IT'S SUNNY BUT A BRISK 27 DEGREES ON THIS LATE DECEMBER DAY AT THE 17 MILE HOUSE FARM PARK, JUST OUTSIDE PARKER. Western artist Lorenzo Chavez is lugging his painting equipment a half mile to get to one of his favorite spots on Cherry Creek. He’s wearing a stocking cap and paintstained coveralls, two sets of gloves. Surely there’s a more convenient way to paint landscapes? Wearing a warm smile despite the cold, Lorenzo admits that, yes, there is a more convenient way. But being outside—experiencing the biting whip of wind, the subtleties of changing colors and shadows, the sensory overload of nature —is the best way to paint landscapes. It’s the difference, Lorenzo says, “between taking a picture of someone holding a baby and actually holding the baby yourself.” En plein air, or painting landscapes outdoors, is Lorenzo's specialty. Lorenzo spends several weekends a year teaching en plein air workshops around the West. He also teaches landscape painting classes through the Art Students League of Denver at the PACE Center in Parker. Born and raised in Albuquerque, N.M., Lorenzo, 59, has lived in Parker for the past 15 years. He’s been working as a fine artist and art teacher, in his signature American West genre, since shortly after he graduated from the Colorado Institute of Art in 1983. Creating art has “lots of thorns,” Lorenzo says. It’s hard work keeping the work relevant and coming up with fresh ideas, but it’s also invigorating. “It never feels complacent, and the market always changes,” he says.

I want the emotion I feel to come through in the surface textures of the art. WHAT DO YOU LOVE ABOUT EN PLEIN AIR? WHAT ARE THE CHALLENGES? From the simple but timeless approach to painting landscapes, I have grown in my love for and need to commune with the natural world and to enjoy painting the effects of natural light in all seasons. A lot of challenges are mostly sitting outdoors with the weather issues, taking the proper gear, wearing the proper attire. Painting a subject that is constantly moving, the shadows never stay consistent, so one must learn to grasp and not worry too much about the detail. With cell phones being a constant distraction, you have to unplug, and it adds to the quality of the painting because they derail the thought process. YOU TEACH WORKSHOPS AROUND THE WEST, AS WELL AS PAINTING CLASSES AT THE PACE CENTER. WHAT EXCITES YOU ABOUT TEACHING? I love to see others expand their knowledge and to witness them grow to appreciate nature with the eyes and heart of an artist. After living in Parker for 15 years, one of the joys as a teacher is being able to show my favorite places to paint outdoors —a hidden spot on the Cherry Creek, for instance—and share those spots with my students and tell them when it’s most beautiful so they can paint and get their own feeling from it. When you know a spot well, you can get deeper into teaching. WHAT MAKES SOMEONE A GOOD ARTIST? IS IT TALENT OR PRACTICE? EDUCATION OR CURIOSITY? All the above, but first it stems from a passion and desire to paint for long periods of time. CULTIVATING A LEGACY MAKERS OF FOX HILL SUBDIVISION ARE CRAFTING UNIQUE FARM-TO-TABLE COMMUNITY TO CARRY ON AREA'S RICH FARMING CULTURE

AN OLD WHITE BARN PERCHES ON ONE OF THE ROLLING HILLS NORTH OF FRANKTOWN, WITH A PRIME VIEW OF PIKES PEAK AND THE MAJESTY OF THE FRONT RANGE. Its matching farmhouse sits close by, topping off the idyllic scene. Word has it, the first owner of this 365-acre farm, an immigrant from Austria, chose this very spot to build his homestead because the view reminded him of his homeland. That was sometime around 1912. After more than 100 years and six owners, the creators of the new Fox Hill housing development are working to make a new type of community. As a 4-H kid with just about every kind of farm animal imaginable, including reindeer, and a dad who was a turf farmer, Elizabeth eventually went to Colorado State University and majored in turf science and nursery management. Her husband, Kory, grew up “a suburban kid” in Grand Junction and went to CSU for landscape architecture. He ended up in highend residential design. “But when the economy crashed a few years ago, landscaping was one of the first things to go, and sustainable farming, making land usable and pretty, was a bigger benefit and more of a draw for people,” Elizabeth says, explaining how the couple got into farm consulting, helping schools and restaurants grow their own gardens. Elizabeth and Kory took a consulting job in Austin, Texas, to help build two pick-yourown fruit farms as a centerpiece for a new neighborhood. A year ago, just back from their Austin job, they reached out to Doug and Paige McLaughlin, old acquaintances who they heard were marketing a new housing development near Franktown. Their dream was to expand on the Austin fruit-farm idea, to build a whole neighborhood around a producing farm. It’s been a year of hard work, building orchards that include apples, pears, plums, cherries, berries, hops and grapes. A new 24-by-70-foot aquaponics greenhouse will be delivered this month, where they’ll start the quick-to-harvest microgreens and herbs. Elizabeth says they’re also working with a local nursery to bring in mature trees to the development. And she’s hoping by next winter, there will be a holiday-special Fox Hill Pale Ale, produced by a local brewery from on-site hops. The goal of the Crafts is to champion the farm industry and make local food a norm for everyone. They hope more developers and even established neighborhoods around the country take notice of what Fox Hill is doing. “Any community can do this as long as you start from the beginning. But spend a little time with her in the kitchen, and the similarities begin to show through. “I thrive in the controlled chaos of the kitchen— the shouting, the heat, the demands,” Sarah says, standing in front of a searing hot pan, surrounded by industrial ovens and commercial equipment. The precision required to please a discerning clientele and ability to perform under pressure arose out of her time working under an exacting Two-Star Michelin chef and demanding drill sergeants before taking on the job of overseeing all dining options at The Pinery. Sarah came to The Pinery in August from Bent Pine Golf Club in Vero Beach, Fla. She brings seasonal menus with modern yet classic flavors that differentiate The Pinery Country Club from the often overlooked and standard food offerings of many country clubs. Featured here is her version of classic Airline Chicken from the fall menu. The breast is seared golden brown then finished in the oven until perfectly moist and tender. It is served atop tangy braised purple cabbage, roasted cauliflower caramelized to perfection and smoky sweet potato bacon hash. A drizzle of chicken demi-glace over the top finishes the dish. This simplified recipe for the home cook includes her sweet potato hash, and you can serve it at home with your version of roasted cauliflower and braised cabbage. Serve with a Rodney Strong Cabernet to complement the richness of the demi-glace and cabbage. 28

Put chicken breast skin side up on a pan with some water or chicken stock for moisture. Put back in the oven and cook until chicken is 165 degrees.
