hat a way to kick off (excuse the pun) this most festive time of year. The All Blacks win against Australia in the 2015 Rugby World Cup was the most exciting game I've ever watched. For me, and many others I suspect, it marked a “Where were you when...?” moment in time.

A masterchef, magic, mayhem & music

ith only days to go until New Zealand's largest community event, Canterbury A&P Show organisers have announced the entertainment line-up for this year's show. New Zealand's first ever MasterChef winner Brett McGregor will be cooking up a storm in the Electrolux Demonstration Kitchen this Show Day (13 November). After winning in 2010, the former teacher's life has gone from detentions and marking to TV Shows, cookbooks, endorsement deals and cooking demonstrations around the country. Show Visitors will be able to learn some of Brett's tricks of the trade in the Food and Wine NZ Pavilion at 11am, 1pm and 3pm. Legendary New Zealand band The Feelers will be rocking out the Village

A day in the life of a veterinarian... Thea Sweeney, a veterinarian at Ourvets, shares her experiences of a ‘day in the life’ at one of their clinics.

I

n the middle of evening consultations, as I'm trying to work out why Barney the staffy has got this skin rash back again, something a little less common and a little more pressing comes rushing in. Lilo, a 10-month-old female sphinx is carried in. Cold, weak, trembling, and struggling to breathe, there is a look of horror and distress on her owner's face. Barney's owner kindly takes a seat - this is vet clinic triage! There is no time for a detailed history with a pet in respiratory distress. Our nurses have her out to the prep room and onto oxygen in a matter of seconds. They start to get her vitals while I have a quick word to the owners. This little cat has had a run in with a couple of dogs. With consent to do what we need to do to save her, we are all go! Lilo has puncture wounds over her left thorax and in parts her hairless skin crumples and crackles like bubble wrap to the touch. With a stethoscope I can hear her lungs moving air on the right, but not on the left. Digital X-rays confirm my suspicion that these bite wounds are not just skin deep. Her chest cavity has been penetrated, with the resultant collapsed left lung leaving her gasping. This is a pneumothorax. I have done it maybe a handful of times before, but performing a thoracocentesis, or 'chest tap' still raises my heart rate. I know that a well-placed needle will save her life, so calm yourself down I say, cos you need steady hands!

This little cat has had a run in with a couple of dogs. With consent to do what we need to do to save her, we are all go!

I attach a butterfly catheter to a threeway stopcock to a large syringe. Between the eighth and ninth rib, high up on her thorax, I aim the needle. Through the skin, then the muscle, then a little pop as it enters the chest cavity. I draw back on the syringe and air comes back easily. Phew. 200ml of air comes out of that little cat's chest, and with every syringe full she breathes a little easier. She's not out of the woods yet, but she is still with us! oftware developer Lester Bryant came to Christchurch after the first earthquake rocked our city. He immediately understood that there would be difficulties with repairing homes and commercial buildings; that there would be delays, frustrations, budget blow-outs and battles on a number of fronts including with insurance companies. Lester is co-owner of Asset Sure Quantity Surveyors Ltd (ASQS) and owner of Icomply Ltd, a software development company that specialises in Quantity Surveying and Construction Project Management Software. He runs a team of highly skilled, battle-hardened Quantity Surveyors whose objective is to ensure that every project is costed down to the last nut, bolt, 4x2 and bucket of cement. I caught up with Lester to find out a little more about this highly accountable business and how he has found settling in Christchurch…

You moved to Christchurch in October 2010; where do you hail from and what was the main impetus for your move? I came down from Auckland. I am originally from Taranaki but over the years my business interests had centred on Auckland. The first earthquake motivated me to see if there was a need for our job costing software. There was, and we also found that we had a lot more we could offer to Christchurch. How did you initially become involved in business consulting and software development? I had been involved in a lot of construction businesses as a solutions creator. Construction firms pricing jobs poorly became a repeating theme. We looked internationally for solutions that could be a part of our offering to building companies. What we found was a general mismatch for what was required. We then conducted a needs analysis and found that what was required did not exist anywhere. Now here's the crazy part. With no real experience at all we decided to create software. We didn't know we couldn't do that so we just dived in the deep end and did it. And we didn’t listen to anyone about what it should be like. Henry Ford said, “If I had listened to customers I would have gone out looking for faster horses”. The moral here is that sometimes it takes someone with no preconceived ideas to create something new. How does this differ from other software available? This is a hard one to answer quickly to people outside of the industry. Rather than boring you, let's just say we have done to job quoting what Steve Jobs did to people using personal devices. I should mention that nothing happens without the team. To use an analogy, I have the NZ software equivalent of John Britten on my team. His name is Stefan and he is what makes the difference. He can build just about anything in software. If we dream it up, he creates it. Which type of businesses buys and uses this software? Any business that expends a lot of resource in estimating or quoting jobs should use our software. The two most complicated quoting regimes exist in building and Quantity Surveying. We have a lot of builder clients, and we use our Q2 Quantifier software in our own ASQS quantity surveying business. Who, or what type of businesses are more likely to use all, or selected parts of the services of ASQS? In order of Volume, 1) builders, 2) home owners, 3) developers and architects. Our Christchurch clientele has a lot of people who are dealing with their insurers. We are handling about 30 Cash Pay-out offers at a time. In order of project budget we have developers with projects in excess of $100 million. This is exciting. 12 November 5, 2015 Metropol

BRYANT With software like this available why do we hear of such major budget blow-outs in many commercial jobs? Last week I spoke at a conference for builders in Auckland. A clear message came through that reflects the Christchurch position. The architectural designs have far exceeded the client's budget. The construction economics do not stack up and the developers have burnt a lot of cash up in the process. E.g. a $9m project that comes in at $14m build estimate. The developer cannot trigger funding and the project stalls. The projected loss to the developer at this scale is currently $1.3m. We are seeing this type of issue in residential and commercial buildings. We can stop this with our software and in many cases re-engineer the project costs to get the build process back on track

Inefficient costing and quoting must be a major pitfall for many businesses what are some examples of small businesses that you have helped turn around due to this weakness? We just turned a $9.2m build into a $7.9m build. The trick is to detail the work and progressively pick apart the options. This takes time but it's worth it. In some cases, once we have finished our pricing, the developer then realises that his dream is just not possible. But at least he can then get on with life and not expend more resources on a lame project. A not so widely known fact is that we can reduce construction time onsite by as much as 40%. This is a bold claim. The reason is relatively simple. A highly detailed Bill of Quantities can convert to becoming the construction program (project management). The efficiency produced by this simple transfer is incredible, easily 20%. We use Asta Powerproject as the project management software. The change in performance is worth the extra front end effort. What other services does ASQS provide? There is a range of supplementary services we provide. I can send out a list of services to anyone who is curious. Most people think we just price jobs. We go way beyond that. A quantity surveyor is specifically focussed on the management of construction costs and value. We are Cost Engineers, Building Economists and Contractual Scrutinisers. Think of us as the conductors over the orchestra for all parties involved in the construction of your building. Accepting Cash Payouts instead of repairs is being considered by many – what are the main pitfalls and how can you assist? Sadly we see insurers offering 1/3 of what they should. We have become an unnecessary cost to those homeowners who are trying to get a fair settlement with their insurers. Having said that my staff love to work for homeowners. It's like working on a just cause and they like to help the homeowners get what they are entitled to. Builders are also coming to us to help them help their clients. How are you enjoying living and working in Christchurch? Having lived in a number of cities it is hard to find a better lifestyle than what Christchurch has to offer. Everyone here knows that. And the work variety that the earthquakes created is perfect for a person like me. My wife is a photographer and my 11 year old son is already creating software. What Christchurch offers is energised people. I love that. If you could go back and tell your teenage self something what would it be? Take risks. It's easy to be conservative and follow other people's advice. But what about following your own advice. As I have become older I have found that the adventure and the reward only occur if you back yourself and take risks. The younger you are the easier it is to recover from risks. You can throw the dice so many more times when you are young. What is your favourite drink? Leffe Blonde (beer). Even better when combined with eating Gruyere cheese. What is one thing Metropol readers would be surprised to know about you? I want to change the flag, I want to change the national anthem, I want to change the side of the road we drive on, I want to change the name of the country (to Greenland because we deserve it) and I want to see New Zealand be the first country in the world to use a metric clock. 100 hours, 100 minutes, 100 seconds. What do you love to do on a Sunday afternoon? Sad confession, I have a place in the house where I have a nanna nap in the sun. I love it! What are you like at parties? Terrible, I have the perfect wife, beautiful, the ultimate socialiser and a great dancer. I am none of these. I just like having a great conversation and creating new ideas. What is next on your wish list? I have talked about my creations. My other great love is my pro-creations. I have four very clever sons. Hopefully they will make their marks on life as well. When in Wanaka

G

allery thirty three at 33 Helwick Street in Wanaka opens their Three-D exhibition from 6 – 27 November. Artists include Llew Summers, Bing Dawe and Josh Olley. Llew Summers was born in Christchurch. He held his first exhibition in 1971 and since then has held many one-man shows as well as exhibiting alongside other artists. He believes it is the role of the artist to challenge: “if it's not challenging, then, in some way, it's not new”. His interest has been primarily in figurative works, and is celebratory of the human form, affirming the beauty of the human body. Bing Dawe was born in Oamaru and is a graduate of the University of Canterbury School of Fine Arts. He is the recipient of many awards including the highly prestigious Wallace Art Award. His work can be found in public and private collections both in New Zealand and overseas. Josh Olley began to teach himself to carve in 1997 in Wanaka. He worked mainly with bone at first, then found his greatest passion was in hard stone. “I endeavour to preserve the character and the mood of the mediums in which I work. Influences like stone worn by water or wind and other such natural occurrences inspire me,”

ELMWOOD VILLAGE: boutique shopping Courtesy and kindness between customers and shop-workers is what attracts people to Elmwood Village, at the corner of Normans and Strowan Roads, which offers a wide variety of goods, ranging from giftware to food, many with an international touch.

A

good indicator of this is the cafes and restaurants with an overseas flavour that have opened there recently. “This is a really nice area and lots of people came and welcomed us,” says Angelika Riemann, who opened the Café Berlin about four months ago with her business partner, Anneke Molly. A delicatessen as well as a café, it offers a variety of Central European fine foods, including lots of German goodies, such as “frische” pretzels. “They're fresh because we get the dough frozen and then bake them ourselves each day,” says Angelika. Although both partners are German, neither comes from Berlin. They felt, however, this was the best-known German city to name a café after. The interior is decorated with lots of photos of Berlin and you often hear German spoken by customers. “It's a bit of a home away from home,” says Angelika. A few doors along is the Yoshimura Sushi and Bento Lunchbox, which was opened by Megumi Wilson late last month. “Our products are a bit upmarket and there's not only fish. We like to provide a well-balanced meal, including healthy salads. My family owns a restaurant in Tokyo and the recipes are from the family's head chef. My brother came and helped me set this up,” says Megumi. The overseas angle continues in the name of French Blue, which has been in Elmwood Village for 14 years selling everything from jewellery to homeware, ceramics, epicurean treats, and espresso in the café section.

“People are very friendly. Because of the variety of the shops, we even get customers from out of town,” “These premises used to be Roper's general store in the 1930s. A few shops have come and gone but I find this a delightful little area. I've also got lovely clientele. People grow up here, go away and then come back,” says French Blue owner Catherine Matthews. She is quick to point out that her shop is in no way predominantly French. “I called it French Blue because that's an old traditional colour. I love that blue – and also French style and chic,” says Catherine. The W Room is another of those fascinating boutique shops that offers a wide variety of goods and services

including fashion from the United States and Jonathan Adler ceramics from New York – as well as nail care. Owner Michelle Crouch has now been in Normans Road for 10 months and also loves it there. “People are very friendly. Because of the variety of the shops, we even get customers from out of town,” she says. On the opposite side of the street is Interiors by Lume, which offers interiordesign services and an exclusive range of products with a difference, including Wonki Ware tableware from South Africa, handwoven Nodi rugs from India, Molly M art from San Francisco, Lumira candles and Armadillo rugs from Australia, and Penney + Bennett bedclothes from New Zealand. “We love the goodwill here. People come because they want to support us,” says, Melissa Merrin, the owner of Interiors by Lume. Starting on the northern corner of Strowan and Normans Roads, a walk through Elmwood Village takes us past the Unichem Elmwood Pharmacy and Medical Centre, Hands Craft Supplies, the Rocksalt café and bar, Yoshimura Sushi and Bento, Fine Foods gourmet and coffee, Maxwells Dry Cleaning, Etagere homeware and giftware, French Blue homeware and giftware, Factor women's clothing, Café Berlin and delicatessen, Holmwood and Rossal hairdressing, Elmwood fish and chips, and the W Room for fashion and giftware. Returning on the other side of Normans Road, you will find Martyn's Mowers, Dusty Old Things Antiques, the Elmwood Mini Market, and Interiors by Lume.

The Riach Family… A moment in time at their historic homestead… Like many modern families the Riach's hadn't got around to having a professional family portrait created. With very busy lives in the hospitality industry with Coffee Worx Cafe in Rangiora, Coffee Worx Roastery and a busy online shop, along with the extra busyness of caring for their son James who has cerebral palsy, Deb and Ian thought it was about time they captured a family moment at their beloved Mount Thomas Homestead.

T

he homestead, built in 1857, has 15 acres of beautiful English garden plantings. Ian and his father Des, who is a trained horticulturist and formerly a gardener at Kew Gardens in London, have painstakingly been tending the grounds. “For the past ten years, Ian and his father have been restoring the grounds,” Deb explains. She says they have been busy creating beauty by planting hundreds of trees, thousands of daffodils and creating lovely lakes, all of which surround the striking gabled homestead. “The homestead means a lot to us all in different ways. It's a part of us all and we see ourselves as honoured

They spent time walking around and thought long and hard before

the shoot, obviously they were working out how to maximise the time we had with the right light and settings.” Deb said the Beverley Studios shoot went smoothly achieving the best angles with complementary lighting. “They knew all the shots that they wanted to get done and they were very good at putting us all at ease, as well as sussing out what our family might be about and capturing that. “Marg and Peter have obviously been in the photography business for a long time. They are very professional and the photos are lovely.”

ravel designer Tanya Cross recently ticked another destination off her list. She returned last month from an invitational trip to Canada, where she got up close and personal with some of the

awe-inspiring locals. “We were privileged to experience three nights at the exclusive Sonora Resort where we met the grizzlies. It was such a breath-taking experience – an adolescent grizzly fishing for salmon gave us a fright when he ran at us to escape an approaching mother grizzly with her cubs!” Tanya's tour took her from Vancouver in British Columbia through to Jasper, Banff and Lake Louise in Alberta, finishing at Sonora Island, a small eco lodge north of Vancouver Island. The decision to set aside funding for the Old Municipal Chambers will ensure investigations can now begin into how the building can be restored. The current Long Term Plan allocates $40 million for the repair/rebuild of the Canterbury Provincial Chambers Buildings in Durham Street, but no funding was set aside for the Old Municipal Chambers. The $40 million will now be split between the two projects so there is $30 million for the Canterbury Provincial Chambers Buildings and $10 million for the Old Municipal Chambers. A career in make-up artistry There's good reason Kristen Stewart School of Makeup (KSSM) and its students have enjoyed such success. Kristen Stewart is an acclaimed makeup artist who includes work experience as part of the curriculum, giving her graduates the edge of confidence they need to transition into the industry.

ince its establishment, KSSM has endeavoured to provide the most opportune makeup artistry courses. Classes are small in number to allow for plenty of one-on-one attention. The learning environment is professional and inspiring and the premises freshly renovated. Importantly there are many exclusive opportunities for students that include fashion shows and fashion shoots. Kristen and 35 of her students had a highly successful time at NZ Fashion Week working with the support of Redken's hair team to have the models looking on point. Different forms of exercise have different effects on bone development, according to a study by New Zealand's Liggins Institute. The study was published recently in Physiological Reports, the online journal of The Physiological Society in Britain and the American Physiological Society.

R

esearchers compared young rats doing mild, voluntary exercise – one group did a running exercise on a wheel while the other did a weightlifting exercise in which they lifted their bodyweight when they stood on their hind legs to get food. They found that the rats doing the running exercise had bones that were thicker, but also more porous than those doing the weightlifting exercise. Further, the two exercises were found to turn a group of the genes controlling bone development on or off in exactly opposite ways. Liggins Institute molecular biologist Dr Justin O'Sullivan says the findings could be important for our understanding of how children's bones respond to different kinds of exercise, and what the consequences may be later in life. "We're now looking for the exact mechanism by which exercise sends signals to the genes inside bone cells, and it may well involve epigenetics – a

Professor Firth says the effects of mild to moderate exercise on the musculoskeletal and other body systems of young people have until now been poorly understood. "We know that in young people who do competitive sports there is an association between intense exercise and positive, long-lasting effects on bone health. But this study shows that the benefits of even minimal exercise may be greater than we thought. However it does not mean that parents should start designing exercise regimes for their children in a bid to change their bones. "We're now looking more closely at exactly what happens with different forms of exercise, and whether changes are retained into adulthood. What we learn may be useful for the prevention and treatment of bone loss later in life," Professor Firth says.

A sour experience... It's a Friday night in town and, like many males at that time, I find myself heading for an establishment that sells the gold standard, beer. This time round though I'm out to try the new range of Sour beers from Moa.

I

t's my first time visiting the Volstead, 55 Riccarton Road, and I'm amazed how busy it is on a Friday. I meet William Mills and Dave Nicholls from Moa. They hit me with the Sour Grapes first. A very citrus beer, sauvignon grapes are added to the fermentation and it's hard to explain the taste but it would go well with cheese on a hot afternoon. They are a wise team in the way they plan how I taste because up next was the funky rum barrel sour. It would go well with pork belly was my first thought. This funky little number is 9% and I liked it more than sour grapes. Like a red barrel Belgian beer it tastes like Bruges! Last taste is the Triple Sauvignon and it's worth the wait. It's a very refined taste that would go with anything. Moa started back in 2003 with Josh Scott, son of Allan Scott wines fame. They have always held a place on my palate but Dave Nicholls has done a great job of producing the sour range to accompany summer. Enjoy it, I did. Photography: Andrew Wilson

Now that we've been told to cut down our bacon and red meat intake, here is a great recipe for summer lunches and light dinners that everyone will love – it's sugar-free and healthy too! Chinese Five-Spice Chicken in Lettuce Cups Chicken (or quail) cooked with hoisin sauce and served in lettuce cups is a classic Chinese dish. This simple, quick version swaps a mixture of sugar-free ketchup, vinegar, ginger, and Chinese five-spice powder for the traditional hoisin sauce, since hoisin is loaded with sugar. Ingredients: 1 garlic clove, minced 1 tablespoon white vinegar 2 tablespoons sugar-free ketchup 1 teaspoon sesame oil 1 teaspoon freshly grated peeled ginger 1 teaspoon Chinese five-spice powder 3 tablespoons coconut aminos 1 pound boneless, skinless chicken breast, cut into strips 2 tablespoons olive oil 8 large lettuce leaves, such as Bibb or butter lettuce 3 scallions, thinly sliced, for garnish 1 large carrot, shredded, for garnish 1 to 2 Serrano chilies, thinly sliced, for garnish Method 1. In a large bowl, stir together the garlic, vinegar, sugar-free ketchup, sesame oil, ginger, five-spice powder, and coconut aminos. Add the chicken pieces and stir to coat. Cover and refrigerate for at least 30 minutes. 2. Heat the oil in a large, heavy skillet. Strain the chicken pieces and reserve the marinade. Add the chicken pieces to the skillet in a single layer and cook for about 4 minutes, until browned on the bottom. Turn the chicken pieces over and cook for about 4 minutes, until the chicken is browned and just cooked through. Add the reserved marinade and bring to a simmer. Cook for about 5 minutes, until the sauce has thickened. 3. To serve, place 2 lettuce leaves on each of 4 serving plates. Divide the chicken pieces evenly among the lettuce leaves and spoon some of the sauce over each. Garnish with the scallions, shredded carrot, and chilies and serve immediately. The Bellini cocktail was created by Giuseppi Cipriani in 1943 at Harry's Bar in Venice, Italy, in honour of the painter Giovanni Bellini. The original recipe was made with fresh pureed white peaches, normally only found in mid-summer and autumn, with a bit of raspberry or cherry juice to give the drink a pink glow and traditional Italian Prosecco. The Villas take on the Bellini is: Pour 1 part of Peach juice into your flute. Add 2-3 drops of raspberry juice or puree for the blush. Add 1 part of Peach Schnapps. Top up with bubbles and stir.

CANTERBURY DESIGNERS WIN NATIONAL ARCHITECTURE AWARDS Canterbury Designers, Robert Weir and Cymon Allfrey, have been awarded national design awards at the ADNZ | Resene Architectural Design Awards on Friday 30 October, 2015. The prestigious awards were presented at a gala dinner held at Christchurch's Transitional 'cardboard' Cathedral as part of ADNZ's annual conference. The awards celebrate the very best architectural designs that New Zealand has to offer across both residential and commercial sectors.

obert Weir of Weirwalker Architecture took out the Residential New Home – over 300m2 Award for his work on Rockhill Residence, Kennedys Bush, south-west Christchurch. The design brief was to create a bold and striking contemporary home that took full advantage of the stunning Northerly views from the lower slopes of Kennedys Bush. The material palette has been kept simple with textured precast concrete facade panels providing a raw, strong and primal base element for the home. Judges commented that the building and the landscape seemed to grow together, to complement one another. ADNZ CEO, Astrid Andersen, said Weir is a deserving winner in a highly competitive category. “Weir's design takes full advantage of the home's dramatic location and clever positioning. The Residential New Home is a popular category and I am delighted to see a Christchurch home take out the top spot. Well done to Robert and the Weirwalker team”, says Andersen.

Located at the foot of the Port Hills within a newly established industrial area, this commercial premises was designed for a business which had its previous premises seriously damaged in the 2011 Christchurch Earthquake. Judges found the factory space was well considered as a working environment, particularly in terms of the quality of light playing out in this large space. The winner of this year's SUPREME ADNZ | Resene Architectural Design Award went to The Health and Science Centre at Waiariki Institute of Technology's Mokoia Campus in Rotorua, designed by Darryl Church of Darryl Church Architecture in association with MOAA Architects. The Health and Science Centre features teaching areas, classrooms and common spaces which are visually connected through glass walls. To avoid a static learning environment, moveable glass walls allow teaching rooms to be adapted to accommodate class sizes and students are free to observe each other learning, studying and communicating from every point of the building.

They had invited me along to take one out for a Saturday morning spin.
