J

After moving to Cannes, Jo quickly gained an illustrious reputation as the premier stylist of the Cannes Film Festival, where he spent a decade styling celebrity clientele. But it was another move, this time to Arizona, that led him to open Jo Paris Salon – and the Valley has never looked better. We sat down with Jo to find out a few things about his salon, his stylists, and which products he can’t live without. Q: Your salon has quite a sizeable staff. How do you choose your stylists? A: I make sure that we don’t have a revolving door of stylists. We try to make sure we hire stylists with years of experience who add something to the team. Everyone has a specialty, and we try to showcase that strength – we are one of the few salons that can accommodate just about any client with any kind of hair. Q: So you have specialists for every need? Amazing! What services do you offer? A: We offer almost anything. Color, cuts, extension, ombre, balayage, perms, relaxer, keratin treatments, updos and Olaplex. We offer services to men, women, and children. We also have an amazing aesthetician and offer Microblading. Q: With such a variety of services, you must use a lot of products. Are there certain lines you swear by? A: We use four different styling lines. The most prestigious line we offer, and we are incredibly proud to have, is Oribe – they’re the best products I have ever used. They are specially formulated for every hair type and super-concentrated. I’m not sure I have ever used an Oribe product on my client and they aren’t absolutely in love with their hair. The smell alone keeps people coming back, but it really does what it says it will do. For curly hair, we are also a Ouidad salon. Our color

line, Goldwell, is the only one that actually has hair preserving protein in the color itself. It’s easy to work with, true to tone color that lasts much longer than most. It’s also one of the few color lines that we found to be friendly for people with sensitive skin or color allergies. We also happen to have our own in-salon Goldwell educator as part of our staff, so the education we get for color trends makes us experts in the line. Q: Do Jo Paris Salon stylists participate in any other continuing education? A: Yes. You never stop learning, and we try to expand our knowledge. The staff is constantly choosing to learn new things and stay ahead of the trends. They love what they do, and it shows! Q: Your friendly, hospitable service makes everyone feel comfortable. Why is that important to you? A: Everyone deserves to be pampered. We do have some very prominent clients, but we also have everyday regular people. I wanted to make a place where someone could come in as they are, have a cup of coffee and maybe make a friend while doing it. Our guests can expect that every experience they have with us will be a great one, from their very first visit.

In recent years, the Valley has put itself on the culinary map with innovative restaurants, creative chefs, and equally impressive cocktails. This month, we are honoring these foodie feats in our first annual food and beverage issue. As someone who admittedly plans trips around meals, I’m thrilled to share this issue and help you end 2018 on a tasty note. Even our cover is also a first. We usually feature a person (or persons) on it, but this month, we changed tradition in favor of food. Our cover star is a dish from Talavera at the Four Seasons Scottsdale. This artful dish is highlighted in our F&B awards, which recognize 40 people and places for contributing the pulse of the local food scene. Get the scoop starting on page 62. THE GOLDEN TOUCH How Rebecca Golden is lighting up the Valley food scene

To say Rebecca Golden’s beginnings were humble would be an understatement. “I was born in a trailer. Literally,” Golden says. “My mother had me at home, which, at the time, was an actual trailer on a dirt road. My father, in fact, helped deliver me.”

Her early years were spent along that dirt road in a small New Mexico town just 20 minutes from the Mexican border. Her family would briefly move to Tucson – onto another dirt road – when she was in kindergarten, and then back to New Mexico – and yet another dirt road – when she was in elementary school.

Pulse UP CLOSE The youngest of 11 children, but with only one sibling still at home, Golden dreamt of eventually living in a big city, but loved nothing more than exploring on her horses with her sister and taking care of their many animals, which ranged from dogs and bunnies to horses and ducks. She also poured herself into creative endeavors, including art classes and writing programs throughout high school. “By senior year, I knew I wanted to be an artist … but not a starving one living on a dirt road,” Golden says. “One night, I saw an ad on TV for a graphic design school in Tempe.” After graduation in the late 1990s, Golden made her way to Arizona and enrolled. Around the same time, she also took a serving position at a family-owned restaurant called Molise. “The owners, the DiFranco family – every bit as Italian as their name suggests – took me in as one of their own,” says Golden, who became fascinated with the hospitality industry as it wasn’t something she experienced often growing up. Golden would continue on with the DiFrancos even after she entered the business world. In the early 2000s, she took a position with Cisco Systems as well as a part-time gig at the DiFranco’s new Scottsdale restaurant, Tesoro. “In 2005, I decided to open my own graphic design company, marrying my programming skills with my more creative passions,” Golden says. “I still worked weekends with the DiFrancos.” She named the business Website Garden because her focus was to help small businesses grow and blossom. It was an immediate success, and so was her love life. “I had been living in Arcadia, watching the first Postino being built before my eyes, in fact. Just before I planted the seeds for Website Garden, I moved to 32nd Street and Shea with my boyfriend,” says Golden, noting it was a move that would change the course of her life.

Manifesting & Momentum Golden saw the success of Postino and couldn’t help but notice a small coffee shop on the corner of 32nd and Shea begging for a makeover. Slowly and methodically, Golden saved her pennies as she built Website Garden and kept a watchful eye while manifesting her vision. By 2010, the coffee shop shuttered. Knowing it was now or never, she signed a lease for the building that day, putting pen to paper on plans for what would became 32 Shea. Opened in January 2011, 32 Shea started as a humble, dog-friendly coffee shop by day and wine bar and Postinoinspired restaurant by night. For the design, Golden combined her artistic passion and graphic design prowess, choosing vibrant, bold colors that were hard to miss. Over the next six years, Golden worked 80 to 100 hours each week, eventually expanding the space to include a Zen garden and water features, all while picking up various Valley foodie awards. “But working 80-plus hours a week – even on your dream – drains you,” Golden says. She sold 32 Shea in May 2017 with plans for a long sabbatical.

“Except everyone in our business says that, and it never lasts more than a few months,” says Golden, who not only didn’t rest, but helped her friend Kellie Pruitt develop and open PNPK Craft Slider + Wine Bar in Scottsdale before doubling down on two new culinary endeavors of her own. First, Golden bought an entire building. And not just any building, but a historic liquor store in the Melrose District designed using Googie architecture, a modern-yet-futuristic style that looks like a cross between the Jetsons’ house and a 1950s diner. Her plan is to responsibly revitalize and reopen it into a bar and restaurant by mid-2019. Second, just like with 32 Shea, Golden happened to stop at the intersection of 32nd and Cactus Road earlier this year and saw a recently closed bar with a lease sign on the door. “The sign was a ‘sign,’” Golden says. “With 32 Shea, we were able to help revitalize an entire community. Once we had success there, more than a dozen businesses invested in that space, including Aioli Gourmet Burgers and TapHouse Kitchen. We want to do the same at 32nd Street and Cactus.” Her vision, called Lovecraft and now open, is a craft beer and wine bar with a small menu of elevated, Texas-style smoked meats and comfort food-focused sides. “We have 28 taps – almost all craft beers – and an extensive wine list. We invested in a Coravin wine preservation system, which allows us to offer guests higher-end wines by the glass without spoiling the bottle, and even developed beer-infused sangria,” Golden says. Rodney Gentry: Fine hair results when each individual strand of hair has a small circumference, so that individual strands are not as large as those belonging to other people whose hair has a wider circumference.

Simple things like drying technique can also make a big difference. People with fine hair should lift the hair outward and upward as they dry if they want maximum volume. They should also avoid brushing it when wet, as fine hair can break very easily.

Q: Do people with fine hair have particular problems as a result of the hair’s fineness? RG: Clients with fine hair tend to come to me with a similar range of complaints. While fine hair can look sleek and beautiful, it can be difficult to style. Many clients also wish for more volume to their hair.

Q: What other problems do people with fine hair face? RG: Fine hair can be more prone to damage than thick hair, so those with fine hair need to be careful about over-styling and the use of chemical treatments. Here at Rodney Gentry, we specialize in using products that are kind to the hair, and that nurture it at the same time as coloring it. I don’t believe that there is any place for harsh chemical treatments in a modern salon—they just aren’t necessary anymore. Enzyme-based products can color hair beautifully, and are so much kinder to it than the old peroxide-based treatments.

Q: How do you help them to overcome these issues? RG: There are plenty of options for those with fine hair. Highlights are one way to add volume and texture, and lowlights can work really well, too. It is really incredible what you can do with color. Clients always get a boost when they see how different their fine hair looks after it has undergone a color treatment. Q: We’ve focused on the problems and solutions of fine hair here, but are there also advantages to it? RG: Of course! Fine hair can look stunning, just like all other types of hair. Fine hair tends to be soft and silky. This makes it harder to style, but the flip side is that it can almost glow with a wonderful, natural shine. Those with curly fine hair will also find they spend much less time straightening it than their thicker-haired friends. Fine hair is also brilliant for the summer months, when it helps to keep the head cooler. Matt Doerr does drinks right at Fairmont Scottsdale Princess

By high school, Arizona native Matt Doerr knew his career path. “I planned on becoming a chef,” says Doerr, who, after graduation, attended Scottsdale Community College’s culinary program before transferring to Northern Arizona University’s famed School of Hotel and Restaurant Management. The program allowed him to do his studies from the Valley, so while still in school in 2006, he got a part-time job at the Fairmont Scottsdale Princess’ outdoor bar (now called The Plaza Bar). “We had people from all over the globe visiting daily. There wasn’t a night I left without some incredible story,” Doerr says. “The idea of being sequestered in a kitchen quickly started to lose its luster.” By 2008, Doerr was at a crossroads. At the same time, culinary icon Michael Mina and his team were prepping to open Bourbon Steak at the Princess. “In February 2008, at age 20, I took a barback position there while I contemplated my future,” Doerr says. “By September 2008, and once I was 21, I was promoted to bar manager and haven’t looked back.” Over the past 10 years, Doerr – who, today, serves as beverage director for the entire resort – has worked to establish the Princess as among the preeminent drink destinations in the Southwest. He not only oversees Bourbon Steak’s mixology menu, which is focused on modernizing classics, but also the programs at Toro Latin Rum Bar, which features cocktails from South and Central America; The Plaza Bar; and La Hacienda by Richard Sandoval. “As with Bourbon Steak, The Plaza Bar reintroduces classics like sours and mules, but we also feature artisanal options for adventurous imbibers,” Doerr says. “And at La Hacienda, we just reimagined the entire space and menu. It’s been a project of passion for the latter half of the year.” According to Doerr, the 21 new cocktails he developed for the menu are inspired by spirits derived from agave, including tequila, smoky mezcal and vegetal sotol. So, with all the cocktails he’s curated and created, what’s his personal go-to when not on the job? “By looking at me, people always guess I am a whiskey guy,” Doerr says. “I certainly like a neat whiskey or Old-Fashioned now and then, but I actually love wine, especially a dry riesling or true Champagne.”

Bill Parker shares the journey that landed him at Lon’s at The Hermosa Inn

Growing up in Canada, special effects and movie-making dominated Bill Parker’s dreams. “But America had other plans for me,” says Parker, who moved to Pennsylvania in high school. At the time, high school in Canada was five years. “I was supposed to have two years left, but per the American high school system, I was bumped up to a senior just like that.” That didn’t leave a lot of time for definitive decisions about next steps. “As a result, I bounced around a few colleges while working full time and even getting into radio,” says Parker, who moved to Phoenix with his immediate family in 1992. “My aunt, uncle and cousins were already here, so it was a natural fit. Plus, my cousin was able to get me a job at a bar.” And while the bar was more of a dive than a fine dining room with craft cocktails, Parker liked the pace of the hospitality industry and started getting away from the idea of Hollywood. “Except that I ended up in Hollywood after all. Well, at Planet Hollywood in Phoenix during its1990s heyday,” says Parker, who would also be recruited by Wolfgang Puck to help open his former Biltmore Fashion Park restaurant. “By 1999, T. Cook’s at the Royal Palms came calling.” Over the next 13 years, Parker worked his way up the ranks at T. Cook’s, eventually dividing his time between there and Sportsman’s, an independent wine retailer at the time. He also became a level 2 sommelier. “My passion for wine led me to Lon’s at The Hermosa Inn in 2012,” says Parker, who was initially brought on to oversee their beverage program with Travis Nass. Today, he continues to operate as the beverage director and general manager at Lon’s. By 2014, Parker’s expertise earned Lon’s the coveted Wine Spectator “Best of Award of Excellence.” They’ve been named among the annual “Best of” since. Along the way, Parker was designated general manager of Lon’s and helped oversee its recent multimillion-dollar update. In October, Parker was named the “Top Restaurant Manager in Arizona” at the Foodist Awards, yet his happiest times happen far from the limelight. “I much prefer pouring wine for guests in the restaurant,” Parker says of his early career aspirations. “In the end, while I’m not making movies, I am helping people make real memories, and that’s even better.”

John Banquil fuses fashion and food in his role as SumoMaya’s general manager

SumoMaya Mexican-Asian Kitchen serves up some of the most creative dishes in town, but for general manager John Banquil, effortless trends and industry-appropriate comfort are what he looks for when managing his style. The proud family man takes his wardrobe cues from funny man Ryan Reynolds and loves to wear intricate patterns such as floral prints. He welcomes cooler temperatures that are conducive to a tailored sports coat or well-knit sweater layered with a dress shirt in the evenings. Most importantly, he always makes sure his attire is suitable for standing 10 to 14 hours a day. With a love for Banana Republic and Ted Baker, it’s easy for the restaurant veteran to maintain his color-coordinated closet, and dishing out style advice may not be part of his day job, but Banquil certainly has some. “Be yourself and always make sure you feel comfortable in what you’re wearing. When you’re comfortable in your clothes, you’re more confident and when you’re more confident, you’ll always look better.” Banquil also offers some cheeky insight to his fellow men when it comes to leaving the house in style. “Listen to your significant other,” he says. “She won’t steer you wrong because she needs to be seen in public with you.”

What is your must-have item when it comes to fashion? I must always have a watch. I feel completely naked without one, and I currently find myself rotating most often between my classic Tissot and a modern, toneon-tone Movado timepiece. How would you describe your style? I’m as comfortable in a pair of jeans and throwback T-shirt as I am in a well-tailored suit and tie. What is your most prized possession in your closet? Any of my suits. I don’t often have the occasion to sport a suit, but I love when I can get dressed up for a formal event.

Being at the helm of marketing for Breakthru Beverage, a high-end wine, spirit and beer distributing company, requires a keen sense of style and sophistication. With 10 years of industry experience under her stylish belt, Supreet Singh has it down to an art. Known for sticking to mostly black, Johnny Cash-like ensembles, Singh takes inspiration from the likes of Coco Chanel, Rei Kawakubo and Audrey Hepburn thanks to their ability to maintain polished, feminine looks finished with a hint of masculine influence. It should come as no surprise that Singh’s wardrobe staples include the perfect pair of black pointed-toed pumps and versatile ankle booties that can transition between work and evenings depending on her schedule. “I often wear the same outfit from work to an event and change up the shoes to change the feel of the whole outfit,” says the New York native. Whether Singh is hosting a Moet Hennessy dinner or relaxing on the weekend, she maintains that it’s all about the fit. “You can go a long way with simple clothes that fit you perfectly,” she says. “Less is always more, and it’s even better when everything works well together.”

Who is your style icon? Eva Chen. I’ve been following her fashion journey for years and love that she’s making the shift from editor-inchief of Lucky magazine into tech and fashion as the new director of fashion partnerships at Instagram. What is your most prized possession in your closet? The perfect Phillip Lim black dress that transitions flawlessly from day to night. How does your career influence your style? Having had many different roles in this industry, it has influenced my style greatly. While in brand marketing, I wore jeans and more walking-friendly shoes to maneuver the Manhattan subways daily. In my current role, I wear more dresses and high heels.

The ninth annual Christmas at the Princess ushers in merry attractions, both new and beloved

With more than 4.5 million twinkling holiday lights, the Fairmont Scottsdale Princess will transform into a winter wonderland every night throughout December for its ninth annual Christmas at the Princess festival. The family friendly event has opportunities to create holiday memories around every corner, including whimsical character greetings, pictures with Santa Claus, writing letters to the North Pole, and Hollyville – a new attraction for kids outside of La Hacienda featuring music, plenty of holly, and a dedicated space to snap a photo. In addition to walking the runway, the Flower Girls have spent the past year learning about the mission of The Board of Visitors, which is the oldest charitable organization in Arizona – it began in 1908 – and has granted more than $20 million to help meet the health care needs of women, children and the elderly in the greater Phoenix community. The event will feature a gourmet lunch and celebratory cocktails, as well as raffle items, including a seven-day luxury resort vacation, a stay at the Fairmont Heritage

Proceeds raised will benefit The Board of Visitors’ charitable efforts. Currently, there are 50 active members and 130 associate members of The Board of Visitors, who are all are community volunteers. PAINTING PEOPLE & PLACES Joe Netherwood captures the spirit of the West, and Santa Claus, in his works

Inspired by the landscapes of Western America, comedian-turned-painter Joe Netherwood captures the spirit of the West in his Scottsdale studio. Growing up in Richmond, Virginia, Netherwood watched Western movies and television shows. “Every week, my dad would take me to see a movie. Most of these were Westerns ... they got into my DNA and stayed there my whole life,” Netherwood says. “After seeing Art of the West and Southwest Art magazines, I became aware that [painting contemporary Western art] was a career I could pursue.” His aha moment came in 1990 when he saw a show of N.C. Wyeth’s Western paintings at the Brandywine River Museum of Art. At a crossroads, he realized he had a choice to make: continue with stand-up comedy or follow his desire to create Western art. Believing that anything is possible in the West, Netherwood picked up the brush. He was accepted into the Phippen Museum Western Art Show & Sale in Prescott and fell in love with Arizona – and Scottsdale in particular – thus making the move here. Netherwood works exclusively with oil paint because of its richness and depth of color. “It has been good enough for artists for the last 600 years, so it is good enough for me,” says Netherwood, adding that he likes the flexibility of oil paint to create soft and sharp edges for visual appeal. Primarily a self-taught painter, Netherwood has also studied with several artists at Scottsdale Artists’ School. His influences include N.C. Wyeth, Dean Cornwell, Harvey Dunn and Howard Pyle. With his paintings, Netherwood’s goal is to capture the individuality of each person in a given scene. “I want my subjects to have an authentic look, either Old or New West,” he says, noting that part of his painting process is to get to know the “character of each person very well, whether meeting them one, two, or many times.” To be authentic in his portrayal of the West, Netherwood visits working ranches. He also keeps a running list of ideas for paintings and searches for models that will portray the emotions he wants to show in his works. Notably, especially this time of year, Netherwood also paints Santa Claus; his model for the jolly figure is a friend who regularly poses for Netherwood’s Western scenes. Every year, this burly man is the Santa Clause at a shopping mall in New York, making him the perfect inspiration for Netherwood’s holiday-themed works. While Netherwood seems to always have a painting in progress, he still finds time to teach a few classes each year. Notably, he has been named the 2019 poster artist for the Arizona Cowboy Poets Gathering in Prescott. By 2006, she was back in the Valley and launched FnB, where she makes locally grown vegetables shine, often with globally inspired ingredients. Even carnivores rave over her creations. RESTAURANT PROGRESS With less than 40 seats, Restaurant Progress is technically small. But, the Melrose District establishment has become a big deal in the Valley. One of the most lauded Phoenix eateries in years, Restaurant Progress is headed by chef-owner TJ Culp, who worked for Fox Restaurant Concepts and at Zinc Bistro before becoming wellknown when he launched a hyper-popular series of pop-up dinners across the Valley. Chef’s tastings and a la cart dishes are both available on Culp’s refined American menu, which is updated every four to six weeks. ROLAND’S CAFE MARKET BAR In April, Arizona culinary icon Chris Bianco partnered with Nadia Holguin and Armando Hernandez of Tacos Chiwas fame to open Roland’s, which is housed in a 101-year-old historic building oozing with character. Inspired by ingredients used in northern Mexico – especially from the state of Chihuahua – and the “simple is best” mantra Bianco has lived by his entire career, the menu is basic, but the flavors are anything but. You’ll find a steak sandwich that resembles a torta but made with bread by Pane Bianco, enchiladas, and a selection of desserts including scrumptious ice cream cookie sandwiches. BLUE CLOVER DISTILLERY Blue Clover opened in February and launched its first run of housemade vodka in March, with plans to expand to other spirits in 2019. Introducing the German automaker’s newest luxury subcompact crossover BY JIM PRUETER

The newest auto in BMW’s lengthy lineup of luxury crossovers is the compact X2. It’s essentially a sportier, funkier, sleeker, and slightly less roomy version of Beemer’s X1 subcompact crossover. Joining the wildly popular entry-level luxury crossover segment, the X2 offers the versatility of a hatchback with available all-wheel drive, an impressive-looking cabin, and performance that results in a near-perfect vehicle to satisfy even the most inflated car ownership expectations. In the interest of a fully immersive “Ultimate Driving Machine” experience, the X2 is powered by a 2.0-liter, turbo inline, four-cylinder engine with 228 horsepower connected to an eight-speed automatic transmission. That combination delivers an impressive response with a satisfying sonorous – even a bit raunchy – engine sound. The truth is, you can quickly wind the engine to redline, reaching 60 mph in just 6.3 seconds. There are two models: the all-wheel drive xDrive28i (tested here) and the front-wheel drive sDrive28i. Exterior features include eye-catching alloy wheels, LED rear lights and headlights, and inverted kidney grilles.

The interior is definitely small, especially in the rear seat, where legroom is nearly nonexistent if the driver is on the tall side. Cargo space is even tighter than it is in the more upright X1 sibling. The sloping roofline presents an attractive and sporty exterior design but results in small side windows. The window on the rear liftgate is tiny and severely compromises rearward visibility. While drivers would surely welcome a blind spot warning system and rear cross-traffic alert, surprisingly, these features aren’t available. Most operating controls are handled via buttons and knobs on the center stack, with some redundant controls on the steering wheel. BMW’s touch-screen iDrive infotainment and navigation system is user-friendly. Regarding the ride, it’s on the stiff side and may be too firm for some. Road noise is more than evident on rough road surfaces, and there is noticeable wind noise at highway speeds. Even with its shortcomings, the X2 is stylish, fun and easy to drive, and it comes with the cachet of the large BMW logos on the front, sides and rear of the car that stoke owners’ devotion and ardor.

Though both refer to ranches that welcome guests and are often used interchangeably today, originally, the term“dude” referred to city visitors who vacationed on working ranches. Whatever term you use, you can find a variety of experiences ranging from rustic accommodations on working ranches to luxury stays with gourmet cuisine and spa treatments. BITTER HAPPINESS

From its red hue to its crowning star, this jolly good drink is a holiday hit

When Erika Rode opened Bitters Bar & Food last fall, her mission for the drink menu was to shine a light on unique handcrafted cocktails with a twist, using small-production spirits whenever possible. “All of our cocktails also contain the word ‘bitter’ in their names and are accompanied with a pithy play on words. For example, there’s The Bitter Truth and Bitter With Age. We also have one tailor-made for the holidays given its frothy topping and stark red color: Bitter Happiness,” says Rode, noting all cocktails do use actual bitters and are made to order from freshly squeezed juices or housemade mixers. Bitter Happiness starts with Four Roses Bourbon, a small-batch bourbon that is smooth and mellow with hints of pear and apple. “We build on that apple flavor by adding CaskWerks Apple Pie, which is a liqueur made locally in Tempe,” Rode says. Rode then mixes in Creme de Noyaux, an almond-flavored creme liqueur that adds richness, as well as both Angostura and orange bitters. “Adding bitters to this cocktail softens the sweetness and adds a greater depth to the overall mouthfeel,” says Rode, who finishes it with lemon juice for balance and an egg white to build the light, foamy froth on top. Finally, she performs a dry-shake (meaning without ice) to ensure the egg white yields a frothy texture, pours the mixture over ice, and strains it into a coupe glass. Alfonso Fonseca is the executive chef of S & V Urban Italian, where he cooks classic Italian cuisine and rustic, wood-fired pizzas.

What inspired you to cook? I was born in Moroleón, Mexico, where my family owned a bakery. I remember being 6 years old and helping out in the kitchen, marveling at how flour “magically” became bread. I knew then that I would be a chef. How did you make your way to America? At age 9, my family moved to Chicago. In high school, I worked for Lloyd’s Chicago, a still-standing upscale restaurant. There, I mentored under a chef classically trained in French cuisine. At 20, I started at then-popular Italian eatery Costa D’Oro, where I spent four years under a Sicilian-born chef. By 25, I was a Mexican chef living in America, trained in French technique and cooking Italian food! What were your next steps? After Costa D’Oro, I spent 14 years – much as executive chef – cooking Northern Italian cuisine at Carlucci outside of Chicago before helping open Woodbridge, a fine dining venue in partnership with the team behind The Signature Room in the famed John Hancock Building. What brought you to Arizona? My wife and I moved to Arizona after vacationing here for several years and falling in love with the diverse landscape. Once here, I worked with The Cheesecake Factory, Rock Bottom Restaurant & Brewery, and Mia Francesca, where I was eventually named their traveling corporate chef. I joined S & V (then Stone & Vine) in 2014 to continue sharing my passion for Italian cuisine, but without constantly being on the road. Tell us about your favorite dish at S & V. We rebranded in 2016. With that came the opportunity to dream up a new menu. One of my favorite additions has been our Milan’s entree, a pan-seared chicken breast with grilled asparagus, fresh avocado, red onions, tomato, basil, lemon juice and olive oil. Get to know Chris Gentile, because you’ll be hearing about him a lot in coming years. The 28-year-old culinary phenom has already worked with the likes of renowned chef Best Chef in America honoree Thomas Keller, Top Chef finalist Brian Malarkey, and San Diego Chef of the Year Jason Knibb. By 24, in fact, he opened his first restaurant, Double Standard in San Diego, where he also served as executive chef. And now, he is setting down roots – not to mention recipes – in Scottsdale. “I opened Parma Italian Roots in September, with a goal to give the community some of the best West Coast-influenced Italian cuisine they’ve ever had in a comfortable, easygoing ambiance,” says Gentile, who moved to the area in recent months. Parma’s dinner menu packs undeniable appeal and indulgence for those craving classic Italian standbys as well as those seeking something new. Snack and starter options range from arancini and grilled Spanish octopus to ricotta-stuffed squash blossoms, or bruschetta three ways. Main course offerings include handmade pasta dishes, among them melt-in-your-mouth gnocchi and butternut

squash-filled agnolotti, as well as protein-focused entrees including slow-cooked beef short rib, New York strip steak, and seared Ora King salmon. Parma also offers an assortment of wood-fired pizzas, including its own take on the margherita and uique pies like the Diavola, which is made with organic California tomatoes, provolone, mozzarella, spicy sopressata and hot honey. During lunch, which the 65-seat restaurant began serving in October, guests can expect similar starters and pastas as well as an impressive offering of salads, soups and hearty sandwiches, including a hot veal meatball sandwich as well as an “Italian Stallion” option boasting prosciutto, sopressata, speck ham, pesto aioli, sliced Roma tomatoes and greens. Brunch, offered on Sundays along with bottomless mimosas, offers a variety of American and Southwestinfused classics alongside an “I Don’t Like Breakfast” portion of the menu (no, really!) for those who prefer to dig into some of the eatery’s Italian goodies. The drink menu has Italian flair with gorgeous, $12 craft cocktails including the Italian Bird, which features gin, elderflower, ginger beer, citrus and butterfly pea flower. “The butterfly pea flower, which is made from ternatea flowers and dried lemongrass, is added tableside to the cocktail, changing its color to purple when combined with the citrus,” says Gentile, noting there are more than 50 wine options by the glass and bottle, with several varietals from Italy. Parma is open Sunday through Thursday from 11 a.m. to 9:30 p.m., Friday through Saturday from 11 a.m. to 10:30 p.m., and Sunday from 9:30 a.m. to 9:30 p.m. (with brunch until 2:30 p.m.).
