Lok Lak Taste of Cambodia Loc Lac (occasionally, lok lak) is a superb expression of Cambodia’s recent colonial history and the imagined authenticity that is generally transferred by foreigners onto Asian food; an authenticity that is mirrored by the way that Khmer national culture itself is constructed.

Said to be Cambodia’s second signature plate, beef loc lac is ultimately a beef salad, with a few modern twists added along the way. Today’s version is commonly stir-fried strips of beef served atop crispy lettuce leaves, sliced tomatoes, cucumbers and onion. This is accompanied by French fries and a fried egg is served on top. The best part is the dipping sauce of lime juice and pepper – ideally renowned Kampot pepper to make the tastebuds truly pop. Like fish amok, loc lac tends to be a favourite with foreigners who also tend to confuse it for something much older, more Khmer and therefore somehow more authentic. What could be more authentically Asian than beef stir-fried with commercial ketchup and soy sauce, then served with a side of fries? I suspect that much of its popularity also comes from loc lac hitting directly within the Western palate and being packed full of umami-ness thanks to the folks at Ajinomoto. While beef is the most common meat used, pork, chicken or occasionally venison do come into play. Often the marinating step is removed entirely, and the beef is immediately stirfried with garlic and oil instead, or the sauce/oil is cooked together with the beef. The sauce elements seem to be interchangeable depending on availability – but there was some consensus that the sauce should appear brown in colour and contain the key components of oil, sugar and MSG.

Visit Oudong

It was founded by King Srei Soryapor in 1601, when the nearby capital Longvek was abandoned following an invasion by Thai forces. Located around the base of the twin-hilled Phnom Oudong mountain, the town became the official capital in

Cambodia’s ancient capital The town of Oudong, around 40 kilometres northwest of Phnom Penh, may appear quiet and unassuming these days but it was once the proud capital of Cambodia for over 250 years.

1618 and was given the name Oudong Meanchey. Oudong is derived from the sankrit “uttunga” meaning great or supreme. The site remained a royal residence for a long succession of monarchs, some of whose ashes were interned in large stupas built on the predominant ridge of the mountain, known as Phnom Preah Reach Throap or “Hill of Royal Fortune”. Legend has it that an 18th Century Chinese emperor was concerned by reports of Oudong’s huge wealth and the belief that a naga, or mythical multi-headed serpent, would emerge from the cavern and herald the start of Khmer world dominance. So he commissioned the construction of the Arthaross Temple atop the hill with a Buddha facing north towards China, rather than the traditional east. King Ang Duong’s reign from 1841 to 1860 welcomed an impressive range of improvements in infrastructure, including construction of canals, terraces, bridges and a great number of pagodas. However, King Norodom shifted his royal court in 1866 to its current site in Phnom Penh. In 1992, Oudong was added to the UNESCO World Heritage Tentative List in the Cultural category and is now a popular site for Cambodians to visit, especially during religion celebrations. It makes for an ideal daytrip out of Phnom Penh. Climbing the hill requires considerable effort, but you are rewarded at the summit with spectacular views of the surrounding countryside. You can have fun with the macaque monkeys which frequent the steps on the way up too.

Lakhon Khol

a Khmer Tradition Silence ripples through the theatre as performers adorning ornately-decorated costumes in hues of yellow, green and blue interwoven with golden fibres sit on the stage behind an altar. Several brightly coloured papier maché masks rest on its surface.

The high-pitched sound of a pinpeat orchestra shatters the silence. The performers spring to life as they bow to honour the masks they are about to put on before disappearing from the stage. The orchestra gains momentum as a demon pokes its head from behind the curtain and gracefully makes its way to the centre of the stage. A lively performance follows as the traditional Lakhon Khol show gets underway. Stretching back to the Angkor Empire – the treasured masked dance can be seen etched onto bas reliefs at Angkor Wat – the first performance is believed to have taken place in the 9th century when the Khmer capital was at Kulen Mountain. The performance is an art of epic proportions that retells select stories from the Reamker, Cambodia’s version of the Hindu poem Ramayana. The elaborate performances traditionally involve more than 100 actors, complete with a percussion-based orchestra, narrators, and singers. Traditionally, it was performed during Khmer New Year to ring in good prosperity and health for the year ahead, as well as during special ceremonies. The intricate masked dances also took over villages to bring on rain or ward off illness. Forming a pivotal part of Cambodia’s rich traditional arts, Lakhon Khol was inscribed on the UNESCO List of Intangible Cultural Heritage in Need of Urgent Safeguarding in November 2018. Announcing the title, the Ministry of Fine Arts and Culture said in a statement: “Tangible and intangible heritage of our country have helped Cambodia become well-known on the international stage and they are important players on the world heritage stage. The decision to include Lakhon Khol in the world heritage list is a new pride for our nation,” Preing Chheang, a Lakhon Khol professor at the Faculty of Choreographic Arts in the Royal University of Fine Arts (RUFA), routinely danced in his youth for King Norodom Sihanouk. As a member of the Royal Ballet in the 1950s, he performed Lakhon Khol at the palace to mark Cambodian New Year. He likens the traditional art form to Khmer classical dance. “The movements, costumes, masks and roles are all quite similar,” he says. Many of the kbach (hand gestures) are the same, the costumes are richly decorated, and the characters bare similarities, from the deities, demons and apsaras, to monkeys, princes and princesses. The main difference lies in the use of narration. In classical dance performances, singers produce enthralling chants, whereas in Lakhon Khol they are used to narrate the story. Another marked difference is classical dance uses a mix of male and female performers, while, traditionally, Lakhon Khol was performed only by men. This has now been adapted so females can perform. In modern shows, females are often cast in the main roles of Preah Ream (Rama) and Preah Lek (Laksmana). It is believed the art form’s popularity peaked during the reign of King Ang Duong from 1841-1844 and 1845 to his death in 1860, who included a Lakhon Khol troupe among his court dancers. After his death, the troupe dissolved, and the art form started to fade. “Performances became a family affair,” says Chheang. “The art form was passed down from one generation to the next.” By the 1970s, only eight professional Lakhon Khol troupes existed. Today, the only remaining troupe from these can be found at Wat Svay Andet, 15km from Phnom Penh in Kandal. A further two troupes have since formed in Kampong Thom and at the National Theatre, and Lakhon Khol now forms part of RUFA’s curriculum alongside folk dance and Sbaek Thom (large shadow puppet theatre). Lakhon Khol was inscribed on the UNESCO List 28th November 2018. This, combined with its recently-awarded World Heritage status, have led to high hopes that the treasured dance will survive well into the future. ◗

Cambodian’s have been celebrating Lunar New Year ever year because Chinese have been immigrating to Cambodia for more than 1,000 years, the vast majority of Khmer-Chinese settled between 1910 and 1950, as their own nation waged war and revolution. Preparations start well ahead of New Year. Red and gold lanterns and banners line streets, homes and workplaces, and ornate fruit and yellow-flowering bushes, Angkea Sel, decorate houses. If the trees blossom during the first three days of the New Year, it is believed the year ahead will be filled with good fortune. Sale signs are flung up in stores across Cambodia as shop owners share their wealth. Restaurants also start serving a feast of food related to the celebrations, including red roast pig, rice cakes, dumplings, noodles and fruit. Celebrations begin on the 30th day of the last lunar month, and continue until the end of the 15th day of the first lunar month. This year’s New Year starts on January 25 which marks the first full moon of the new lunar year. Traditional lion dancers parade through the streets of Phnom Penh, and other cities, weaving past iconic landmarks, homes and businesses. The lions and their rowdy entourage of musicians and dancers are said to scare away bad spirits and bring good luck and prosperity to any place they enter. On the night of New Year’s Eve, people flock to pagodas to make offerings. These are believed to wash away the previous year’s bad luck and bring good fortune in the next. In Phnom Penh, Wat Phnom is the most popular spot, with crowds flocking there, especially on New Year’s Eve at midnight, to celebrate.

Noun Chhay Lot In our Q&A, we talk to Mr Noun Chhay Lot, a former student at School of Fine Arts specializing in Lakhon Khol, is currently working at the Royal University of Fine Arts at the Faculty of Choreographic Arts. He is still performing in Lakhon Khol art form as a character of Preah Ream. After being selected, he was given the chance to perform in the Royal Ballet of Cambodia dance as the Royal Garuda character by the late Princess Norodom Buppha Devi.

Q Can you tell us briefly about the history of Lakhon Khol? A Lakhon Khol originated from Lakhon Khol “Pheaney” or traditional masked dance is the only performance that retells selected stories from the Reamker. It is one of the Cambodia’s rich traditional arts that came to life before Angkor era. The very first performance was believed to have taken place in the 9th century and can be seen etched onto the bas-reliefs on the walls of Angkor Wat Temple. During Angkor era, Lakhon Khol was performed regularly only by men in the Royal Palace. The rationale was not clearly stated. However, according to the researchers, due to the growth of religion, there was a conflict between Hinduism and Buddhism during Jayavarman VII era (1181-1218). At that time, many female dancers were murdered and used as mistresses, so the performance of Lakhon Khol was conducted by men. During Sangkum Reastr Niyum time, only eight professional Lakhon Khol troupes existed. Today, the only remaining troupe from these can be found at Wat Svay Andet, 15km from Phnom Penh. Two new teams of Lakhon Khol were formed after the war including the Kampong Thom team and the National Drama troupe from the Department of Culture and Fine Arts and Ministry of Culture and Fine Arts. Today, Lakhon Khol is also incorporate into the curriculum of School Fine Arts specializing

A Lakhon Khol was seen to have been performed on Khmer New Year or when the country or an area in the country experienced drought. The performance was to ring in good prosperity and health by selecting a proper episode. In my point of view, Lakhon Khol shoud be performed more often than in the past. It should be incorporated into the national event. It should be used to welcome delegates in a particular event and performed regularly every week or every month at the theatre.

Q When did you start learning to perform Lakhon Khol? What inspired you to choose to learn Lakhon Khol?

A I started learning Lakhon Khol at the age of 13 from 1999, so it’s been 20 years now. The reason why I chose this major is the fact that I am passionate about this art Lakhon Khol and wish to contribute to this sector. I have decided since young age. One more thing is my family condition. The art school provides me with the knowledge and skill, and I have become what I am today.

Q What difficulties and challenges did you face when you learned Lakhon Khol? A To study this skill, I have to be very, very patient as it is a masked dance. We have to be physically strong, and it requires us to be smart as well. There are a lot of people registering for the course. However, only a few can complete their study. Another issue is the job market.

Q How do you conserve Lakhon Khol for the next young generation?

A To me, Lakhon Khol should be publicized more broadly so the Cambodian people can find out more and love. Lakhon Khol should also be incorporated into the curriculum of the Ministry of Education, Youth and Sport. Workshops about this treasured masked dance should be conducted at all academic institutions on a regular basis so the Cambodian people can discover the foundation of it. And there should be a regular show of Lakhon Khol for the Cambodian people, especially kids and youths. The next generations of performers and the current performers of Lakhon Khol should be appreciated and be provided with a proper employment due to their sacrifice and passion.

The K6 Fam trip to Da Nang October 2019

DAY 1:

An inspiring trip for K6 as well as invited guests from the hospitality industry. A lot of fun for everyone. Arriving in Danang Aiport, then to Da Nang Golden Bay Hotel. A wonderful Gala dinner at the Novotel Da Nang Premier Han River. We visited the Heroic Mother Statue and lunched at Sabirama restaurant in Cam Thanh.

DAY 2:

In Hoi An ancient town we saw the pagodas, temples, shrines, guilds, ancient houses and architectural relics. Another wonderful dinner in Hoi An, Silk Village Resort and Spa, Pavillion restaurant.

DAY 3:

A visit to The God of Fortune Mountain. Then Linh Ung, Son Peninsula, then visiting Da Nang Museum. Eventually checking in at Cocobay. Dinner and rest at Cocobay.

DAY 4:

Departing to visit Sung World Ba Na Hills. Then Sun World Bà Nà Hills lunching at Ba Na Hills. Fun and Games at Sun World Bà Nà Hills. Returning to Da Nang, then checking in at Danang Golden Bay. Dinner was at the Sea Food Restaurant. Finishing with a trip to the Asia Park. The trip was a great opporunity for everyone to inspect some hotels, resorts and tourist locations and get to know and explore Danang better.

The ATR 72 is widely recognised as the most cost-effective regional aircraft, a reputation that has made it the preferred choice for short-haul flights.
