Ingredients: 5 Apples (cooking apples with higher starch), peeled, cored and chopped 3 shots of Jack Daniels 1 cup raisins 3/4 cup chopped onion 1 cup Apple Cider Vinegar 1/2 cup brown sugar 2 Tbsp grated orange peel 2 Tbsp grated fresh ginger 1 tsp Allspice

Directions:

Combine all ingredients (except Jack) in a medium saucepan and stir well. Bring to a boil; reduce heat and simmer, covered, for 30 minutes. Uncover and add the Jack (all 3 shots go in the pan). Simmer over low heat for 10 minutes more to cook off excess liquid; let cool. Cover and refrigerate for up to 2 weeks.

Serve with pork chops or pork roast.

Zombies, Zombies, Zombies - the popular movies and shows spurred an entire new and fun trend in our towns in Southeast New Mexico - out of the first privately organized events a couple years ago, a tradition evolved: Zombie Parades, ending in the popular choreographed Michael Jacksonâ&#x20AC;&#x2122;s "Thriller" Dance. A fun event entire families are enjoying. If you have never participated, usually a week or more before the Parade you can practice the dance at your Civic Center or other event place (Check with the local Chamber of Commerce for details - or keep an eye on our PecosDiningGuide Facebook page).

THE BEST PART OF HALLOWEEN ARE OF COURSE THE GHOST STORIES:

Did you know, that there is one ghost story about a female hitch hiker at the "other" White Sands: Mescalero Sands, East of Roswell? She has been seen only in Fall, when the days get shorter. Truck drivers would see a woman walking along the road and when they stopped and got out to see if she needs help, all they find are her foot prints in the white sand which vanish in front of their eyes.

An other not very well known ghost is the Samoan Princess, wife of the New England sea captain John Lee, who sailed around the world three times,

before he was talked in to moving East to the "Land of Milk and Honey" (New Mexico) with their 11 children - during the long trek East they lost all their cattle and horses (they drank alkali water) and had to leave most of their belongings just to reach Penasco. Despite the harsh beginning the family did not give up and thrived and later moved to White Oaks, NM. Locals see Mary's ghost (the Samoan Princes) in the dusk - just a shimmer of her walking in a white dress on the roads in White Oaks. She had a very happy life there, perhaps she did not want to leave.

There are so many wonderful stories out there, you can research them in the Historic Archives and libraries. You are really not into Halloween or you do not want your kids to "Trick or Treat"? The local communities and local churches offer great alternatives: Some do Costume Parties, where everybody comes as their favorite Bible Figure or Saint, the Civic Centers offer Safe "Trick-or-Treating" parties which stay indoors in a safe environment.

Green Chile Winning Recipe INGREDIENTS: 6 corn tortillas 1 cup green chiles roasted, peeled and chopped (heat you desire) Â˝ cup diced red bell pepper Â˝ cup diced sweet onion 4 eggs

1 12 oz. can evaporated milk 1 tsp salt 1 tsp garlic powder 1 1/2 cups Monterey jack cheese, shredded 9 inch deep dish pie plate Butter, softened

Preheat oven to 350 degrees.

Generously grease pie plate with butter.

Line pie plate and up sides with corn tortillas, pressing against butter to partially stick to make crust.

Spread chopped green chiles over bottom of tortilla covered pie plate. Top chiles with the diced red bell pepper and diced sweet onions. Spread shredded cheese over the top of the vegetables. Wisk eggs until light colored. Add milk, salt and garlic powder and wisk well to make a custard.

Gently pour the custard over the ingredients in the pie plate. Press lightly over top to have custard cover the ingredients. Bake for 45 minutes until set. Remove from oven and let cool until just warm so the pie can set. Slice and serve with a garden or fruit salad or serve alone. Great for breakfast, brunch, lunch or dinner.
