ACE ENDICO: a history of growth. Founded in 1982, Ace Endico is the largest fine foods purveyor and distributor in Westchester and Putnam Counties, delivering throughout the Northeast. We are highly committed to understanding and anticipating our customers’ needs, and developing service solutions that garner success. Home to over 500 dedicated employees, Ace Endico is headquartered in Brewster, NY with a marketplace that brings high quality ingredients to the public. Since the company’s inception, the state-of-the art facility has expanded to 200,000 sq. ft. and is currently home to a comprehensive inventory of approximately 15,000 products. is a premium quality

chocolate used by culinary professionals. It contains a higher percentage of cocoa butter than baking chocolate. When used for dipping, molds, and enrobing, couverture chocolate must be tempered, an intricate process of melting and cooling which results in a shiny surface and a firm texture.

Baking Chocolate

is sometimes found in blocks

or pre-measured squares and tends to have a low cocoa butter content, typically below 33%. Due to the reduced cocoa butter and general usage in baked goods, there is no need to temper baking chocolate.

Ganache

is an emulsion made by combining chocolate with

heated cream to create a smooth, rich confection. A ganache made from equal parts chocolate and cream is a perfect filling between cake layers, or a thick glaze to pour over the top for an elegant finish. Firm ganache has a fudgy consistency resulting from a higher ratio of chocolate over cream, and makes a delectable filling for truffles.

C h o c o l a t e L i q u o r is a liquefied substance created

when heat is produced in the process of milling cocoa nibs. Also referred to as unsweetened chocolate or cocoa mass, it can be used to make a variety of chocolates and chocolate products.
