Take sausage out of casing and sauté in frying pan. When cooked but not golden brown, add in onions. Continue to cook until sausage and onions are golden. Set sausage and onion mixture aside in a bowl to cool. In the frying pan, drain any excess oil and sauté mushrooms for 3

to 5 min. Add mushrooms to sausage mixture. Let cool. Add cold cooked rice to sausage mixture. In food processor, tear Kaiser buns into manageable pieces for your food processor and process with cutting blade for 10 to 15 second in batches until all bread is done. Add to sausage mixture. Add chicken stock, parsley, chives, sage to sausage mixture and mix well. Add salt and pepper to taste. Use this for stuffing turkey just before you are putting your turkey in the oven. Do not put warm stuffing into cold turkey. If you want to cook outside of turkey, put in a buttered casserole dish and dot with butter and bake loosely covered for 30 min at 350 F.
