New Holiday Shows Finding Mrs. Claus (12/2, Lifetime) Las Vegas isn’t the first location that comes to mind when you think of Christmas, but it’s the setting for this new holiday tale. Oscar winner Mira Sorvino (“Mighty Aphrodite”) has the title role of Santa’s spouse, who’s feeling neglected by her husband (Will Sasso, “The Three Stooges”) as the big night approaches. She decides to visit Vegas – not to gamble but to help make a Christmas wish come true for a little girl who lives there. A repentant Santa follows her there, and what happens in Vegas puts Christmas in jeopardy.

Royal Pains: Off-Season Greetings

American Giving Awards (12/8, NBC) What better time than the season of giving to honor great givers? Joel McHale (“Community”) hosts this special, which honors the United States’ most deserving charities and gives one of them a $1 million donation, with six-figure awards for the runners-up. Online votes pick the winner from five organizations representing education, human rights, health and wellness, community leadership and youth groups. Musical performances and special surprises are also on tap.

The Mistle-Tones (12/9, ABC Family) Holly (Tia Mowry), a talented young singer, is distressed to discover that a coveted position in a Christmas choir has gone to the director’s less-talented best friend (Tori Spelling). She starts her own group, the Mistle-Tones, and challenges the other ensemble to a singoff on Christmas Eve. Along the way, she gains some new friends, a new love and a new appreciation for the season in this tuneful new tale.

Help for the Holidays (12/9, Hallmark Channel) Summer Glau (“Terminator: The Sarah Connor Chronicles”) stars in this new fantasy as Christine, one of Santa’s elves who loves Christmas but is bored with the North Pole life. When Santa receives an urgent wish from a youngster (Mason Cook), he puts Christine on the case. The boy and his sister (Izabela Vidovic) want a real family Christmas with their parents (Eva La Rue, Dan Gauthier), who are too busy running a holiday store to pay attention to their kids. As their new nanny, Christine sets out to effect an attitude adjustment.

(12/16, USA Network) Wedding bells are ringing along with the Christmas bells in this two-hour holidaythemed episode of the hit cable drama series about a concierge doctor in New York’s exclusive Hamptons enclave. As Paige and Evan’s (Brooke D’Orsay, Paulo Costanzo) long-awaited nuptial day approaches, Evan and his brother, Hank (Mark Feuerstein), head to Las Vegas for the bachelor party. Paige and Divya (Reshma Shetty) go out of town for a bachelorette getaway of their own but wind up in Vegas themselves through a series of bizarre circumstances. Surprises await all of them in Sin City, along with the opportunity for someone to take a gamble that could change everything. Back in the Hamptons, a snowstorm threatens to scuttle Hank and Paige’s best-laid plans for a dream wedding day. Along the way, fans of the series will get a peek at the Lawson brothers’ childhoods, meet Hank’s first love, and discover how Hank’s previous romances and his relationship with his brother made him the man he is today. Emma Caulfield plays one of those women from Hank’s past, and Jill Flint returns to the role of Jill Casey, now working in Africa.

Dry Aged Standing Rib Roast With Sage au Jus COURTESY ALTON BROWN, 2012

Ingredients 1 (4 bone in) choice standing rib roast, approximately 10 pounds canola oil, to coat 2 teaspoons kosher salt freshly ground black pepper, plenty to coat the roast 1 cup red wine 1 cup water 4 leaves fresh sage

Directions 1. To dry-age the roast: Place a refrigerator thermometer at the back of the bottom shelf of your refrigerator. Reduce the temperature to just below 38° F. Cover the bottom of a roasting pan with several layers of paper towels. Place the roast, bone side down, on the towels, and store— uncovered—at the back of the bottom shelf of your refrigerator. Allow the meat to age for 3 to 5 days, checking the refrigerator temperature often.*

2. When ready to cook, remove the roast from the refrigerator and bring to room temperature for 1 hour.

3. Place a 16-inch round azalea terra cotta planter into a cold oven. Invert the planter to become a lid over the bottom of the planter. The oven should be cold to start, to avoid any cracking in the terra cotta pieces. Turn the oven to 200˚ F. 4. Rub the roast with canola oil. Remember to rub the bones with oil, as well. Once the roast is completely coated with oil, sprinkle with the kosher salt and enough freshly ground pepper to coat the surface. Place the roast over a glass bake-ware dish slightly smaller than the length of the roast. This will catch the drippings needed for the sauce. Finally, place a probe thermometer into the center of the roast and set for 118˚F. Put the roast and the glass dish onto the planter dish, cover with

the terra cotta pot, and return to the oven. Roast for approximately 4-7 hours, until it reaches an internal temperature of 120˚ F. 5. Remove the planter with the roast and turn oven up to 500 degrees F. Allow the roast to rest until an internal temperature of 130˚ F is reached. Return the roast to the hot oven for 10-15 minutes or until you’ve achieved your desired crust. Remove and transfer roast to a cutting board. Rest at least 15 minutes before carving. 6. Drain off the fat from the glass pan and scrape the drippings to a 2-quart saucepan. Place the pan over low heat, add the wine and water and reduce by half. Stirring with a wooden spatula. Roll the sage leaves in between your fingers to release the flavors and aroma. Add to the sauce and cook for 1 minute. Strain and serve with the roast. 7. Carve the roast with an electric knife. Start by separating the bones from the meat by placing the roast with the bone ends facing with the meat side up. Cut, following the curve of the bone, towards the meat. Save the ribs for yourself and you’ve basically got a big, boneless roast. Remove any large layers of fat. Then start slicing from the end and make sure you don’t go less than a half-inch. *Draining Rig: Perforate the body of a large, hard plastic storage container, place the meat on the lid of said container and use the body as the lid. Place the standing rib roast upright onto a half sheet pan fitted with a cooling rack. The rack is essential for drainage. The lowest deepest part of your fridge is still ideal for stashing this rig. Yield: 10 servings

The stop-motion-animated classic has snappy songs, cute characters and some life lessons.

A ‘Christmas Story’ that never gets old returns again

The holiday season has certain entertainment staples it just wouldn’t be the holidays without. Among them: Rudolph, Frosty, the Grinch … and Ralphie. The wide-eyed child who literally dreams of finding a Red Ryder BB gun under the tree – despite the famous warning, “You’ll shoot your eye out” – spends a lot of time in homes at the yuletide, thanks especially to the now-traditional 24-hour marathon TBS gives “A Christmas Story” from Christmas Eve through Christmas Day.

Even with all his recent activity, the now-41-year-old Billingsley maintains a warm spot in his heart for “A Christmas Story,” as do so many others. “There’s a very loyal fan base for that movie,” he acknowledges. “Those who like it know it and quote it, and it’s a part of the family tradition of Christmas for them. And we have not infringed on the reputation, or their enjoyment, of that film.” Billingsley tends to tune in himself at some point during the TBS marathon. “First of all, I apologize for being in people’s houses for 24 hours,” he says. “Now having ‘Sullivan & Son’ on the network, I feel like I’ve already been in the TBS family for as long as the marathon of ‘A Christmas Story’ has been going, so it’s nice to be doing that job with them.

Olive, the Other Reindeer, an overlooked holiday hero BY JACQUELINE CUTLER

It may seem hard to believe, but it’s been 13 years since “Olive, the Other Reindeer” premiered on Fox. Drew Barrymore, who voiced the sweet Jack Russell terrier, must have truly loved her character since she named her daughter Olive. Now most people assume this was just another Christmas cartoon, with familiar voices – Ed Asner as Santa, Dan Castellaneta as the villainous postman and Peter MacNicol as Fido, Olive’s pet flea – but there’s more to the story. After flying around the world that Christmas Eve, helping Santa and the real reindeer deliver

presents, Olive realized she had a true gift, one of imagination, faith and the sweet personality to persuade others to help her. She recently stopped by Zap2it’s offices, and admittedly we didn’t recognize her instantly, being all huge and orange.

Holiday Movie Releases “The Hobbit: An Unexpected Journey” (Dec. 14)

“Les Miserables” (Dec. 25) The classic Victor Hugo story of Inspector Javert’s relentless pursuit of desperate thief Jean Valjean is no stranger to the screen, but this is the long-awaited film adaptation of Sir Cameron Mackintosh’s stage musical. Co-star (and newlywed) Anne Hathaway has the perfect movie showcase for the singing ability she’s demonstrated more than once at the Oscars. Hugh Jackman and Russell Crowe play the central enemies, with Helena Bonham Carter and Amanda Seyfried also on board.

Any fan of “The Lord of the Rings” has known this is coming, thanks in no small part to the ongoing involvement of director Peter Jackson. This J.R.R. Tolkien-inspired start to another screen trilogy casts Martin Freeman as Bilbo Baggins, who meets and conquers his match in Gollum (“Rings” returnee Andy Serkis) in the course of a fantastic adventure. Elijah Wood, Orlando Bloom, Hugo Weaving and Ian McKellen are among other “Rings” alumni back as well.

This promising new entry from executive producer Greg Berlanti (“Brothers and Sisters”) follows the fortunes of Walter William Clark Jr. (Brit newcomer Theo James) as he charts a meteoric rise from ambitious beat cop to the youngest police commissioner in the history of New York. Alas, as so often happens in these situations, he pays a very steep personal and professional cost for this success. He also receives a notable lack of support from the other detectives in his department. Although Clark’s ambition keeps him keenly focused on his demanding job, at home he is equally invested in acting as the sole support and caregiver of his rebellious teenage sister.

Red Widow (ABC) Based on a hit Dutch drama, this new series stars Australian actress Radha Mitchell as Marta Walraven, a resolute widowed mother who takes on both the FBI and the mob to uncover the truth after her husband is brutally murdered. Executive producer Melissa Rosenberg also wrote the “Twilight” movies. Uh-oh.

Hannibal (NBC) A prequel to the events in “Silence of the Lambs,” “Hannibal” follows criminal profiler Will Graham (Hugh Dancy) as he pursues a serial killer for the FBI. His quest leads him to Dr. Hannibal Lecter (electrifying Danish actor Mads Mikkelsen), one of the most brilliant psychiatric minds in America, who teams up with Will. Here’s the hook: While we in the audience know that Dr. Lecter is a chilling psychopath in his own right, in the world of this series, Will and the other characters have no idea of Hannibal’s dark side. The presence of the two very strong co-leads makes this one of the midseason’s most provocative entries.
