TO REMEMBER FOR NEXT YEAR… Hi, everyone! I am the spirit of Charvonah floating around in Shamayim. I am writing this on Taanis Esther, in the hope that some Monsey publications will publish it. You see, my specialty was acting as an adviser to King Achashveirosh, such as reminding him at just the right moment of the tree Haman had prepared for Mordechai. Well, most recently, upon checking my celestial barometer, it has come to my attention that there are some large gaps in Greater Monsey that can easily be filled by its many hundreds of yeshivah boys, yet are being ignored, either due to lack of awareness, lack of organization or both. “Oy vey!” is what my barometer is displaying. When I click for details, it states: In the nursing homes and hospitals of Greater Monsey, there are patients who are so bored and depressed. At the same time, there are talented men easily capable of organizing the hundreds of yeshivos into semi-professional choirs to perk up the spirits of those handicapped residents who would love to hear fresh children’s voices. Why are these patients not being offered something to look forward to each day, rather than languishing in their chairs? It would be a win-win proposition for everyone, young and the old. RE: MISHLOACH MANOS THAT MAKE THE GRADE (ISSUE 137) I’m sure a lot of research and effort went into writing the article on mishloach manos for teachers. It was published in a timely manner and appreciated. However, there are a couple of points I, as a teacher, parent and grandparent, would like to highlight. No question about it: I don’t recall ever delivering mishloach manos to teachers in grade school when I was a child (eons ago). On the other hand, one of my daughter’s little ones has a rotating staff of six babysitters — each of whom receive a mishloach manos (not necessarily on Purim). All schools and many chadarim have pre-Purim festivities where children come costumed. Photo shoots can be done on school premises, and children can be oohed and aahed over at that time, even if the child will be completely differently costumed on Purim day. A collective mishloach manos certainly saves travel time for parents, but what does that mean? A bigger box of chocolates? A more expensive bottle of wine? A fancier basket ensemble? It definitely does not ensure a larger tip amount. A teacher or rebbe can count on an average tip amount of $20 to $50 per student. Please don’t debate me here on whether your $10 or $100 tip is also acceptable; of course it is! As is a lovely gift or even a parcel with nothing but that basket/wine/chocolate. But when a class of an 20 or 30 students makes plans to give collectively, I highly doubt that a tip of $500 is enclosed. Additionally, rebbeim and teachers generally allot more than 45 minutes for students to visit. I know this comment was made in jest, but rebbeim and teachers may take offense. It should also be noted that it is not the educators who live at the “farthest limits” of Monsey, but rather the students. I am also perplexed by how Sima, a high school teacher, has never received a single package from any of her 150 students — unless she is a very infrequent presence in her students’ classes. I have been to PTA where the teacher would ask the mother to point out her child in a class picture. The educator who does not recognize a child unless a parent points him/her out in a photo will probably not get recognition in return. I completely concur that a few personally penned, heartfelt words can make all the difference. Wafers, bars and sparklings are easily discarded, but an authentic note expressing gratitude will be engraved in an educator’s mind for a lifetime. Ah freilichen tumid, R.S.

AS YOU READ THIS ARTICLE after Purim, you might literally be surrounded with temptation in the form of your sister-in-law’s famous cinnamon buns, your neighbor’s irresistible babka, and an endless assortment of chocolates, candies and snack bags. For the past two weeks, I have been encouraging my clients not to feel guilty about throwing out food that can sabotage their diets. I believe that destroying our physical health and well-being with food that can make us sick is a much more serious form of baal tashchis than throwing the food in the garbage. But in truth, it isn’t that easy, even for me. As I encourage each client to take control of their health and dieting success by throwing out high-calorie, unhealthy mishloach manos, I wonder to myself why it is so difficult to do this. Is it really because our neighbor may follow up and ask how the danishes or cookies came out, putting us in an awkward conversation? Is it really because someone put hard work into this cake, and we therefore feel guilty allowing the work to go to waste? Is it really because of the waste of money? Why can’t we just throw the unneeded calories in the trash, the same way we throw out broken appliances or worn-out clothes? I think the bottom line is that if we really want to, we could. Just like we throw out food that is spoiled, and just like we refuse food from neighbors and friends if it upsets our stomachs or causes an allergic reaction, we could find a way to refuse all the junk if we truly want to. The reason we don’t simply toss everything unhealthy into the trash can the moment it hits our doorstep is because it is delicious. And on some level, we want to eat it. It’s as simple as that. If our neighbor’s “delicious” babka was nauseating or was likely to have hair in it, we would get rid of it promptly and find a way to wiggle out of that awkward follow-up conver-

sation. If our sister-in-law’s irresistible cheese danishes had smudges of children’s fingerprints or was sloppily made and half raw, we would toss it in the trash can and still thank her profusely for a thoughtful mishloach manos. The fact is that rationalizations such as “They worked so hard,” “They’re going to follow up later and ask me how it was,” or the good old “It’s baal tashchis; I’ll just serve it to my husband and children, and it will even save me work and make me a better mother/wife/Yid” are just that — rationalizations. Rationalizations that allow ourselves to keep the food on the counter, in the freezer, and ultimately, on our waistlines. If we are honest with ourselves, we will have enough clarity and courage to get rid of the food before it has an opportunity to sabotage our diets. If you aren’t comfortable throwing unspoiled food in the garbage can, donate the food or give it to a neighbor or the cleaning lady immediately. Do not let your resolve be swayed by the little voice telling you, “If you keep it, you won’t have to bake for Shabbos” or “I’ll just save it double-wrapped in the freezer for my husband” or “I’ll take a little bit and count it as a treat.” Once you get rid of the extra temptation, the relief that you feel will allow you the clarity to know you made the right decision. MOSHE WALKED THROUGH THE DOOR, but he did not look as uplifted as he usually did after learning with his evening chavrusa. Bluma brought two coffees to the table, as they usually sat and talked when he returned. Moshe sat down and stirred his coffee, the tension visible on his face. “How was your learning?” inquired Bluma, hoping he might share his concerns with her. “I came across something in my learning today… I’m not really sure how I feel about it, or what it means for me.” Wisely, Bluma kept silent, allowing Moshe the space to continue. Moshe looked at Bluma, trying to decide whether or not to share what was in his heart. Looking into her warm, understanding eyes convinced him to continue. “On Thursdays, we stay an extra half hour to read shnayim Mikra v’echad Targum, and then we learn a little about the parsha. This week’s parsha is Vayakhel-Pekudei. I learned a Kli Yakar that brings into question everything I am and everything I do. You see, it says in the parsha, ‘Kechu mei’itchem terumah la’Hashem…’ Take from yourselves an offering for Hashem.” Moshe took a sip of coffee and then continued, “The Kli Yakar notes that the lashon here implies that the offering should come from within oneself. He says that there are some people who only give tzedakah after seeing that others have done so. Such a person’s giving does not truly come from within himself, but from external forces such as envy of what others have done or shame that he has not done as much as others. That’s me, Bluma. That’s me.” “What’s you, Moshe?” asked Bluma. Moshe stood up and began to pace the room. “When I was young, there was a boy in our kitah whose father was very wealthy and gave fortunes to tzedakah. He was publicly honored for all his tzedakah, and his name was literally everywhere. He was always hosting rebbes and roshei yeshivah in his home, and... let’s face it, it made the rest of us jealous. I said to myself, that’s going to be me someday! “I worked very hard and became successful. Just as I had dreamed, I now live like his father did, but I’m never

fully satisfied. I look around at what others are doing, and I try to do as much or more. The Kli Yakar was right. My giving does not truly come from myself.” Moshe turned and looked at Bluma, a grave expression on his face. “How much of my tzedakah really comes from myself, and not from a desire to see my name on a plaque?” “Moshe, you’re too hard on yourself,” said Bluma. “No, Bluma. I’m not. I’m telling it like it is.” “Well, I think it’s amazing that you not only give fortunes of money to tzedakah, but also care about giving it for the right reasons. If it helps, I can tell you what my father does.” Moshe came and sat down across from Bluma. “What does your father do?” “Well, as you know, my father always gave generously to tzedakah. Like you, his name was everywhere. However, he used to tell us all the time that a person has to give because it’s the right thing to do, and not for kavod. So one of us children asked him why he doesn’t give secretly instead of letting them give him plaques and honor him.” Moshe looked interested and hopeful. “Did he say why?” “Yes, he did. He answered that the money he gave publicly was only some of the money he gave away. He did that for the exact reason the Kli Yakar said — my father wanted to inspire others to give. He knew that some people wouldn’t give otherwise, so he wanted to be a role model for them. But on the side, he gave away vast sums of money anonymously. He paid people’s grocery balances, utility bills, tuition payments... you name it. He would even go in the middle of the night to struggling families’ homes and slip envelopes of money under their doors.” “Wow, I guess it is possible to give tzedakah publicly, but still for the right reasons. You know what, Bluma? I would like to go talk with your father. Perhaps he can mentor me a little in this area.” “He would be thrilled. He always used to worry about who would take over after him, because so many people have come to depend on him, especially around the yomim tovim.” “Thank you so much, Bluma.” Moshe smiled. “Let’s go call him right now.”

The gowns are almost ready, and the freezer is slowly but steadily getting filled with foil-covered trays. Time to go shopping. Danny’s Amein Ascending the Spiritual Ladder Based upon a lecture by Rebbetzin Sarah Meisels

“It is the elevation offering” (Vayikra 6:2)

On one occasion, I had the opportunity to speak to four hundred teachers at a yom iyun seminar in Yerushalayim. At this event was a young man who was helping manage the microphone system, which seemed to be having some technical issues. Once everything was in order, I went on to deliver my talk, after which the young man drove me home. Having heard most of my speech, which centered around the power of saying amein, he asked if I would like to hear a story. “Of course I would,” I said. “Please go ahead.” And he did. This is his story. I USED TO BE A SOLDIER in the Israeli Army. It was 1982, and Israel was fighting Lebanon in what would come to be known as Milchemet Shalom HaGalil. My battalion had been stationed in Metula, a city bordering Lebanon, and although we were unsure what the future held, we were waiting for the signal to enter Lebanon. One late afternoon, as we stood all gathered together, one of the religious soldiers yelled, “It’s close to sunset! Time to daven Mincha!” Complying with the call, the multitude of soldiers assembled together to daven. Except for one whose name was Danny. He was completely irreligious and had just about no connection to Yiddishkeit. However, as he noticed all the soldiers heading somewhere, he grew curious. “Where is everyone going?” he asked. “We’re praying Mincha now,” they told him.

All the assembled soldiers were understandably nervous about the war, and davening served as a source of comfort and instilled in them the confidence that they would be watched over and protected by Hashem. But Danny felt the same fear. “I’m also afraid,” he said, “and I want to do something. But I don’t know how to pray.” Thinking quickly, we asked him, “Do you know how to answer amein?” When he responded in the affirmative, we told him that any time he heard a bracha being made, he should say amein aloud. By doing so and bearing in mind that with this declaration he was affirming his belief in Hashem, he would be doing something that would serve as a tremendous merit. For the next three weeks, every time Danny heard a bracha, he loudly answered “Amein!” with the greatest of concentration. It was something special to see. When the war ended three weeks later, I returned home to Yerushalayim, and Danny headed back home to the north of Israel where he lived on a kibbutz. Six years later, I was walking in Yerushalayim when I suddenly felt a pat on my back. Turning around to see if someone was trying to catch my attention, I saw a man with a black beard, suit and hat. “Shalom aleichem!” he said. “Do you recognize me?” I looked closely at the man, but I had no idea who he was. “I’m sorry,” I said, “but I’ve never met you before in my life.” “Don’t you remember?” the man said. “Think again. Remember Danny, Mincha, Metula…”


As he mentioned those words, a picture of Danny from six years before came to mind. But I still couldn’t believe that the person standing in front of me was actually Danny. “Danny, what happened?” I asked. “Let me tell you,” he said. And so he began his story. “After I returned to the kibbutz following the war, the word amein kept echoing in my mind over the next few months. Everywhere I went, I kept on thinking about amein. At that point, I knew I needed to discover the true meaning of this powerful word. Getting on my motorcycle, I drove to Yerushalayim in search of an answer. When I arrived, I approached the first religious Yid I saw and asked to be directed to the closest yeshivah. He directed me to Ohr Somayach, where I asked the rosh yeshivah to fully explain the meaning and import of the word amein. From learning about the tremendous significance of amein, I learned about making brachos, then about keeping kosher and then finally about observing Shabbos. For the next two years, I remained studying in Ohr Somayach and did not once go home. I would phone my parents, but I wished to immerse myself in learning Torah and soaking up the yeshivah environment. After two years, I finally decided to make a trip home and visit my family. “Walking into my house, my mother was not too happy to see how far I progressed in my pursuit of Yiddishkeit, and my father was quite angry. They stilled loved me, but my religious growth was something they were not expecting. And then I saw my grandfather. ‘Danny,’ he said, ‘we’re going to a lawyer.’

Not sure what my growth in Yiddishkeit had to do with a lawyer, I asked what he meant. ‘You became religious and have taken things too far,’ he said. ‘We are going to a lawyer and I will tell him to take you off my will.’ My grandfather was a wealthy man, and this meant losing out on quite an inheritance. But that would not stop me. Without hesitation, I turned around and headed back to Ohr Somayach. “I continued to learn in yeshivah, and not too long thereafter, I met my future wife. Hearing about my engagement, my family came to Yerushalayim to see me, and when

We do not know what happened, and we haven’t heard from him since. “‘After having seen you take major strides in Judaism, however, I have come to the conclusion that your way is the best way. And so, I have begun to make my own steps in furthering my commitment to Torah and mitzvos. I realize that this is the true way for a Jew to live. “‘And so, Danny, after your wedding and sheva brachos, we are going to return to the lawyer and redo the paperwork. Everything in my will is yours.’”

I looked closely at the man, but I had no idea who he was. “I’m sorry,” I said, “but I’ve never met you before in my life.”

THE BOY who was driving me home finished his story, and I was quite touched. But then he added, “Rebbetzin, although Danny inherited his grandfather’s estate, he actually inherited something much more precious: the inheritance of a Torah life. ‘Torah tzivah lanu Moshe morashah kehillas Yaakov.’” The Torah which Moshe commanded us is the inheritance of the Congregation of Yaakov (Devarim 33:4). Today, Danny lives in Yerushalayim with his beautiful family and continues to learn in a community kollel. It all started from one word: amein. From the smallest of steps taken in coming closer to Hashem and His Torah, the greatest of leaps can eventually be made. All it takes is one little word, and from there, the rest is history.

I then made aliyah to Israel where I looked to rebuild myself, and I went on to marry your grandmother and raise your father. He was our only child. After your father grew up and got married, he was blessed with two

Monsey Beekeeper’s Hives Allowed Under New Montebello Law A MONSEY RESIDENT’S YEARSLONG BATTLE with Montebello officials is over after a new law was passed by the local village board allowing beekeeping in the village. Zev Oster bought his Spook Rock Road property, where he has kept both blueberries and beehives, several years ago, but he was slapped with violations in 2015 by the village, reported The Journal News. While there were no laws on the books preventing beekeeping in Montebello, village officials charged that since no legislation existed that permitted the hives, Oster was in violation of the village codes. Oster noted that his problems arose because there was no house on the 1.3 acre farm, making the beehives and the blueberries the primary purpose of the land. Other Montebello residents who keep beehives also have houses on their properties, thereby avoiding the problems that Oster faced. The new law was enacted on February 21 and permits a certain number of hives based on property size.

Oster will be allowed to keep six hives on his farm, though additional hives are permitted if they are necessary to prevent swarming. “We are very proud and believe we are the first municipality in Rockland County to have a bee law for the protection of beekeepers and residents,” said Lance Millman, mayor of Montebello. Oster, who had refused to back down when he was originally ordered to remove his hives — even when village officials had threatened him with jail time — said that he was comfortable with the new law. The village board incorporated some minor changes to the legislation at Oster’s request. “I believe in standing up for what’s right,” said Oster. Oster, who also keeps hives in New City and other locations in the county, sells his kosher certified natural

honey locally and runs educational tours on beekeeping and honey processing.

Region Hammered by Shushan Purim Nor’easter WHILE WE MAY HAVE BEEN BLESSED with exceptionally mild weather on Purim — much to the delight of costume-clad kinderlach everywhere — just hours later there was wind, rain and snow wreaking havoc on our region and overturning multiple tractor trailers on the Mario M. Cuomo Bridge. The Journal News reported that the first tractor trailer tipped over on the northbound side of the bridge just after 10:00 a.m. on the morning

of Shushan Purim, and officials lowered the bridge’s speed limit from 45 miles per hour to 35 because of the high winds, while also banning tractor trailers, box trucks, buses and other high-profile vehicles from the span. Despite traffic stops set up in both Nyack and Tarrytown to guide restricted vehicles away from the bridge, two tractor trailers managed to get on the span, tipping over on the northbound lanes at approximately

1:30 p.m., snarling traffic for hours. Locally, 33,000 Orange and Rockland customers in Rockland, Orange and Sullivan counties lost power because of this storm, dubbed Winter Storm Riley. The nor’easter also created problems for many in the Northeast, with Amtrak canceling all trains between Washington, D.C., and Boston, 12-foot-high waves hitting the Eastern shore from New Jersey to Maryland and two feet of snow falling in less than 24 hours in Buffalo.

Hi, everybody! I know that during the three weeks teenagers have off from school before Pesach, they jump out of bed precisely at 7:00 each morning, offering to help scrub the toilet bowl and the gas range grates. Whoops. I’m getting calls from mother’s asking if I live under a rock. In their homes, they claim, the girls tumble out of bed sometime between midday and sunset and prepare a gourmet meal that puts most restaurants to shame. Then they sit down to eat it. This year, however, mothers and teens can both win in the Erev Pesach cleaning madness — without the madness! Starting this week, The Monsey View will be providing a cleaning plan for teenage girls between seventh and twelfth grades. HERE’S HOW IT WILL WORK: 1. Over the next three weeks, chores will be divided and organized, with specific jobs to tackle each day. Follow the program, and have your sisters, neighbors and friends join in! Be advised that if any of the chores do not apply to you, substitute with something similar, if possible. And if your mother wants to alter the schedule, she comes first! 2. Call The Monsey View at 6008484, ext. 803, each Monday before 8:00 p.m. Leave a message with your name, phone number, grade and school to confirm that you followed the plan for that week. 3. YOUR CLOSET This will take approximately two to three hours, depending on the size of your closets and how many siblings share the room.

Closet, oh closet, where have you been hiding? Let’s get you back in tip-top shape! Start from the top, tackling one shelf at a time, and make three piles of clothing: one to discard, one to give away and one to put away in storage. (Of course, consult with your mother about everything you want to get rid of.) The rest will go back into the closet, neatly folded. Having a problem parting with stuff? Ask yourself these three questions: Have I used this in the past year? Will I use it this coming year? Do I have 36 other items serving the same purpose? Wipe down bins and shelves. You don’t necessarily need strong cleaning products for your closet. A spritz bottle with Mr. Clean diluted in water and a shmatte will do the job here. After the shelves are done, do the hanging

clothes. Hang hangers facing one way. You can hang Shabbos or weekday clothes separately, or hang whatever you wear more often in the front of the closet. Personally, I like when the clothes are in order of color and length. Even uniforms suddenly look like like wedding gowns when the closet is neat! Shoes, glorious shoes! If you can’t see an inch of your closet floor, that might be a small problem. Take your shoes out and mop the closet floor. Wipe down the shoe racks. Wipe shoes with a soft cloth. Now I’m not here to tell you how many pairs of shoes a teenager is supposed to have; that’s your mother’s job. But it’s my duty to tell you that contrary to popular opinion, shoes really do not make the man. Your smile and good middos do. Okay, a new pair for yom tov won’t hurt, but only if your closet allows it.

YOUR BED AND BEDROOM DESK This will take approximately two to three hours, including the wash cycle.

All the loose quarters and dimes and nickels and pennies you’ll find can go for your shoe fund. The surface of your night table should have a night light, siddur and the book you’re reading. Really. Nothing more. Spray windows and mirror with streak-free Windex. Shades need a wipe down. Consult your mother to see what to do with your rug and curtains. Bedroom all done? I think so! Ah, doesn’t it feel great to declutter and make space for new things?

BOOKSHELVES/ SEFORIM CLOSET This will take approximately two to three hours.

If you enjoy getting lost in books, this job won’t feel like a job at all! Take books off one shelf at a time, and wipe down the shelf. Check each book to see whether it needs to be taped. This is also a great time to label your books so that your friend will be able to return the books she borrows a year after she takes them. Arrange the books by author and genre and return them to the shelf.

At this time of the year, we are all facing a triathlon (though a quadrathlon or quintathlon would probably be a better description!). Do we go through the persistent and progressive training that triathletes do before they compete? The answer is, we are most definitely ready! As with any yom tov, we can have beautiful, satiating yom tov meals with only the essentials, but if there’s time and patience, we can throw in an extra or two. Because Pesach food doesn’t have to be boring! Although the ingredients are limited — for some more, for some less — there are nevertheless hundreds of recipes that can be made. And for those who use even less ingredients than I do, almost everything in these recipes can be omitted or substituted.

MY COUSIN’S FIRST PESACH AT HER IN-LAW’S CAME AS quite a shock when she saw the wide variety of store-bought food in their kitchen. At the sight of her daughter-in-law’s face, her mother-in-law confessed that as a kid, she starved for eight day straight. The only things her own mother made were chicken, potatoes and hard-boiled eggs, none of which she liked. She hated Pesach and promised herself that when she’d get married, she’d use everything that has a kosher l’Pesach symbol! I was flabbergasted when I heard this story. Pesach, starving? That’s an oxymoron. There’s so much you can do, even with the limited amount of foods we use. Everything in our home on Pesach is heimish, including the snacks and drinks, and my kids get a kick out of saying that they don’t mish at all. And the most beautiful part is that they are so proud about it. I involve them in the kitchen, and the atmosphere is just so special. My mother used to make marinated chicken with roasted potatoes and beet salad for bedikas chometz night. After completing the last-minute things on the to-do list, checking the forgotten pockets and scrambling to get those last few crumbs out, we all sat down to a nice, well-deserved supper. But we were not alone! Several of my fathers’ friends joined us, claiming that there was nothing to eat in their home on bedikas chometz night. It then became an annual ritual. Just this week, my son said, “Mommy, I can’t wait for the chicken and potatoes on bedikas chometz night.” Believe me, it’s not the chicken. They have that often enough. It’s the excitement in the air, the feeling of accomplishment and the culmination of endless hours of work that lead up to that surreal moment.

POTATO BLINTZES/ KNISHES


POTATO STARCH There are several different ways of extracting the starch from the potato, but I find that the easiest way is to use a vegetable juicer. However, not all vegetable juicers are alike and not all of them make good starch. To make starch, you need the juicer that has the juice coming out of one side and the pulp thrown out from the other side. (This juicer is also fantastic for making the most amazing apple cider.)

DIRECTIONS 1. Peel the potatoes and put them through the juicer, as you would to make a carrot juice or any other vegetable juice. You’ll now have potato juice, which is where the starch is, as well as pulp. (See note below for ideas on how to use the pulp.) 2. Pour the juice into a bowl, and let the starch settle on the bottom. After the starch has set, approximately 20 to 30 minutes, pour off the water and rinse with fresh water. Let the starch settle again and rinse again. Rinse three or four times, until you get a nice, white starch. (Some people leave it in fresh water overnight.) 3. After you are done with the rinsing, scrape the starch out of the bowl with a spoon or fork and spread on a clean white sheet to dry. Drying should take two to three days. It’s best to do it over a weekend so that it can be put to dry on Friday and ready by Sunday. 4. Once the starch is dry, put the clumps into a food processor and process until fluffed.

FOR A QUICK STARCH SOLUTION, which can only be used for sauces or as a soup thickener and not for baked goods, simply juice the potatoes, let the starch settle, rinse it once or twice and leave the starch with the water in the fridge. To use, just scrape off a bit as needed. NOTE: Use the potato pulp to make either potato latkes or the base for a delicious cream of potato soup for a hearty Erev Pesach supper. To make latkes, simply add a bottle of seltzer, 16 eggs and 1 cup oil to the pulp of 25 pounds of potatoes. To make the soup base, just add water, some squash, sautéed onions and salt. Let it boil and blend.

BORSCHT Borscht is naturally fermented beets, which is a minhag to drink on Pesach.

DIRECTIONS 1. Peel beets, cut in halves or quarters and place in a large glass pickling jar that has a cover (you can buy these at your local hardware store). Fill the jar between two-thirds and threequarters full with beets. 2. Fill the jar with warm water, add a tablespoon of salt for every five beets, and cover. 3. Let stand, covered, in a warm place (64–74°) for anywhere between one and four weeks.

BORSHCT can be consumed raw, boiled with added sugar or lemon or made into a delicious meal.

BORSCHT AND FLANKEN 1½ lb. Flanken

Sugar to taste

4 cups cold water

Salt and pepper to taste

1 onion

Lemon juice (optional)

3 cups borscht

6 egg yolks

DIRECTIONS 1. Cook the meat and onion in water at a slow boil until meat is tender when pierced with a fork. 2. Add other ingredients, except egg yolks, and boil 15 minutes longer. 3. Serve hot with 1 beaten egg yolk per serving (depending on taste) for thickening, and garnish with sliced hard-boiled egg and plain boiled potato.

MUST Must, from the Latin vinum mustum (young wine), is freshly pressed fruit juice (usually grape juice) that contains the skins, seeds and stems of the fruit. The solid portion of the must is called pomace and typically makes up 7 to 23 percent of the total weight of the must. Making must is the first step in winemaking, but for those who don’t use grape juice on Pesach, the pomace is removed, and the clear refreshing liquid is used.

DIRECTIONS 1. Pick the grapes off the stems and blend. 2. Pour the blended grapes into a container and freeze. 3. Take a strainer, line it with a cheesecloth and put the strainer on a bowl that is large enough to contain all the liquid. Place the frozen block of blended grapes on the cheeseclothlined strainer, and let the clear must drip through overnight until only the pulp remains on top. 4. Bottle and refrigerate or freeze for extended shelf life.

DIRECTIONS 1. Mix everything, except salt, very well for 5 minutes. Then, add the salt and continue to mix until well combined. The mixture might seem very soft in the beginning, but adding the salt at the end will bind the mixture a bit. 2. Put a bit of the mixture on parchment paper and form into rolls. This recipe makes about 6 medium-sized rolls. Freeze the rolls until ready to cook. You do not need to thaw it before cooking.

3. When ready to cook, put some sliced onions, salt and sugar in a pot or roaster pan. Add the gefilte fish roll and cover with water. If you don’t want the fish sauce to overflow onto your stove while cooking, punch holes in the pan cover to allow the steam to escape. Cook on medium flame for 1½ hours. 4. Remove the onions and refrigerate. (Removing the onions extends the shelf life of the gefilte fish. Any vegetable can make the fish go sour faster, especially on Pesach when the fridge is very full and opened often, and you want it to last for more than two or three days.)

SHMALTZ If you want the oil only, order shmaltz from the butcher, but if you want greeven, too, get half shmaltz and half skin. Put everything in a pot and simmer on low until most of the fat has melted. Pour off most of the rendered fat and leave the skins simmering until they’re crispy. This process takes several hours. Never leave shmaltz unattended by cooking overnight, for instance, as it can be dangerous.

COMPOTE Compote can be as simple as cooking peeled apples in water or as delicate as halved pears in light syrup. You can add sugar to apples and cook only until they’re soft or let the compote cook for hours until it gets a nice golden hue. Then it can be left as is or blend it for a smooth finish. Whatever the form, compote is a refreshing dessert to every meal.

HALVED PEARS IN SYRUP 8-12 lb. ripe but firm pears (about 24-36 medium-sized pears; Bartlett works best) ¼ cup lemon juice 3¼ cups sugar water

DIRECTIONS 1. Prepare pears by peeling, coring and halving them. 2. To prevent browning, submerge in a mixture of ¼ cup lemon juice mixed with 4 cups of water and drain. 3. Combine 3¼ cups sugar and 5 cups water in a pot. Bring to a boil, stirring until the sugar is dissolved. 4. Add the pears and cook for another 30 minutes or until pears can be pierced with a fork with some resistance. You don’t want the pears to fall apart. Note: Some pears are of a tougher variety and need to be boiled in water until tender before being placed into syrup.

cover the value of mothers who spend an average 92 hours a week as the family’s housekeeper/cook/ nutritionist/psychologist/teacher/accountant/ driver/event planner and so on. The estimated value of this super-worker is over $100,000 annually! Oftentimes, the salary that a working mother earns from her boss or business comes partially at the expense of some of her “balabusta” salary. While Chaya Bruchy still comes out ahead financially with her new job, net of taxes and diminished homemaking value, the gain is proving to be too small. Consider some of the things an efficient homemaker does to save money that are now impossible or difficult for Chaya Bruchy to do. The most basic of these items is taking care of young children. Indeed, Chaya Bruchy spends a good chunk of her earnings on babysitting. Also, now that she has a job, Mrs. Weiss no longer has the time to chase down various clothing and grocery sales, which make up a large percentage of household expenses. She also now requires extra cleaning help and orders takeout supper at least once a week. The Weisses also now needed a more reliable (and expensive) car for their new earner, and even medical bills have gone up as Mrs. Weiss has been unable to keep track of all their deductibles and reimbursements. With all the added expenses, it is no wonder that she sees limited benefits despite all the hassles of her job.

JUGGLING IT ALL Women who are working do so for financial gain, and many of them enjoy high salaries. What Chaya Bruchy needs to do is rearrange things to make her job work for her. First, she can try to get some training for higher-paying work. Perhaps she can do better in a sales position where her higher value will be rewarded with a better salary or find a more profitable job at some other company. At the same time, perhaps she can refocus on maintaining her homemaker salary as much as possible. While childcare is an unavoidable expense, maybe she (or her husband and older kids!) can still find time on nights and weekends to manage her customary household affairs and frugal purchasing. Maximizing both her job and her homemaker “salary” will enable her to get ahead with each paycheck. The point of this information is not to disparage the work of women, most of whom do so with great mesiras nefesh. However, as Yiddishe mammes (and tattes) have always known, there is also tremendous value in running a home in a budgetconscious way. ACCOUNTING AS A CAREER CHOICE

In anticipation of their upcoming accounting course, PCS spoke to Mordechai Sidell, CPA, an alumnus from 2011. Q: CAN YOU TELL US ABOUT YOUR CURRENT POSITION? HOW DID THE PCS ACCOUNTING COURSE PREPARE YOU? A:I am currently the Controller at Eastern Union Funding running the Accounting Department. Prior to that I was a Senior Auditor at Ernst & Young - one of the big four accounting firms. Over my career I have worked alongside coworkers that were in college for five years and spent over $100,000 on their education—and yet with 1.5 years in PCS I was able to get to the same place. Initially, I thought that I’d be behind the others that went to school for five years. I quickly leaned, however, that I was up to speed. The PCS course wasgreat and it enabled me to learn everything that I needed to know in such a short period of time. Q: CAN YOU TELL US ABOUT THE CURRENT JOB MARKET? HOW DID PCS HELP YOU FIND YOUR FIRST JOB? A:Finding your first job can be tough; at times you may need a connection. PCS helped me get an internship which was very helpful in building my resume; afterward I did my own networking which led to my first job. PCS also assists their students with resume preparation and mock interviews. They taught us about the recruiting process- how and exactly when to submit our resumes. They encouraged us to network and accept internshippositions. Of my classmates who actively pursued jobs in public accounting, all weresuccessful in finding employment. Once you have a bit of experience, the world is open to you. After working for a year or two, you will have a constant

stream of recruiters reaching out to you on their owntrying to interest you inpotential positions for experienced hires. FOR WHO WOULD RECOMMEND THE FIELD OF ACCOUNTING? Some people mistakenly assume that one must be good at math in order to be an accountant. That is not necessarily true. These days, the computer softwaretakes care of the heavy math. Accountants must have an excellent grasp of accounting concepts. They must be able to understand how money flows through abusiness. I would recommend this field for someone with good interpersonal skills. The accountant is no longer the shy guy in the corner. Today,accountantsare expected to meet with businesses and relate to their clients. Good writing skills are alsoimportantin order to communicate properly. An accountant should also havegood organizational skills. In general, accounting is a very structured field; you know that your career is pretty set. It is an excellent choice for someone who wants to attain a valuable skill that can bring about the menuchashanefesh of a steady pay check for many years to come. In this field, you won’t have fluctuations that result in a wildlysuccessfulyear; but you won’teither have a year in which you lose money. Accounting isa very stable field. The regulatory environment is only increasing so the need for accountants is growing.

INGREDIENTS DID YOU PUT UP YOUR BORSCHT ALREADY? FOR MANY, the start of Pesach prep is marked by the annual “putting up the borscht” ceremony. For many others, the word borscht conjures up gory images along with myths and misconceptions. Have you been taught that you must get your borscht going by Rosh Chodesh Nissan if you want the “real deal”? (You don’t.) Have you been taught that you must include so much salt that it is no longer pleasurable to drink? (You don’t.) Are you grossed out by the idea of seeing a white fluffy layer of mold on this odd beverage? (No wonder.) Are you clueless about the process and only take home a bottle for your husband from your mother-in-law’s house? (Don’t worry!) For these reasons, have you been living without the beauty of borscht? First, what is borscht? Beet kvass, as it is more popularly known, is an age-old tonic associated with many health benefits. Cultured beverages like borscht help restore this balance without the sugar, chemicals and so-called natural additives of modern energy and sport drinks. Beets are loaded with nutrients and are valuable for their medicinal qualities and as a digestive aid. Drinking one glass in the morning and one at night of this excellent blood and liver tonic alkalizes the blood, cleanses the liver and is a good treatment for kidney stones and other ailments. Borscht is comprised of simple ingredients and is easy to make through the traditional fermentation process. Those who have taken my in-depth fermentation courses know that fancy fermentation equipment is fun, convenient and pretty, but is rarely a must. And so, with a few basic supplies and a bucketload of beets, you’re ready to go!

for a half-gallon Ball mason jar

1 quart filtered water 1 Tbsp. pure sea salt or Himalayan pink salt 3–4 beets 1. Wash the beets. Trim the tops and tails, but leave the skins on. 2. Cut the beets into 1to 2-inch cubes. It is not necessary to cut precise shapes and sizes; you just want to give the beets enough surface area to ferment. However, avoid finely chopping or grating the beets, which can lead to very rapid fermentation and alcohol production. 3. Place the beets in a clean half-gallon mason jar. 4. Fill a jar or container with a quart of filtered water and add 1 tablespoon salt. Cover the jar and shake well to distribute the salt. Up to 2 tablespoons of salt can be added for a saltier flavor. 5. Pour the salt water into the mason jar, covering the beets completely. Do not fill to the top; leave at least 1 inch of empty space at the top of the jar. 6. In order for the beets to ferment properly without the risk of un-

wanted mold, the beets will need to be weighed down in order to stay submerged under the water at all times. Even if they are submerged when you set them up, it is still necessary to weigh them down as they very often move during the fermentation process. You can use a Ziploc bag full of water, a sterilized rock, a small plate or cup, or an official fermenting weight to hold the beets down. Then cover the jar tightly. 7. Let the jar stand at room temperature. Open the ring of the cover every two to three days to release gases produced during fermentation. Do not remove the flat disc; only loosen the ring for a few seconds, and then close it once again. 8. Borscht can be fermented for as little as five days and up to three weeks. A longer ferment time means a stronger flavor (and probiotic concentration). When done, transfer to the fridge. You may drink it right away, but it’s often best after being refrigerated for a few days.

TO COVER OR NOT TO COVER When it comes to fermenting, everyone has their own theories and methods. Some will only ferment in airtight, covered vessels while others simply cover their vessel with a light cloth. There is no one way that is correct. As long as the beets are submerged in the salt water, open fermentation works just as well. It is important to note, though, that open fermentation raises the chance of unwanted germs and bacteria in the air getting into the ferment and making it go bad. Covers reduce that risk.

MOLD MYTHS No, as much as your grandmother may have been talking about it, mold is not a good sign in fermentation. Usually, it will grow on protruding pieces of beets that were not completely submerged in the water. Many people happily ferment bottle after bottle of moldtopped borscht with the mesorah that it should be skimmed off and enjoyed. It is important to note that mold at the top doesn’t just stay at the top. Lab results have shown that mold will seep into the beverage even though you can’t see it. The borscht is not dangerous and could technically be consumed, but it’s not an ideal drink for people with mold or yeast sensitivities. Ultimately, the choice is up to you. If mold appears, use your best judgment in assessing whether the mold on your ferment is significant enough to warrant tossing the whole batch.

USAGE SUGGESTIONS With its many health benefits, don’t limit yourself just to drinking a bit of borscht here and there. You can make great use of the beet cubes in your bottle by chopping them into tiny pieces and adding them to a Romaine lettuce or feta cheese salad. Put them through a juicer to maximize the borscht yield, or chop them in the food processor to make homemade probiotic chrein. If you are brave, you can have fun experimenting by adding flavorings to your ferment like ginger, lemon, orange or spices.

THE GRANDFATHER CLOCK Ever wondered where the name “grandfather clock” originates? The first longcase clock to go by this title has a peculiar backstory. While visiting England in 1875, American Henry Clay Work came across a majestic longcase clock in the lobby of the George Hotel in North Yorkshire. The clock had ceased movement way back, serving no apparent purpose. Upon his inquiries, Work learned the fascinating story behind it. The aged clock had belonged to the inn’s previous owners, the Jenkins brothers, both already deceased. The clock kept perfect time until one of the brothers died, at which point it began to slow down, losing accuracy. Some time later, when the second brother died, the clock stopped short, never to move again. After this, no clockmaker could get the clock to resume working — or so they say. The clock remained frozen in time, its hands resting in the position they assumed was the moment its second owner passed. Naming it after the two old men, Work dubbed it “the grandfathers’ clock,” a name that was eventually adopted into our language.

WEAR IT RIGHT — ON THE LEFT Is the watch worn on the right wrist or left? For practical purposes, the watch is generally worn on the left wrist of the right-handed and on the right wrist of the left-handed. We do so for two reasons: While using the primary hand (for writing, etc.), the watch can easily be seen on the stationary hand. Also, the lesser movement of the non-primary hand minimizes the wear and tear of the watch.

WHY 10:10? “Clocks are preset at 10:10 to make them smile” is something many of us grew up hearing. But what’s the real reason behind the classic 10:10? If you could give one guess, what would it be? Sales, of course! This default setting is attributed to no grander motive than the good old marketing practice of skillfully displaying a brand’s name or logo in a way that is pleasing to the public eye. If you look at a clock, you’ll notice the manufacturer’s name imprinted on the timepiece just below the 12. With the time set to 10:10, the hands create a symmetrical frame around the logo. Thus, this configuration brings the potential buyer’s attention to this precise area of the clock’s face — the brand.

“How in the world will I wake up tomorrow morning?” is typically more of a sigh than an actual question, thanks to our alarm clocks. But this was a genuine question up until not so long ago. How did they wake up on time in the pre-alarm clock era? Usually retired workers or younger men unfit for physical labor were hired as “knocker-ups,” also referred to as “knocker-uppers.” These men would tap their long sticks on closed shutters to rouse the townsfolk in time for work. Seems like the perfect solution, until you ask: Who knocked the knocker-uppers up? A medieval tonguetwister explains this dilemma: We had a knocker-up, and our knocker-up had a knocker-up And our knocker-up’s knocker-up didn’t knock our knocker up So our knocker-up didn’t knock us up ‘Cos he’s not up. A job is a job, though. These knocker-uppers were usually night owls who stayed up all night and only hit the sack after evicting their masters from theirs. “Shteit auf tzu Selichos…” Knocker-uppers have in fact played a central role in our history as well! Known as “shulklappers,” they would knock on doors and shutters to indicate that it was time for shul.

IN THE KNOCK OF TIME What was someone to do if they wanted a short nap during the day, at which time the knockeruppers were nowhere to be found? An age-old method was the use of nails-and-candle clocks. The candles used for these clocks had consistently spaced markings that indicated the passage of time when burned. These were often used as timers by sticking a heavy nail into the desired marking on the candle. When the wax around the nail fully melted, the nail would clatter onto the metal plate below, rattling “time’s up!”
