oes anyone outside religious enclaves or New York parades still wear true bonnets at Easter? What used to be seen on every little girl’s head in America has faded into fashion history. True bonnets were usually a white cloth cap with strings for fastening around the chin, which were decorated at Easter with fresh flowers to celebrate spring’s arrival. But as fashions come & go, the true bonnet gave way to any type of hat. There used to be a time when our finest clothes were only worn on the Sabbath Day, and Easter became the time to start wearing new clothing, but with modern business requirements, that distinction is no longer valid. Our finery is not reserved for special occassions like it once was. If there’s ever a time to dress retro in holiday clothing to recapture that nostalgic experience, Easter is a prime candidate. Bonnets with flowers, white gloves, floral print dresses, lace trimmed socks and saddle shoes are what I remember everybody wearing. Depending on how retro one wishes to go, resale consignment stores usually stock clothing that broadcasts “Spring,” “Easter,” and “Passover,” maybe even bonnets! Your favorite antique stores should be able to locate older clothery, or at least direct you to manufacturers of quality reproductions.

• 10 Slices Bread • 1 Cup • 1 cup Dried CurChopped Celery rants, (raisins or • 1 Clove Garlic, cranberries okay) minced • 4 Apples, Peeled, • 1 Bay Leaf Sliced • 3 Whole Cloves • Dried Thyme • Sprig Fresh Thyme • 4 tablespoon • Sprig Fresh Melted Butter Marjoram • 1 tablespoon • ¼ cups White Wine Vegetable Oil or cider vinegar • 1 Goose (8 - 10 lbs) • 2 Tablespoons flour • 1 Cup or cornstarch Chopped Onion • 1 teaspoon • 1 Cup Tomato Paste Chopped Carrot • 10 oz Chicken Broth Combine crumbled bread, currants, apples & thyme with melted butter. Stuff, truss and tie goose. Prick goose skin with fork. Brown goose lightly on all sides in hot oil on top of stove, then drain off & save pan drippings. Place goose breast side up in roasting pan with a little water, cover, roast at 375 degrees for one hour. Drain excess fat. Combine chopped vegetables & herbs. Add vegetable mixture to pan and continue roasting uncovered 3-4 hours (approx. 20-25 minutes per pound) Periodically drain fat and add more water as required. After removing cooked goose, reduce fat drippings and vegetables on top of stove, then stir in white wine, tomato paste and chicken broth. Simmer for 10-15 minutes, then strain gravy. Mix flour or cornstarch with water & add to gravy for thickening. Traditionally served with applesauce, mashed potatoes and braised cabbage. Serves 6-8.
