These Guys & Girls with their kitchen teams will be working regular long shifts cooking seasonal favourites in vast quantity ready for us all to have that special night. Colchester newest restaurant, Number Nine in North Hill, a beautifully restored town house, is taking fine dining in Colchester to a new level thanks to the excellent skills of Elton Thompson, whose impressive CV includes an enviable list of Michelin and highly accredited restaurant establishments.

Lek has worked through the ranks at the Lemon Tree kitchen for the past five years and is now on top of his game. A trip to England in 2005, to earn some money for his son’s medical treatment has now turned into a career in our establishment. A butcher by trade, Lek is very keen on using local, seasonal meat at peak quality.

Born and raised in Suffolk, Edward has developed an intense passion for cooking seasonal, local produce to the highest standards over many years. Edward opened the Rose & Crown in April 2010, and has subsequently been runner-up in the Suffolk Magazine ‘Restaurant of the Year 2010’ and won the EADT “ONE” Competition for East Anglia’s Best Entrepreneurial Talent. The future holds many other opportunities!

My style of cooking is Modern British, but you will find the flavours of Europe and the orient on my menus. I like to keep my dishes simple using locally sourced and seasonal ingredients. My passion lies in cooking and eating meat, whether it be char grilled lamb cutlets or very slow braised oxtails. My favourite season for fruit and vegetables is winter, with all of its earthy sweet root vegetables and robust greens.

With 18 years in the kitchen, Matt has seen and learnt a lot. Now heading the kitchen at Mussi’s, Matt is using this wealth of experience and adding his own flair, to deliver fresh International cooking in a modern environment. With heavy Italian influences and using local ingredients and cooking for the moment best suits his style.

Under award-winning head chef Jon Tindall, former head chef of the Savoy, this modern British cuisine champions the finest local and seasonal produce with an emphasis on comforting dishes. Meat eaters can enjoy delights such as slow roasted Suffolk pork belly, served with sweetened braised cabbage, sweet potato chips, black pudding sausage and apple compote. Seafood lovers can create a dish to suit their own pallet by making a selection from our fresh fish counter and combining with an array of sides including steamed aromatic rice, sweet potato mash and tomato and red onion salad.

I have spent most of my career working on and around Mersea Island and it’s a paradise for anyone interested in fresh food. The island abounds with its fresh fish and shellfish, caught and landed daily, with the local creeks abundant with oysters, but also samphire when in season. Local farms and growers provide most of the produce I feature on my menu, backed up by really excellent suppliers who source the freshest and best ingredients. I wouldn’t say that I have a specific style of cooking, but rather make the most of superb ingredients which speak for themselves.

I love the freedom afforded me at the Old Siege House to use my creativity gained from working in kitchens all my adult life, experience that includes a 5 star hotel in London. My passion is in creating new twists to classic dishes, using French cuisine with influences from across Europe to enhance classic British dishes. For example, who would think that deep frying a trio of fish including scallops in cider batter with chips in duck fat, would create such a quality, fine dining experience as my trio of fish served with chips and pea veloute. I look forward to cooking for you in the near future.

I like to take traditional gastro-pub classics and add a contemporary twist. Part of my passion is to use locally-sourced ingredients from Colchester, as there are so many great products produced. My favourite food to work with is fresh fish; especially cod and pollock and combining strong meaty flavours, such as chorizo, with these delicately flavoured fish. My drive and passion comes from mixing new ingredients and flavours to produce original and exciting menus and I’m hoping over the next 6 months to scoop The Angel Inn a rosette or two!

At The Treble Tile, we aim to offer a contemporary menu of predominantly British food, although you never know when chef will feel the urge to serve up a curry! Our menu will reflect seasonality and, as such, changes every few weeks, although perennial favourites such as steak and fish & chips will stay. In addition, we offer a selection of lighter dishes at lunchtime - such as chicken Caesar salad, mussels, dressed crab, or a steak sandwich, plus a selection of fresh fish dishes.

At the Green Room we serve a predominately British menu with a modern twist, we pride ourselves on using local ingredients to make delightful and fresh dishes, sourcing ingredients from East Anglia wherever possible and changing the menu daily to reflect what is both fresh and in season. Locally sourced meat is always a favourite at the Green Room and this year all of our turkeys are coming from Great Tey and our potatoes are from Wormingford.

They offer a 4 course 'Eat As Much As You Like' buffet at £14.50 per adult.
