Aults Seize the Day
Couple lives life of education and adventure
with a toddler, a first grader, a Christmas tree and a dog (of course). With each stop along the way — and there were many — one of us came down with the flu.”
The family settled into a new life in Lake Oswego as Kip developed the Lewis & Clark MAT degree program for science teachers. Phyllis juggled child-rearing and part-time work, managing to squeeze in an EdD in educational leadership from the college.
Phyllis and Kip are devoted to three grown children and three grandchildren. Daughter Kori works as the outdoor programs manager at Lewis & Clark. In the summers, she runs her own backpacking adventure business, Wander Women. Son Logan is pursuing a credential in radiography at Portland Community College while busy with woodworking projects. Their eldest, Toby, a climate scientist at Cornell University, studies drought conditions in the Southwest and California.
By Olive Gallagher, Contributing Writer
Ever wonder why some folks never seem to have enough time to get anything done, while others seem to pack three lifetimes of accomplishments into one?
Take Kip & Phyllis Ault of Lake Oswego, seasoned educators and outdoor adventurers. Kip grew up in East Cleveland while Phyllis was raised in New York and Wisconsin. They met as teachers at The Colorado Springs School. At the end of the school year, they set off to hike one hundred miles along the Continental Divide. The following year, their colleagues kept trying to fix them up with each other, not knowing they were secretly dating and shopping for wedding rings.
They married in 1975 while team teaching at the school. Their educational journey took them east to Cornell University where Kip’s studies in paleontology and geology led to his PhD in science education followed by an appointment at Indiana University in Bloomington, where Phyllis earned a master’s in educational technology.
A serendipitous opening at Lewis & Clark College — and the promise of outdoor adventures — beckoned them westward. The couple humorously recounted their holiday season move. “There we were in our little red Chevy wagon
For decades, Phyllis led educational research projects at Education Northwest, with a special commitment supporting tribal educators. Kip enhanced the Science MAT with field courses in Oregon geology, Columbia River ecology, and Costa Rican biodiversity. A year in Costa Rica (1993–1994) found everyone in the family on the road to fluency in Spanish.
Retirement opened doors for Kip to teach about learning science to students at Beijing Normal University and complete three non-fiction books aimed at inspiring science teachers: two critique the history of reform in science education and the third — “Do Elephants Have Knees?” — recounts stories told in fossils of whale, elephant and bird origins (www.kip-ault.com).
Today, the couple’s adventures and contributions continue. On the cusp of 60, they were rafting the Grand Canyon, and at 70, they were cross-country skiing in Yellowstone. When not kayaking or practicing marimba or hammered dulcimer, they tutor recent immigrants and refugees in English at Tigard United Methodist Church.
No matter how busy the couple’s calendar gets, the Aults never forget to seize the day.

Bloomin’ Good Time
August and September is Dahlia Festival
for its original location a few miles downriver from downtown Portland, the operation calls Canby home. Now managed by the second and third generations, Swan Island Dahlias remains the nation’s largest dahlia grower.
Primarily a mail-order company, Swan Island Dahlias ships more than 500,000 tubers across the U.S. and Canada every spring. However, the Gitts family offers fresh-cut flowers during the summer months, along with a charming farm and gift shop open year-round that is undergoing a huge remodel, set to open in August 2023.
To celebrate the blooms, Swan Island Dahlias hosts the nation’s largest dahlia festival in August and September with something for everyone: art classes, music concerts, food trucks, a Sunday Market and, of course, gorgeous fields for strolling among 375-plus varieties.
By Hilary Berg, Staff Writer
In 1927, Charles Lindbergh made his famous solo, non-stop transatlantic flight in the Spirit of St. Louis. The same year, Swan Island Dahlias planted their first tubers. For Oregonians, there’s no need to catch a plane to experience the almost 40 acres of stunning dahlias in full bloom from August to September. With no admission or parking fees, visitors can witness the stunning display of colors and textures that inspire art, poetry and more in the charming town of Canby. For Nicholas Gitts and his family, dahlias are their everyday, and have been since 1963. Although the company is named
For Swan Island Dahlias manager Heather Gitts-Schloe, Mikayla Miranda remains one of her favorites. “She is stunning, low growing, a great cut flower and a show stopper!” As for the most unusual, Schloe says look for the Japanese Bishop with its striking black foliage and red flowers.
While visiting, be sure to choose some tubers to order for your own garden. In Oregon, Schloe recommends waiting until the ground is workable and warm to plant — typically around Mother’s Day, as you can plant usually late April through May.
She offers more advice: “In our climate, do not water the tubers when you plant them. Instead, wait to water them when the green sprout appears above the ground. Then, they will need lots of deep watering during the summer months to thrive in full sun.”
Whether you’re seeking fresh-cut flowers or tubers to create your own mosaic of blooms, Swan Island is THE place for dahlias. Mark your calendars, clean your vases and get ready for unforgettable arrangements.

A network of trusted travel partners, both domestic and foreign, stand ready to assist along the way to ensure an EXPERIENCE that goes BEYOND™. Beyond all expectations. Beyond all dreams.
With the many booking choices available, why choose Travel & Cruise Desk? Longevity in the community. Experienced staff amongst the top in the industry. Attention to detail. In 1965, Julie Shipley established Julie’s Travel Desk, now Travel & Cruise Desk, an ideal business for Julie to employ her gifts of creativity, attention to detail, and desire to help others. Sandi Hanna, Julie’s daughter, joined Julie’s Team in 1972 and over the last forty years has played a major role in the development of the agency’s luxury travel services. Taking over the business in 2019, Jamie Anderson became a 3rd generation owner and subsequently changed the agency name to Travel & Cruise Desk, with the desire to reflect a more contemporary, luxury and upscale brand.
“We focus on once-in-a-lifetime style trips and want our client’s experience to go beyond their expectations,” as Jamie explains the EXPERIENCE BEYOND™ tagline. “But it also points to the fact that our staff is amongst the most experienced in the industry. I’m a lucky guy to have such a great team,” he acknowledges. “They really are amazing. Just take a look at the reviews they have online.” A journey with Travel & Cruise Desk begins with the Concierge who introduces clients to the agency, connects them with an Advisor
and sees that they are taken care of throughout the booking process. Advisors collaborate with the client to “Inspire, Create and Enhance” every detail of the trip and develop an itinerary designed to surpass all expectations. Once on the journey, clients are never “alone.” Travel & Cruise Desk is there every step of the way. They are the client’s advocate and guide.
In the spirit of “giving back,” Travel & Cruise Desk donates 10 percent of all professional planning fees to Travel Elevates, a charity that leverages global travel partnerships and connects travelers to projects that will empower local communities around the world through education and economic growth. Additionally, Travel & Cruise Desk hosts an annual Trunk Show which showcases various partners, such as ocean cruise lines, river cruise lines, tour operators and package vacation suppliers. Free and open to the community, existing and potential clients can visit the office and talk directly with the partners about travel experiences and dream destinations. The event also serves as a fundraising platform for Hunger Fighters, a local nonprofit food pantry; attendees are encouraged (though not obligated) to make a donation.

PET TIPS FOR AUGUST
By Donovan Darling, Staff Writer
TAKE A WALK: Taking a walk with your dog is a great way to relieve stress, get exercise, get away from your desk and into nature. Science has shown that being immersed in nature is incredibly beneficial. And grounding — like putting your feet to the earth — even more so, as it has been shown to reduce inflammation.
DRINK UP: Don’t leave alcohol unattended, as it’s potentially poisonous to pets. If swallowed, they can become weak and intoxicated, depressed or even go into a coma. If you are drinking alcohol on a hot day, make sure to drink plenty of water to avoid heat stroke. Similarly for your pets, keep a bowl of cool water always at the ready.
FLAME ON: There’s nothing like a smoky grill on a warm summer day. But some matches and lighters contain chlorates, which can damage blood cells and impact breathing, or even cause kidney disease. Yikes! Lighter fluid can irritate the skin too, and if swallowed can cause GI irritation or nervous system depression. So keep these contained while cooking up your grub.
CHILL ON THE PATIO: While your hardscape patio might be photo-worthy and low maintenance, it makes for a hot surface for your pets’ paws. This goes for asphalt, concrete and sand. Make sure you have a cool spot for them to hang out — a dog bed or nice patch of grass.
KEEP COOL: Just as humans suffer from heat stroke, so do pets. And interestingly, a dog house or other confined space makes it worse due to the lack of airflow and ability for that space to heat up in direct sunlight. The best spot for your pets to cool down is actually under a shady tree with a bowl of cool water. And watch for signs of heat stroke in your pets, including staggering, panting and excessive drooling.
Warm nights, BBQs and summer sun! Here are some tips to keep your pets safe and happy during the rest of this wonderful season.

Volunteer given OSU Lifetime Trustee Award
his involvement in projects such as the library’s complete renovation, the construction of a new School of Business building, and the establishment of a football stadium.
In recognition of his outstanding contributions and unwavering support, the university staff honored Roy with the Lifetime Trustee award during a special ceremony held as part of the 75th anniversary celebration of the foundation. The event was attended by family, friends and esteemed guests, including his two daughters, one of whom flew from South Carolina to attend.
In a letter to Roy announcing his award, President and CEO of the OSU Foundation Shawn Scoville wrote: “This award honors the many years of service you gave to the board, and the expertise, dedication, and generous support that make you stand out as an outstanding trustee. You were a relationship builder extraordinaire, and you encouraged us to be more aspirational.”
Roy’s love for his alma mater is evident in his lifetime of service, the way he speaks so highly of his university and the collection of beavers and OSU awards he proudly displays throughout his apartment at The Stafford in Lake Oswego.
Roy volunteered in student recruitment alongside his late wife Shirley. The happy couple were high school sweethearts and attended OSU together. He proposed under the Trysting Tree, a popular romantic place where students exchange fraternity pins and propose. They were married for 47 years. He remembers their incredible adventures together, traveling with friends around the world.

Easy Pavlova
Cloud-like meringue + fresh fruit
YIELDS 15 MINI PAVLOVAS
Ingredients
6 large egg whites, room temp.
11/2 cups granulated sugar (plus 2 tablespoons for whipped cream)
2 teaspoons corn starch
1/2 tablespoon lemon juice
1/2 tablespoon vanilla extract
11/2 cups heavy whipping cream
4–5 cups fresh fruit
Directions
Preheat oven to 225˚F. Line large baking sheet with parchment paper. Using stand mixer, beat 6 egg whites on high for 1 minute until soft peaks form. With mixer on, gradually add 11/2 cups sugar; beat 10 minutes on high, or until glossy, stiff peaks form. With spatula quickly fold in 1/2 tablespoon lemon juice and 1/2 tablespoon vanilla extract; then fold in 2 teaspoons corn starch; mix until well blended. Using a Wilton 1M tip, pipe meringue into 3- to 31/2-inch wide nests onto parchment. Indent center with spoon. Bake at 225˚ for 1 hour and 15 minutes — do not open oven door while baking. Turn oven off and keep door closed another 30 minutes. Outsides will be dry and crisp to the tap and a pale cream color; insides will still be marshmallow soft. Transfer pavlova, still on parchment paper, onto counter or rack; cool completely. Beat cold whipping cream with 2 tablespoons sugar in cold bowl for 2 to 21/2 minutes until whipped. Pipe cream onto pavlova and top with fresh fruit. Garnish with fresh mint, chocolate shavings, chopped hazelnuts. Enjoy!
