Preheat oven to 325. Line mufďŹ n tins with paper liners, set aside. Cream butter with sugar then add eggs one at a time, beating well after each addition. Combine dry ingredients in a large bowl. Add them alternately with sour cream in three additions, beginning and ending with our mixture. Fold in apples and nuts. Fill mufďŹ n cups 3/4 full. Bake cupcakes in preheated oven for 30 minutes until toothpick inserted in center comes out clean. Cool on a rack.
Frosting: 1/3 cup butter 1/2 cup ďŹ rmly packed brown sugar Pinch of salt 3 tablespoons milk 1-1/2 cups confectioners’ sugar 1/4 teaspoon vanilla
Melt butter in a small saucepan over medium heat. Add brown sugar and salt and stir until sugar melts. Add milk and bring to a boil. Pour into a mixing bowl, stir in vanilla and cool 10 minutes.
