ME AND MY SON IN VERONA MAY 11, 2014 With Thanksgiving just around the corner, I would like to take this time to reflect on what I have to be thankful for. I have many reasons to be thankful in life. Being part of the Uniworld team, comprised of very passionate, hard-working, and committed individuals and having extremely supportive owners willing to invest heavily in our fleet and operations to ensure we are always delivering the best possible vacation experience. And, most importantly, we have you, our valued guests. Through your willingness to entrust us with your river cruise vacations over and over again, you have helped make Uniworld a growing and vibrant company, so again, thank you. I can unabashedly say that we are all avid river cruisers. Earlier this year, we were fortunate enough to experience Uniworld’s “Splendors of Italy” program. We had a wonderful time, and I believe that you would have a very hard time finding a better way to experience the many beautiful Northern Italian cities that Uniworld visits on this itinerary. My personal highlight was being onboard the River Countess in Venice with easy access to the city, while always enjoying the luxurious accommodations, wonderful food, and genuine hospitality from our Uniworld staff. UNIWORLD.COM | 13 PAST GUEST SPOTLIGHT: JUDITH KYLE A REMARKABLE 16 TIMES SAILING WITH THREE MORE TRIPS PLANNED Over the course of the past five years, Judith Kyle has traveled with Uniworld a remarkable 16 times. From Paris and Lisbon to Amsterdam and Vienna, Judith has explored dozens of world-famous destinations throughout Europe during her many boutique river cruises. “We started sailing with Uniworld in November of 2008,” said Judith. “After that trip, we were hooked.” 14 “ The food, accommodations, and the wonderful crews are very important to me … river cruising has become increasingly popular, but we wouldn’t sail with anyone except Uniworld.” – JUDITH KYLE, Valued Past Guest J udith has returned to sail with Uniworld for a number of reasons, including the convenience of moving from city to city each day without having to continuously pack and unpack, or search for new places to eat. “Your hotel and restaurant go with you; (it) couldn’t be a better deal,” she said. An even more compelling reason for her to return, however, is the exceptional service she consistently receives from Uniworld’s dedicated and highly-trained staff. “To me, one of the most important things is the quality of the crew,” Judith said. “We have been on many different (Uniworld) ships, and the crews are all excellent. We have become friends with a lot of them.” In addition to the staff, Judith has also become friends with fellow Uniworld guests over the past several years. “We have met many wonderful people on the cruises. We now frequently travel with a friend we met several years ago, and will again next year.” As an avid Uniworld traveler, Judith has sailed a number of itineraries more than once, but the experiences are never the same. “Uniworld has added the ‘Choice Is Yours’ feature for many excursions. That is important since we have repeated several trips,” said Judith. Uniworld’s “Choice Is Yours” program allows guests to choose which excursions they would like to join, so Judith can opt to try new experiences whenever she repeats an itinerary— such as her favorite itinerary, the 8-day “Rhine Discovery,” which she has already sailed twice. “My favorite area is from Nuremberg around to Basel. I like going over the mountains through all the locks.” Looking ahead, Judith already has three more cruises planned with Uniworld in the future, including a Danube Holiday Markets river cruise in December 2013. “We are looking forward to our 17th cruise in December. Next year, we are repeating the ‘Paris & Normandy’ trip. Then, we are going to do the ‘Imperial Waterways of Russia’ trip.” Despite the growing presence of river cruise lines in the marketplace, Judith remains loyal to Uniworld. A perfect soup for this time of year. PORTOBELLO MUSHROOM CHEESE CROSTINI Enjoy the many textures of crostini (meaning “little toasts” in Italian) topped with savory Portobello mushrooms and cheese. TURKEY WITH BOSKOOP APPLE STUFFING A holiday classic, with a twist. Juicy, delicious turkey served with stuffing made with tart Boskoop apples, named for the region of the Netherlands where they were first grown. GINGER-PUMPKIN CRUMBLE Treat your sweet tooth to two can’t-miss flavors of the holidays—pumpkin and ginger—paired perfectly together in a dessert that’s crumbly, crunchy, and smooth all at the same time. BREAD AND BUTTER PUDDING Experience this British-inspired holiday delight for yourself. A classic combination of milk, eggs, bread, grated nutmeg, vanilla, and golden raisins. The perfect texture, perfectly sweet. UNIWORLD.COM | 17 CREAMY BUTTERNUT SQUASH SOUP INGREDIENTS: Fall harvest brings with it a number of delectable vegetables, including the savory butternut squash. This appetizing and soothing soup is a perennial favorite for chilly autumn evenings. K pound butternut squash, halved lengthwise, seeded 1 tablespoon butter K cup onion, sliced thinly 3 garlic cloves, sliced 2 cups chicken broth salt to taste K teaspoon white pepper O cup heavy cream, divided fresh thyme leaves for garnish PREPARATION: 1. Preheat oven to 400° F. 2. Spray a 13 x 9 x 2-inch glass baking dish with vegetable oil. Place butternut squash cut-side down on baking dish, and then pierce squash with a knife several times. 3. Bake squash approximately 35 minutes. 4. Remove dish from oven and scrape the butternut squash pulp into a bowl; discard the peel. 5. In a large saucepan, melt butter over medium-high heat and sauté the onion and garlic, stirring constantly for approximately 3 minutes. 6. Add the chicken broth, roasted butternut squash pulp, salt, and pepper to the saucepan. Bring squash mixture to a boil, and then reduce heat to a simmer for 30 minutes. 7. Add ½ cup cream to squash mixture, and transfer everything to a blender and purée until smooth. Return squash mixture to the saucepan, stirring constantly over medium heat (do not boil) until heated through. 8. Pour remaining ¼ cup cream over soup, sprinkle with fresh thyme leaves, and serve. 18 PORTOBELLO MUSHROOM CHEESE CROSTINI A delicious take on a favorite Italian dish, these “little toasts” topped with vegetables and cheese are the perfect appetizers to whet your guests’ appetites before a big meal. INGREDIENTS: PREPARATION: 1. Place bread slices on baking sheets and brush them with 2 tablespoons olive oil. 2. Broil bread slices 4–6 inches from heat for 1–2 minutes, or until lightly toasted. 3. In a large skillet, sauté mushrooms with Italian seasoning in butter and remaining oil until mushrooms are tender. Add garlic, and then cook 1 minute longer. Remove mushrooms from the heat and set aside. 4. Place artichokes in a food processor; cover and process until finely chopped. Add mayonnaise and Parmesan cheese to chopped artichokes. Cover and process until blended. 5. Spread artichoke mixture over bread slices. Top with mushrooms and sprinkle with Swiss cheese. 6. Note: cover turkey loosely with foil if turkey browns too quickly. 5. Bake additional stuffing (covered) for 20–30 minutes. Uncover, and then bake 10 minutes longer or until browned. 6. Cover turkey and let stand for 20 minutes before removing stuffing and carving turkey. If desired, thicken pan drippings for gravy. Scatter the lemon rind, raisins, and coconut on top of the slices. 3. In a large bowl, whisk the egg yolks, vanilla extract, custard powder, and milk. Pour the mixture over the bread and set aside until the bread has softened. 4. Place the baking dish into a large roasting dish, and add enough water to roasting dish so that it rises twothirds of the way up the side the baking dish. 5. Bake the pudding at 355°F for 20 minutes. 6. In a large bowl, beat the egg whites and add the sugar gradually, until soft peaks form, producing a meringue mixture. 7. Remove the pudding from the oven and spread the meringue mixture onto the pudding. Second, Viviers is a small medieval village located in the nature reserve of the Ardeche. The place is peaceful, beautiful, and so picturesque. It’s a postcard where time seems to have stopped. And last but not least, Arles is one of the most charming little towns. Originally built by Julius Caesar, it is a place of art and history where you see dozens of historical monuments. While you’ve probably had some very memorable experiences with Uniworld, what has been the most memorable? Every cruise is definitely an adventure and every cruise is memorable. But when you get to spend an 8-day cruise with the owners of The Travel Corporation, Uniworld’s parent company, it becomes unforgettable!
