The project is a year-long look at the evolution of food trends (cultivation, preparation and consumption) through history, using the settings (location and era) of major literary works studied in grades 10, 11, and 12 as starting points. MDICU will include one unit each semester, at each grade level, which will utilize core academic skills and skills learned in elective classes, emphasizing the necessary connections of academic skill and workplace skills. After tracing food trends through history, the cumulating MDICU will be a unit in which Academy students create a complete menu redesign for Shoney’s restaurants, based on current trends in food service.
