Carolyn G. Goodman became the mayor of the city of Las Vegas on July 6, 2011. Carolyn has devoted much of her life to volunteerism and education in Las Vegas. She has been recognized with the “Distinguished Nevadan” award, and become a Sarah D. Barder Fellow in The Johns Hopkins University Center for Talented Youth and an Alumna of the Year in Education at UNLV. Goodman continues to prove her deep commitment to the community and devotes herself to the highest quality of life for all southern Nevadans through her efforts and dedication.

As the Vice President, Corporate Communications for Station Casinos, she is responsible for the Company’s public relations activities and serves as the Company spokesperson. She serves on the Governor’s Planning Commission for Nevada’s 150th celebration, is a 1999 graduate of the Las Vegas Chamber of Commerce Leadership Las Vegas and served as president of Child Focus at St. Jude’s Ranch.

LISA LYNN BACKUS Lisa Lynn Backus, CMP, CPCE, is Catering and Convention Services Manager. She has worked in the hospitality industry for over 25 years, including management with Marriott International and owner/operator of a full service DMC. She has worked with The International School of Hospitality, Past president of the Las Vegas Chapter of NACE, Her honors include recognized at the 2010 NACE Experience 2009 George Zell Spirit of NACE , Caesars Entertainment 2006 Chairman’s award for Community Service.

MICHELE POLCI Michele Polci has dedicated her career to building and shaping the Las Vegas catering industry, contributing to the greater good of our economy. Her contributions include leadership in industry organizations, as well as advising and teaching courses at local institutions. She currently oversees catered event sales at Caesars Entertainment’s eight Las Vegas properties.

MELISSA TORRES Melissa can be found doing her radio show every weekday on KCYE, 102.7- The Coyote. Melissa’s credits span from her very first TV commercial when she was 5 years old, to national TV commercials and projects for CNN.com, The Discovery Channel, MTV, KLAS-TV and FOX5 News. She also volunteers for several different local non-profit charities in town.

MICHELLE VELEZ Michelle Velez is on Wake Up With the Wagners and on weekend mornings on News 3 at Sunrise and News 3 Today. She joined the News 3 team after spending four years at KSNV’s sister station in Yuma, Ariz. Michelle devotes a lot of her time to cancer fundraisers and related events. Before moving to the Desert Southwest, Michelle lived in San Diego where she attended San Diego State University and earned a degree in Journalism and Political Science. Over the span of three years and three different stations, Michelle worked her way up from an intern to a producer and then made the move to Arizona to start her broadcasting career.

alloween is celebrated nationwide on October 31st. More importantly, Nevadans celebrate our state’s birthday. This year Nevada will turn 150 years old as a strong and vibrant ‘Battle Born State’ with that same cowboy spirit reminiscent of our resilient ancestors. Governor Sandoval spearheaded this celebration. The governor’s enthusiasm is not easily contained as he states: “This year marks the 150th anniversary of our statehood and we are honoring this special milestone with a year-long celebration. Nevada’s Sesquicentennial provides us the unique opportunity to explore our storied past and rediscover what it truly means to be a Nevadan. With many exciting events and activities taking place throughout the state, I encourage all Nevadans and their families to be a part of this momentous occasion.” The Governor’s Points of Light Luncheon is one of those momentous occasions that will be held at Bally’s Hotel - Las Vegas on September 18th. This event is important because Nevadans throughout the state will be recognized for their dedication, inspiration, leadership and innovation of volunteers and volunteer programs. http://nevadavolunteers.org Monday, September 22nd, The Smith Center celebrates the Nevada Sesquicentennial with a concert event featuring extraordinary performers and a star-studded event followed by a reception

T

he sweaty days of summer are behind us, and the dry, cold winter months fast approach. Generally speaking, men don’t give a damn about their skin. Take me as I am, we roar with machismo. Ask your best gal, though, and she cringes thinking of winter on her soft face. The harsh desert air brings itchy, dehydrated skin to men and women alike, and there’s no time like the present to protect and nurture the human body’s largest organ. First and foremost, get a routine. Don’t get caught up in the ten-step, twice-a-day routine of your main squeeze. That’s exhausting. A man on the move needs two essential steps to taking care of his epidermis better than mom ever did (sorry, Mom). You cleanse and you moisturize. No, men, shampoo is not facial cleanser, and body lotion is not face lotion. Clinique offers a number of excellent men’s line products, including a mint exfoliating cleanser. It is best to exfoliate before shaving and a few days after a fresh shave, to help your hair break through the skin and limit breakouts or ingrowns. Keep in mind, however, that over-exfoliating and over-washing can cause excessive skin dryness and unbalanced production of oil. This leads to breakouts just as easily as infrequent cleansing can. You really only need a thorough wash in the evening, with a good toner for the mornings. A toner prepares the skin so other products can be more effective. Your sweetheart’s woven cotton pads work perfect if you’re a fresh-faced fella (but beware cheap cotton padsit’ll seem you ate the Easter bunny for breakfast, and that’s just awkward). The sun may not seem like it affects your skin on cloudy, overcast days, but it’s actually easier to burn because of the harmful rays those clouds can’t block. A minimum 30 SPF sunscreen helps combat them and protect a man’s fine lines. Most moisturizers have SPF in them, so use those products during the day (there’s no need for sunscreen to protect from the city’s neon nights), and invest in a quality evening moisturizer. Your skin rebuilds and heals itself overnight, so you want to ensure it has the proper nutrition to keep you looking young and healthy. Don’t forget, sleep and nutrition play a vital role in your skincare routine (and overall health), so always try to do “Vegas” in moderation. Fall Hair Recovery

ow that the harsh rays of summer have ended you may find yourself coping with dull sun damaged hair. Months of repeated tanning, enjoying water activities and still coloring your hair can really put a strain on your tresses. Get your locks ready for fall with just a few steps to restore your natural shine. •

Visit your favorite salon and trim at least half of an inch to create and instant lift. Use shampoos designed to hydrate your hair and add moisture as it cleans. Wash your hair only when necessary, usually 2-3 times a week, to allow your natural oils to work down into your hair shaft and nourish. Try a good hydrating hair balm which is often richer and more healing than traditional conditioners. Hot oil treatments are some of the best ways to treat sun damaged hair. Once a week use an over the counter product or make your own. Give your hair a rest from harsh bleaches and hair dyes. Brushing your hair regularly allows your natural oils to repair damaged ends and promote shine. Avoid alcohol based products which further dry out your hair. While your hair is recovering use the cool setting on your blow dryer. Heat whether from your blow dryer or curling iron can make your damage worse.

Healthy Recipes: Cauliflower Mash

L

ooks can be deceiving… but also delicious and healthy! As an alternative to traditional mashed potatoes, here’s a tasty way to use cauliflower as a healthy substitute!

“Cauliflower Mash”

1 large head cauliflower, trimmed and cut into small florets (about 6 to 7 cups) 1 tablespoon extra-virgin olive oil (you can substitute coconut oil for richer flavor) Fine sea salt and ground black pepper, to taste

Directions: Bring a large pot of salted water to a boil. Add cauliflower and cook until extremely tender, about 10 minutes. Reserve 1/4 cup of the cooking liquid and then drain well and transfer cauliflower to a blender or food processor. Add oil and reserved water, about 1 tablespoon at a time and mix until smooth or, mash with a potato masher. Season with salt, pepper or parsley and serve.

he holiday season nears and with it comes shopping, parties, festivities, and especially food! We all know those holiday meals, baked goods, wine and spirits can easily add a pound or two to the scales.

Get a jump on those extra inches prior to the meals hitting the table. Here are five quick fitness tips to sneak into your daily routine, so you can indulge in the feast without the guilt!

TOTAL HIP & KNEE REPLACEMENT — RECOVERY CARE

1. Walk More: Whether it means parking further away, using stairs instead of an elevator, or taking a brisk walk on your lunch break- try to increase your number of steps throughout the day. Walking more increases blood flow, assists breathing, and helps keep joints and muscles in use and working properly.

2. Standing-Calf Flex: This exercise can be done practically anytime and anywhere. Stand straight and lift onto the balls of both feet- onto your tip-toes- balance for a couple seconds, then back down. Repeat for twenty repetitions. You can use the back of a chair to keep you steady, in line at the store, or even while you brush your teeth.

3. Standing Push-Ups: Stolen moments add up and this exercise is a great way to multi-task! It can be performed as the pot boils on the stove or the turkey roasts in the oven. Stand at arms-length and lean into your countertop. Using your body weight and gravity as resistance, push away from the counter, just like a push-up. It’s a great exercise for arms, back and shoulders and can also be done alongside a bathtub or sturdy office desk. Try doing three sets of twenty push-ups a day.

utter, eggs, cheese, chicken, beef, fish, lamb, and bacon. Time Magazine’s cover story, and several other recent publications, have suggested that you can eat as much of these as you want and they won’t harm your health. People love to get the news that they should do more of what they already do in excess, so these articles get a willing and captive audience. Imagine if several studies came out over the last two years showing sweet potatoes are good for you- or apples, or blueberries. Those findings wouldn’t make a magazine cover, because everyone already knows they are good for you. The scientific facts, though, are very different. When we look, what do we find? People who eat low carb diets over long periods of time do very poorly. They get cancer and die from it more often. They get diabetes and die from it more often. They get heart disease and die from it more often. A recent study compared the risk of a diet high in animal protein to that of smoking fifteen cigarettes a day and found them to be nearly the same risk. People do lose a little weight in the short term from low carb diets, but longterm studies show no change in weight. We can observe that the popularity of low carb diets in the United States has not resulted in a substantial shift in our rates of obesity or diabetes.

A low carb diet is attractive because it offers the individual a chance to eat all they want when they are hungry, not feel deprived, and still lose weight. But this benefit is almost completely overshadowed by the short-term side effects of bad breath, headaches, constipation, memory loss and fatigue. When you include long-term risks like high blood pressure, high cholesterol, cancer, diabetes and death, it becomes clear these diets are a horrible choice. The good news is that diets high in complex carbohydrates such as sweet potatoes, potatoes, corn, peas, beans, lentils and rice offer all the benefits of low carbohydrate diets with none of the side effects. You really can eat all you want when you are hungry, not feel deprived, and still lose weight. Even better, you can prevent or reverse a number of diseases like diabetes, high blood pressure, high cholesterol, heart disease, fatty liver, and more. 2. Connect like you mean it Google says it best: “Playing hard to get is good for dating, but bad for business”. Customers are the most important assets in any business, so as a business owner striving to develop a positive, ongoing relationship with your clients should be a priority. Google My Business makes it easier than ever for you to communicate with your customers by posting updates, sharing pictures, responding to customers’ feedback and even connecting to them face-to-face using Hangouts. The good news is that you get to do it all from one platform. You can also do it on the go by downloading the app on your smart device.

Keep an active eye on your insights Google My Business allows you to see the number of times your prospective customers find you on Google, click on your website, and request driving directions to your location. It also lets you see when your customers are getting directions to your business and where they’re coming from. Now that you know exactly how your target customers find your business and interact with your content, you can put your efforts in the right place to reach more of them. The Cromwell Takes Back the Night By Lark Gould

N

ot everything big in Las Vegas comes in large sizes. The Cromwell, the first boutique hotel on the Strip, opens the full effect of its 188 rooms at the end of May. In a town where 5,000-room properties are not hard to find, the demure hotel and casino on Flamingo Road and Las Vegas Boulevard competes with its David-esque appeal and its bar-none nightlife, happening nearly round the clock most days by the Victor Drai-designed rooftop pool and club.

The casino, a welcome mini version of what neighbors like Bally’s and Caesars Palace put forth, opened April 22 along with a few rooms reserved by Caesars Entertainment Total Rewards members and VIPs while the final touches take the new build to a certain sheen. No leftover smoke from the location’s former iterations as Bill’s Gamblin’ Hall and the Barbary Coast. The concepts are as new as the drying concrete here, with some refreshing “firsts” for Las Vegas.


The Cromwell is the first boutique property in Las Vegas on the Strip and with a casino. The resort features the first-ever restaurant by Food Network darling Giada De Laurentiis. Her second-floor eatery features, among other things, the Strip’s first antipasto bar. It also offers likely the city’s first menu option of homemade tegliatelle with short ribs and shaved chocolate. Homemade pasta is a Giada signature as is a love of lemon. The granddaughter of the famous film producer puts these ingredients together in a range of creative formats, including lemon pasta. Giada’s is the restaurant of The Cromwell, open for breakfast, lunch and dinner and 24-hour room service. Retractable windows offer indoor/outdoor views of the exploding Bellagio fountains across the Strip. But guests who wake up and just want a cup o’joe, wander no further than the complimentary breakfast beverage bar near the elevators on each floor. Rooms at The Cromwell deliver some other firsts for Las Vegas. Among them: a backgammon game for a coffee table; special vanity tables with showgirl-style makeup lights; MUK amenities from Australia; and French poetry painted into the tiles of the glass shower. Décor is similar to whimsical styles found throughout such trendy European hotel chains as Muse or even SLS. For now, rates run around $259 per night and Cromwell GM Karie Hall says packaging goes into the mix – whether that means passes to the nightclub above and after hours club below, or value tickets with an airline partner. As a boutique hotel, it is easy to deliver on service. As for romance, the cleverly designed interiors and dashing neon exteriors work their own magic. If location is everything, anchoring the confluence of Caesars Palace, Bellagio and Bally’s puts The Cromwell just about at the epicenter of Las Vegas action for visitors – perfect for the city’s next “it” spot in scene makers. Drai’s, not an unfamiliar name in Las Vegas in nightlife circles, expects to become The Cromwell’s crown jewel. Two rooftop pools spread out on graduated levels along a 35,000-square-foot sprawl of anything-goes-in-Vegas space. There are two tiers of cabanas here – 24 cabanas in all, including two mega-cabanas harboring what Mr. Drai describes as “four very big showers.” Cabanas have their own patios, of course, as well as their own cooling pool – a circular party soaker at the edge of the rooftop expanse eleven stories above the Las Vegas Strip. It’s a sun scene all day, and rocking under the stars all night. DJs run the attached nightclub four nights a week until 4 am. A bank of dedicated elevators from the casino will take club-goers up to the rooftop where admission comes in standard Las Vegas denominations: $20 for women and $30-$100 for men. When the roof party ends, After Hours at Drai’s cranks up the juice below from 4-10 am. MV

Cools moved from Canada to Las Vegas in April 2003 and is now a dual citizen. He explains that Las Vegas is the only place where the audience comes to you. Vegas enables you to make a lifestyle for yourself and create stability. He starting by working at the Stardust hotel from 2003-2004 and signed on with the Paris Hotel and Casino in 2005. Faced with criticism and a lack of support when others thought the show could never last in this city, he proved them all wrong. He transformed a daytime auxiliary check in lobby into The Anthony Cools Experience. With hard work and dedication, Anthony’s show was soon one of the most sought-after shows to see on the Las Vegas strip. Even with the fast paced living that Las Vegas has to offer, Anthony always finds time to work with charity organizations and he says “I work with my favorite organizations whenever I can. Right now I am working with Olive Crest, an organization that helps abused, neglected, and at risk children and their families. They help by providing education, offering counseling and insuring a safe home for the families.” In a competitive market, with hundreds of acts and activities every night to choose from, each individual show must provide a unique experience for their audience. Five nights a week at the Paris Hotel and Casino, the “King of Sociability” offers an intimate theater to perform his shows. The high energy and comedic charm the headliner delivers has the audience screaming for more. Cools has the audience “raise a glass” and get rowdy, the more noise from the audience, the more extreme he gets. His trademark act being the porn auditions with chairs that the hypnotized participants perform onstage for all to see, and also the unforgettable handshaking orgasm those on stage receive during the show, “Although others steal some of my bits, those are definitely my trademarks” explains Cools. Out of thousands of performances and tens of thousands of participants, one that stands out was a night in Mississippi, recalls Cools, “A gentlemen came up on stage with a false leg and I didn’t know it at the time, and during the chair act this man took his prosthetic leg off and stump humped the chair! During the last part of the show when those on stage enjoy an unusual handshake and during the excitement of the situation, his leg flew off and landed in the front row of the audience where my assistant then had to retrieve it before we could stand him up”. Only a small taste of the hilarious events one can guarantee to experience at his shows. On top of many other achievements in his life, Cools can now add that he has the longest running continuous hypnosis show, not only in Las Vegas, but in the world. Surviving in a Seller’s Market

t’s tough being a buyer in today’s real estate market. We are experiencing an inventory shortage where there are fewer properties for sale than in recent years. To make matters worse, assuming the property is well priced, you may have multiple offers to contend with. Every day buyers and their agents must be on alert and ready to act, or the new listings will be gone before you even get a chance to see them. With so much demand and so little supply putting upward pressure on prices, how can a buyer be successful in finding and buying a great home? Here are some mistakes made in the process of buying a home, and what a buyer can do to avoid them.

Don’t assume a house is “worth” the listing price. This can go both ways. A listing agent can employ several pricing strategies to gain attention for their clients. For example, it is common for a short sale to be very underpriced to attract buyers and get a “starting offer”. Unfortunately, if the price looks “too good to be true” it probably is. Remember, the price set by the seller and a listing agent for a short sale is NOT based on any input from the Bank/Lender, who must first agree to write off the loss and approve or accept the offer. If the offer is too low, they will counter with a number they feel reflects the current market value. Unfortunately, this back-and-forth process can take MONTHS of your time and you can miss out on a better home with a more realistic listing price. Banks are not in the habit of giving away homes and have no reason to do so in this very strong real estate market.

Another example of listing price concern is a home that is very desirable due to a multitude of factors including condition, upgrades and location. Others potential buyers are sure to agree with you, so the successful buyer and final selling price may be considerably higher than the list price. The last example may be a property that has stayed on the market for an extended period of time due to issues with condition, or in and out of a number of failed escrows. The seller may not have reduced the price, thinking they need “negotiating room”. This may create an opportunity for a buyer to be more aggressive if they submit a fair offer based on market value with attractive terms, below list price.

The “right home” chooses you. When your Realtor finds you a great home and you know it’s perfect for you, don’t second guess yourself. Don’t feel as though you need to personally tour hundreds of homes to find the “right one” for you. A History of the Las Vegas Short Sale

T

he residential real estate market in Las Vegas has been a roller coaster ride for a number of years. Nearly every homeowner in the valley has been affected in some way by the boom and bust of the housing market. Here is a brief history of what has become a household term and common practice in Las Vegas- the short sale. The practice of short selling (when a home’s sale falls short of the balance of debts against the property, the home owner is unable to repay the full amount, and the lien holder agrees to accept less than the amount owed on the debt) and loan modifications really picked up in 2007. There were no real guidelines for short sales then, and they were difficult to regulate. In 2009, in the wake of the subprime mortgage crisis, the Home Affordable Modification Program (HAMP) was instituted by the federal government. Its intent was to assist homeowners at risk of foreclosure with home mortgage loan modifications to lower monthly payments. In addition, the Home Affordable Foreclosures Alternative (HAFA) installed guidelines for mortgage companies to adhere to throughout the short sale process. At that time, more than 70% of home mortgages in Las Vegas were “underwater”, or when the balance of the loan is higher than the fair market value of the property. People were losing their jobs and families were losing their homes. By 2010, a short sale was a routine practice among lenders. It took nearly nine months to complete a short sale at that time, and it was common for banks to foreclose on the property before the sale’s completion. A federal bill in 2011 requiring banks to sign an affidavit stating they possess original mortgage documents and

deeds of trust halted foreclosures, because banks didn’t want to sign under the terms of the new law. By late-2012, the housing market began to recover. Home values in Las Vegas rose approximately 30% through 2013- largely from an influx of investors and limited inventory. Flipping houses became popular for the local investor, and gave rise to popular reality television shows. The Nevada Homeowner’s Bill of Rights was enacted near the end of 2013 to benefit responsible homeowners working with their lenders. The law prohibits banks from “dual-tracking”- foreclosing on a home at the same time they are working with a homeowner on a short sale. It also forces banks to make a decision in thirty days to approve or deny a short sale, as opposed to six to nine months from previous years. Lenders also had to give you a single point of contact, so no dealing with multiple representatives from the bank. A similar bill was passed into federal law at the beginning of 2014. In today’s market, home values have leveled. Las Vegas home values have risen approximately 1.5 percent in 2014,

compared to previous increases of three percent. Short sales have slowed, but 35% of Las Vegas mortgages and over 200,000 homeowners are still underwater, while one in eleven are still delinquent. House flipping has decreased significantly and most hedge fund investors have pulled out of town. This means it’s a good time to buy. It’s cheaper to buy a resale home than a brand new one, it’s cheaper to own than rent, and housing prices are lower now than what they should be. In addition, the population is on the upswing- more people are moving to Las Vegas than leaving. Even with concerns of rising interest rates, and investor belief the market could drop again (perhaps as much as ten percent), home ownership still comes with numerous benefits. Currently, interest rates are steady at 4 - 4.25% and commercial loans have no waiting period after a short sale (but do require 20% down). So, you can short sale your home and keep it, short sale today and buy another home tomorrow, or simply get a loan modification and stay in your home. MV

Avoiding Workplace Irrelevance

aby Boomers may recall the poet, Dylan Thomas, and his desperate appeal to resist the trappings of old age in his famous poem, “Do not go gentle into that good night”. Media expert Steve Kayser (www. stevekayser.com), author of “The Greatest Words You’ve Never Heard” states, “Many older Americans may have little choice but to adapt their mindset, and survive longer in their careers, if they want to maintain something resembling their current lifestyle during retirement.” Some trends that may incentivize aging workers to clock in for a few more years: • The number of Americans 55 and older will almost double between now and 2030 – from 60 million today to 107.6 million, according to the United States Census Bureau. That will likely strain public safety nets such as Social Security and Medicare.

• American life expectancy is at an alltime high, and death rates are at an alltime low, which means some people will outlive their retirement savings. • The global economic crisis has wiped out, or severely affected, millions of middleand senior-aged individuals’ life savings. But with an increasingly competitive pool of professionals whose skillsets need to be regularly updated, how can boomers stay in the game? Kayser quotes Alvin Toffler: “The illiterate of the 21st century will not be those who cannot read and write, but those who cannot learn, unlearn and relearn.” His method for how older workers can maintain their value- staying “R-E-L-E-VA-N-T.” • What it means to learn, unlearn and relearn. The ever-shifting sands of

technology pose a special challenge to older workers. Younger professionals not only grew up working and entertaining themselves with screens, they also learned to adapt to technological leaps. A program you learn today may not be relevant in a few years, so keep an open and flexible mind. • Being R-E-L-E-V-A-N-T… Take this mnemonic device to heart: Risk, Experiment, Listen and Learn, Engage, Value, Attitude of gratitude, No to negativity, and Time. “This is an ongoing, evolving note to keep in your mind no matter your professional situation,” Kayser says. “I’ve been around a lot of charismatic and effervescent folks in their seventies and eighties who are still successful and growing, both on a personal and business level. utumn in the desert doesn’t necessarily conjure images of orange, brown, yellow, or gold. Instead, we in the Las Vegas valley have been blessed with certain types of trees that line the roadways, whose leaves change to the vivid colors of autumn, including red and green. Those of us from the greener states are thrilled to see bits of color that remind us of days gone by, when autumn meant carving pumpkins, raking leaves and jumping into the piles of softness smelling like home and holidays around the corner. Now, it’s time to plan outdoor activities and change up the routine with long walks any time of the day, reading on the patio at noon, and opening windows and doors to let in the fresh air. It’s like we’ve been hibernating, tucked away to survive the summer, all along knowing it would eventually come to an end and we would start a new season over again. There are not many certainties in life, but the seasons coming and going we can count on, and that makes us feel good. Today we receive respite from the desert heat with the colors of life and cooler air to breathe, when the desert becomes our best friend. School Dazed By Katie Bencze

I

have to admit, when I first thought about my oldest daughter starting elementary school there was a pride and excitement to it. The thought of her learning, meeting new friends and- if I’m being honest- giving mommy a break for a few hours, was quite appealing. So, why is it now the last thing I want to think about? My daughter officially enters First Grade. When it was just kindergarten, she still felt like a baby. Now it feels far too real.

This list continues for twenty-seven lines of multiple items with specific “suggested brands.” What happened to just number two pencils or a spiral notebook? What happens if I do send her with a perforated notebook, or maybe even buy (gasp) GENERIC number two pencils? Will they reject it? Would I be a bad mom? Will I get dirty looks from other parents or snide comments from teachers? Okay, so I’m overthinking this a bit.

My hesitation started when I saw the school supply list: 1. Pencils - Number Two, YELLOW sharpened Dixon, Ticonderoga, or Paper Mate 2. Notebooks - Spiral Wide Ruled (70 pages, not perforated)

On top of the endless supply list, there’s new clothes shopping, the fast-approaching extra-early mornings, and the fact my little girl is growing up way too fast. I’m digging my heels in the dirt in an attempt to drag time to a halt. As much as I try, though, time speeds on. So now what? I’m not organized enough to share a fancy school timeline. I’m not

experienced enough to give any back-toschool tips, and I’m certainly not crafty enough to show you how to pack the perfect school lunch. I AM here to tell you if you find yourself in the same situationthe strange crossroads of excitement, anticipation, hesitation, relief, and even a little sadness- you are not alone. As each day goes on, I chisel away at the school supply list in piles at the corner of my dining room. I curb my little girl’s bedtime a little at a time, and convince her she needs to sleep before the sun does. I adjust my grocery list to include all of those easy to assemble and carry lunch items. I take my sweet daughter to the store and try to convince her My Little Ponies and turtlenecks will be in fashion until she’s well into her teens. And somehow, along the way, I put on my brave face and remind my daughter (and myself) what a great experience first grade is going to be. Thank goodness my six-year old can assure me everything is going to be alright. MV

This is the time of year when we start whipping up those scrumptious treats and cozy comfort foods in preparation for the holidays. Before I became a dog mom, I never paid attention to the effect some types of food in our house could have. Upon learning some human foods can be toxic for dogs, I’ve made it a point to become more aware. Most people know chocolate is bad for dogs. The toxic agent in chocolate is Theobromine. The most dangerous kinds are dark chocolate, chocolate mulch, and unsweetened baking chocolate. Even small amounts of chocolate can cause vomiting, diarrhea, abnormal heart rhythm, tremors, seizures, and even death.

That’s one you probably know, but there are many other foods you should NEVER feed your dog. I recommend doing some research of your own, and sharing with every member of your family, but here is a short list of doggie no-no’s: Grapes and raisins, fruit pits and seeds, macadamia nuts, walnuts, avocados, garlic, onions, yeast dough, rhubarb leaves, salt, coffee, gum and candy. s your dog suffering from anxiety? Many dogs, large and small, suffer anxiety in one form or another and their humans are mistaking the signs of anxiety as behavioral issues that need correcting. My puppy is so high strung she barks at the trees moving and pees on every new person she meets. Excessive barking is a definite sign of anxiety. If the doorbell rings, it is normal for a dog to bark. However, it is not normal for a dog to continue barking after your visitor leaves. Some puppies just love to be active and run around and play and that is normal. If it is excessive, or all of a sudden, then take a look at the circumstances that preceded the surge of energy. A walk will help immensely to calm them down. Panting without exertion is a sign of anxiety, along with excessive yawning, licking, and shaking. If these behaviors develop suddenly after a stressful event or major changes to your dog’s routine, it may be anxiety. Make sure you provide a safe space for your four-legged family members to go when they feel anxious. Also, make sure to comfort them at times of high anxiety. Let them sit on your lap and give them lots of love. If the anxious behavior continues, speak to your veterinarian. MV

A

lexis Amity began her culinary journey in attendance at the French International Culinary Institute, in New York City. A dream since she was twelve, when Alexis worked weekends as a busser in her uncle’s restaurant. While in school during the recession, Alexis taught bartending school to New York doctors and lawyers begging for a career change, while her weekends were spent apprenticing at a number of famed New York restaurants. Upon graduating at the top of her class, she landed a position at BRG (Dos Caminos NY).

Returning to the “food capital”, it was only a matter of time before Chef Alexis would meet her other half. Working with Chef Kyle Sweany (Brock Lesnar’s Personal Chef), a relationship started outside of the kitchen, and shortly after- the idea for All About Catering, Las Vegas.

For personal reasons, Alexis returned to her hometown roots of Salt Lake City to aid in the care of her late grandmother.

In Chef Alexis’ future she hopes to continue educating the positives of healthy eating to locals who have interest in learning to cook, and also get a jump on teaching their children to cook, emphasizing portion size. A vegetarian, she focuses on offering the freshest, best tasting, and most beautiful food for ALL of her clients. Her company serves various cuisines and fare for everyone.

“Everything happens for a reason,” she concluded. “Working at Pago- voted SLC’s number one restaurant, I was able hone my craft in a fine dining setting while preparing real farm-to-table cuisine. I fell in love!” Through a chef’s referral, Alexis was offered an opportunity to work for the Palazzo, back in Las Vegas. 1 CAN ARTICHOKES, DRAINED AND PULSED IN FOOD PROCESSOR ¼ CUP PARSLEY, CHOPPED 3 CLOVES GARLIC, CHOPPED 3 TABLESPOONS LEMON JUICE KOSHER SALT AND PEPPER TO TASTE Fold in remaining ingredients after artichokes have been pulsed and season to taste.

INGREDIENTS

1 PACKAGE BABY HEIRLOOM TOMATOES 1 RED ONION, JULIENNE ¼ CUP EVOO ¼ CUP LEMON JUICE ½ CUP PARSLEY, CHOPPED ¼ CUP BASIL, CHOPPED 21 SEASONING SALUTE (TRADER JOES) TO TASTE ½ CUP GRATED PARMESAN REGGIANO KOSHER SALT AND PEPPER TO TASTE Begin with a big pot of water to cook your spaghetti. Season generously with Kosher salt. (It should taste like the ocean) Cook until noodles are just soft “al dente. “ Remove from stove and run under cold running water until noodles are cool. Set aside in large bowl. Add the 2T of EVOO so noodles don’t stick. Next, make the artichoke sauce. It will have a slightly chunky texture. Season to taste. Add to spaghetti. Slice the baby heirlooms in half lengthwise with a serrated knife. Season with a little Kosher salt and pepper. Add ½ cup EVOO, add all herbs and lightly toss. Add to cold spaghetti mixture. W

e could not wait to try Giada! Our busy schedules led us to lunch. Giada has a real sense of arrival. As you transcend up the escalator to the second floor of the Cromwell, Giada’s staff greets you.

First captivated by the display cases that housed the elements of the antipasti, this area serves as a garde manger show kitchen. You will love looking at the ingredients and displays of Italian scrumptiousness. As we were escorted to our table we walked by the pizza ovens that were also used to bake off the bread that is presented at the table. We spotted fresh bread just taken out of the oven and skillfully basted with olive oil by a brush made of rosemary sprigs. Yes, we stopped to take notice and were greeted with a smile from the chef. Viewing the food was love at first sight and we hadn’t eaten a bite yet. We sampled the best of the antipasto; a few of the highlights for us both were the 36-month aged Parmigiano-Reggiano served with wild-sage honey and the Pecorino Tartufo with apricot preserves. Caponata was touched lightly with Balsamic and toasted pinenuts, The Coppa was perfection and the housemade Fig Mostarda served as a great balance. For one of us the hidden gems were whole cherries that had been marinating in Rosso vinegar. The salad selections at Giada are delightful. Both of us had our favorites! For one of us, the Waldorf Panzanella, with raisin walnut bread, spinach, basil, celery, red onion, blue cheese and roasted shallot vinaigrette hit the spot! For the other, the Chopped Tricolore with prosciutto San Danielle, Tuscan kale, endive, radicchio, dates, walnuts and Gorgonzola dolce did the trick. We tried to restrain ourselves from finishing them both off – they were that good! We did, however, have them wrapped up and ate them for dinner that night. The pizza offerings are both traditional and innovative. Among the latter, the Carbonara had the perfect textures, with crispy pancetta, smoothly-melted fontina and gruyère, and the sunnyside-up egg resting atop it all was precision.

We shared a Venetian Panino and a Lobster Roll. The sandwiches were served alongside a Zucchini Scapecce, which was light and crunchy with just the right amount of salt and hint of lemon. Of course we saved room for dessert. We had to. The lemon ricotta cookies were something we wanted a baker’s dozen of! As we sat there, the same words come to mind about the restaurant and the food. Elegant, beautiful, refined, bright, sophisticated … you could not be mistaken that it was all Giada! The pop artwork of herself, her grandfather and nephew provided a feeling of family, as did the movie posters. We knew the restaurant was inspired by her home and that she has poured her heart and soul into every aspect, but it was the attention to detail down in branding that made the complete experience at Giada magnificent! This was presented in the cocoa powder “G” on our tiramisu, personalized napkins, plates and the chocolate sauce writing of “Giada” swirled across an oval plate of Zeppoles. We would be remiss not to mention the floor-to-ceiling windows, as big as Giada’s smile, that overlook the Strip, Caesars Place and the Bellagio fountains. The interactive photo booth was a surprise happy ending and allowed us to enjoy our inner child. The light fixtures that hang overhead in the dining room have a quote from Ms. De Laurentiis herself: “I eat a little of everything, but not a lot of anything.” Perhaps new words to live by, or at least that’s what she said! here’s a chill in the air. Lighter, brighter foods of summer are giving way to heavier and more intense foods of fall (earthy vegetables, soups and stews, roasts and braises). You might even be craving Thanksgiving dinner. Wines that go best with fall foods should be heavier and more intense. Lighter whites step aside for Chardonnay and reds. Here are some of my favorite fall foods and their wine accompaniment.

Chardonnay and Pinot Noir have enough complexity to pair with the meatiness of mushrooms, like a wild mushroom risotto. If your dish has meat- like beef stroganoffgo for something heavier, like Merlot.

Game-Day Chili A fruity red, like Zinfandel or Syrah, works with chili’s intensity. Add a splash to your chili to seal the deal. Beware of too much alcohol- if your chili is spicy, a high alcohol wine exacerbates the burn.

Thanksgiving Dinner The flavors are all over the map- turkey is savory, cranberry sauce is sweet, stuffing is earthy, green beans are vernal. Relatively middle-of-the-road Pinot Noir is big enough to handle the gamut, but light enough to work with poultry. Try Gewürztraminer if there are sweeter dishes in the meal.

Old-Fashioned Pot Roast With big, beefy food, you need similarly big, beefy wine- like Cabernet Sauvignon, Merlot or Syrah. Make the combination sing by adding a little soy sauce, balsamic vinegar, or Dijon mustard to the braising liquid. MV

For starters, never pass up an opportunity to choose from the tasty Mozzarella Bar or order the polipo. The brined and braised Mediterranean octopus is painstakingly prepared and cooked over days and finished with a char in one of the ovens. Tossed in mint vinaigrette and garnished with piquillo peppers, the dish offers uncanny textures and flavors you’ll come back for on the regular. This writer certainly does.

hen Station Casinos executives contacted Mercadito Hospitality- owned and operated by brothers Alfredo, Felipe and Patricio Sandoval- to invite the group to open their flagship concept in multiple locations across the Las Vegas valley, they couldn’t pass up such a hot opportunity (pun intended). The renowned restaurant group has expanded rapidly from its first New York City location in 2004, now running a number of bar and restaurant concepts across the country- including the recently opened space inside the Red Rock Resort in Summerlin. The popularity of the Sandoval brothers’ restaurants is attributed to innovative culinary interpretations of traditional Mexican fare, an extensive bar program designed by beverage partner, Tippling Bros, and its contemporary Mexican aesthetic with an industrial feeloffering a sophisticated experience with a nod to modern Mexican craft and artistry. Upon opening its doors at Red Rock on June 23, Mercadito has quickly become the hot spot for casual, fresh, creative Mexican cuisine. Among its offerings, the tacos estilo baja (lightly fried mahi-mahi street tacos) are widely regarded as the best taco in the city, and one of the restaurant’s many claims to fame. Designed for sharing, Mercadito offers nuanced interpretations of guacamole and ceviche in “flight” form, a number of fresh-made salsas for every taste, and various street tacos served on house-made tortillas. The Large Plates give flavorful twists to traditional fare. The carne asada is mouth-watering and the pollo a las brasas, an entire chicken perfectly marinated and crusted with morita chiles, can’t be beat! Each entrée is served with a portion of arroz y frijoles (a

Sandoval home-style recipe of rice and black beans), which are almost too delicious to share. Don’t pass up Mercadito’s side dish options, either. In addition to arroz y frijoles, the elote mexicano (Mexican-style corn-on-the-cob) is perfectly prepared with flavors and presentation reminiscent of southwestern Mexican markets, while the mac and cheese and nachos are items crafted specifically for Mercadito Red Rock and Las Vegas. All are a must try! For individuals with strict dietary concerns, not to worry, Mercadito offers vegetarian options across a majority of the menu. If you have the opportunity, be sure to catch Mercadito’s Happy Hour (in the bar, lounge and patio only), Monday through Thursday from 4PM to 6PM. The Tippling Bros, New York-based beverage program consultancy founded by duo Tad Carducci and Paul Tanguay, pulled out all the stops designing Mercadito’s bar program. Fresh ingredients comprise each of the “on tap” craft cocktails and infused waters. They explore creative variations on classic cocktails like the margarita, and offer an extensive tequila list- if the blue agave strikes your fancy. Try the pepino el pyu (a blended tequila cocktail with cucumber, hoja santa and cumin salt) or the turista (with black pepper syrup and barbecue bitters!) for some awesome flavor combinations. Locals hail Mercadito as a destination to “fall in love with Mexican food” with “flavors you can’t find anywhere else in Las Vegas”. as Vegas is a major travel destination for “fun seekers”. Natives, though, sometimes forget, or take for granted, the immeasurable perks available to us year round in our own backyard. Having fun is a balancing act with all of life’s responsibilities. Sometimes it’s okay to leave the work week behind and let the stress go with it. After all, the word “stressed” is only “desserts” spelled backwards! With that in mind, here are some ways to treat your family and yourself during your highly coveted free time in Las Vegas. Calling all foodies! Las Vegas has long been known for its abundance of buffets with price ranges to meet any budget. The array of internationally renowned restaurants and celebrity chefs setting up shop in our town is equally exciting to those who live here. The culinary world is your oyster in Las Vegas! What about the resort lifestyle here? It’s nice to know, whenever you are ready for it, the Las Vegas “fun” is available. You can enjoy a “stay-cation” at any of the countless resorts on or off Las Vegas Boulevard. Head

So endure life’s responsibilities, and take solace in knowing that poolside lounge chairs, unbelievable food experiences, world class entertainers, and the beauty of nature will always be right around the corner for you to indulge your imagination. Station Casinos Gives Back: Operation Thank You in Full Swing; Pink Power Returns

Under the umbrella of Military Mondays, military guests are given an exclusivelydesigned commemorative Boarding Pass card demarcated with a U.S. flag and gold ribbon that will automatically register you in the program. The Empty Tank Theory

I

t is often said if you’re attracting unavailable men (or women), it’s usually because you’re unavailable yourself. Attracting these types is perhaps less a sign of our own shortcomings, and more indicative of theirs. What happens beyond attraction is the true reflection of one’s character. When asked, the primary reason men give for infidelity is the lack of intimacy in their relationships. A man trying to have an affair probably isn’t of the highest character, but for argument’s sake we’ll offer him the benefit of the doubt. When a man is in a sexless relationship he feels unfulfilled, inadequate and unloved. According to relationship expert, Tammy Nelson, Ph.D., men are more likely to feel emotional connection after intimacy, where women generally need emotional connection prior. If a woman feels a lack of emotional connection, she may shut down sexually to protect herself. This can cause a feeling of sexual rejection with men, and that can be detrimental to a relationship. You may hear a man mention feeling “dead inside”, or loving his partner, but not being “in love”. The unreleased

sexual energy has to escape, so an individual will go outside his relationship to satisfy his needs. A situation recently with a friend of mine is a perfect example of the effects of sexual rejection. A man took my friend to lunch with the intention of having an affair with her, and confessed his wife and he were no longer intimate. After being refused, the man’s disappointed eyes welled with tears. A grown man was actually crying at the rejection of his sexual advances. Curious why men stray, I went to the source and questioned some close friends regarding their experiences. One man expressed his previous girlfriend wasn’t the same after a member of her family was diagnosed with a terminal illness. As a result their sex life turned nonexistent, leaving him feeling neglected and unwanted. To fill the emotional void, he slept with other women. Another man admitted to being unfaithful to his wife, but rationalized he never would have strayed had she not stopped having sex with him in the first place. With that, he posited an “empty tank

theory”. When a man is physically satisfied in his relationship, he may be attracted to other women, but would never act on that attraction. If his tank is “full”, where his physical or emotional needs are unmet, he is more likely to succumb to infidelity. The secret to a faithful marriage may not be as straightforward as keeping one’s tank “empty”, but it’s a good start. Dr. Nelson points out in order to improve a relationship, a couple must work together to improve their sex life. When you’re having great sex, no one really cares who’s taking out the garbage. Of course, there are myriad reasons someone would cheatopportunity, ego, insecurity. Statistics show women are unfaithful just as often, but more adept at an affair’s concealment. On a positive note, Dr. Nelson reveals commonalities among faithful couples. A couple committed to monogamy, who spends quality time and makes quality effort and, yes, has plenty of great sex is the couple together for a lifetime. as Vegas, like any major city, has its share of immorality. Sex seems unavoidable and easily accessible. Prostitutes, pimps and the homeless flood the city. In spite of the bright lights, Las Vegas is covered in darkness. But where there is Darkness, Light finds a way to shine through. My glimpse of hope came through The Limitless Conferences. “Limitless” is a nonprofit organization dedicated to empowering, inspiring, and assisting those who are lost get back on track by seeking God first. It is a faith-based organization created to help the adrift, hurting and broken. The Limitless Conference is a traveling conference with inspiring speakers from all over the world, bringing a message of hope through faith in God. The conference takes place on weekends at different venues all over the world. One session is dedicated to the fight against human sex trafficking. Women who have escaped this horrific industry share their stories and offer hope to those stuck in the lifestyle. Help and assistance is offered at the conference from organizations like Hookers for Jesus, who offers a safe house, “Destiny Home”, for women attempting to leave the sex trafficking industry and start new lives. The Limitless Conference has a number of testimonials how it has completely changed lives for the better. Founder Ashley Trevino, a former exotic dancer and escort business owner, dedicates her life to help others find faith in God, as she has found. She assembled a focused team with the same compassion and mission to bring hope to a hurting world.

At a private media event, Opportunity Village proclaimed the gift is being provided as a matching donation, which has already been partially met by Dorothy and Lacy Harber, owners of Sunset Springs Ranch (the former Wayne Newton estate), who came forward with a donation of $10 million. Culminating with Mayor Carolyn G. Goodman’s proclamation of “Opportunity Village Year”, other announcements included plans for The Village residences (the organization’s first foray into residential units), an expansion of the Walters Family Campus, a permanent North Campus, and a retrofit of the Oakey Campus- which houses the operation’s renowned Magical Forest holiday attraction. Opportunity Village has begun executing an aggressive $136 million Capital Campaign crucial to meeting the need for services to the more than 800 people on the waiting list for programs and services the organization provides. As Opportunity Village celebrates its 60th anniversary, it pledges to build on its proud tradition of enriching the lives of individuals with disabilities here in southern Nevada for another 60 years – and beyond. With so much amazing golf right in our backyard, there’s no time like the present to hone the ever elusive “perfect” golf swing. Here are some tips from various pros to get your swing up to par.

1. GRIP

The right grip is key to improving the golf swing. It helps impact the ball solidly on the face of the club, and allows the wrists to properly hinge, improving power. The most common, and perhaps easiest, is an “overlapping” grip known as the Vardon grip, where the pinkie finger of the bottom, or trailing, hand fits between the index and middle finger of the top, or lead, hand. Grip the club firmly, but not tightly, for smooth movement and to avoid stiffness through the swing. The club should rest between your palm and fingers to avoid slipping. Gripping with the palms tightens the swing and forces slicing or chipping under the golf ball.

2. STANCE AND POSTURE

A powerful, fluid swing isn’t as effortless as the pros make it seem. With slight adjustments in stance and posture, though, you’ll be doing your best imitation of Rory McIlroy in no time. Stand balanced on the balls of the feet, shoulder-width apart, with knees slightly bent. Keep the spine straight and bend at the hips. This may seem like a wild game of “Twister”, but the key is staying relaxed and loose. A rigid stance translates to a tight grip, which wreaks havoc on the swing.

3. SWING

The mechanics of the golf swing is summed-up in two parts, the “backswing” and “downswing”. Not to oversimplify, since perfect swing mechanics have been debated as much as the game’s origins, but a basic back-and-down pendulum motion is the foundation to achieving a solid swing. On the backswing, pivot the shoulders toward the spine and shift weight slightly to the back foot. The downswing is like a lever releasing to the ball. Shoulder motion should follow the head in a smooth arc and continue after impact. Keep the chin up and head down, allowing the swing to follow the left shoulder. Before stressing about the infinite details and confusing yourself with the multitude of variations, mastering a basic swing will translate to quality results and quickly develop further enjoyment of the sport.

4. RELAX

In spite of the many calming aspects the game of golf offers, the great irony of the sport is how difficult and nerve-racking it can be. Pros and enthusiasts reiterate the same mantra when it comes to enjoying golf: relax. Focusing too much on technique and mechanics can mess with the psyche and be more detrimental to your game than an imperfect swing. Keep in mind, even the greatest golfers have had irregular swing styles. The difference between them and us is they learned to make their personal swing work for them. Soak up the sunshine, get some exercise, relax the mind, don’t get discouraged, and always remember to enjoy the game. As the old saying quips, “A bad day of golf is still better than any day of work”. MV

I love SPAGO at Caesars Forum Shoppes! I love EVERYTHING on the menu, especially the Ahi Tuna. You can’t go wrong with a pizza and Lemon Drop Cocktail. I also love Wolfgang Puck’s Bar and Grill at MGM Grand. I love the Classic Chinois Salad. They also have authentic homemade passion fruit iced tea, which I love. 4. Michael Jackson ONE at Mandalay Bay. I just saw this show with my family. I am a big Michael Jackson fan from a very young age- I grew up in Encino, California where the Jackson Family made their home, too. The show is an awesome tribute to one amazing artist!
