The 44th Bureau County Homestead Festival The Bureau County Homestead Festival in Princeton kicks off Friday, Sept. 11 and runs through Sunday, Sept. 13. As in years gone by, a host of activities await event-goers of all ages.

Many of the previous events will return to this year’s festival, along with a few new attractions. Friday kicks off the weekend with several events at Soldiers and Sailors Park on Princeton’s South Main Street. On Saturday, events will be happening around town with the highlight for many being the annual Homestead Festival Parade, which steps off at 1:30 p.m. on North Main Street and travels to Soldiers and Sailors Park.

Most of Sunday’s events are also held on South Main Street, including the 35th annual Homestead Festival Car Show, which runs from 8 a.m. to the awards ceremony at 3 p.m.

Other favorite attractions include the Jaycees Beer Gardens at Darius Miller Park on Friday and Saturday; the Princeton Junior Women’s Club pulled pork barbecue and ice cream social on Friday; the Underground Railroad 5K Race at the Bureau County Metro Center on Saturday morning; the Bureau County 4-H Extension pork chop sandwiches/meals at Soldiers and Sailors Park; the Beta Sigma Phi arts and crafts show on the courthouse square; the jazz worship service at St. Matthews Lutheran Church on Sunday morning; plenty of great food and entertainment throughout the weekend; a huge 50/50 drawing; tours of the Owen Lovejoy Homestead, class reunions and much, much more ...

The 44th annual Homestead Festival in Princeton will be Thursday, Sept. 10, through Sunday, Sept. 13.

The Spring Valley United Church of Christ will hold a worship in the park at 10 a.m. Sunday, Sept. 13, at the west shelter in Kirby Park. After the service, there will be a picnic/potluck with meat, beverage and table service provided. Participants are asked to bring a dish to pass.

St. Thomas More in Dalzell will host a chicken dinner from 11 a.m. to 2 p.m. Sunday, Sept. 13, in the church parish hall at 302 Chestnut St. The menu will include baked or fried chicken, salad, spaghetti, bread and butter, dessert, water, coffee, lemonade or iced tea. The cost is $10 for adults; ages 6 to 10 is $5 for a drumstick, spaghetti, bread, dessert and drink; and ages 5 and under are free for spaghetti, bread, drink and dessert.

Carry-outs are $10.

The Princeton Moose Lodge will host a bingo night at 7 p.m. Tuesday, Sept. 15. Doors will open at 5 p.m. and sandwiches will be available for purchase. The lodge will continue to host bingo the first and third Tuesday of each month. The lodge is at 1339 N. Euclid Ave. in Princeton.

Color Guard and march with them in the upcoming Homestead Festival parade, which steps off at 1 p.m.

The group’s goal is to increase the number of veterans marching in the parade as it was in years past.

Any able-bodied veteran is encouraged to join or if they are unable to

march the distance they are welcome to ride on the float or in one of the vehicles that follow the Color Guard.

Author fair planned in Princeton Authors wanted PRINCETON — The Princeton Public Library is looking for published authors interested in participating in an Author Fair from 10 a.m. to 2 p.m. Saturday, Oct. 24.

This is a free event, but authors

must reserve their spot by filling out an application. Table space and two chairs will be provided. Authors will be responsible for their own cashboxes and set up. Set-up time begins at 9:30 a.m. with the doors open to the public at 10 a.m. The library hopes this will become an

“Letters About Literature” invites students to read a book, poem or play of their choice and write a letter to the author about how the work changed their life or view of the world. Students can enter on their own or through their schools, libraries or other youth organizations.

“Every year thousands of students in Illinois enjoy participating in this inspiring competition,” said White.

Learn about one reader’s cool pet One of my readers wrote in to tell me about her pet. This is what she said: “My great pet’s name is Delilah. She is a Nigerian Dwarf goat. She is mine. She had a baby in April. Her name was Clara. We sold Clara June 9th, 2015. Now Delilah has five other goat friends. I milk Delilah because she is a dairy goat. I get almost one cup every day. She likes to be milked. My sisters and my daddy like her milk, but I don’t.”

Cloud mints 2 pounds powdered sugar 8 ounces cream cheese 1/2 cup sugar

1 to 1 and 1/2 teaspoons mint extract, depending how minty you want it to be Six drops blue food coloring

Instructions: Beat the cream cheese with a mixer. If you’ve never used a mixer before, ask an adult for help. Add in the mint extract, blue food coloring and some of the powdered sugar.

Mix it all with the mixer. Add in the rest of the powdered sugar little by little until the mint mixture feels fairly firm and not as sticky. Then roll the mixture into tiny balls, roll them in sugar and gently press the ball down with a fork to make a pattern on top of the mint. You can either eat them right away or refrigerate them.

Five cooking tricks that add bold flavor to healthy foods Now’s the time to come up with some hearty squash recipes. All kinds of squash are coming on in your gardens, so try some new recipes to change some of your side dishes.

Citrus marinades

Cheesy Stuffed Squash 4 medium yellow squash, ends trimmed; and cut in half lengthwise 2 tablespoons extra virgin olive oil 1/2 teaspoon salt 2 cups crushed cheese flavored tortilla chips, such as Doritos divided 1 cup sour cream 1 cup Pepper Jack cheese, divided Preheat oven to 350°. Spray a large baking sheet with nonstick cooking spray. Brush squash with olive oil and sprinkle with salt. Place squash, cut side up, on prepared baking sheet. Bake until tender, 25 to 30 minutes. Let cool on pan until cool enough to handle, approximately 10 minutes. Spoon out center of squash with seeds. Leaving shell intact. In the bowl of a food processor, combine squash pulp, 1 cup tortilla chips, sour cream and 1/2 cup cheese, pulsing to combine. Spoon into squash shells. Return to baking sheet. Sprinkle with remaining 1 cup tortilla chips and remaining 1/2 cup cheese. Bake until cheese has melted, 8 to 10 minutes.

Serve immediately.

Pecan Stuffed Butternut Squash 2 medium butternut squash (about 3 pounds each) 3/4 teaspoon salt Pepper 4 ounces cream cheese, softened 1/4 cup butter, softened 3 tablespoons brown sugar 1/2 cup chopped pecans Cut each squash in half lengthwise, discard seeds. Place squash, cut side down, in two 13-by-9-inch baking pans, add 1/2 inch water. Bake, uncovered, at 350° for 1 hour. Turn squash over, sprinkle with salt and pepper. In a small bowl, beat the cream cheese, butter and brown sugar, until light and fluffy. Stir in pecans. Spoon into squash cavities. Bake 15 to 20 minutes longer or until filling is lightly browned and squash is tender.

Herbed Yellow Squash Casserole 2 pounds yellow squash, ends trimmed and cut into 1/2-inch slices 1 large egg 1/2 cup mayonnaise 1 tablespoon finely chopped fresh chives 1 tablespoon chopped fresh basil 1 teaspoon chopped fresh thyme 1/2 teaspoon salt 1/4 teaspoon black pepper 1 1/4 cups shredded sharp Cheddar cheese, divided Preheat oven to 350°. Place squash slices in the basket of a steamer with approximately 1 inch water in the saucepan bellow. Bring water to a boil and steam squash until tender when pierced with a fork, about 12 minutes. While squash is cooking, combine egg, mayonnaise, chives, basil, thyme, salt and pepper in a medium bowl. Add steamed squash and 3/4 cup cheese to mayonnaise mixture, stirring gently to combine. Pour into a 9-by-9-inch baking dish and top with remaining 1/2 cup cheese. Bake for 30 minutes.

Nutty Zucchini and Yellow Squash 1 zucchini, about 12 ounces 1 yellow squash, about 12 ounces 2 tablespoons butter

(BPT) — While healthy foods dominate, too often people fall into meal ruts where all they eat are simple salads and grilled chicken. Nutritious foods don’t have to be boring foods, though, because it’s easy to add pizzazz with a few clever twists.

2 tablespoons white wine 1/8 teaspoon salt 1/8 teaspoon crushed red pepper flakes 1 tablespoon chopped fresh mint 1 tablespoon chopped fresh parsley 1 tablespoon sliced natural almonds, toasted Cut zucchini and squash in 3-by-1/2inch pieces in large nonstick skillet.

Heat 1 tablespoon butter over medium heat. Add zucchini and squash. Cover.

Cook, stirring occasionally, until softened, about 3 minutes. Increase heat to medium high; add wine, salt, red pepper flakes and mint. Cook, stirring until liquid is reduced by half and squash is just tender, 4 to 5 minutes. Stir in remaining butter until just melted and sauce is creamy. Transfer to serving bowl. Sprinkle with parsley and almonds. Serve immediately.

Stuffed Acorn Squash 2 medium acorn squash, halved and seeds removed 4 slices bacon, diced 1 medium onion, trimmed and diced 1 Granny Smith apple, peeled, cored and diced 1 pound ground beef 1/4 cup packed dark brown sugar 1 teaspoon pumpkin pie spice 1/2 teaspoon dried sage 1/4 teaspoon salt 1/4 teaspoon pepper 2 tablespoons dry bread crumbs Heat oven to 350°. Place squash halves, cut side down, on a rimmed dish. Add 2 cups water to dish and bake at 350° for 40 minutes. Meanwhile cook bacon in a large nonstick skillet over medium heat for 4 minutes. Add onions and apple. Cook an additional 4 minutes, stirring occasionally. Stir in ground beef.

Cook, breaking meat apart with a wooden spoon, 5 minutes. Add brown sugar, pumpkin pie spice, sage, salt and pepper. Cook 1 minute. Remove from heat and stir in bread crumbs. Drain water from baking dish and flip over squash.

Spoon meat mixture into squash halves.

Return to oven and bake at 350° for 20 minutes. Serve warm.

Take a Vet Fishing SPRING VALLEY — The Spring Valley Boat Club is looking for a few good fishermen to help with its Take a Vet Fishing Day project on Saturday, Sept. 19.

Local fishermen with a boat are needed to help on this day.

Everyone will meet at Illinois Valley Outdoors Bait Shop in Spring Valley at 9 a.m. for breakfast and vets will meet their boat captain. Boats will launch at 9 a.m. and return to Barto Landing at 1 p.m.

Lunch and drinks will be provided at the Spring Valley Boat Club at 2 p.m.

River Bandits tryouts

LADD — The Illinois Valley River Bandits 11-year-old Boys Baseball travel team is having tryouts for the 2016 season at noon Sunday, Sept. 13 at Kennedy Park at 900 East Locust in Ladd. Players cannot turn 12 years old before May 1 for the 11 U team.

Players will be evaluated in throwing, fielding, and batting.

Please bring proper equipment

for the positions you will want to play.

For the 2016 year, the fee remains the same at $300 last year. The fees pay for uniforms, tournament entry fees, umpires for local games, and equipment.

The River Bandits play mostly tournaments within an hour to an hour and a half away including the Quad Cities. They would like to attend the 2016 Slumpbuster tournament in June, an annual tournament located near Omaha, Neb., at the time of the College World Series. The tournament offers many activities for the boys, including tickets to a College World Series game, a Fundamentals challenge, and Wooden Bat bonfire.

SPRING VALLEY — Starved Rock Regional Center for Therapy and Child Development (formerly Easter Seals of LaSalle & Bureau Counties) invites the public to participate in the fourth annual Golf Scramble Saturday, Sept. 12, at Spring Creek Golf Course.

This event is sponsored by MJ’s Pub & Grill and features 18-holes of golf, all day green fees, games of chance, games of skill, cash prizes and a dinner

reception at MJ’s Pub & Grill featuring bone-in pork chops and live music by: Rich Selquist, 5:30 to 7:30 p.m.; Tim Ajster, 7:30 to 9:30 p.m.’ and Higgins Brother Band, 9:30 p.m. to 1 a.m.

Golfers are $70 each (includes dinner), dinners only are $20 each. Hole sponsorships are $100 each and beverage cart sponsors are $250 each.
