SIZZLING COMPETITION The brand new Shisa Nyama Awards came about to bring recognition of the value of this South African cultural phenomenon. By Meredith Haywood
he Shisa Nyama Awards were started this year in Durban, driven by Michelle Lewis, founder and owner of Durban-based publicrelations agency Have Your Say. A culinary award with a difference and the only body of their kind in South Africa, the Shisa Nyama Awards recognise and reward excellence in food, service, venue and ambience. The Awards also aim to drive business to the outlets and to stimulate township tourism in a real, more engaging way. It’s not just about food, it’s about celebrating and growing small businesses – the more establishments like these thrive, the greater the impact on their communities and the economy. The competition curator, Ingrid Shevlin, is a renowned journalist of more than 30 years’ experience and organiser of the 13-year-standing Café Society Awards. The judging line-up consists of well-known restauranteurs, South African editors and food critics: Andrew Draper; Buhle Mbonambi; Dennis Ngxongo; Lungi Nhlanhla; Meleney Cunniff and Sdu Gerasch The first round winner of this ground-breaking competition will be announced on September 25th at a massive Shisa Nyama Festival to be hosted at People’s Park in Durban. In 2017 the Shisa Nyama Awards move on to Johannesburg and Cape Town to crown the best in each city, following
Shisa Nyama - A Zulu phrase, meaning “hot meat” used in many South African townships to describe a barbecue or “braai”, where meat is cooked on an open fire. Patrons of Shisa Nyama Restaurants can select and have their meat grilled for them, and enjoy it in a restaurant environment. Shisa Nyama has also become a term associated with Butcheries/Restaurants that sell and cook the meat as selected by the patron. Shisa Nyama has become one of the most authentic South African food experiences, synonymous with authentic flavours, friends, family and good times. And, of course, loads and loads of flame-grilled meat. Shisa Nyama is more than just a meal at a restaurant, it’s an experience, and for many locals, it’s a part of their way of life.

Says founder Michelle Lewis, “I wanted to tell the world about the true entrepreneurs in our society – like these shisa nyama owners – many of whom started out from humble beginnings and now command the attention of our country’s largest brands. I also crucially wanted to highlight the chefs behind the scenes who create delicious food for millions of South Africans each day but who are largely unknown.” The judging process kicked off on the 1st of July, when the team of six judges visited 25 of the city’s hottest venues. The good news for the public is that all of these establishments guarantee a full belly, great vibes and maximum customer satisfaction. The great news for the public is that the winner among these will be announced at a Shisa Nyama Festival on Heritage Day, Sunday 25 September, at People’s Park, Moses Mabhida Stadium, in Durban. Because if there’s one thing South Africans love to do more than eat loads of flame-grilled meat, it’s party. The Head of Durban Tourism, Mr Phillip Sithole, confidently stated that the city is proud to support new and innovative initiatives that proudly recognise the value and growth of Township Tourism and its unique product offerings. “The shisa nyama restaurants are one of our key tourism products that we have been actively promoting for years and has fast become a must visit experience for all our domestic and international visitors. We are proud that today, we have a selection of these well managed, world class township restaurants that are rapidly growing in all spheres of the city. The unique culinary experience portrays the lifestyle and culture of our locals and the added exposure of the Shisa Nyama Awards will help towards the empowerment and expansion of these entertainment and lifestyle hubs, that play a vital role in boosting tourism."
Durban’s top seven venues were selected through the gruelling judging process (which, let’s face it, involved eating loads of flamegrilled meat) and ranked according to a 50-point scoring system. The Essence Festival Durban will take place on the 8th to 13th November 2016 at two of the city’s iconic attractions, the Durban ICC and the Moses Mabhida Stadium and will feature international performers, world renowned speakers and local artists. The Durban Business Fair is taking place simultaneously with the Essence Festival which strives to connect local businesses globally.

Some of the music talent on show will include South Africa’s top artists such as Thandiswa Mazwai, Black Coffee, Big NuSz, Babes Wodumo, DJ Zinhle, featuring Wizkid from Nigeria and Grammy Award-winning singer/songwriter Yolanda Adams from the USA (who will perform in the Gospel concert). Power and inspiration speakers include author and radio personality Steve Harvey, singer/songwriters Kelly Price, Estelle and distinguished civil rights activist, community leader and television/radio host Rev. A Natural Concept with Food and Wellness At last. A health food cafe serving food that isn’t about self-mortification. By Ingrid Shevlin
must admit when my friend Megan Harker suggested we lunch at the Tree Natural Cafe (weird name, or not?) I was dubious. I’ve eaten at enough health eateries – including Neal’s Yard in London – to know I was more than likely to end up with indigestion and a sore jaw after chewing my way though a pile of raw, grated veggies like carrot and cabbage. And, anyway, I’m kind of over lentils and chickpeas and butternut and definitely courgettes. Worthy, rather than delicious foods. It’s not that I’m against healthy eating. It’s how I have eaten my whole adult life. I was a vegetarian for 10 years and once, for three months, ate only raw food – which nearly did my head in. It’s just that I don’t like loads of raw food that have been assembled entirely for health rather than flavour reasons.
But Tree Natural Cafe, from now on called TNC, was a very pleasant surprise. Someone in the kitchen understands the concept of contrasting textures and flavours and that healthy doesn’t preclude indulgence. TNC’s menu is divided in to all-day breakfasts; tree top eggs; salad bowls which can be converted into wraps and wraps. Also a good selection of yummy soundings smoothies, cold-pressed juices. Also coffees. I must admit I was worried when my eyes settled on the Nutty Thai; chicken mixed with peppers, carrots, cabbage, celery, cucumber, spring onions, mango, coriander, nuts, lemongrass and chilli with peanut dressing. No, no, no said my body. Then I spotted the Kale and Cranberry salad, with crispy kale, cranberries, cashew nuts, avocado, feta and croutons drizzled with a lemon-thyme dressing, R83. I chose to have it in a wrap with chicken, another R28. From the first bite I was delighted. It was crunchy, smooth, sweet and savoury. Yum. I love contrasts i food. And the wrap, wholewheat I think, was soft not chewy. A winning and filling dish. I could have opted for the the Zesty Cauli-rice, which would be enough to gladden any Banter’s heart, but I’m not a Banter. If you are, it’s cauli-rice topped with cabbage, celery, hemp and pumpkin seeds, sprouts and lemon-theme dressing. They also
have a Pesto Zucchini with broccoli, olives, walnuts, pumpkins seed and pea shoots. And a Super-Grain Curry with quinoa, buckwheat, cabbage, celery, macadamia, cucumber, coriander and mint with a curry coconut dressing for R90. Chicken is R28 extra. There’s also the Mexican Superfood with beans and chickpeas, salsa and mashed avocado with a cashew-soy dressing, which sounds interesting, R79. The dressing that is. Megan opted for a meal from the wraps section, Omega. This is smoked trout, poached eggs, avocado, cream cheese and sesame seeds with a lemon-tyme dressing, R115. She was totally, totally smitten with it. The breakfast section is interesting; activated coconut chia (whatever that is) with berry coulis and a nutty seed cream; frozen yoghurt, cacao, banana, coconut, goji berries and a milk toffee sauce. How decadent does this sound? An almond waffle with frozen yoghurt, banana, almonds, vanilla and honey. Or this? Three crepes with almond butter, cinnamon, natural sweeter/Nutella/ banana. For dessert we opted for a Salted Caramel Delight smoothie with almond butter, almond milk, dates, banana, cinnamon, vanilla and walnuts, R50 for 350ml. This was so rich and so thick it was like having an entire meal in a cup. Delicious though, but perhaps not sensible after a hearty meal. As befitting a health and wellness centre, TNC uses only free range eggs and chicken and unrefined sugar. They offer gluten, dairy and sugar-free options along with Paleo meals. Their ingredients are very, very fresh and meals are prettily presented. Food is pricey, though. Our meal, one wrap and smoothie each came to R326. But these kind of quality ingredients don’t come cheap. The eating area is on an enclosed courtyard and, despite being on a busy road, it’s surprisingly peaceful. Ambiance is a mix of sophisticated and natural. Only jarring note was service. Despite the open plan kitchen being literally thronged with staff, we had to place our order at the counter, which we had to work out for ourselves. Which we did. Eventually. ANDREW WALFORD POTTERY GALLERY Tel: +27 (0)31 769 1363 Indigenous bush surrounds this mountain studio and working alongside Gumede, his Zulu handyman, Andrew draws much inspiration for his decoration from the many trees and birds there. Andrew Walford is one of the few potters who digs his own stoneware clay and meticulously prepares it to his own high standard. Working in the Japanese tradition with thick chun glazes sifted by hand from wood ash, colours of rich resonant tenmokus, fatty whites and shades of celadon, he then decorates the pots with specially imported Japanese brushes. The kiln which he designed and built himself is fired about eight times a year with paraffin oil to a temperature of 1380 degrees Celsius. It takes 18 hours to fire and 3 days to cool. Hudson set about creating a replica of the Belfast City Hall in Northern Ireland. The art gallery showcases an array of South African and international artworks, while the museum displays a selection of fossils – including that of a dodo – animals, birds, reptiles and insects. cotch whisky is by far the most popular type of whisky internationally and is made exclusively from grain, yeast and water. The distilled liquid is lovingly matured in oak casks for a minimum of three years and this is where the magic happens. Up to 70% of a whisky’s final flavour profile is achieved through the influence of the cask – and when that golden nectar is finally ready to be released from its wooden slumber, we get to sample the hopes and dreams that once lay dormant in that oak. And now to drink……….. but how? One of the reasons that people can be intimidated by whisky is that once you navigate your way through the maze of different single malts and grain whiskies from Scotland and settle on your dram of choice; you then have to figure out how to drink it – neat, with a splash of water, with a mixer, on the rocks and how many rocks? Compare this to the decision making process when drinking a beer! Alas, there is hope because I can confidently recommend the best way for you to enjoy ALL whiskies: any way you like it! Whether in a tall glass with tons of ice and refreshing soda after a long day’s work, or as the base of an elegantly crafted cocktail served before dinner, or served neat in a tumbler with your meal – either way can accentuate different qualities of the whisky, leaving your palate dizzy with the experience. Now that you are relaxed, enjoying your favourite whisky just the way you like it, let me jolt you with a suggestion: whisky paired with food. We are used to pairing wine with dinner, so why not whisky? Grassy, nutty, honeyed, citrus, floral, spice, treacle, coffee, tannin, chocolate, stone fruit, dried fruit, fruitcake, sherry, wood and smoke – are but a few of the flavours found in whisky. Left in the hands of a capable chef, whisky can of course pair with food – provided that there is any left after the chef samples the liquid! A recent collaboration with Eversheds law firm and Marco Polo restaurant in Mount Edgecombe saw exactly that happen. Owners Paul Sheppard and Billy Franks created a bespoke three course menu to match 3 great whiskies. The evening kicked off with a cherry and orange old fashioned cocktail that featured the Singleton Tailfire. The same whisky was then paired with a warm duck confit salad that brought out the summer fruit flavours of this Speyside single malt whisky. The main course was cider roasted pork belly with scallop and chorizo tortellini in a veal broth – a wonderfully complex dish that was deservingly paired with Johnnie Walker Green Label. This 15YO blended malt whisky is a testament to almost 200 years of blending excellence from the House of Walker – the art of creating a blend of strong individual malts is a perfect parallel of the chef ’s art of combining strong individual food elements on one plate. Classic pear tarte tatin with gorgonzola panna cotta for dessert was then paired with the rich, hearty and smoky Lagavulin 16YO – a single malt from Islay with the power and depth to pair with both sweet and savoury. As a final twist to the evening, guests were served a glass of Ron Zacapa rum on the rocks. This delicious luxury rum from Guatemala is slowly aged above the clouds on a volcanic mountain, imparting flavours that make the rum nothing short of sensual. An exquisite evening of great company, great ambience, great food and of course great whisky.
