TECHNOLOGICAL CONSULTANCY BY CECOPESCA

The National Technical Centre for Fishery Products Processing is an Innovation and Technology Centre set up with the mission to provide a comprehensive service to businesses in the fishery and aquaculture products processing sector. The technical consultancy offered by CECOPESCA embraces the following technological fields: Technology of Innovative and Safe Products and Processes. Advice on the implementation of quality assurance management systems and food safety. Training and information for members. Technical support concerning environmental sustainability standards. Fostering a culture of innovation.

Technological Advice for Industry Automation and industrial simulation unit: This is a service supporting factory design in compliance with food safety, risk prevention and environmental management standards, ergonomics, etc. It provides backing for production line automation schemes and for improving the efficiency and productivity of processes. Programmes for implementing CITs, automated advanced process control and intelligent quality control systems.

Process Modelling and Design Unit Technical Service (establishing the time-temperature indicators for heat treatment processes) and evaluating processing procedures (Fo tests, estimating pasteurization treatment processes amongst others). Guidance in the development of functional foods and nutraceuticals: Foods for specific segments of the population: celiacs, diabetics, ethnic groups, etc. Evaluation of under-exploited species. Minimally processed foods and cook-chill products. Guidance in the development of environmentally friendly products.


Advice about the application of emerging technologies: New sterilisation and pasteurisation technologies: high pressure, electro-pulse, microwave, etc. New packaging technology: active and intelligent packaging (anti-oxidant, bactericidal, inclusion of active substances, etc.). New packaging materials (biodegradable packaging, sterilizable flexible plastics, etc.). Production process robotics.

Technology for the assurance of food quality and safety Toxicological studies of biotic and abiotic contaminants associated with fishery produce. Studies aimed at reducing or eliminating air-borne abiotic contaminants.

Standards and Consultancy Unit Consultancy on standards, regulations, specifications and technical recommendations (e.g. control of work areas and ingredients). Export certificates: agency approved by the (USA) FDA for conducting tests for determining heat treatment processes in low acid preserves. Conducting sensory analyses, under ISO standards, of various fish and aquaculture products in order to identify their differentiating characteristics. Provision of a consultancy service for food safety certification (including process and product), HACCP, BRC, ISO 9000, ISO 22000, ISO 22005.

Diagnosis and control of the major diseases affecting fish farming products.

Technical assistance in upgrading Food Safety management systems (health and hygiene audits, BPF, HACCP) sponsored by the ANFACO-CECOPESCA ISO 17025 accredited laboratory, and lines of investigation and control, introduced by the CIT, for risks of biotic and abiotic contaminants.

Study of the phenotypic and genotypic markers of micro-organisms associated with fishery and aquaculture products.

Development of new inspection protocols: guidelines and methods for implementing the HACCP/APPCC system.

Guidance in the development of new presentation methods for fresh and chilled foods enhancing their shelf-life and the application of predictive microbiological studies.

Industrial calibration: assistance with the implementation of regulations (ISO 9001, ISO 22000, BRC, IFS, etc). Correct management of measuring and control apparatus. Drafting and overseeing of calibration plans for all companies, specifically adapted to UNE-ISO 9001 and/or UNE-ISO/IEC 17025, applying the new CITs.

Assistance in the development of active packaging for the control of mutating or pathogenic micro-organisms in fishery products.


The CECOPESCA Training Unit Design of training modules specifically adapted to a variety of professional fields: sealing mechanisms, heads of production, process control, analytical techniques, purification plant operator, environment, etc.

Training support given to firms and local authorities abroad, to achieve an agreement on legislation (hygiene, traceability, processes, environment, analytical control techniques, laboratory accreditation). Training in APPCC, BRC, IFS and ISO 22000. Health and hygiene audits. Regulated training for food handling, inspection and control, BPFs for the seafood processing industry. Processing fish and aquaculture products with value added. Made-to-measure training courses in environmental issues, environmental audits, etc.

Environmental Sustainability The growing concern among member companies and clients about issues related to environmental management and training has lead to the development of specific areas of action through ANFACO-CECOPESCA which are detailed as follows: A Technological Environmental Support Service for implementing environmental management systems (ISO 14001 and EMAS Regulation). Audit, supervision and control of the business activity to ensure compliance with environmental legislation (sewage, waste, emissions, etc). Management of the Best Available Techniques (BATs) and Integrated Environmental Permit


Management of the environmental permits: initial applications, renewals, regular analytical controls, etc. Annual resolution of administrative infringement proceedings in environmental matters.

Strengthening cooperation networks, and the design and application of innovative methods fostering the integration and participation of the sector in European networks for innovation monitoring initiatives (Public Research Institutions, CIT).

Drafting of reports and statements on environmental legislation.

Protection of know-how in business, through training on the handling and use of patents and projects, integrated actions for identifying project portfolios

Technology for appraising products derived from the processing of fishery products.

R&D+I

ANALYTICAL SERVICES CECOPESCA operates laboratories with the highest standard of scientific and technical equipment to serve our clients. Our laboratories are accredited under the UNE-EN ISO/IEC 17025 standard by ENAC (Spanish National Accreditation Body) to conduct physical-chemical, microbiological, toxicological and bio-molecular analyses of agri-foodstuffs and packaging testing, as well as physical-chemical and microbiological analysis of drinking water, waste, inland and sea waters. Food Food quality and safety (microbiological, nutritional value, freshness, contaminants, sensory testing, allergens, gluten, etc.). Control of origin (bio-molecular detection of species, GMOs, etc.) Fish feed and fish meal (micro-biological and nutritional testing, contaminants analysis, etc.) Waters (microbiological and physical-chemical testing of drinking water, water supply, well water, sea water and waste water).

As the Technological Centre of reference in the Sea-Industry sector thanks to its experienced team of experts and advanced scientific infrastructure, CECOPESCA develops strategic R&D+I programmes for the industry in addition to “made-to-measure� projects for businesses in the following areas:
