The inspiration for this dessert came from one I found in Woman's Day magazine by KRAFT FOODS-sponsored cook, Katie Brown, for "Turtle Pumpkin Pie." I adapted it to add some variety to the sugarfree pudding that begins to get all-too familiar, especially during South Beach phase 2. My husband took this lovely photo of the result! I served these up in plastic martini glasses to make them extra appealing. Another idea for "dressing up" your normal pudding would be to layer sliced strawberries in white chocolate or cheesecake-flavored Jello pudding and top with a dusting of sugarfree cocoa mix or 5-6 chocolate chips.
