2012 GRECIAN FESTIVAL A Welcome from Reverend Dean N. Paleologos Every two years, for the last 36 years, the Saint Spyridon Greek Orthodox Community opens its doors and welcomes everyone to our grounds, to enjoy a bit of Hellenism with our family as we celebrate the Grecian Festival. We call this “philoxenia,” which literally means ‘friendship to all people’. For three days we open our hearts and welcome you to be part of our Greek experience. The Grecian Festival has been a highlight of Worcester and Central Massachusetts since 1976. It has grown to become the finest and the largest festival of New England, with attendance exceeding 20,000 people. We recognize and commemorate our forefathers, those Greek immigrants who came to the United States and Worcester to create a new life, and in doing so, made lasting contributions to the religious, economic, cultural and political development of Worcester. It’s also a time to join in the festivities of our Hellenic Heritage. I would especially like to express my prayers for the health and preservation of two faithful stewards of our past festivals, Chris Fourkas and Michael Dionis. We ask God Almighty to restore in them sound health. Also for our tireless servants in Christ, Aris Felis and Presvytera Loukia Bitzas, who fell asleep in the Lord’s Heavenly Kingdom this past year. In closing, I extend my heartfelt appreciation to all those who have helped make the 2012 Grecian Festival possible. This includes our city and state officials, our neighbors, our wonderful sponsors, the media, and those who have offered “in kind” donations. These supportive commitments reflect a partnership with the Saint Spyridon Greek Orthodox Community as generous stewards of the Grecian Festival. Dedication Sadly in the last year we lost two pillars of our community who had been involved with the Festival every year since its inception in 1976, Aris Felis and Presvytera Loukia Bitzas. Aris and Loukia loved their church, family, friends and took an immense pride in representing the Greek Orthodox community to Worcester and Central Massachusetts. We join their families in their sadness for the loss of these individuals but we take solace in the knowledge that their legacy and memories will be eternal.

FEL I S was an extremely active member of the Cathedral, serving as Parish Council President, long time Parish Council member, member and past president of its Seniors Group, an active member of AHEPA serving as its President and District Governor, member and past President of the Pan-Epirotic Society, Special Events Chairman, Golf Tournament Committee and many more. To many in the Parish what Aris will be remembered for most were his countless fundraising efforts in support of the Cathedral. Aris was the longtime Chair of the Festival Raffle Committee and became synonymous as the Festival’s “Ambassador” to the Parish and the Community. When you entered the Festival grounds you were probably greeted by Aris’ smiling face, a heartfelt hello, and a request to buy a raffle ticket. He had the type of personality that both Parishioners and non Parishioners couldn’t say no to. When asked why he did so much for the Cathedral Aris said “I Volunteer for the Church from my heart, not for thank yous or accolades, only for the Church.” P r e s v y t e r a L o u k ia B i t z a s was a constant presence in the Parish bringing her vast musical talents serving as Choir Director and lifelong Choir member. She was a member and officer of many organizations within the Worcester community including the Massachusetts Music Educators Association, Music Worcester, Young Artists Competition, Hellenic Arts Society (founding member), Worcester Art Museum, Worcester Historical Museum, Opera Worcester, Worcester Preservation Society and Mechanics Hall. In 2003 she received the Boston Metropolis Ministry Award and in 2010 she was honored with the Administration in Music Education Visionary Award. Loukia was the longtime Chair of the Festival’s Religious booth in the Agora. Her passion and knowledge of the Religious books and icons was unrivaled, but what we in the Parish miss the most about Loukia was her smile, calming personality, and profound Faith. 5

Orthodoxy
The Orthodox Christian Faith Orthodox Christians hold true to a tradition which has been handed down unchanged from the time of the Apostles. For over one thousand years from the Day of Pentecost, Orthodoxy was the only Christian tradition. Orthodoxy is practiced the same way today as it was in the Church of the catacombs, the Church of the Apostles, the Fathers, and martyrs. While some may find the services, traditions, or practices of Orthodoxy to be “old fashioned”, or “not in keeping with today’s society in America”, it is this very factor that gives Orthodoxy its inherent strength. Orthodoxy has always held true to those values and principles given to mankind by God, and through his Son our savior JESUS CHRIST, rather than mold and change its beliefs and principles to accommodate an ever changing society. While Photo:Christos Souflas it may be practiced in many languages throughout the world, the principles, traditions, and liturgies are the same. In closely watching the Divine Liturgy, visitors can readily see the origins and elements of our worship service, such as the Nicene Creed, the Epistle, Gospel readings and the Lord’s Prayer. Orthodoxy is an inheritance: the Bible, the Creed, the decrees of the Ecumenical Councils, the service books, the worship, and the art have formed the “Tradition” of the Church. History of Saint Spyridon Greek Orthodox Cathedral In 1924 construction began on Orange Street in Worcester for the first Saint Spyridon Greek Orthodox Church. On May 3, 1925 the new church was consecrated. As the community grew, the need for a new church was realized. In November 1950, construction began on a new church, on our present site at the corner of Elm and Russell St. On Palm Sunday, April 13, 1952, the doors of the new St. Spyridon Church were officially opened. In 1985, Saint Spyridon Greek Orthodox Church was elevated to a Cathedral. Today our Cathedral has approximately 1,500 families whose Stewardship supports such ministries as The Orthodox Food Pantry, Holy Trinity Nursing and Rehabilitation Center, Greek Language Program,Youth Activites, among others. In architecture, Saint Spyridon Cathedral is in the Byzantine style, with one or more domed roofs. The domes and their surmounting crosses remind us that Christ is the head of the Church and are symbolic of heaven above. The Church was designed in the shape of a crucifix, which reminds us that we are saved by the Cross of Christ. Saint Spyridon Our Cathedral is named after Saint Spyridon, who died in the 4th century. He was born in Cyprus and is honored in both the Eastern and Western Churches. He was compassionate and loving; a humble shepherd, Bishop of Trimythus, confessor of the faith during times of persecution, and an outstanding teacher of Orthodoxy at the First Ecumenical Council of Nicaea in 325. Saint Spyridon is noted for the miracles he performed during his life and is known for his great piety, honesty, and gentleness. When you walk into the Cathedral you will enter the Narthex and see a glass display case with the slippers of Saint Spyridon, given to us by the Bishop of Corfu. The body of Saint Spyridon has remained completely intact. The Holy Relics are found in the church in Kerkyra on the island of Corfu, Greece. Each year, on the day of his commemoration, December 12, the slippers are found completely worn out. The serving priests change the saint’s shoes every year, only to find them worn out again the next year. It is the belief of Orthodox Christians that Saint Spyridon continues walking today performing miracles.

Music & Dance Ancient Greek Music The music of ancient Greece was inseparable from poetry and dancing. It was entirely monodic, there being no harmony as the term is commonly understood. The earliest music is virtually unknown, but in the Homeric era a national musical culture existed that was looked upon by later generations as a “golden age.” The chief instrument was the phorminx, a lyre used to accompany poet-singers who composed melodies from nomoi, short traditional phrases that were repeated.

They believed that the Gods offered this gift to some select mortals only, who in turn taught dancing to their fellow-men. The Grecian Festival celebrates our Greek faith and heritage in so many ways. Greek heritage encompasses many aspects of Hellenism including our art and culture, which many believe is our heart and soul. At this festival we hope we can enhance your festival experience by offering many aspects of art and culture for your enjoyment. We also thank our art and culture sponsors for their show of support in the Grecian Festival. Cathedral Tours One of the highlights of our festival is the guided tours of our beautiful Cathedral. This is especially poignant for those who have never been inside our Cathedral...During the tour you will leave the excitement and bustle of the festival behind as you step into the inner spiritual sanctum. Allow the flicker of the candles to ignite your soul as the sparkle of the chandeliers reflect the stained glass, opening you up to a full and mesmerizing experience of faith and spirituality. Light a candle, say a prayer for a love one, or just sit quietly and allow the strains of life to leave your body for just a little while.

1 Bottle Red Wine 12oz can Whole Peeled Tomato 1 Bunch Fresh Oregano 1 Bunch Thyme 6 Bay Leaves 1 Gal Veal Stock (Beef Stock)
Dust lamb shanks in seasoned flour and sear on all sides until golden brown. Take out of pan and add next 5 ingredients and lightly saute. Once vegetables are soft add red wine and reduce by half. Next add all other ingredients and loosely cover pan then throw in a 325 degree oven for about 2 1/2 hrs or until fall of bone tender. Once cooked remove shanks from pan and keep warm. Place pan on stove top and reduce sauce for a thicker consistency then add over shank and enjoy.

Having operated the Flying Rhino Café for 12 years, Paul and Melina are thrilled to have their son Myles take an interest in cuisine. After graduating from Boston University, Paul and Melina were married at Saint Spyridon Greek Orthodox Cathedral and made Worcester home. Myles is entering the International Culinary Institute in Manhattan studying both French classical and Italian techniques. In addition to Myles, they also are blessed with two daughters Victoria and Madeline. Pappou and Yiayia Capsalis are very proud of their grandchildren.

Ethan began his culinary journey by attending Southern New Hampshire University, he continued to gather experience by working in some of the finest kitchens on the east coast. Ethan is thrilled to now be delighting the palettes of Worcester’s discerning diners, especially at 2012 Grecian Festival.
Mediterranean Seafood Stew 12-14 8 oz cups
Ciao Bella
20 oz Seafood stock or Clam juice (see below) 10 oz of tomato sauce prepared ahead of time 2lb of red bliss potatoes diced 2 stocks of fresh leeks (cut ends off, quartered the long way & sliced half inch thick ) 1 oz chopped fresh garlic 8 oz white wine ¼ tsp thyme 1 teaspoon celery salt 2 bay leaves 1 tsp fennel seed chopped 1 tsp of basil dry 1 Pinch of saffron 8 oz baby shrimp 90+ count /lb or 1Lb shrimp pealed 16-20 count/lb 16 oz count necks or steamers, or 8 oz Fresh Chopped clams. 16 oz fresh mussels 8 oz dice firm fish (swordfish, salmon, tuna) (optional) 1 whole lobster, claws pulled & cut in quarters (optional) 16 oz scallops SEAFOOD STOCK Pick up FRESH fish bones, skin, heads, tails, shrimp shells. 2lb total. Rinse well in cold water, add about one quart of water per pound of bones, add a couple of carrot, one stock of celery without leaves, one medium onion. Salt & pepper lightly. Bring to a boil & simmer without cover until reduced by half. RECIPE In a saucepan, heat dash of extra virgin olive oil & add, leeks, garlic Sauté until leeks wilted Add 8 oz white wine Simmer with wine for five minutes until the alcohol evaporates. Add: Seafood broth or Clam juice, thyme, celery salt, fennel seed, basil, bay leaves, Tomato Sauce, Salt & pepper to taste Slowly bring to a boil & simmer until diced potatoes are almost soft to the bite. Add Seafood Simmer for 15 more minutes or until the diced potatoes, lobster meat is done & the mussels are open. Taste & season with salt & pepper before serving.

GREEK CORFU With more rainfall than any other Greek Island Corfu is the greenest and in the eyes of many the most beautiful island in Greece. Corfu’s six-month olive season is the longest of any island in Greece and lush vineyards cover the island. The patron saint of the island is Saint Spyridon whose relics are entombed there.
KEF A LON I A This largest of the Ionian islands was a best kept vacation secret until the filming and release of the movie Captain Corellis Mandolin. The islands inhabitants are mainly fishermen, farmers and an increasing number who are now in the tourism trade. The Island includes the most spectacular caves in Greece.
Z A KYNTHOS Zakynthos boasts the most photographed beach in Greece, Shipwreck Bay. It also has a reputation for the arts, especially literature. Dionysios Solomos wrote the poem that became the national anthem of Greece, Hymn To Liberty here.
CRETE The largest of all Greek Islands Crete was the home of the Minoan culture that historians believe was the first European civilization dating back to 3,000 BC. Cretans are fiercely proud of their island and customs and still use a dialect not found elsewhere in Greece.

ISLANDS S A NTOR I N I Visually the most spectacular Island in Greece and probably the world. Entire towns are built along the walls of the Caldera cliffs left after the ancient volcano eruption. The most spectacular sunsets on the planet .
MYKONOS The “Jet Set�Island; expensive, decadent, with an intense nightlife that never stops and some of the finest restaurants and hotels in Greece. Juxtaposed with sleepy windmills and access to the uninhabited ancient island of Delos with some of the best and extensive ruins in Greece.
RHODES The most popular island in the Dodecanese Islands rivaled only by Santorini and Mykonos in popularity. At the harbors entrance once stood The Collossos of Roads, one of the 7 wonders of the ancient world.
T I NOS Perhaps the most spiritual island of all, the wonderworking icon in the church of the Panagia Evangalestria (Our Lady of Good Tidings) attracts people from all over Greece. On the 15th of August , the Assumption of the Virgin Mary, the island is so crowded with pilgrims from the mainland that people sleep on the streets.

Best Wishes for a Successful and Enjoyable Grecian Festival SAINT SPYRIDON GREEK AFTERNOON SCHOOL OF WORCESTER, MASSACHUSETTS Registration will take place in September 2012, on Wednesday, September 12th and Thursday, September 13th from 4:00p.m to 5:00p.m. Classes will begin with Agiasmo on Monday, September 17th at 4:00p.m. The students 6 or 7 years of age who speak little Greek or none at all, Preschool class, will be attending school on Tuesdays and Thursdays.
