needed sustainable architecture grounded in climate, evidence and human wellbeing rather than marketing trends.

A flagship project with global impact One of the strongest examples of Arch-BIO’s approach is the UDLA ARENA sports centre in Quito. Through careful climate-based design, natural lighting strategies and appropriate material selection, the project achieved three milestones that architects and developers usually see as contradictory: it eliminated the need for mechanical air-conditioning, reduced capital expenditure by about 1.2 million dollars and continues to deliver monthly energy savings of roughly 5,000 dollars.

The results quickly attracted attention beyond Ecuador. Arch-BIO was invited to apply bioclimatic design principles to a classroom and laboratory renovation project for the Universidad Latina in Costa Rica, demonstrating that high efficiency and comfort are not limited to new buildings and can be achieved successfully through retrofitting.

Scaling to the United Kingdom Arch-BIO’s recent expansion into the United Kingdom brings Morales full circle, this time not as a student but as part of a company exporting Ecuadorian talent and technical excellence. The move reflects a strategic goal: to scale the firm’s climate-driven design model, to collaborate with industry partners in Europe and to create opportunities for Ecuadorian professionals to participate in global-level projects with global-level compensation.

Morales sees significant opportunities to strengthen ties between Ecuador and the UK through academic collaboration, knowledge exchange, adaptation of building standards and joint innovation in sustainable construction. Although the UK offers predictability and strong regulation while Ecuador offers flexibility and opportunity, both markets are moving rapidly toward decarbonisation and performance-based design.

With more than 725,000 square metres of projects across Ecuador, the United States, Europe, Costa Rica and the United Kingdom, Arch-BIO is positioning itself as a technical leader in bioclimatic architecture.

Its long-term vision is a global built environment where sustainability is not optional, aspirational or decorative, but a baseline for habitability, comfort and competitiveness.

For Morales, maintaining ties with the Ecuadorian community abroad remains a personal priority.

It represents a bridge between the country that shaped his identity and the country that shaped his professional vision — and a reminder that Latin America can compete globally when it works with science, rigour and purpose.

As Arch-BIO continues to expand its footprint, the firm aims not only to design better buildings but to influence the wider culture of construction in both regions. Morales believes the future of architecture depends on a deeper alignment between science, policy and human wellbeing. For him, the path forward is clear: buildings must perform better, last longer and contribute meaningfully to the communities they serve. With this vision, Arch-BIO intends to help shape a new standard of sustainability that crosses borders and inspires the next generation of architects.

What is Bioclimatic Architecture?

Bioclimatic architecture is a design approach that responds directly to local climate conditions to optimise comfort, reduce energy consumption and minimise environmental impact. Instead of relying on mechanical systems, it uses natural strategies such as cross-ventilation, solar orientation, thermal mass, shading and daylighting.

El Inca Plebeyo: Ecuadorian soul with a modern twist In the heart of Islington, El Inca Plebeyo tells the story of Ecuador through flavour and memory. Chef Jorge Pacheco transforms his childhood roots and Michelintrained craft into dishes that honour his homeland with warmth, precision, and soul.

Some meals stay with you because of flavour, others because of memory. El Inca Plebeyo does both at the same time, and it does it without raising its voice. The precision is there if you look for it, but the first thing you feel is comfort rather than performance.

The restaurant hums with soft music, clinking glasses and conversations that feel like they began somewhere else. The menu is a geography lesson, each dish tracing coastlines, mountains and jungle.

The seafood of the coast, the grains of the Andes and the herbs of the Amazon appear without fanfare, and what is striking is how personal it feels rather than encyclopedic. These dishes are not an exhibition.

They are evidence.

Start with a ceviche de camarón.

Prawns bright with citrus, sweet in that way seafood is when it is truly fresh, with chifles that add crunch. Then there is hornado.

Slow-roasted pork, the kind that has been given time rather than just heat, impossibly tender and

deeply savoury. The curtido cuts through with just the right acidity, sharpening the flavours without taking over. It is the sort of dish that pauses every conversation at the table, leaving only quiet satisfaction.

There are warm, playful starters like corn-dough tamal or purplecorn empanadas. On the sweet side you find a quinoa pudding laced with caramel and coconut.

Each plate quietly carrying traces of home, technique and care.

lived memory. After years spent in Europe’s most demanding kitchens, the kind that reward precision and punish carelessness, Jorge built a space that restores authorship to his own story. The former Turkish restaurant became a dining room that holds Ecuador in the details.

Not everything revolves around meat. The mushroom ceviche, vegan by design rather than accident, is perfumed with truffle oil and chilli in quiet, thoughtful balance. A dish that makes a case for plant-based eating without sounding like a manifesto.

Dessert comes out and the table sits up a little straighter. You can tell immediately it is something worth paying attention to. The chilli chocolate fondant is dark Ecuadorian chocolate with a molten centre, vanilla ice cream and specks of candied chilli.

Restaurants are never just restaurants. Not when they are built by migrants with memories they refuse to let go of. Chef Jorge Pacheco grew up on a farm in Gonzanamá, Ecuador, watching the kitchen from a distance he was not allowed to cross. He did not learn to cook until he came to Europe in 2000, starting at the bottom. Dish cloths, floors and crates of vegetables. A head chef noticed his potential. Industry discipline did the rest.

Recognition has followed quietly.

It remains the only Ecuadorian restaurant ever listed in The Good Food Guide. Yet the real proof is in the people who come through the door. The curious. The nostalgic. The ones hungry for honesty rather than novelty.

There is no wrong day to visit El Inca Plebeyo. Every service carries warmth and confidence.

Sundays simply stretch that feeling a little further. Brunch offers dishes such as tigrillo, locro de granos and ceviche Jipijapa, and the room takes on the rhythm of families and regulars settling in for the afternoon.

El Inca Plebeyo never asks you to admire it. It asks you to sit, eat and feel welcome.

The plates are elegant, but the atmosphere is built on sincerity.
