Named after a city in Northern India, Benares focuses on the lush spices and diversity of Indian cuisine. Though the town is known for the outstanding vegetarian cuisine, there is an abundance of vegetarian choices with seafood dishes as the true star of the menu. Owned by restauranteur Inder Singh, formerly of Devi and Baluchi, he partnered with Peter Beck who came from Tamarind. As Chef Beck notes “In India, every 100 miles the food changes. From abundance of chilies for cooling purposes in Southern India, each state is very different.� While the tastes of Indian cuisine can be quite strong, Benares does a great job of tempering spices into a delectable culmination of regional dishes such as Benarsi Dal with a blend of malka masour, chana and arhar mixed with ginger and tomato with desi ghee or signature dishes such as the Sevai Tomato Kurma (mussels, scallops, rock shrimp and crab claws tossed in a garlic tomato sauce over Indian style rice noodles) and the Tandoori Cornish Hen. To complement created mixing fruit and spice like the Herradura Tequila Cocktail with Roasted Pineapple, Orange Liquor, and Chili-Laced Grenadine. After a successful opening in the Theatre district, Benares opened a visually striking outpost in Tribeca with warm wood paneling contemporary Indian artwork and photos of the famed city, and
