akes about 2 cups. The hummus can be refrigerated in an airtight container for 5 days. If you do not plan on serving it immediately, refrigerate hummus and garnishes separately. When ready to serve, stir in approx. 1 tablespoon of warm water if the texture is too thick. Liz's notes: a hand-held lemon juicer tool comes in handy for this. I use a small steamer basket over a bowl to catch the seeds and keep them out of the juice. Fresh lemons are usually cheap and nice to have on hand for many recipes.
