Although flamenco is an instantly recognizable part of Andalusian culture, its origins are still mysterious. Today it is chiefly associated with the gitanos, or Spanish Romani people, but it probably originated among the Moriscos, former Muslims who converted to Christianity in the 16th century. For me, no visit to Andalusia is complete without an evening spent listening to the flamenco guitar.

A fortified wine, made from the white Palomino grapes grown around the town of Jerez de la Frontera, sherry is one of the pleasures of travel in southern Spain. Personally I prefer the dry ones: Fino, or Manzanillo (a light Fino from the port of Sanlúcar de Barrameda), or sometimes a slightly heavier Amontillado.

The pueblos blancos, or “white villages,” stacked up steep hillsides burnt brown by the summer sun, are one of the unforgettable sights of southern Spain. A living reminder of Arab Al-Andalus, for me they are emblematic of the region.

wonder of the natural world, the Great Barrier Reef is a must-visit for travelers to Australia who harbor the slightest interest in marine life, especially now as warming ocean temperatures threaten the 1,600-mile ecosystem with rampant coral bleaching. Still, the vast and beautiful biodiversity of the reef makes it a mecca for divers, snorkelers and sea tourists. “The Great Barrier Reef is the world’s largest living organism in the world, with an incredible diversity of species in a protected environment,” says Janelle Boyd of sophisticated reef resort Lizard Island. “You never quite know what you will come across in the water, from a small nudibranch to migrating humpback whales. Diving or snorkeling on the Great Barrier Reef is always a rewarding experience and never fails to deliver.” Lizard Island sits on an eponymous island at the reef’s northernmost extremity, surrounded by 2,500 acres of white-sand beaches and crystalline lagoons. Accessible only by private flight from Cairns, here guests are given an opportunity for discovering the reef in a pristine setting. While the 24 private beaches nearly guarantee your own secluded sanctuary, a private charter on one of the resort’s yachts to dive, snorkel or fish is something special, allowing guests total freedom in their exploration of the reef. solated along the rugged shores of northwestern Australia lies the continent’s other significant marine habitat: Ningaloo Reef. Luxury Lodges of Australia calls this “one of Earth’s last ocean paradises,” and its otherwise harsh landscape and frontier setting have bestowed it the reputation as one of Australia’s best-kept secrets. While home to thousands of aquatic species, the most superlative experiences are provided by the three- to five-hundred whale sharks that congregate in the 160-mile reef annually from late March to June. pending a few nights on a transcontinental train provides a fascinating and historically authentic way to traverse the great distances of Australia. Named for the oceans at either end of the route, the Indian Pacific runs for 2,700 miles from Sydney to Perth and includes the world’s longest stretch of straight railway track. The time of year in which you plan on visiting Australia will influence where you should go. When it comes to truffle hunting, there’s only one Mauro, who makes his living rooting out the pungent and valuable fungi in the forest groves of Tuscany. “Our guests are the only ones he takes with him,” says Zaira De Biasio of Borgo Santo Pietro. “Unlike many truffle hunts, our truffles are not planted beforehand and ‘found’ by dogs afterwards. They grow naturally and abundantly in private woodland protected from public truffle hunters.” Suitable for anyone who is reasonably active, truffle hunting allows visitors to “immerse themselves in Tuscany at a sensory level,” says De Biasio. TREKKING THE TRAILS OF THE ANCIENTS IN TAHITI with

With an increase in land-based tourism, cruising in the Galapagos is no longer the only way to explore the islands. “It’s hard to take a bad picture of a grizzly bear that is 10 feet away— or closer,” says Marc Télio of Entrée Destinations. “There is nothing like standing next to a grizzly face-to-face,” he says. It’s one of his top-listed backcountry experiences in both Canada and Alaska. Télio recalls one trip when he was standing in the middle of the river fishing “and out of nowhere a massive bear jumped off the shoreline and rushed at me. These bears can run faster than a quarter horse, so no point in running from him. He stopped right in front of me and skewered a huge salmon swimming at my feet.” Depending on the time of year, the terrain and the species, bear viewing may be done on foot, from a small vehicle or via boat. Throughout, guides play an important role in the experience, says Télio. One of his favorite,

Phil Timpany, “literally wrote the book on safety and co-existence with these powerful animals,” Télio explains. “Phil is a fabulous storyteller, a gentleman and a natural guide. He used to be a hunter and became a conservationist, and now protects enormous sections of land abundant with grizzlies.” Anyone can go bear viewing, as it typically isn’t dependent upon physical ability. At an elevation of 8,700 feet, Dunton Hot Springs is a restored ghost town located in the San Juan Mountains of the Colorado Rockies. When it comes to wintertime activities, Dunton’s Edoardo Rossi says heliskiing tops his list. “One of the great things with heli-skiing at Dunton,” says Rossi, “is that you don’t have to drive anywhere.” The helicopters arrive directly on-property to pick you up, a rarity in the United States, according to Rossi. “So you get up in the morning, have breakfast, put on your gear, get on a helicopter,” he says. It’s that easy. After an epic day of skiing in and around Telluride, you return to Dunton for a soak in the natural hot springs, a cocktail, dinner and conversation.
