I was watching the Food Network show, Diners, Drive-Ins, and Dives, and got inspired when I saw a cook in an Italian restaurant making a big vat of marinara sauce. I thought, "I want to try making my own fresh, veggie-packed sauce!" I then had the idea of making a big batch that could be used for multiple meals in a week. That's how I came up with my idea for "Three-Way Veggie Goodness." The idea is to use this to get a head start on three different meals for the week: Beef Stew (serving 4), Wheat Pasta with Marinara (serving 4), and Chicken Parmesan (serving 4). The Beef Stew is my own recipe, which will be featured in my next post. The Chicken Parmesan recipe came from Kalyn's Kitchen (In place of the poultry seasoning, I used 1/4 tsp sage and 1/4 tsp Italian seasoning. I replaced the 1/4 cup of bread crumbs with 1/2 cup finely chopped walnuts, and I used 1/2 cup reduced-fat grated Parmesan cheese. These modifications make it South Beach-friendly for phases 1-3).
