Perhaps Buffy sensed something was about to happen. Bidding Adieu to 2012 Here we are, at the end of 2012. It’s been a year of change and—dare I say—growth here at San Joaquin Magazine. We’ve said our goodbyes to team members and welcomed new faces, visited new proprietors and bid farewell to businesses who have closed their doors. I’m sure most of you would agree that it’s been one heck of a year, for this magazine and for us all. So as we see this year come to a close, we cannot help but wonder what the next will bring. In the spirit of our hope and excitement for the new year, we have a feature on 25 ways to give 2013 a proper welcome. Though we don’t know what the next year will bring, we know that it will be great because our readers and our community will refuse to be anything less. Decorating the Christmas tree is easily one of the best parts of the holiday season. No matter how much struggle and, ahem, colorful language may accompany picking out the tree and trying to make it fit in the living room (or dragging it out of storage and putting it together - artificial trees are no walk in the park), once it’s all set up and ready to decorate, even the staunchest Scrooge will feel a little twinge of the ‘ole Christmas spirit. No matter how frantic all the shopping, party planning, cooking may get, stringing popcorn and hanging bulbs with your closest family and friends is a perfect way to slow down and actually enjoy the season.

For families whose collection of ornaments is based around treasured favorites, the pair suggests simple tricks to dress up the tree - adding different textures like ribbons can give a greater feeling of depth, and using large items that aren’t ornaments - you’ll find watering cans on the gardening tree in the store, for example - can amp up the decor. No matter how you deck your halls, Rick and Jeff definitely encourage embracing plants. “A tree always brings Christmas into the home, even if it’s a fake little tabletop tree in the kitchen,” says Jeff. He also suggests saving cuttings from live trees to hang around the

No one knows the magic of putting a Christmas tree together like Rick Ladd and Jeff Gibson, owners of With Garden Flair in Stockton. For eight years now, the pair has been decking out trees for the holiday season and showing how to decorate with, well, flair. “We do about nine trees every year. Each tree is themed,” Rick explains. This year’s themes include new variations on their old favorites, like the Santa tree, the boy and girl trees, the overthe-top gold, silver, and platinum tree, and, of course, the garden tree. They’re also trying out a few new trends- one of their trees is aimed at the jet-setters, or at least those who dream of jet-setting, and is covered in travel-themed ornaments like the Eiffel Tower, the Empire State Building, a London phone box, and the Blood Church in Russia. “That sounds bad, but it’s a beautiful building,” Rick says. Another newfor-this-season theme is their “first frost” tree, filled with greens, whites, and silvers, more like that first kiss of frost than heavy winter snow. For anyone looking to amp up their style this season, Rick and Jeff have plenty of helpful tips. They spend about a year researching

house to help bring in the holiday smells and feel. Jeff, who grew up in Stockton, remembers going to Breuner’s Furniture as a kid to see their animatronics displays, and keeps that in mind when getting With Garden Flair ready for the holidays. “We know we’ve done a good job if we can see fingerprints on the windows about three feet high,” he says. On top of the lavish trees and decorations, shoppers and curious passer-bys can comb through the stocking stuffer table, filled with unique, kitschy, and vintage style

The holidays can be a lonely time—not just for humans, but for shelter-bound dogs and cats, as well. The Animal Rescue of Tracy and Petfinder.com are looking to bring a little joy into the lives of these furry orphans by inviting people to join their “Foster a Lonely Pet for the Holidays” program. Families can take care of a cat or dog until the Animal Rescue is able to find a permanent home. Any vet care or supplies needed will be provided, so foster families need only offer shelter and a little love to these displaced animals until they’ve been adopted. The Animal Rescue of Tracy is hoping to place as many pets as they can into foster homes by December 21, so call them quick if you’re willing to volunteer your home and some companionship to a dog or cat this Christmas. Sky Tours BY MICHELE BIRD

Have you ever gazed at the night sky and wished you could have a better view than what the naked eye can provide? Sky Tours at Delta is giving the people of San Joaquin County a chance to observe the stars and planets first hand and close up. Each month, Sky Tours at Delta invites a mix of astronomy amateurs and fans to view the night sky through telescopes at San Joaquin Delta College’s Shima 2 parking lot. People who attend Sky Tours at Delta have the opportunity to observe the Moon, Jupiter, globular clusters, and the Andromeda Galaxy. Normally, Sky Tours at Delta hosts its monthly event on a day closest to the first quarter moon. In addition to the monthly events, Sky Tours at Delta also hosts Astronomy in the Park during the months of April through October at Oak Grove Regional Park in Stockton. Astronomy in the Park typically draws in at least four hundred people, according to Stockton Astronomical Society member and Sky Tours at Delta volunteer Doug Christensen. Astronomy in the Park also gives science enthusiasts the chance to observe the night sky through various telescopes provided by Stockton Astronomical Society members. Both events are free to the public and Sky Tours at Delta also works with schools by appointment. “Sky Tours at Delta hopes to promote the idea of science and give people a little bit more understanding of it,” said Christensen. Do you know the difference between a corset and a bustier? Can you tell a babydoll from a chamise? If not, don’t worry - Lori Casas, owner of Sensually Spoiled Rotten, is happy to explain. Her philosophy is simple; she just wants a store where every woman can feel comfortable and find the things to pamper themselves, regardless of age or size. “This has been my dream for a long time,” Casas explains. Sensually Spoiled Rotten is stocked with all the fun, classy-sexy things that Casas loves herself. She takes a playful approach to lingerie, and wants her customers to have as much fun exploring as she does picking out products. There are corsets and boas in all different colors and designs for the bold, a variety of costumes yearround, and Victoria’s Secret quality underthings at a fraction of the price. Nothing in the store costs over $50, and Casas is determined to keep it that way. “I like to keep my prices soft,” she says. This price point applies to her selection of Guess purses, wigs, and all of her high heels and boots, too, and bigger sizes don’t get the extra markup that’s typical for anything above a “large.” Shoppers will find sizes 0 through 3X and bra sizes up to DDD, so there’s something for every body shape. “Sexy isn’t a size,” Casas says.

A lot of thought and detail have gone into this boutique - from the pale pink and white walls and built-in cabinets, elaborate chandeliers, and cozy sitting area near the fitting rooms, Casas has carefully created a place that is both comfortable and classy. She has even taken care to be sure that strollers and wheelchairs can navigate through the store, and makes it clear that everyone is invited. Though lacy underwear is the backbone of Sensually Spoiled Rotten, you won’t find anything racier than you might expect to see in a mall lingerie store. Casas emphasizes that they are not an “adult” store, but a place for women of all ages to find the things they need to feel beautiful. “A 75-yearold woman came in and bought a nightgown. She called me the next day and said it’s her new favorite thing she owns,” says Casas. Casas uses Facebook heavily to promote, educate, and show off new merchandise for her customers. Anyone who pops by the page will find photos of dresses and designs available in the store as well as tips on how to properly take care of your dainties. If you see something you like, Casas is willing to hold items in the store for a couple days, but emphasizes she’s not in the online sales business. This boutique is meant to be experienced, so stop by and pamper yourself just a little.

KITESURFING If you haven’t heard of kitesurfing, imagine that parasailing and surfing had a baby—a fast, dangerous baby. This relatively new extreme sport harnesses both waves and wind, using giant, parachute-like “kites” to propel boarders through the water and the air. It’s definitely recommended that any thrill-seekers who want to give kitesurfing a whirl sign up for a few lessons first, and Santa Cruz Kitesurfing is ready to teach anyone what it takes to be a great—and safe—kitesurfer. Their certified instructors give one-on-one lessons, and only ask that students be strong swimmers. (If you aren’t into swimming, kitesurfing definitely isn’t for you, anyway.) Their lesson plans are available online, and once you’ve graduated from their school, you’re free to pursue your own kitesurfing adventures at any beaches or lakes that welcome the sport.

Maybe you’ve already made the trek down Moaning Cavern’s infamous spiral staircase, which takes some guts in itself— but if you’re ready to up the ante, sign up for the three-hour tour that starts with rappelling roughly sixteen stories through the main chamber and takes you through the nooks and crannies you never get to see on the main tour. Spelunkers will shimmy through ominously-named and undeveloped areas like “the meat grinder” and “Godzilla’s nostril” by the light of their hard hats. This tour will take you through tight spaces and plenty of mud, and though coveralls are handed out before the tour, expect to crawl out covered in dirt. But that’s part of the adventure, and the shower afterwards will be the best you’ve ever taken.

SWIM WITH SHARKS Anyone who watches Shark Week every year may already know that the Farallon Islands, thirty miles west of the Golden Gate, are a hot spot for migrating Great White Sharks, who stop to feast on the elephant seals and rich wildlife that gathers around “California’s Galapagos.” The truly adventurous are welcome to slip into a wetsuit and spend some time in the water with these eating machines—behind the thick steel bars of a shark cage, of course. Great White Adventures offers day-long jaunts to the sharks’ hunting grounds and, just to make sure you have a close encounter, use decoys to lure them closer to their dive boat, the Superfish—which, by the way, is larger and more advanced than Quint’s ill-fated Orca in Jaws, so don’t worry about needing a bigger boat. If you’re not ready to be so close to one of nature’s most infamous predators, you can also sign up to stay on deck and watch your friends from above. But where’s the fun in that? C H A R I T Y S P O T L I G H T Thanks to the large number of donations received from all over San Joaquin County every year, Goodwill is able to help people find employment and regain their independence.

Goodwill is probably already a household name for you - it’s your goto stop after spring cleaning, the place you schlepp your old furniture to after redecorating, and the end-of-theline for all the things that didn’t get scooped up at your last garage sale. But do you know what Goodwill’s number one mission is? Believe it or not, the main goal of this ubiquitous charity is offering employment to those who face difficulties being hired elsewhere. And, according to Sally Wooden, the Director of Public Relations and Development for the San Joaquin Valley branch, they’re doing a great job at it. Goodwill Industries of San Joaquin Valley currently employs 351 people between their sixteen (soon to be seventeen) stores and administrative offices, and they’re looking to hire more. In addition, Goodwill has helped forty-one people with severe disabilities gain employment and competitive salaries through their contracts with government organizations like the IRS, California Department of Forestry, and USDA. Goodwill also offers

job preparation, placement, and planning services, so, all told, they have helped almost five thousand people become self-sufficient. However, it’s your regular donations of last season’s clothes that allow Goodwill to offer these employment services. “We fund our mission, which is funding job services to people who have barriers to employment, through the stores,” explains Wooden. She also says that the influx of donations has been steadily increasing, a sign that the economy is slowly but surely picking back up. “We see it in the donation stream when the economy is sluggish. When people are optimistic, we see it in donations. The quality of donations improves when the economy improves.” Recycling is also a big part of Goodwill’s plan, and they encourage people to pass things on instead of throwing them away. “San Joaquin Goodwill alone diverted ten million pounds of textiles, electronics, and shoes away from landfills,” says Wooden. She points out that Goodwill accepts electronics seven days a week, which should be a relief

to anyone who’s been wondering what to do with their old computers. By taking your old gizmos to Goodwill, you can avoid trying to keep track of e-waste collection days and have the satisfaction of knowing that you’ve helped keep one more thing out of a landfill and helped one more person keep a job. Helping keep Goodwill going is as easy as swinging by one of their community donation centers or stores, and with seventeen stores and fourteen donation centers in the San Joaquin Valley, there is definitely one close to you. There is always a huge need for clothing, especially children’s clothing, so keep cleaning out those closets.

Santa Claus dates back as far as the seventeenth century, with many local traditions even predating that. However, the modern Saint Nick was the result of a radical transformation that occurred from the 1800s until well into the 1930s. With literary assistance from such well known works as ‘Twas the Night Before Christmas, written in 1823, and images by Thomas Nast popular from the 1880s to the 1890s as well as the Coca Cola ads created in the 1930s, the new image of Santa launched him into the hearts and traditions of those who celebrate today. By 1901, ads such as this for a local Stockton business circulated, yet the transformation of Santa Claus was far from complete.

The United Service Organization (USO) was created by President Franklin D. Roosevelt in 1941 as a collaboration between numerous organizations that wished to better contribute to the war effort. Their original objective was to cater to the soldiers' needs for emotional support; one such obstacle the new organization faced was holidays. The holidays have long been difficult during wartimes for both soldiers abroad and families at home. The USO enacted numerous programs, such as one that involved sending holiday packets to the troops so they could also celebrate wherever they were stationed. For the soldiers, it gave them some supplies as well as a relief from warfare and a reminder of what they were fighting for.

The San Joaquin Valley is well known as an agricultural center with weather that is conducive to many essential crops. The area is not known as a place that sees very much snow. Nevertheless, freak snowstorms have occurred throughout the valley’s history. One such storm confounded Stockton in 1936. The storm dropped enough snow that the Hunter Street Fire Station firefighters were able to build a snowman modeled after their fire chief. While enough snow to build snowmen is quite rare in the county, several winters have seen light snow dusting trees and cars.

Winter carnivals and parities have been hosted sporadically throughout the holiday seasons in Stockton. One such carnival was held in 1938 with a winter sports theme. It included music, dancing, and films displaying the many winter sports that occurred in Northern California. In addition, a Snow Queen was crowned. The Queen was selected among the girls as the one wearing the most colorful, but also functional, sports outfits. Northern California has a long history of winter sports with Tahoe and the Sierra Nevadas so close to San Joaquin County, making the mountains a quick getaway for many families and an early appreciation for the athletic activities snow created.

The modern tradition of Christmas trees goes back to the early 1500s. However, many believe its roots may go back much further, to pre-Christian communities. Whatever the origin, the tradition has grown and changed through the years. For instance, a family or community’s Christmas trees had always been chopped down and brought back from a forest. However, in the 1900s the first tree farms were established. It took a while for the farms to catch on as many people preferred to acquire their trees in the traditional way long into the 1930s and 1940s. Stockton was no exception; the Stockton Transfer Co. was used to transport a tree for the Stockton Record from the Sierra Nevada Mountains for their 1923 celebration. DECEMBER 2012

Those unfazed by the possibilities of stratospheric levels of panic will love the Bat-a-Pult. Like a boomerang, this allnew aerial attraction slingshots thrill riders 1,200 foot roundtrip from Pavilion rafters through Williams Canyon in a whoosh.

As it turns out, The Broadmoor’s oft-flaunted moniker—“The gateway to the Colorado Rocky Mountains”—is no sales pitch. Despite having every possible accoutrement and refinement one could possibly want on the property, the hotel’s prime proximity to exterior spoils by way of attractions in scenic Pikes Peak (pikespeakcolorado.com) and Colorado Springs (coloradosprings.com) provide ample enticement to step outside and explore. Woodbridge Crossing isn’t the sort of place that’s easy to define. The menu boasts an awful lot of steakhouse fare, but they also serve hearty breakfasts and brunches complete with mimosas, and their bar could be a standalone hangout on its own. To confound things even more, this old brick building is filled with cowboys and Indians-style decor, including tomahawks, old pistols, tons of John Wayne a la “Hondo” memorabilia, and even a small-scale stagecoach. So what is Woodbridge Crossing, exactly?

No matter what you want to call it, Woodbridge Crossing makes a point to be good at all they do. Their lunch, dinner, and Sunday brunch menus are short and sweet, filled with foods that best match the meal. Amble in for lunch and you’ll find a selection of meaty, mouthwatering sandwiches, from the simple grilled cheese and ham to the decadent French dip, piled high with prime rib and served with the all-important au jus to sop up with soft sourdough bread.   If you’re planning an evening at Woodbridge Crossing, make sure you arrive hungry. You’ll want to sneak in an appetizer, like their crispy calamari strips or delightfully light bruschetta, before digging into one of their generously portioned entrees. Their baby back ribs are tender and, as promised, fall off the bone, and are slathered with house-made BBQ sauce that is sweet, but gives the flavor of the meat plenty of room to shine. The same prime rib that graces the French dip is available by itself at dinner, paired simply with some sauteed veggies and a baked potato for those who are looking for a good ‘ole meat and potatoes kind of meal. Prefer “surf” to “turf”? You’ll also find classic

If you’re feeling a little more adventurous, try their deep fried stuffed shrimp--tender prawns are filled with a rich mix of cream cheese and crab, breaded in Panko crumbs, and fried until the devilish concoction is covered in a crispy shell. This dish is definitely for your diet cheat days, but worth every calorie.   And then there is Sunday brunch, a must for anyone who really wants to make the most of the last day of the weekend or needs to spend a morning recovering from Saturday’s shenanigans. Their breakfast dishes match the decadence of their dinner entrees, with rich foods like French toast, biscuits drowned in thick country gravy, and a seafood omelet stuffed with crab and shrimp and smothered in the same creamy hollandaise sauce that graces their eggs benedict. Local Lodi This month's picks from the Lodi Wine and Visitor Center

Borra Vineyards, the oldest of Lodi’s currently existing wineries (bonded in 1975), has recently released their yearly “Field Blend Red” – a wine that in many ways epitomizes the heart and soul of the Lodi American Viticultural Area. Of proud Italian descent, Borra’s third generation grower/proprietor Steve Borra describes this wine as “an homage to the way my grandfather made wine.”   According to Borra, “grandpa was very Old World — he’d pick all the grapes at once and everything would go into one vat, no matter what kind of grape it was. Of course, he used wild yeast, and everything was natural — he didn’t know about stuff like sulfur — and he’d siphon the wines into one gallon jugs, one jug at a time, from one barrel at a time. Keep in mind, my grandfather could easily polish off a liter of wine at a time, and that was just lunch. He’d finish another liter and a half later, for dinner.   “Of course, by the time he’d get to the bottom of a barrel, the wine would no longer be stable, exposed to so much oxygen, and so it didn’t taste so good. When it came time to pop open a fresh barrel, he’d fill up his jug, bring it back to the house, pour himself a glass and say, ‘oh, this barrel is so much better than the last one!’”   The 2010 Borra Heritage Field Blend ($25) is, in fact, an old style field blend – all the grapes coming from vines surrounding the winery on Armstrong Rd., south of the town of Lodi, picked all at one time, and fermented together in one 12 ton tank: 47 percent Barbera, 22 percent Petite Sirah, 18 percent Alicante Bouschet, and 13 percent Carignane.   The Barbera grapes come from trellised vines directly behind the winery, planted over forty years ago. The oldest vines come from the family’s Church Block, growing next door to the home vineyard:

The old block is called “Church” because, before being purchased by the Borras in 1995, it was owned by the local Catholic diocese, which seriously considered pulling up the vines and building a church.   Borra winemaker Markus Niggli tells us, “the purchase of the Church Block made it possible to produce the type of wine that the old Italians probably enjoyed making the most.” Niggli’s own penchant for minimalist winemaking – particularly fermentations utilizing the grapes’ own native (rather than inoculated) yeasts – enhances the terroir related qualities of the 2010 Heritage Field Blend all the more: the wine has a vivid, almost psychedelic purple color, followed by a compact, concentrated black cherry/raspberry liqueur-like fruit aroma, tinged with suggestions of caraway, sweet kitchen spices, and whiffs of animal skin with organic, loamy undertones. On the palate, the luscious fruit qualities seem barely contained by zesty yet viscous, medium-full bodied sensations, rolling like a river.   Adds Niggli, “each year, the Field Blend is always a mystery to us because we never really know how it will turn out until we actually get the grapes in – the proportions in the final blend are determined by Mother Nature. In 2010, we got more Barbera than expected, and that’s what gives the wine such bright, high acid components. The Alicante Bouschet gives it the intense color, and the Petite Sirah and Carignane adds the spiciness.”   Nowhere else in Lodi – and in the world, for that matter – is Barbera blended with Carignane, Alicante Bouschet, and Petite Sirah. As unorthodox as it is, the results are seamless and sensational—a true expression of Lodi’s own long, lustrous winegrowing heritage!

Richard “Rip” Ripken is not above a little showmanship. The founding member of Ripken Vineyards & Winery Inc. does his Viognier cheer by making a ‘v’ and then and ‘o’ with his arms, pointing to his knee, and hollering “Yay!” It’s one way to rev up customers at Ripken Vineyards’ Lodi tasting room.   That quirky, fun philosophy carries over into the Ripken family’s wines. With names like Rhonealicious and a company motto of “No Boring Wines!” Ripken Vineyards is a decidedly unstuffy. It’s hard to be snooty about a wine with flavor notes of “pencil shavings” and “tar.” “You’d have to taste it,” Ripken says of the 2008 Ripken Carmine with the aforementioned tasting notes. Don’t think the Ripken family doesn’t take its wines seriously, though—the winery founder is describing one of the small batch wines that make Ripken’s tasting room a constant adventure. The winery produces just five hundred to one thousand cases annually.    Ripken, a second-generation farmer, started tinkering with wines for extra credit in high school. A stint at UC Davis under the tutelage of several respected researchers proved he was the sort of winemaker more interested in what’s new than what’s popular. Ripken Vineyards was once a major supplier of grapevine rootstock and still sells grapes to other wineries, but

it’s the search for the next interesting varietal that gets Rip Ripken’s juices flowing.   New this month is the Tinto de Toro Tempranillo, a Spanish style wine he describes as dark and full with hints of boysenberry and leather. He calls the wine “off-the scale delicious,” adding that it took him five years to determine that the grapes need plenty of sun for the best flavor. For whites, Ripken is bullish on the 2006 late harvest Viognier – a “dessert in a glass.” He sounds almost petulant when he admits to having recently bought twenty-five acres of old vine Zinfandel. It’s such a common wine, he just can’t get as revved up as he is about the wineries’ upcoming Montepulciano Abruzzi and Grenache Blanc.   Daughter Sue and wife Nancy are lynchpin partners in the family business, which boasts seven total family members in various positions. Check the Ripken Vineyards website and you’ll also meet the Ripken family children and the vineyard’s two dogs, Jetty and Georgie. Visit the tasting room under the weathervane sculpture of a flying, horn blowing pig to sample estate wines produced in lots of less than a hundred cases. “We’re the flavor of the month club,” he says – meaning it in the literal sense. The more unique wines can be gone in two years. Better to fall in love with the unique and changing

character of the experiments that make it to the Ripken’s tasting room table. Chances are, the Ripkens will be pouring something new since your last visit. They like to think of themselves as eclectic and even a little quirky over at Ripken, where Rip Ripken winkingly calls the wines “enologically sensual,” but boring?   Careful. He’s warming up for another cheer.

With many holiday dinners around the corner, it is time to spruce up that menu and find dishes perfect for wintertime. Leeks are one ingredient that will match any dish you cook up this season because they can be used in three forms: raw, fried, and boiled. Leeks are a vegetable and have a similar shape to asparagus as both are green, tall, and slender. When purchasing leeks at the local grocery store or farmer’s market, you should choose leeks with dark green colored tops that are not dried out. Leeks are often sold all year so most stores should have them in stock when you arrive this holiday season. If you are not a fan of onions in your recipes, leeks are a great substitute because they also provide

LEEKS an onion taste. Leeks have an infinite amount of recipe options including potato leek soup, leek bread pudding, and cock-a-leekie soup. Aside from being used in dishes, leeks can also stand-alone as sides or appetizers by being oven-roasted, sautéed, or boiled. Since leeks have so many cuisine options, they are one ingredient you should be sure to include to your holiday menu this December. Depending on the way you like leeks served, there are recipes that will cater to everyone’s taste buds. Make sure to try out leeks in the fresh New England clam chowder and Portobello and leek carbonara, which will leave your guests stuffed and ready for holiday festivities.

Portobello and Leek Carbonara

4 slices thick-cut bacon, chopped 2 leeks, trimmed, cleaned and patted dry 12 ounces baby Portobello mushrooms, quartered 1/2 pound whole wheat linguine 2 large eggs 3/4 cup freshly grated parmesan cheese Bring water for pasta to a boil. Heat a large skillet oven medium heat and add bacon. Cook until fat is rendered and bacon is crispy – about 6-7 minutes. Remove with a slotted spoon and place on a paper towel to drain. Reduce heat to low. Add in leeks with a pinch of salt, then toss mushrooms on top. Stir everything together to coat, then let cook until ingredients are softened – about 5 minutes. At this time, throw the pasta in the water to cook – it is really important that the pasta is hot. While the pasta is cooking, mix eggs and cheese together in a large bowl. The mixture will be thick. As soon as pasta is finished, reserve 1/2-3/4 cup liquid, drain pasta and immediately throw into the skillet. Toss with the leeks and mushrooms to coat, then remove from heat. With a large spoon in one hand, add the egg mixture right on top and immediately begin stirring the pasta together. I usually stir for a good minute or two. At this time if desired, add the pasta water to the skillet to make things a bit more creamy and saucy. Toss in bacon. Serve immediately with extra cheese! Serves 2-4.

Fresh New England Clam Chowder 6 pounds fresh littleneck clams 10 cups of water 6 slices bacon, chopped 2 tablespoons unsalted butter 1 large sweet onion, diced 1 1/2 cups sliced and cleaned leeks 4 garlic cloves, minced or pressed 4 fresh thyme springs 2 bay leaves 2 tablespoons flour 2 pounds yukon gold potatoes, chopped 2 cups heavy cream 1 teaspoon salt 1/2 teaspoon pepper Add 10 cups of water to a large stock pot and let come to a boil. Once boiling, add clams, cover and let cook for 5 more minutes. Stir, then let cook, covered, for 5-10 minutes more. Remove clams (which should be open) with a slotted spoon and place in a large bowl or colander. Drain water through a very fine strainer a few times (I drained and re-drained 3 times to get rid of the sediment and sand) and reserve 6 cups of broth. Set aside. Takes clams out of shells and discard shell. Coarsely chop clams and set aside.

Heat another (or the same one, cleaned) large pot over medium high heat and add bacon. Cook until crispy and fat is rendered, then remove with a slotted spoon and place bacon on a paper towel to drain. Reduce heat on the pot to low, add butter, then add in onions and leeks with 1/2 teaspoon salt. Stir to coat, then cook for 5 minutes until softened. Add in garlic, thyme and bay leaves, stirring and cooking for another 5 minutes. Increase heat a bit and whisk in flour, stirring for 1-2 minutes to create somewhat of a roux with the vegetables. Add in potatoes, clams, bacon and reserved clam broth. Bring to a boil, then cover and reduce to a simmer, cooking for 30 minutes. Turn off heat, stir in heavy cream, salt and pepper. Taste and season additionally if desired. Let sit aside while making the croutons, then serve hot with croutons for topping! Note: you can definitely used canned chopped clams (I’d probably use 4 cans) and water or fish/clam/seafood stock to replace the liquid. Serves 8-10.

Anastasis Ballet Company will be presenting Handel’s Messiah Ballet this winter season featuring excerpts from George Fredrick Handel’s 1742 masterpiece.
