Middlesex Community College’s Academy of Health Professions (AHP) offers shortterm training and college-credit programs that could lead to a satisfying career in an entry-level health care field. Programs offered include

Certified Nursing Assistant, Medical Billing & Coding and Phlebotomy. AHP offers three levels of study and a flexible schedule that includes day, evening and weekend courses. All classes are held on the Lowell campus. Registration is now open for fall-semester courses at Middlesex. Classes begin Tuesday, Sept. 4, on the Bedford and Lowell campuses, and online. Financial aid is available for those who qualify. A complete listing of fall course offerings can be found in MCC’s Fall Academic Advising Schedule, available on the college website: AHP offers a variety of traditional and non-traditional courses, career counseling and support, as well as tutoring. Two new clinical laboratories provide students ample space and the lab equipment necessary for handson training. action unlimited For viewers devoted to seeing early motor vehicles in operation, this film highlights the use of Henry Ford’s Model Ts in the war. The film shows one way in which Americans, both men and women, became involved in World War I in Europe prior to America’s entry into that “Great War.” Seeing the Model T in action would also be a good introduction to what will be going on behind the Museum on 94 Jackson Road during the weekend following this program. That’s when the Museum plays host to Living History reenactors of World War I. Men and women in WWI uniforms will be on hand to dis-

play and talk about collections of WWI military paraphernalia and equipment expected to include a vintage Model T ambulance. There will be light refreshments and the chance to talk with others interested in American and especially military history on July 21st with the same expectation at Living History Weekend, July 28-29, when refreshments will be “beefed up,” so to speak, by a lunch truck. Ed Klekowski, a University of Mass.-Amherst professor, compiled this documentary. It is based on his years of research in France and Belgium as well as into U.S. archives. Spellman Museum Free On Friday July 20 The Spellman Museum of Stamps & Postal History at Regis College in Weston is celebrating summer with a special exhibit celebrating the 49th anniversary of the landing on the moon. A good example is Stuffing and V-egg-ie Skillet Supper, a handy, one-pan meal. The recipe combines vegetables, a grain food and a protein source all in one. It’s quick-cooking, too. After the water boils for the veggies, it takes only seven minutes for this family-friendly entree to be ready to serve. Along with plenty of protein, the recipe provides one grain and one vegetable serving for young children. For bigger appetites, double the amount of veggies to get more vegetable servings into a single meal. Just cook a little longer. Use the smaller amount of thyme to please younger taste buds, the bigger amount for more

frozen green beans 1 to 1 1/2 teaspoons thyme leaves, crushed 3 cups unseasoned stuffing cubes (about 4 oz.) 1/2 cup (about 2 oz.) grated Parmesan/Romano cheese blend, divided 4 eggs Evenly coat 10-inch omelet pan or skillet with spray. Add broth, corn, beans and thyme. Cook over medium-high heat until broth is boiling. Reduce heat to medium. Simmer 1 minute. Add stuffing cubes and 1/4 cup of the cheese. Stir until all ingredients are evenly distributed and bread cubes are moistened. With back of spoon, make four indentations in mixture. Break and slip an egg into each indentation. Cover. Reduce heat to medium-low. Cook until egg whites are completely set and egg yolks begin to thicken but are not hard, about 4 to 6 minutes. Sprinkle with remaining 1/4 cup cheese.
