TRADITIONAL BULGARIAN STARTERS


GREEN SALAD ● ● ● ● ● ● ● ● ●

Ingredients: 1 cucumber Lettuce Radishes Onion 2 boiled eggs Cheese Olives Lemon juice Oil and salt


Instructions: 1. Wash and cut the vegetables in a big bowl. Boil eggs. 2. Put lemon juice, oil and salt. Mix them with the salad. 3. Dice some cheese and add it with olives and the boiled eggs.


Potato salad Ingredients: ● ● ● ● ● ●

500g potatoes Onion Parsley Lemon juice Oil Salt


Instructions: 1. Wash the potatoes well, put them in a saucepan and add water. Boil them. 2. Once they are ready let them cool. Peel the potatoes and cut them into large pieces. 3. Cut the onions into small slices, chop the parsley and add them to the potatoes. 4. Put salt, oil, lemon juice and mix well.


Shepard salad Ingredients: 3 tomatoes, seeded and chopped 2 cucumbers, seeded and chopped 1 bunch parsley, leaves picked, not chopped 1/2 small red onion, chopped 200 g ham 2 boiled eggs 2 tbsp cider vinegar 2 tbsp lemon juice 4 tbsp olive oil Salt and freshly ground black pepper Bulgarian white cheese Olives optionally


Instructions: 1. Wash all ingredients. 2.Chopped the tomatoes 3.Chopped the cucumbers. 4.Chopped the red onion. 5.Chop the ham and the eggs 6.Put in large bowl. 7.Mix cucumbers, tomatoes and onion with lemon juice, olive oil and cyder vinegar, the ham and the eggs, put olives in it. 8.Serve with white cheese.

6 kg of peppers 4 kg of aubergines 7 kg of tomatoes 1 teaspoon sugar 3 tablespoons salt 1 teaspoon of oil 1 tablespoon black pepper

Wash all vegetables. Peel the tomatoes. Chop the vegetables. Grind the tomatoes. Put the mashed tomatoes in a pot and start to boil them Bake the aubergines and peppers. After that peel the peppers and put them with the aubergines in the pot. Continue to boil the mixture and try to mix constantly. Boil 10 min, then add the oil and the spices. We can understand that it is ready by tasting the density when there is a trace to the bottom.
