CHEESE BOARD and the

WINES by CARRI WROBLEWSKI photography by KLAUDIA MALLY – owners of BRIX Wine Shop

that pair with it

17

M

y mother always taught me, “Garnish, garnish, garnish,” and when it comes to a cheese board, she was right. Every decadent morsel of cheese deserves an equally tantalizing partner—on the board and in your glass. But knowing

which combination of cheeses to select, what accompaniments

to garnish with, and which wine to drink can be daunting. But

it doesn’t have to be. Here are some tasty tips on how to break down the anatomy of a cheese board and what to sip with it.

Location, Location, Location If you think about the regionality of food and wine, it’s no surprise that things that grow together, go together. The Loire Valley, known as the “Garden of France,” is famous for its signature style of goat cheeses, chèvre. Paired with a Loire Valley Sancerre or a Pouilly Fumé, the bright acidity, minerality, and grassy notes of a Sauvignon Blanc are the perfect companion to tangy goat milk cheeses. One of my favorites from this region is Valençay, the famous pyramid shaped cheese that had its top chopped off. Legend has it that although once shaped as a pyramid, when Napoleon returned from a failed battle in Egypt, he was reminded of his defeat there. He then demanded the cheese to be molded incomplete. It remains that way today. The Spanish on the other hand, love their Tempranillo, and nothing tempts it more than a sliver of aged Manchego. Born of the same place, the lively red fruit gives lift and a backdrop to the savory and strong flavors of the cheese.

18

Compare

Contrast vs.

As you start to build your cheese board and think about the wines you’d like to pair with it, remember two things— opposites attract and likes go with likes. Putting together a pairing where the flavor profiles are similar can produce a mouth-watering match, just as contrasting flavors can awaken the palate. Pop the cork on a bottle of Champagne and pair it with Brillat-Savarin, a triple crème cheese named after the 18th Century epicure who once said, “Tell me what you eat, and I’ll tell you who you are.” Made from 75% butterfat this rich, creamy cheese is a natural with a glass of bubbles to help cut through the fat. No Brillat? Grab a Brie or Camembert— both are great alternatives. Or, go for opposites. Blue cheese typically strikes a love it or leave it chord with most people. I for one am in the love it league. If you’re lucky enough to score a hunk of Italian Blu al Vin Santo from your local wine and cheese shop, run, don’t walk to a bottle of Madeira, sherry, or tawny port—the most likely pairings. If sipping port on a cool Nantucket night isn’t your taste, try a bottle of Alsatian Gewürztraminer. The salty, sharp, and pungent notes of the blue cheese will magically marry with the hint of sweetness in both the wine and the cheese. If you cannot find Blu al Vin Santo, don’t worry. Stilton, Roquefort, and Gorgonzola Dolce are all good stand-ins.

B

uilding the

Board

Now that you have a few cheese pairings under your belt, it’s time to build your board. But, first things first. Take your cheeses out of the refrigerator at least an hour before you plan on serving them. Cold cheese, just like too cold wine, doesn’t taste like much. Cheese is comprosed of mostly fat, and when the fat molecules in cheese are too cold, they contract, shut down, and take the flavor with them. That’s the best part. So, remember to bring your cheese to room temperature before you assemble your board. The balance of your cheese board is the most important component, and not surprisingly, it’s anchored by your cheese

“I like to think of my board as a blank canvas waiting to be painted with flavor.”

selection. I like to think of my board as a blank canvas waiting to be painted with flavor. And with texture, comes flavor. There are three main types of milk that are used to make cheese—cow, sheep, and goat. The different milks make different styles of cheese all with varying consistencies. If you’re entertaining a larger group this summer, aim for three to five cheeses in different categories, including a soft cheese, a semi-soft/ripened cheese, a hard cheese, and a blue cheese. Having various flavor profiles and textures, you will start to create the “skeleton” of your board.

21

Garnish,

Garnish,

Garnish

It’s time to add your accompaniments, which will add color, crunch, and freshness. They’re essential to cut through the richness of the cheeses. You will want to find things that are sweet, salty, tangy, crunchy and fresh. Naturals next to your cheese are dried or preserved fruits such as apricots, honey, olives and cornichons (or any pickled veggie), nuts, fresh figs, pears, and grapes. If you want to take your board to the next level, incorporate different types of charcuterie. Favorites are Prosciutto di Parma, Finocchiona salami, speck, and kabanosy (a long, thin, slightly smoky dried Polish sausage). You can also include a pâté or terrine. Charcuterie shines when paired with a chilled glass of Nantucket’s favorite pink pour, dry rosé. Look for wines from Provence, Corsica, or Greece. So, now your board is ready, you’re just missing one thing— the vessel to carry all of this deliciousness. Go for a crusty French baguette or an array of different crackers, flatbreads, or breadsticks. You don’t want your cracker to compete with the other flavors, so go with plain. The cheese is the star. If you were never very good at anatomy, the science kind, by now you will have the cheese board mastered. Why? Because these are all the tips, and there are no rules. So just have fun and uncork your first bottle.

Y Bar

by REBECCA NIMERFROH

I

n the year 2015, after a fire damaged the small yet quaint island favorite restaurant Sushi By Yoshi, a plywood board nailed over the front door became a sort of message board of well wishes from Yoshi’s best customers.

“I miss my Dynamite rice.”

“Please come back!” one wrote.

“Miso miss you,” wrote another.

25

Messages left on the boarded up door of Sushi By Yoshi at their old location on East Chestnut Street in 2015, now relocated on Old South Wharf.

Eventually, nearly 50 messages were inscribed across the board. To Yoshi, these words meant the world, offering

inspiration during the rebuilding of Sushi by Yoshi. It would

take three more seasons for the rebuild and relocation. Now in its 26th year on Nantucket, Sushi by Yoshi is progressing yet again, this time with a new location on Old South Wharf. Like Nantucket itself, this restaurant is evolving, emerging with a new name and a deliciously expanded menu. World, meet Bar Yoshi. Located right in the middle of the shell walkway, Bar Yoshi is sure to become your new favorite spot on the wharf. With a view of the water on both sides, a small yet intimate bar will serve sake, wine and spirits. Shiplap walls will dress the place, and a small yet intimate dining area will allow diners to enjoy a variety of classic rolls, poke bowls, noodle dishes and more. “We’ll also be serving a warm lobster roll with pickled ginger slaw,” says Terry Noyes, Yoshi’s nephew turned owner and manager of Bar Yoshi. “We’re really excited about this move to the wharf. There’s certainly a large population of boaties and yachties we want to cater to.”

26

“Nantucket opened a door for us to stay in the hospitality business, and that’s a beautiful thing.”

As for the rest of us land-bound folk,

Bar Yoshi will cater

to us as well, serving up their long-favored party platters

and catering, as well as offering curbside take-out service, running your order down the wharf to your car. “We have the same phone number (508-228-1801) as the original

Sushi By Yoshi,” Terry says, “and people can still do large take-out orders and just drive by.” Terry says he’s most excited about the addition of the ceviche to the menu, served with plantain chips, and the tuna poke bowl.“Of course we’ll still serve all of Yoshi’s greatest hits, everyone’s favorite sushi rolls.” Now in retirement, yet still serving as a consultant for the space,

Yoshi Mabuchi first came to the island in 1993,

bringing sushi for the first time to Nantucket. Originally working solo in the formative location, Yoshi had a glass vase on the counter instead of a cash register, asking customers to throw in whatever they had that was close to the total price, as Yoshi didn’t have time to make change. “He taught Nantucket sushi,” says Terry,” and his business grew. It’s an American dream with a Japanese teacher.” Headed into this summer season, Terry smiles and says of their new location, “Nantucket opened a door for us to stay in the hospitality business, and that’s a beautiful thing.”

served as Dock Master for thirty years. Growing up, Christy spent summers as a dock attendant, running between wharves to tie guest lines and welcome guests dockside, including one particular man named Jonas Baker. Jonas, ten years Christy’s senior and Executive Chef at Galley Beach at the time would crack jokes during their brief encounters in between his tuna fishing jaunts for the restaurant. Christy recalls a moment during one of these conversations, looking over at the smiling fisherman and thinking, “He’s kind of cute for an old guy!”

SWEETS and

tres by ANDREW SPENCER

I

remember the summer when I was finally old enough to go to town by myself for ice cream. I rode my bike to the Sweet Shop on Main Street, the money I’d managed to scrape together safely in my pocket. I confidently walked in the door and contemplated which flavor I would be enjoying that evening. I liked to think I was acting like an adult;

all the while, all the actual adults in the place were acting like the little kid that I really was.

If there’s something more quintessentially summer than ice cream, I don’t know what it is. Long after the sticky fingers have been cleaned off, the memories linger and always bring us back to our favorite flavors. Ice cream is one of those things that puts parents on equal footing with their kids. While we’re eating ice cream, we’re all the same age. Of course, when it comes to ice cream, the actual eating of it is just the metaphorical cherry on top of the sundae. The whole process is part of the enjoyment. The anticipation that builds while you’re walking to the ice cream parlor and reaches its peak when you’re waiting for your order frames the all-important decision of which flavor is today’s big winner. Is it a chocolate day? Maybe you’re craving something fruity. Possibly, you’re leaning towards one the many specialty flavors offered by Nantucket creameries. Whatever your choice, you can’t go wrong. Ice cream is as much a part of a Nantucket summer as the beach, the ocean, and the sunset.

Call ahead for pick-up to bring to the beach or out on the boat or enjoy in the restaurant (some may only be available in-house). Salt air, sunshine and lobster – what a spectacular combination.

fterhouse is a structure on the

deck of a whaling ship where the common sailors would go to get relief from the elements. Located next to the galley, on

deck, the afterhouse was a communal room where whale men

would share stories, enjoy a meal, have a grog, or just relax

away from their duties on board. Our menu is designed to provide a full course meal, or light bites, focused on serving chilled shellfish, raw fish preparations, caviars, tinned seafood local roughage options, imported charcuterie selections, specialty sandwiches, and seasonal soups. lack-eyed Susan’s,

entering our

26th season in town, remains a favorite of locals and visitors

alike. We are a comfortable, intimate bistro with chandelier

lighting, high-energy open kitchen and a big reputation for

inspired cuisine. For the spectator, the chef’s counter is the

ticket to meeting new people and eavesdropping over the chef's shoulder for the secrets to his cuisine. Vegetarian and carnivore eat politely side-by-side while enjoying a selection from their own cellar (BYOB), or while trying a new discovery from one of the town's excellent wine stores. Guests are often seen sharing favorite libations with new friends seated next to them. The staff is available at 2pm each day to book reservations for 6pm dinner seatings 30 days in advance. They will also book same-day reservations for the two later seatings. For a change of pace, visit the village of ’Sconset on the southeast corner of the island and dine at our sister restaurant, The Chanticleer, where Old World comfort meets New World enthusiasm and Modern French cuisine.

oarding House is celebrating its 28th

Season! Chef-Owners Seth and Angela Raynor love using produce

from Island farms, seafood by local fishermen, and regional

heritage meats to create authentic market cuisine paired with old school hospitality. Our menu is influenced by the cuisines of Wine Country from California to Spain, France, Italy and beyond. Our menus are a reflection of the time we share at stove and table at home when we gather with friends. Each dish holds so many stories, from the origin of a treasured recipe. Whether it’s a bowl of house made cavatelli or grilled lobster spaghetti: we view our cooking as a recipe collection of love letters from our travels. Wine Spectator’s the “Best of Award of Excellence” for its unique collection of wines, champagnes and rosés. The veteran bar team craft both classic and innovative cocktails, anchored by a notable collection of small-batch bourbons and spirits. Selected as one of “Best Bourbon Bars.”

rant Point Grill, or as locals call

the restaurant BPG, is located at the iconic White Elephant.

Overlooking the harbor, the Zagat Survey describes the view as “a setting too perfect for words.” Sit outside on the awning-covered,

heated Harborside Terrace and watch sailboats glide by or dine inside in cooler weather. Either spot is delightful as you savor our specialties like prime aged beef, gourmet chops, native lobster, and ocean fresh seafood. Ask our sommelier to suggest some wine

pairings to complement your meal. After a day at the beach, sip and relax on the Terrace with tables right on the lawn. Try the freshest oysters and don’t miss our famous Lobster Bloody, a Bloody Mary served with a quarter pound of lobster meat on a skewer. No trip is complete to Nantucket without the Sunday Brunch Buffet, considered one of the best on the island. The sumptuous buffet features a raw bar, carving, salad, and omelet stations and the Kids’ Corner is especially tempting with our ice cream cart. O

r, The Whale

When naming his

classic American novel, Herman Melville was torn between two titles - “Moby Dick; or, The Whale”. Most people know it

by the former, while we went with the latter. Headed up by Sandbar owners Nick Nass and George Kelly, along with Jamie Lee Nass, Emily Berger, and Chef Manny Rojas, or, The Whale is sure to be a great addition to the

Nantucket restaurant scene this season. With a prime location in a storied Main Street building, this bistro and bar will be serving daily brunch and dinner seven days a week in full season. Whether enjoying breakfast in the newly renovated dining area, cocktails and appetizers at the 22-seat oak bar. A birthday celebration on the beautiful outdoor patio accompanied by live acoustic music, or, The Whale offers plenty of settings to enjoy our casual American bistro cuisine. If there’s no time to dine for breakfast, be sure to grab a coffee and one of Manny’s daily doughnuts from our morning to-go counter. We look forward to seeing you on Main Street!

O

ran Mór, long heralded for its

unwavering quality, has been an island standard for over twenty

years. As of 2016, this Nantucket class is helmed by Nantucket Native Edwin Claflin, who seeks to contemporize the cuisine

while staying true to the cozy, old New England aesthetic. This starts with the beverage program and cocktails like the

Flaming Daisy, a spicy margarita rendered so by the ice itself one massive red berg of juiced Fresno Chilis that yields more heat with every passing moment. If it’s more of a wine night, the award-winning list features over 150 selections with styles and price points for every occasion. Meanwhile, Chef Claflin - an island native who cut his teeth with Manhattan legends Daniel Boulud and David Bouley - utilizes local produce, meat, and seafood to create globally inspired, seasonal cuisine that is playful yet precise. Dishes like the Kale Caesar Salad and Oysters Bourguignon are delightful riffs on American classics. His ethereal pastas are novel and vibrant, and when available, the Black Truffle Bucatini is not to be missed. So whether you’re popping up for a quick drink at the one of a kind horseshoe bar, or nestling into one of three dining rooms for something more intimate, you will enjoy contemporary island fare in a timeless Nantucket setting.
