CASCADING WAVES, WHALE SPOUTS AND PLAYFUL DOLPHINS are some of the outdoor delights on view for those dining oceanfront on fresh, seasonal, French-inspired fare at Surf & Sand Resort’s Splashes restaurant in Laguna Beach. Arriving from the East Coast, talented Executive Chef Ron Fougeray has perfected his French techniques under James Beard Award finalist Pierre Calmels, of Bibou in Philadelphia, and 23-year, five-starrated chef Georges Perrier of the famed Le Bec-Fin, also in Philadelphia. Of his transition to the world of sunshine and gleaming beaches, Fougeray says, “Each season brings a fresh, new menu in the French style, but prepared discerningly light and flavorful.” For summer, guests can expect Crisp Spanish Octopus with chile coulis, Sicilian black olives and chorizo; Red Endive and Arugula Salad with curried cauliflower, chickpeas and pickled red onion; mouth-watering Seared Sea Scallops; and among dessert selections, a savory butter cake with lemon curd and raspberry coulis. Open for breakfast, lunch, brunch and dinner, the restaurant also features an expertly-curated Chef ’s tasting menu, a full bar and an elegant selection of fine wine. From the rolling hills of France to the shores of Laguna Beach, the inspired cuisine found at Splashes is sure to satisfy.
