Always Chic Truffle Bites ] 1 (16 oz.) package cream-filled chocolate sandwich cookies (e.g., Oreos®) ] 1 (8 oz.) package cream cheese, softened ] 2 (8 oz.) packages semi-sweet baking chocolate, melted Directions: Crush nine of the cookies to fine crumbs in food processor (or with rolling pin in a resealable plastic bag); set aside. Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1 inch in diameter. Dip balls in melted chocolate; place on wax papercovered baking sheet. Sprinkle with reserved cookie crumbs. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator. Directions: Divide juice and liqueur evenly between 16 wine glasses. Fill glass with champagne, adding 2-3 raspberries. (Serves 16)
