On the precipice of America’s entrance into WWII, malnutrition and vitamin deficiencies threatened to undermine the nation’s defenses. The National Research Council drafted a nutritional program, calling for the “production and promotion of ‘enriched’ breads high in vitamins and minerals.” Despite war hardship, bakers gave enthusiastic approval to the plan and saw it through. At its 2011 Convention, ABA celebrates the 70th Anniversary of the Enrichment of Flour.
