verywhere you look, you’ll see ads for new body-contouring procedures like Ultrasonic Cavitation, Zerona, Liposonix, and Cool Lipo. How are they different from the SmartLipo Gold Standard? Do any of them really work? Should you give one of them a try? Today I’m going to help you answer these questions. As a physician who has performed over 1000 liposuction procedures in the last six years, I can tell you that to really see real results, you have got to physically remove the fat. Just heating it up or cooling it down doesn’t work. “Cold” lasers like Zerona, i-Lipo and Cool Sculpting claim that they are able to freeze your fat so your body can eliminate it. If you think about this, it really makes no sense. How can you freeze deep-seated fat cells without freezing the exposed skin? Even if some fat somehow leaks

out of a cold fat cell, it will simply be absorbed by the blood stream and deposited in another fat cell nearby. Any improvement you might see from cold lipo techniques is fleeting and due to temporary local dehydration from the cold. They’ll tell you you’ll need multiple treatments. Don’t waste your money. Ultrasonic and radio frequency techniques are not much better. Ultrasonic Cavitation, Exilis, VelaShape and Liposonix vibrate the fat tissue through the skin with ultrasound. No fat is removed so the results are pretty minimal. Your clue to the gimmicky nature of these treatments is that they are almost always performed by an employee with minimal or no medical training. Establishments that use these machines usually also insist that you start a program of diet, exercise and body wraps to see the best results. Ask your friends who have tried these treatments. They’ll tell you how disappointed they are. Don’t be fooled by the “FDA Approved” label. FDA approval does not mean that a technique or device is effective, only that it has been tested and found to be unlikely to injure someone if used properly. It doesn’t have to actually work to get “approval”. And please, don’t even consider Meso-therapy or Lipo-dissolve. Do you really want to have caustic chemicals and detergents injected into your body to dissolve fat? ecently I was contacted by ABC News to do a follow-up to a story on the latest internet craze “oil pulling”(swishing oil in the mouth). This age old technique exploded all over Facebook and the internet promising to naturally whiten teeth and improve oral health. As I told ABC news correspondent, Linda Hurtado, while oil pulling may have

some benefits, there is a lack of current scientific evidence to support it as an effective oral hygiene tool. The best way to care for your teeth is to brush twice daily with a fluoride toothpaste, clean between your teeth with floss and maintain a regular hygiene schedule. I mention the above scenario to highlight the impact of social media in dentistry. When I first started my dental practice 30 years ago, the “big book” otherwise known as the Yellow Pages was the resource used to find a dentist (they still exist today but look at how their books have shrunk). Back then if I wanted to educate and reach my patients I sent letters and newsletters via “snail mail”. Today if a patient needs to find a dentist the internet is full of search options. From websites to review sites a patient can learn a lot about a doctor long before they walk through the door. Our website is full of educational information, before and after patient

photos, wonderful testimonials and an office video tour. Review sites such as Health Grades, Yelp, Google + and Vitals allow our patients to share their experience in our office, often encouraging others who are fearful. Facebook has given me the opportunity to share current topics & trends in dentistry. All of this social media has greatly enhanced my ability to connect with my patients and the community. There is a caution here however. People can say and do almost anything on the internet. Patients need to be cautious of false information and disparaging remarks. My suggestion is to do your research and weigh the information carefully. The web has opened our world which is very exciting. WHAT IS MY LIFE PURPOSE?

T

here are millions of people in the world who wake up every day or some days wondering what their purpose in this universe is. They know there is something they were specifically designed to do but for some reason they keep over thinking it. So, what is your purpose? You can start by asking yourself what you would do with your time if you had all the money you needed? Would you want to feed people who are homeless? Would you spend time with the elderly? Would you travel to third world countries spreading the gospel? What is it you would do?

When I look back on my life, I am reminded of how many of my closest friends, casual friends, acquaintances, and people whom I did not know confided in me. They shared with me their greatest worries, deepest fears, most hidden secrets, and tremendous heartaches. I am then also reminded of the miracles God has worked in my life and the horrors I have been through. This is what is referred to as your testimony. What I am getting at here is, The Lord wants to use your testimony, conjoined with your talents to counteract someone else’s sorrows, worries, and fears. He wants to use you as a vessel to show people the light that is Him. So what are your talents? You see, each of us has talents given directly to us for our purpose. My talents are writing, singing, speaking, teaching, and simply being there to love people. He wants to use your

testimony paired with your talents to remind people of his love and grace. This is your purpose. The only difference between all of us is that we have been uniquely designed so that we may operate in our purpose authentically. Our purpose is to offer something of true value to the world by serving others and sharing with them the love of your Heavenly Father. Your purpose is the burning desire that has been in your heart all along. So, will you respond to your purpose? Will you gladly walk beside Him to assist in delivering His people from pain, heartache, and despair? The best part about fulfilling your purpose is, it’s easy! When you are doing what you were born to do, which in turn is what you are great at doing and love to do, it is EXTREMELY easy! If you haven’t prayed about it, I recommend you do. Ask Him how He wishes to utilize your talents to glorify His name. Maybe your purpose is to be a teacher, or maybe it is to be a professional clown. Whatever it is, you must know that within your purpose you will find a tremendous amount of fulfillment and passion, all the while WINNING souls for God. When you’re operating in your purpose, you will deliver the MESSAGE and ANSWER so MANY people are desperate for! I encourage everyone to go out and find the authenticity that is relative to their purpose. Don’t be afraid to uncover and discover what LIFE was breathed into you for! I promise you won’t regret it because you will be left with a feeling of such peace and your heart will swell. he temperatures are starting to hover in the mid to high nineties, followed by the down pour of rain in the late afternoon. What does that signal? Yes its summer in Florida! As this change in temperatures falls upon us we have a tendency to spend more time either at the beach, in a pool or try to travel to a cooler climate as a way to beat the heat. A concern that all Orthodontists have is the loss of an appliance, such as a retainer with any of the above scenarios. If any appliance is lost it is very possible if not either found or replaced in a short period of time there could be tooth movement that could require additional treatment or increasing the length of active treatment. Most patients are unaware that tooth movement can occur within short periods of time say a few weeks. I

have had patients that do not think it’s a problem and never mention the loss for a month or two. They finally find the lost appliance and lo and behold it no longer fits. This is very unfortunate and could be solved easily. If an appliance is lost and you have spent a day or two looking for it and it seems it has “left our Planet”. Call your orthodontist to schedule a check and replacement appointment. These appointments are not “True emergencies” over short periods of time but as the time increases without the appliance the more severe the possible outcome can be. It is a small price to pay for a new appliance than to watch your Orthodontic correction disappear right in front of your eyes. Have a wonderful and fun summer and STAY COOL!!

ackpack safety and education is vital in the health of children. Backpacks with single straps should be avoided completely because of their effects on the spine. Parents should instead obtain double-strapped backpacks and encourage the children to wear both straps when carrying the loads. Parents can also push for the increased use of school lockers, which have been shown to lighten the burden on children’s shoulders. Furthermore, the load in the backpack should be kept to less than 10 percent of the child’s body weight in order to avoid overloading the spine, which causes harmful posture and creates abnormal

WHAT’S UP WITH YOUR THYROID?

A

re you feeling tired, not motivated, difficulty concentrating, noticing that your hair is falling by the hundreds, finding that despite following a nutritious eating plan that the weight is not coming off? Or that you gain it too easily. While there may be a complexity of reasons, the one that needs to be evaluated and looked into is the thyroid. Thyroid gland produces thyroid hormone in the form of what is known as T4,

this is the inactive form of the hormone and it gets converted in the liver and the tissues to T3 which is the activated hormone itself. If a person does not produce enough T4 or if T4 is not adequately converted to T3, a person will be deficient in thyroid and will express symptoms similar to those mentioned above. Thyroid deficiencies are associated naturally with the aging process and hence the reason why a good percentage of the geriatric and adult population takes thyroid medicines. However over the last decade there have been significant advances in the understanding of diseases and thyroid function. A major one is the noted association of insulin resistance and obesity and its relation not only to the classical

understanding of the thyroid gland not making enough T4, but just as important and unfortunately more common, the association of the body’s inability to convert adequate amounts of T4 to the active hormone T3. There is now conclusive evidence that in diabetics, those with insulin resistance or those with metabolic syndrome or those who are overweight or obese have a decreased ability to convert T4 to the active thyroid hormone T3, hence supporting at least a more thorough evaluation of the thyroid hormone mechanisms and ultimately offering treatment . The poor conversion explains why so often in our traditional learning we missed adequately diagnosing a persons thyroid insufficiency or Hypothyroid, as our tra-


ditional teaching guided us to look mostly at whether a person had adequate levels of T4. We did this by doing a screening blood test TSH (thyroid stimulating hormone) which comes from the anterior pituitary in the brain. Unfortunately we didn’t look at the T3 levels. In clinical practice I often see how patients who have classical symptoms of low working thyroid, including weight gain and difficulty loosing weight, fatigue, loss of hair, constipation, dry skin, difficulty concentrating, etc; and who for years through their own reading and study have suspected of having thyroid insufficiency. Unfortunately, when the blood tests were drawn only the TSH and at times the T4 were looked at, and since these were in the normal range they were told their thyroid was normal. In clinical practice it is often not an absolute number that denotes normal vs. not normal but a range. In the understanding of ranges, which are derived from population studies where 90% are assumed normal and only the 5% outliers at either end are the abnormal. Being in the normal range at the lower quadrant of normal is very different than being at the upper quadrant of normal. For example, with the thyroid hormone which is the hormone responsible for our metabolism and energy production, being at the upper end of normal implies having an optimal metabolism and energy producing functions as oppose to being at the lower end of normal. Over time the understanding and guidelines for diagnosing and treating thyroid deficiencies have progressively changed. For example, a TSH of 9 used to be considered in the normal range over a decade ago, now a 4 is pushing it and most hormone specialist recognize anything above 2.5 to be associated with a deficiency. This again illustrates that laboratory tests are to be used in conjunction with talking to the patient and deriving a clinical picture which is then substantiated by laboratory tests, which are not absolute but allow the clinician to appreciate a deeper understanding on behalf of the patient’s needs. It is possible that a patient will feel fantastic despite being at the lower quadrant of normal or even below normal range, but

highly unlikely. On the other hand it is common to see patients who are at the lower ranges of normal and have all the classical symptoms of thyroid insufficiency to substantiate a treatment. If you have symptoms of thyroid insufficiency and are overweight, starting a nutritional plan with low carbohydrates, will help and as you improve your weight and reach your healthy weight, your thyroid function will also be optimized, hence giving you more energy. However if you are doing everything you can on your own and feel like you are in quicksand “not going anywhere”. Pay a visit to a board certified Bariatric physician or have your physician do a up to date endocrine thyroid work up, including the blood test called Free T3. And as you review the results, don’t just look for normal values but review where you are within that range. Does one really work any better than the others? Thanks, Lisa Clearwater Dear Lisa, You are correct - there are many different hair dryers and many different price points! I used to be a skeptic when it

came to hair dryers and their claim on drying hair faster or smoother. I use a hair dryer all day everyday but my skepticism has changed based on personal experience. To help you narrow down the search, there are a few key words to look for to achieve faster drying time and smoother, silkier hair: ceramic, ionic and tourmaline. - Ceramic hair dryers can make a really big difference in the condition of your hair. Ceramic is usually made of clay and used in the heating element instead of using copper coils. Ceramic heating elements heat up faster and more evenly. Ceramic uses infrared heat which is safer for hair as it does not damage the outside layer of the hair and because it is an even heat source, it is also safer and more even for drying the hair without damage. - Next, we have all heard about Ionic dryers. To break this down, ions can be negatively or positively charged so the dryer generates negative ions that break down water molecules into small drops allowing small drop to evaporate more

quickly. Because it is breaking the water molecules down more quickly, the hair is not requiring longer amounts of heat damage to dry. With the water molecules drying more quickly, it also allows the cuticles of the hair to remain flat which helps hair to become smoother and less frizzy. While I wasn’t certain I believed the “ionic” hype, I have noticed my drying time for clients is reduced and the hair is definitely smoother. - And finally, tourmaline also generates negative ions (which again are beneficial when drying your hair) but it can generate much more negative ions which will help the hair dry even faster than just a Ionic dryer. Now you will pay a much higher price for a tourmaline hair dryer but the results are definitely better and more noticeable. I hope this helps you find the perfect hair dryer! Andrew Ashton

nd now the latest burning (as in nonelectronic) news about smoking: First, researchers at Penn State say teen smokers are better at getting their friends to join them in the habit than nonsmoking teens are at getting their smoking friends to quit. “What we found is that social influence matters. It leads nonsmoking friends into smoking, and nonsmoking friends can turn smoking friends into non-smokers,” said study author Steven Haas. “However, the impact is asymmetrical: the tendency for adolescents to follow their friends into smoking is stronger.” Haas said nicotine’s addictive effect may be the strongest influence on an adolescent’s inability to help friends quit smoking, but he cited other reasons as well, including a likely lack of resources to help friends quit. “Most often adolescents will try to either quit cold turkey or by gradually reducing their smok-

ing, and these are the least successful ways to quit,” Haas said. Second, MRI scans of smokers suggest a possible connection between how the brain responds to reward and the desire to smoke. Penn State scientists tested 44 smokers to examine how their brains responded to monetary rewards, specifically in their willingness to forgo a cigarette in lieu of a chance to earn additional money. They found that the smokers who would not defer a chance to smoke (and thus earn a couple extra bucks) showed weaker responses in the ventral striatum, a portion of the brain linked to assessing the relative values of things. T

hat second cup of coffee just may help your memory. The latest study by Johns Hopkins researchers finds that caffeine’s effect on long-term memory retention is positive. While it was a small study -- 160 subjects who weren’t regular coffee drinkers given caffeine -- the study found that the extra caffeine helped with memorization. Subjects studied images of objects and received either 200 mg of caffeine or a placebo. Salivary samples were collected at baseline and one hour, three hours and 24 hours after administration. Researchers found those who received caffeine had a significant higher amount of caffeine metabolites at one and three hours compared with participants who received the placebo. But by 24 hours, saliva concentrations had nearly returned to baseline. After 24 hours, researchers tested the subject’s recognition performance by showing participants some of the same images as the previous day. They found that caffeine enhanced performance 24

hours after drinking caffeine, which was specific to consolidation of long-term memory and not retrieval. The study also looked at the optimal caffeine dose. After testing with 100 mg, 200 mg, 300 mg and placebo, researchers found that 200 mg of caffeine achieved the optimal effects on consolidation memory. Q AND A Q: Is homemade hummus dip much healthier than the pre-made versions available in the grocery store? A: Many packaged hummus brands are pretty healthy, but making it at home allows you to control the sodium, calories and nutrients. It means you can also play with the taste. Hummus can be a great choice as a dip for vegetables, a filling in sandwiches and an ingredient in a variety of Middle Eastern-type dishes. The basic ingredients are chickpeas, tahini (sesame seed paste), olive oil, garlic and lemon juice. A two-tablespoon serving of hummus typically contains 45 to 70 calories,

depending on the proportion of ingredients. If you prefer to keep calories lower, you can use lower-calorie ingredients like red pepper or other vegetables to dilute the dip; more olive oil and tahini will mean higher calories. Two tablespoons also usually contain two to four grams of fat from healthy sources such as olive oil and tahini, one to five grams of protein (depending on the amount of beans) and 0.5 to 4 grams of dietary fiber. Commercial varieties vary in the amount of sodium, ranging from 100 milligrams to well over twice that amount. If you want to make lowsodium hummus, use beans canned with no added salt or cooked from dried beans and don’t add much or any salt. RECIPE Make chicken a summer hit with this recipe for Peach-Glazed Chicken, from Cooking Light magazine. Peach-Glazed Chicken • 4 (6-ounce) skinless, boneless chicken halves • 1/4 teaspoon salt • 1/4 teaspoon pepper • 1/2 cup unsalted chicken stock • 1 tablespoon white wine vinegar • 1/4 cup peach preserves • 2 teaspoons whole-grain mustard Heat a large skillet over medium-high heat. Add 1 tablespoon oil to pan; swirl. Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper; cook 5 minutes on each side or until done. Remove chicken from pan and keep warm. Add chicken stock to pan; cook 2 minutes, scraping pan to loosen browned bits. Stir in 1 tablespoons vinegar, peach preserves and mustard; cook 1 minute. Spoon glaze over chicken. Serves four. Per serving: 300 calories, 40 g protein, 30 g carbohydrate, 11 g fat, 400 mg sodiu Per serving: 100 calories, 70 g carbohydrates, 2 g fat.

DIABETES ON THE RISE BY CHARLYN FARGO

A

ccording to new data from the Centers for Disease Control and Prevention, more than 29 million people in the United States have diabetes, up from the previous estimate of 26 million in 2010. Another 86 million adults -- more than one in three U.S. adults -- have prediabetes and many don’t even know it. One in four who has diabetes is not aware he or she has it. Also highlighted in the report is the economic impact of the diabetes epidemic. In 2012, diabetes and its related complications cost the nation $245 billion in total medical costs and lost work and wages. The new data reinforces the importance

of a lifelong healthful eating plan in the prevention and treatment of diabetes. “The figures released last week from the Centers for Disease Control and Prevention are a good reminder of the importance of eating healthfully and getting plenty of physical activity to help prevent and manage serious diseases like diabetes,” said registered dietitian nutritionist and Academy President Sonja Connor. There is no one diet for all people with diabetes. There is, however, a “recipe” for eating healthfully that is similar to recommendations for heart health, cancer prevention and weight management. To successfully manage diabetes, you need to understand how foods and nutrition affect your body. Both food portions and food choices are important -- carbohydrates, fat and protein need to be balanced to ensure blood sugar levels stay as stable as possible.

Here are keys to a healthy eating plan from the Academy of Nutrition and Dietetics. --Eat meals and snacks regularly (at planned times). --Eat about the same amount of food at each meal or snack. --Choose healthful foods to support a healthy weight and heart. --Carbohydrates affect your blood sugar more than protein or fat. As your daily meal plan is designed, portioning out foods high in carbohydrate will help control blood sugar levels. --The actual amounts of each food group depend on the number of calories you need, which, in turn, depends on your age, sex, size and activity level. --If you want to count carbohydrates, you need to keep track of the amount of carbohydrates you eat. Your job is to learn the number of carbohydrates in each

to the same total, the amount of weight you’ll lose does not seem to change based on whether you eat those calories all at once or spread throughout the morning in several “mini-breakfasts.” Some studies do suggest that compared to eating your whole breakfast at once, the same food choices spread out over a few hours could offer some other health benefits, including a smaller rise in blood sugar and insulin in the hours after eating. But the key question is: Which eating pattern best allows you to consistently include foods that meet your nutritional needs and support overall health, while keeping calories at a level that helps you reach and maintain a healthy weight, sustains your energy, avoids excess hunger and fits into your lifestyle? For some people, spreading eating out over the morning reduces total calorie consumption by avoiding late morning hunger that could prompt them to grab candy or pastries, or

Grilled Lemon Chicken with Tomato Salad • 1 teaspoon grated lemon rind • 4 tablespoons fresh lemon juice, divided • 3 tablespoons extra-virgin olive oil, divided • 4 (6-ounce) skinless, boneless chicken breasts • 1/2 teaspoon kosher salt, divided • 1/2 teaspoon black pepper, divided • 2 cups baby heirloom tomatoes, halved • 1.5 ounces feta cheese, crumbled Cooking spray Combine rind, 2 tablespoons juice and 1 tablespoon oil in a large zip-top plastic bag. HEALTH A: In a small new study in the Journal of Nutritional Biochemistry, participants who ate a lot of strawberries (about 3 cups, sliced, a day) for a month lowered their LDL (bad) cholesterol by 14 percent and triglycerides by 21 percent. They also showed improvements in platelet function and other cardiovascular blood markers. Like other berries, strawberries are rich in flavonoids (notably anthocyanins, which give them their red color), along with vitamin C and fiber. It’s likely that reasonable amounts of strawberries (and other berries) are also beneficial, though to a lesser degree. W

hen the U.S. Department of Agriculture’s My Plate came out in 2011, it was the No. 2 food-related news story of the year. Since then, the colorful plate, divided into half fruits and veggies, one-fourth whole grains and one-fourth protein, has increased in popularity. A 2014 Pollock Communications survey found My Plate to be a popular teaching tool with 61 percent of consumers familiar with the plate. Despite its popularity, there are few myths that the Journal of the Academy of Nutrition and Dietetics hope to bust. 1. All meals should be eaten on a plate. Actually the plate idea is meant to be inspirational rather than prescriptive. The fact is most Americans don’t sit down at a table or eat off of plates for every meal. They eat out of bowls, brown paper bags, on the go, in theaters and stadiums. Sometimes, we drink our meals from straws. My Plate is meant to serve as a reminder

to build balanced meals. 2. No snacks allowed. Snacks are an area where you’re not likely to find all five food groups neatly arranged on a plate, but they still fit in. Snacking between meals can help satisfy hunger and can help children get the nutrients they need to grow and maintain a healthy weight. 3. My Plate is fat-free. It’s true that My Plate teaches the five food groups -- fruits, vegetables, grains, protein and dairy. While fats and oils are not considered a standalone food group, the 2010 Dietary Guidelines do recommend consuming small amounts of oils for the essential nutrients they provide. Choose polyunsaturated or monounsaturated fats and reduce consumption of solid fats such as saturated fats and trans fats. 4. Protein foods equal meat. My Plate refers to meat and beans as simply the protein group, with the idea that protein is available in a variety of foods. All foods made from meat, poultry, seafood, beans and peas, eggs, soy products, nuts and seeds are considered part of the protein foods group. Q AND A Q: Are strawberries heart healthy?

RECIPE Here’s a Strawberry and Mozzarella Salad from Ellie Krieger’s “So Easy” cookbook. The berries are a fragrant complement to the creamy, soft mozzarella, and a balsamic vinegar adds just the right touch of sweetness. Strawberry and Mozzarella Salad • 1/4 cup extra-virgin olive oil • 2 tablespoons balsamic vinegar • 1/4 teaspoon salt • 1/4 teaspoon freshly ground pepper • 2 hearts of romaine lettuce, torn or cut into bite-size pieces (about 5 cups) • 1 (16-ounce) container fresh strawberries, hulled and sliced • 6 ounces part-skim mozzarella cheese, diced • 1/2 cup lightly packed fresh basil leaves, cut into ribbons • 8 slices whole-grain Italian bread In a small bowl, whisk together the oil, vinegar, salt and pepper. Place the lettuce in a large bowl and toss with half the dressing. Place the lettuce on 4 salad plates. Toss the strawberries with the remaining dressing and place 1/4 of the berries on top of each mound of lettuce. Top each with cheese, then sprinkle with the basil. Serve the bread alongside. NEW ADVICE ABOUT FISH BY CHARLYN FARGO

I

f you’re pregnant, you’ve no doubt been given a list of foods to avoid -- undercooked meat, soft cheeses made from unpasteurized milk and alcohol, to name a few. The good news is that there is a food you should have more of while pregnant and while breastfeeding: fish and shellfish. The latest science shows that eating fish low in mercury during pregnancy and in early childhood can help with growth and neurodevelopment. It can also be good for your health. That’s why the Food and Drug Administration and the Environmental Protection Agency have issued new advice -- in draft

form presently -- encouraging pregnant women, those who might become pregnant, breastfeeding mothers and young children to eat more fish, and to eat a variety of fish lower in mercury. It’s an important recommendation. An FDA analysis of data from U.S. pregnant women surveyed about seafood consumption showed that they ate far less fish than recommended. In fact, 21 percent of the pregnant women surveyed said they ate no fish in the previous month. Of the women who did eat fish in the previous month, 50 percent reported eating fewer than two ounces a week, and 75 percent reported eating fewer than four ounces per week. “We’re updating our advice because the latest science strongly indicates that eating 8 to 12 ounces per week of a variety of fish lower in mercury during pregnancy benefits fetal growth and development,” says FDA’s

Acting Chief Scientist Dr. Stephen Ostroff, noting that FDA reviewed research from the last decade. Ostroff adds that 8 to 12 ounces is an excellent range to maximize the developmental benefits that fish can provide. “The science behind that recommendation was not available when we last issued fish consumption advice in 2004.” The 2004 advice recommends eating up to 12 ounces of fish lower in mercury per week but doesn’t recommend a minimum amount to eat. The new draft advice does, recommending that women who might become pregnant, along with pregnant and breastfeeding women, eat at least 8 ounces and up to 12 ounces weekly, which is two to three servings. This draft advice also extends to young children, although the amounts served to them should be proportionally smaller. Fish and shellfish (collectively called

commercial fish with the highest levels of methylmercury: Tilefish from the Gulf of Mexico, shark, swordfish and king mackerel. In addition, FDA and EPA continue to recommend that no more than 6 ounces of fish per week (of the 8 to 12 ounces weekly) should be white (albacore) tuna. Although canned light tuna is lower in mercury, albacore tuna has more of it. Q and A Q: Is sugar bad for you? A: It may increase your risk of heart disease, according to a new study. Adults who consumed 17 to 21 percent of their total daily calories from added sugar compared to those who consumed only 8 percent were 38 percent more likely to die from heart disease. The study was conducted by the Center for Disease Control and Prevention. Researchers used

Transfer to a clean cutting board and let cool for about 5 minutes. Meanwhile, whisk yogurt, vinegar, onion, oil, salt and the remaining 1/4 teaspoon pepper in a large bowl. Chop the chicken into bite-sized pieces and add to the bowl along with tomato, avocado and bacon. Toss to combine. To assemble the wraps, place two lettuce leaves on each tortilla and top with chicken salad (about 1 cup each). Roll up like a burrito. Serve cut in half. Serves four (one wrap each). Per serving: 526 calories, 34 g protein, 39 g carbohydrate, 26 g fat, 70 mg cholesterol, 11 g fiber, 901 mg sodium.

EAT THE RIGHT FATS and Reduce Your Risk of Cancer and Heart Disease BY DAVID LIPSCHITZ

C

ompelling research evidence links dietary fat to virtually all of the most common cancers. Most of the information comes from a study of fat consumption in various countries. Those with the highest fat intake have the highest incidence of breast, colon, prostate and kidney cancer. Of even more concern, in the past 50 years, the incidence of all these cancers has increased, whereas the incidence of heart attacks and strokes has decreased. How could this be? In the past 50 years, the fat composition in our diets has changed. When I grew up in the 1950s, the average diet provided about 30 percent of calories from fat, 60 percent of which was saturated fats contained in red meat, milk, butter and cheese.

At that time, the link between heart attacks and cholesterol became widely known and saturated fat intake was thought to be the major dietary risk factor. Simultaneously, plant oils containing high concentrations of polyunsaturated fats were shown to lower cholesterol and significantly reduce the risk of heart attacks and strokes. As a consequence, we began to eat less red meat, cheese and saturated fat, and increased the amount of polyunsaturated fat, such as corn oil and margarine. And, as we predicted, deaths from heart attacks (that was a major killer of so many middle-aged men) decreased by about 50 percent in men and have also moderately decreased in women. While the composition of fat consumed has changed, the total amount of daily fat intake has remained constant. Today, polyunsaturated fats constitute 60 percent of the total fat. While heart attacks and strokes have decreased, the net effect on life expectancy has not been as dramatic and, over the same period of time, the incidence of cancer has increased. This includes an increased incidence of lung (almost always related to smoking), breast, colon and prostate cancer. Could it be that the change in the composition of fat intake

has reduced the risk of heart attacks but increased the risk of cancer? Clearly, the answer is yes. Numerous research studies suggest that a high intake of polyunsaturated fats increases the risk of all of these cancers and is more dangerous than saturated fats. We have replaced one serious disease with another. More recently, a great deal of interest has focused on the Mediterranean diet, where fat intake is not much different from that noted in the United States but the risk of heart attack, stroke and cancer is less. The major difference between the two diets is clearly related to olive oil. Oil obtained from corn, sunflower, safflower and soybean is almost exclusively polyunsaturated, whereas olive oil is monounsaturated. Whether an oil is polyunsaturated or monounsaturated is primarily related to its chemical nature. Polyunsaturated fats are readily oxidized, meaning they produce a very toxic compound called a free radical that causes severe cell damage, an initial event in eventual malignant transformation. By contrast, monounsaturated olive oil does not oxidize, does not damage cells, and hence may not contribute to an increased cancer risk. A recent research study by scientists at the Northwestern School of Medicine in Chicago showed that olive oil might protect women from developing breast cancer. Most women who develop breast cancer have an overproduction of a specific cancer-producing gene (oncogene). In this study, scientists showed that oleic acid, the main component of olive oil, inactivates this oncogene, reducing the risk of breast cancer. Based on all this information, the message is clear. To stay healthy we must not only reduce fat intake but must also watch the type of fat consumed. Saturated fats, trans fats (margarine and shortening) and polyunsaturated fats all have more health risks than monounsaturated fats. For this reason I suggest that you stock your kitchen with olive oil. Saute with olive oil, use it in salad dressings, add pepper, and use it on bread rather than butter. The benefits may well be huge and assure a better and perhaps even a longer life.

adies, here’s another reason to keep yourself at a healthy weight -a comprehensive report risk finds that being overweight increases women’s risk of ovarian cancer. The report, an analysis of the global research by the American Institute for Cancer Research and World Cancer Research Fund, means that ovarian cancer joins the growing list of cancers whose risk is increased by carrying excess body fat. That list includes post-menopausal breast cancer, colorectal cancer, endometrial cancer, esophageal cancer, kidney cancer, gallbladder cancer and pancreatic cancer. Added together, approximately 585,600 cases of these eight cancers are diagnosed in the U.S. every year, according to the American Institute for Cancer

Research. AICR estimates that being at a healthy weight could prevent 1 in 5 cancer diagnoses, or approximately 120,900 cancer cases every year. The report from the AICR/WCRF Continuous Update Project, “Ovarian Cancer 2014 Report: Food, Nutrition, Physical Activity and the Prevention of Ovarian Cancer,” analyzed 128 population studies that investigated how diet, weight and activity link to ovarian cancer. The 25 studies that focused on weight included 4 million women, 16,000 of whom developed ovarian cancer. The report showed a dose-response relationship: a 6 percent increased risk of developing ovarian cancer for every 5-point increase in body mass index. “These latest findings from the Continuous Update Project offer another reminder that our weight, and our lifestyle, play an important role in cancer risk for both women and men,” says AICR Associate Director of Nutrition Programs, Alice Bender, a registered dietitian. “This is really an empowering message. There are no guarantees, but adding activity into your day and healthy plant foods onto your plate are steps you can take today to reduce your risk of cancer and other chronic conditions as well.”

A: As hearty as they are, potatoes actually need a little TLC to cook properly. Their flesh is relatively dense, so they cook much slower than, say, green beans. This density means it takes a while for the interior temp to match the exterior. Toss whole, cubed or quartered potatoes into a pot of boiling water, and you’ll end up with potatoes that are both over-and undercooked, mushy and gluey outside, hard and crunchy within. By starting spuds in cold water, the internal temp will have a better chance of matching the external as the water approaches and then reaches the boiling point. Blood oranges are currently in season and can be found at most supermarkets. Blood Orange Fruit Sherbet • 1 cup blood orange sections, juiced • 1/3 cup seedless raspberry all-fruit preserves or jam • 1 envelope unflavored gelatin • 2 blood oranges, peeled, segmented, seeded • 1 cup frozen raspberries (no sugar added), partially thawed or fresh berries In medium saucepan, combine orange juice and preserves. Sprinkle gelatin over juice mixture; let stand a few minutes to soften gelatin. Cook over low heat; stir to dissolve gelatin. Do not boil. Cool. In food processor, puree orange segments and berries. Add cooled orange juice mixture; process just until blended. Pour into shallow (8 by 8-inch) baking pan; freeze until firm. Makes four servings. Per serving: 128 calories, 7 g protein, 24 g carbohydrate, 0 g fat, 3 g fiber, 27 mg sodium.

TASTE THE WINE, Enjoy the Beauty in California’s Sonoma Valley BY GLENDA WINDERS

I

f an artist tried to create the perfect small town, that spot might turn out to be Healdsburg, California. This hub of the Sonoma County wine country was laid out around a central plaza in the mid-1850s by Harmon Heald, and on the tranquil Sunday when I arrived locals and visitors lounged on the grass while a guitarist played and sang in the gazebo. I passed the afternoon poking around some of the 22 local art galleries and the one-ofa-kind boutiques around the square, some of whose playful names were Cupcake, Snowbunny and Looking Glass. Everywhere I walked the scent of jasmine overlaid the aroma of good food. What supports this good life, of course, is the wine produced by some 130 wineries that draw from the three appellations that come together in this part of the county -Dry Creek, Alexander Valley and Russian

River. And many of those wines are poured at the 40 tasting rooms around town. Sonoma County has a rich history that begins with the Southern Pomo and Western Wappo tribes who first settled here and gave the area its name, which means “Valley of the Moon.” The story moves on to the California gold rush and the people who came in the hope of getting rich and never went back. Then came the French, German and Italian immigrants who planted the first vines, and in 1871 the railroad that connected the orchards and farms to the markets and canning and packing plants where the produce was sold. “Agriculture unites the history of the region,” said Holly Hoods, curator of the Healdsburg Museum and Historical Society. The museum is housed in a building that was originally a Carnegie Library and is now on the National Register of Historic Places. The local historical society maintains a permanent exhibit as well as temporary ones that tighten the focus, such as one on Sonoma County’s connection with the Civil War and another about 19th-century utopian communities here. Free audio tours help bring it all to life. Lori Moore’s walking tours around town supplement what visitors learn at the museum with information such as how the 1906 San Francisco earthquake affected Healdsburg along with peeks into historic homes and tales of ghosts who are said to inhabit some of the businesses and hotel rooms. While Healdsburg’s past is certainly a

colorful one, its present is equally exciting. Back at those tasting rooms, for example, the experience has changed considerably from the extremes of swishing and spitting or becoming too inebriated to drive a car. Now the trend is toward wine and food pairings, with some purveyors serving small plates of food to complement what tasters are drinking. Every tasting room and winery does something special that sets it apart. At Portalupi owners Jane Portalupi and Tim Borges serve up local cheeses, salamis and a sweet-and-salty olive and fig tapenade. And while they pour some premium zinfandels (for which this valley is noted) and pinot noirs, their specialty is the Vaso di Marina, an homage to Portalupi’s bootlegging Italian grandmother. “It’s a blue-collar wine,” Borges said. “It pairs well with spaghetti bolognese and Cheetos.” The wine is bottled in milk bottles that recall the days when customers came to Marina Portalupi’s grocery store and filled their own containers straight from the barrel. Over at Thumbprint, the specialty is blends of such wines as cabernet franc, cabernet sauvignon, merlot and Sirah, all made from locally sourced grapes. “My palate drives the blends,” said Scott Lindstrom-Dake, a classically trained artist who came up with the name for his business when he spilled some gold ink and accidentally left his thumbprint on a wine bottle. owner Tim Bucher had planned to produce only wine until he discovered some olive trees on the property. Now he runs a “soil to oil” operation that produces as many olives as grapes, but the quality of the wine doesn’t suffer for the diversification. Their sit-down tasting pairs both wines and oils with food. Mine ended with a Bitter Chocolate Mousse that went well with the Frutteto Extra Virgin Olive Oil and the 2011 Petite Sirah. What sets Quivira apart from other wineries is that the owners practice biodynamics -- a form of organic farming that focuses on sustainability through biodiversity. This means that part of their land -- creeks and forests -- is set aside as a reserve, and they grow livestock along with their gardens and vines. For this reason they call their estate a “farmery,” where they host farm-to-table dinners, weddings and picnics. They are currently partnering in a project to restore salmon and trout to a creek that runs through the property, and they take pride in revealing their wine’s terroir -- a sense of place and balance with nature to create a relaxing, seamless tasting experience. For sheer enjoyment of the landscape, however, a tasting at Jordan Estate is absolutely essential. Founder John Jordan, who loved traveling in France, bought 1,200 acres here in the 1970s with an eye to re-creating the experience of being in Provence. Today son John has expanded the operation with gardens, lakes and animals that visitors can enjoy. www.PanacheVue.com

The three-hour tour, which costs $120, begins with a glass of wine at the chateau and continues in a Mercedes Sprinter van through the gardens to a shady lake-view tasting area known as Seven Oaks. From there it’s off to the vines, where guests learn about the process of grape-growing and winemaking. The finale is a sit-down tasting at Vista Point, a pavilion at 650 feet that offers what has been called the best view in the Alexander Valley. While wine is the main draw in this area, however, there’s lots more to do. One happy surprise is the only Hand Fan Museum in the United States (there are three in Europe). The offerings, which began with Pam Sher’s private collection, number in the thousands, with the oldest dating back to the 17th century. The fans are made of every imaginable type of material -- from metal mesh to paper and feathers -- and docents educate visitors about their uses: During Victorian times women used fans to keep their waxbased makeup from melting and also to send secret messages to suitors that their chaperones couldn’t interpret -- “Yes, I’ll kiss you,” “No, I’m not interested.” The stiff fans on sticks used in churches are uniquely American. Yet a different kind of fun awaits at Dry Creek Peach and Produce, where owner Gayle Okumura Sullivan gives tours of her orchards and points out the 30 varieties she and her family grow. At the tour’s end guests can look forward to a peach treat, and she’ll even teach them how to make a

wreath with clippings from the trees. When dinnertime comes, there’s plenty to choose from here. My favorite, however, was Baci, where Chef Shari Sarabi takes delight in making Italian dishes exactly as his customers want them. “Why not? We live in the cornucopia of the world,” he said. Anyone willing to make puttanesca without the anchovies is all right by me.
