Herring Canapés with Beetroot Tartare and Sliced Avocado 2 cooked beetroot 2 tbsp balsamic vinegar 2 tbsp olive oil salt and pepper to taste pinch of cayenne pepper 6 cured herring (hareng) 1 avocado, peeled and sliced 12 slices of bread METHOD Dice the beetroots into small cubes. Drizzle with balsamic vinegar and olive oil. Season to taste with cayenne
