Spanish ageing process:
Proceso de Crianza: Proceso controlado de envejecimiento y maduración de un vino mediante el cual desarrolla caracteres especiales. Se suele aplicar de forma genérica a todo los vinos sometidos a envejecimiento. Joven: Son vinos comercializados en su primer o segundo año de vida, que tradicionalmente pasaban de los depósitos a la botella, sin un periodo intermedio de crianza en barrica, y en los que priman la frescura y los aromas primarios procedentes de la uva. Crianza: Vino de calidad, sometido a envejecimiento en madera y botella durante al menos dos años naturales. Reserva: Vino sometido a un período concreto de crianza en madera y botella. Para poder ser calificado como reserva un vino tinto debe permanecer durante un mínimo de 36 meses en barrica y botella, de los cuales al menos 12 deben transcurrir en barricas de roble. Para blancos y rosados el período de crianza mínimo es de 24 meses, al menos 6 de ellos en barrica de roble. Gran reserva: Expresión que define ciertos períodos mínimos de crianza en los vinos. Para poder ser calificado como gran reserva, un vino tinto debe envejecer durante al menos 24 meses en barricas de roble y otras 36 también como mínimo en botellas. En el caso de los vinos blancos y rosados, el período mínimo es de 48 meses en madera y botella, de los cuales al menos 6 deben tener lugar en barricas de madera de roble.
In Spain, aging regulations are referred to as crianza, a generic term used to indicate aging in both bottle and barrel. The term crianza literally translates to “upbringing” or “breeding”, used in the same way as you would use it with a child, inferring that a wine needs time, attention and love (do I dare use love with wine!) to evolve into a fully developed, mature wine. However, crianza alsorefers to a specific aging period, as further explained below. Joven: The term joven means ‘young’ and refers to an inordinate amount of styles intended for immediate drinking. Generally, these wine have either been aged for a short period in oak (a few months) or have never seen oak at all. The bargains here tend to be found in wines that are soft in the mouth and food friendly. Crianza: Wines aged for 2 years with a minimum of 12 months in oak and 12 months in the bottle before being sold. These wines tend to have more body and strong acid helping them to pair well with your heavier foods – think roast meats and rich sauces. Reserva: Wines are aged for 3 calendar years with a minimum of 12 months in oak and 24 months in the bottle. Increasing in age, you can expect to find rich and concentrated wines tending towards a silky flavor after softening with age. We like these wines with delicately roasted meats like the renown suckling lamb. White and rosado wines must spend at the minimum of six months in oak and and a one and half years in bottle. Gran Reserva: These wines are aged for 5 years with a minimum of 24 months in oak and 36 months in the bottle; however many gran reservas will spend several more years aging before being released. For many, these are perceived as the pinnacle of Spanish wine – even though in the past, they were often overly oxidized and woody. Today, we are starting to see more care used in the crafting of these wines and as a result, there often is a magical blending of both the oak and the fruit. At their best, Gran Reservas can develop in your mouth bringing forth new and exciting flavors with every sip.

Horacio, medio siglo antes de Jesucristo, aseguró que “la viña sin podar florecía continuamente en las Afortunadas”. Sin embargo, son diversos los autores que afirman que la vid no formaba parte de la flora del archipiélago y aseguran fue introducida en algún momento entre los siglos XIV y XV por los conquistadores o colonos. La procedencia diversa de los primeros colonizadores y la coincidencia en sus culturas del vino se tradujo en la introducción en las Islas de las mejores cepas, con el deseo de lograr cuanto antes una producción interna, evitando así los inconvenientes de recibir los caldos del exterior en inseguros y lentos navíos. De esta forma, andaluces, extremeños, castellanos, gallegos, navarros, catalanes, portugueses, franceses, genoveses y hasta flamencos rivalizaron en su empeño, tratando de emular la calidad del vino del vecino, dando lugar en Canarias a una riqueza varietal inigualable en otras partes del mundo. El brindis en la firma del Acta de Independencia de los Estados Unidos se hizo con un malvasia de Canarias.
Canarias have worked vineyards for more than five centuries. The plurity of the weather and land give us a different varieties of very rich grapes, with their own characteristics from privilaged surroundings full of contrast. The history of the vineyards and the wines is very singular and interesting, as is its origin between mythology and legends from the history of our Archipielago. Nelson afirmed that “the wineyard without been pruned could keep blooming in the fortune islandsâ€?. Never the less there are different authors that concluded that the wineyard was not a part of the flora in the archipielago and they think, it was introduced in some point between XIV and XV century by the conqueror or settlers. The origin from the first settlers and the wine culture began when they introduced the first vines. They started with the desire to locally produce wines wanting to avoid slow and insecure shipments from foreign lands. For this reason, andaluces, extremeĂąos, castellanos, gallegos, portugueses, french, genoveses or even flamencos rivalled each other in their insistence to emulate the quality of the nest of the wines. Therefore Canarias has an unequalled richness in their grapes from other parts of the world. The whites obtained from the Listan Blanco and Malvasia species predominate but the red, made mainly out of Listan Negro and Negramoll are velvety to the palate and have an unique character. The Canary Islands being then an obligatory stop between Europe and America, exported the famous "Canary" wine from the port of Garachico. It was to the wines of this region that William Shakespeare was referring, in The Merry Wives of Windsor, saying, "Canary, a marvellous and penetrating wine that perfumes the blood." A toast was made during the signing of the declaration of Independence in the United States of America with a Canarian 'Malvasia'
