Harvest Time: Late Summer/Early Fall Yield: 4 cups • 4 ears of corn, raw • 2 green onions, chopped • 1 jalapeño, seeded and minced • 3/4 cup radishes, thinly sliced
• 3 tablespoons fresh lime juice • 3 tablespoons olive oil • 1/4 cup cilantro, chopped • Salt and pepper to taste
Remove corn kernels from the cob. Mix corn, green onions, and jalapeño in medium bowl. Toss with lime juice and olive oil. Add radishes and cilantro right before serving.
