hen you walk into HakkaChow, you know, immediately, that it is an Asian themed restaurant. It’s accented with bamboo, darker-tinted woods and deep, earthy tones of red. There is an Asian-esque statue in the bamboo that greets its visitors from the outside. The seats along the front window are embellished with Chinese lattice patterns, also in the darker wood motif. This is Asian. But, don’t jump into the cliché of calling this, Asian Fusion. Jonathan Chung, Back-of-House manager and sous chef, said it’s easy to fall into that trap. “You can mix two items together and it’s ‘fusion.’ This is

authentic Hakka Chinese food,” says Chung. Hakka translates to “guest families” and Chow, obviously, is food. Hakka is part of the Han people of China and, unlike most Han cultures, they aren’t named for a geographical location; they’re nomadic in nature. Jonathan’s parents, Haifang and Caroline lived in India for a bit and then moved to Germany where Jonathan and his brother, Andrew, were born. Hai-fang worked in a Korean restaurant for no pay, instead working for sponsorship. The Chungs then opened and

operated two restaurants in Hamburg before making the move to the United States, where they had relatives that were also in the restaurant business.

The culinary pedigree of the family is deep. Jonathan’s uncle Lucas Chung owns Szechuan Palace in Winston-Salem and two more uncles, Freddy and Terry Lee own Bernardin’s Restaurant at Zevely House and Bleu Restaurant, both also in Winston-Salem. So, long-tenured restaurants are in the blood of the family. This is good for the consumer, too.

The Chungs work together at HakkaChow. In addition to Jonathan’s duties, his brother Andrew is the Front-of-House manager

and both are the business development team. Father Hai-fang is the Executive Chef and mother, Caroline is the “face” of the restaurant, specializing in customer care and making sure everyone is being taken care of.

Hakka Chow does offer, not only authentic Chinese food, but also Thai and Japanese fare. If you want to call the offering of all three “fusion,” then so be it, but they take each seriously and each stands on its own merit. Ironically, one of their biggest sellers is the General Tso Chicken, which isn’t really Chinese, but a ChineseAmerican creation. Other favorites on the menu are Crispy Honey Walnut Chicken (or Shrimp), Hong Kong Chilean Sea Bass, Lemongrass Grilled Atlantic Salmon, Korean Beef Bulgogi and Hakka

Another mainstay of the restaurant is its sushi offerings. The sushi menu is going to change soon and there are plans being drawn up for a brand new sushi bar that will expand upon their current sushi prep area and will provide 8-10 seats around the sushi bar. There is no time frame for that, though, so, you’ll have to keep checking back to see the progress and try the new sushi offerings. The sushi menu as it stands now is both traditional Japanese and

somewhat experimental, with the Chungs trying new combinations to shake things up a bit.

HakkaChow offers a full ABC Permit with signature cocktails, a seasonally rotating wine list – the reds are going to be more prominent for the cooler months, six draft beers and nine bottled beers. They also have a gourmet sake list that sometimes changes due to demand or experimentation; they like to keep up on the best offerings for their clientele. So, if imbibing is your thing, you’ll have plenty to choose from at HakkaChow. There are drink specials every Sunday through Thursday (not counting holidays). HakkaChow is located at 615 St. George Square Court, Suite 121 in Winston-Salem, off of Hanes Mall Blvd, beside CarMax and across Hanes Mall Blvd from Carmike Wynnsong 12 theaters. Green Man Harvester From Spencer: Green Man is one of my favorite NC breweries located in Asheville. They started brewing craft beer in 1997 and just expanded into a new facility that is called the “Greenmansion”. This month we sampled the Harvester which is Green Man’s own version of the classic “Marzen” style. They brew this beer with “Ale” yeast instead of the typical “Lager” strain of yeast. I feel like this gives a cleaner feel to the beer. This malty beer has a rich caramel body and finishes with just the right amount of hops. A superb craft beer that fits the bill for the cool autumn nights. Grab this beer while it’s available because it’s not around long! From Tim: We had this on The Less Desirables and everyone, including the IPA Queen and our two guests that weren’t familiar with Green Man, all loved it. It is a smooth drink with an earthy, malty and caramel-like flavor. It’s the full embodiment of what I want my autumnal beer to taste like. It’s an Oktoberfest-style (or Marzen) beer and that is quickly becoming one of my favorite styles and will be disappointed when it’s not available. It takes a lot to get me to give a 5, but this was close. 4.75 pints out of 5. Delicious!
