My good friend Tiffany Marts modified this recipe which she found on all recipes.com. She made it South Beach-friendly for phases 2and 3 and did her own delicious twist on the sauce. I assure you this will quickly become a staple dish in your house as it is in ours. Even if you're not usually excited about eating fish, I dare you not to love this recipe! I find frozen tilapia very inexpensive at the grocery store. Another money-saving tip: you could use a combo of eggs and egg whites broken in a liquid measuring cup to measure 4 ounces instead of using egg substitute. Serve tilapia with mixed vegetables, salad, and/or long grain brown rice or couscous.
