Paysan Breton L’Original Brie Paysan Breton L’Original Brie hails from Brittany, France. Though made by one of the larger Brie producers in France, this Brie goes back to its traditional roots. This is a lactic, as opposed to a stabilized Brie. It also uses traditional rennet and a slower coagulation. This all amounts to a cheese that ripens beautifully and develops a full, mushroomy flavor. We may never be able to find AOC Brie in Australia but, with age, this one comes pretty close. Made on the high plains near the town of Langres in the Champagne region of France. It has a distinctive sunken centre in the top of the cheese which forms because the cheese is never turned.

A substitution for Reblochon - that famous French washed rind from Savoie.The real deal was banned from import due to its high moisture and raw milk status. Pasteurized, yes, but for no lack of that unctuous buttery flavor or tender edible rind.

Its fragrance is reminiscent of toasted hazelnuts, and its taste encapsulates the sweet, buttery flavors that a great sheep’s milk cheese can deliver. Comté (also called Gruyère de Comté or Comte Fort Saint Antoine) is a French cheese produced in the Jura Massif region of Eastern France. The unpasteurised cow’s milk used is mainly from Montbeliarde Cattle or French simmental (or cross breeds of the two). This hard mountain cheese is matured to perfection in the silence and darkness of special caves where the cheese gets its unique taste, texture and colour. There are several maturing cellars in the region where Comté is ripened for a minimum of 4 months to 18 or 24 months. Comté was one of the first few cheeses to receive an AOC (Appellation d’origine controlee) status in 1958. It is one of the most popular AOC cheeses in France with around 40,000 tones of annual production.Considered one of the finest cheeses in the world, a wedge of Comte reveals a pale yellow interior and a texture that can vary from silky, flabby to crystalline.

When it comes to making cheese, the Bonino family are similar sticklers for detail. Milk for Botalla cheese is sourced from two different types of local cow, Pizzetta Rossa and Bruna Alpina. “They’re smaller than ordinary cows,” explains Alessandra Vigliani, “A commercial cow produces about 50 litres a day, but our cows only produce 15. But they live longer and the quality of the milk is really high.” They check every litre that comes to them before they even start making cheese with it, and then every cheese that is made—around 80,000 on this site—is checked daily, and turned at least once a week. Lunatico meens “moody” because its taste can vary. When it is young and fresh it is great for salads and appetizer. When it is ripened it melts in Risotto and other cheese specialties. Lunatico is characterised by its golden glow around the rind and its rich and creamy centre.

Supporting Australian Dairy Tarago River Cheese was one of the first on-farm cheese factories, started in 1982 by David’s father Rob and Lyn Johnson, Laurie and his father. What began as a “polystyrene shed” expanded in the 1990s to a point where they were making 20 different cheeses and operated a cellar-door type cafe, which made up about 50 per cent of the business. In early 2000 they closed the cafe to concentrate purely on making quality cheese. “We are now down to about seven products and we are much smarter about how we sell it,” David said. They use 1.8 million litres of milk and each year produce 200 tonnes of cheese that is sold Australia-wide. The seven varieties include three blue cheeses and four white-surface ripened cheeses including brie, camembert, triple cream and a washed rind. “We have to have some really good systems in place to make sure we don’t undersupply or oversupply the market,” David said. “We do a lot of planning prod­uction wise because if we are making a brie then in four weeks time we need to sell that cheese. Some cheeses take 16 weeks to mature so we spend a lot of time making sure the production mix is right.” Tarago River Cheese is self- sufficient with milk production and able to on-sell surplus milk. Cows are calved in spring and autumn to ensure milk flow is steady throughout the year to meet the market for cheese.

La Bastide A deliciously smooth duck foie gras from La Bastide! Cooked at a low temperature, this semi-cooked foie gras is ready to eat, and has a melt-in-the-mouth texture and incomparable flavour. This is a foie gras in its most authentic form, deveined, seasoned, then cooked on a low heat for a few minutes to preserve its freshness and creamy texture.

Recommendations: Take the foie gras out of the refrigerator 15 to 20 minutes before serving. Open it and slice it using a non-serrated knife which has been dipped in hot water. Prefer a lyre to get perfect slices. You can also pan fry it.

Lucien Georgelin is produced in Virazeil, the heart of South-west France. Artisinal French made preserves and jams. The preserves were traditionally cooked in a copper cauldron, and even to this day production is kept as traditional as possible. Lucien Georgelin himself ensures the selection of the fruits that will make to his preparations. After being peeled, pitted, seeded depending on the fruit ‌ they are poured into authentic copper cauldrons and begin to cook on a bare fire, in order to caramelize and keep only the best of the fruit.
