SIONATE ABOUT. It speaks to our senses unlike anything else. My family and I will often travel great distances to frequent certain restaurants. It’s easy to see why some people in this industry are obsessive about the subject. We love anyone who's got a passion, and this month we celebrate the passion for food! In this issue, we will learn the history of French pastries. We will also will travel to the zinfandel capital of the world, Lodi, California. We will also read about baking for a cause, cakes that fund adoption. Happy eating, and as always, thanks for reading!

A BRIEF HISTORY

THE FRENCH MACARON

I STILL REMEMBER THE FIRST TIME I SAW A MACARON. Tucked into a side street in a small Ecuadorian town was an authentic French bakery that locals raved about to me. Accordion music played as a backing track to the indistinguishable French conversations that wafted out from the kitchen. In between the familiar fluffy croissants, bear claws and fine cheeses, there it sat. A multi-colored menagerie of these delicacies sat with a section of their own.

i n or f i l a C THE ZINFANDEL CAPITAL OF THE WORLD

16

Fort Collins Lifestyle | October 2019

Many consider Lodi, California, TO BE THE UNOFFICIAL, SELF-PROCLAIMED “ZINFANDEL CAPITAL OF THE

WORLD.” Each May, thousands of wine lovers and local wine makers join together in the

area at Lodi’s hallmark event, Zinfest, for tasting and learning about this old-growth, highly acclaimed Old Vine Zinfandel varietal. Names such as Michael David, Barsetti, Twisted Toad, Oak Ridge, Acquiesce, Riaza, Berghold and Klinker Brick are just some of the more than 85 beloved wineries located here. Just 40 miles south of Sacramento, 90 miles east of the San Francisco Bay Area and about 100 miles northeast of San Jose, California, Lodi is in San Joaquin County, California, in the northern portion of California's Central Valley. The small town of Lodi has a delightful historic downtown with several excellent bistros, while several of the wineries offer superb dining options as well. Its Mediterranean-like climate features warm days and cool evenings, and delta breezes from the Sacramento River Delta lend natural air conditioning to the region during the growing season, providing sustenance to more than 80 wineries offering full-flavored varietal wines with a refreshing natural acidity. Lodi is known as a red-wine-growing region; however, whites such as chardonnay and sauvignon blanc account for one-third of all wines here. Indeed, some 100-plus wines are in the Lodi repertoire. Many of the old-growth zinfandel vines in Lodi date back to the 1880s and early 1900s. Some local families have wine-making roots that go back as far as five generations, and a few families have ties back to oldworld winemakers in Europe. Lodi’s zinfandel grapes were able to survive throughout the 20th century, even during Prohibition. In 1986, the Lodi region was officially recognized and winemakers put the Lodi Appellation on their labels.

practicing sustainable practices to preserve the land. These old vines, many of which are still planted on their own roots, are naturally low-yielding due to their age but consistently produce high-quality fruit. Styles range from medium to full-bodied, with a wide range of red and black fruit flavors of cherries, raspberries and blackberries. There is much to do here besides drink wine! Visitors can join in on bicycle tours; kayaking, canoeing and paddleboarding are popular on the Mokelumne River; skydiving is an option as well; and golfers thrill to the various golf courses, particularly the 18-hole Micke Grove Golf Links, tucked into the vineyards. Wildlife lovers visit Lodi Lake Park, with 200-plus species of birds as well as other wildlife and myriad butterflies. The Isenberg Crane Reserve at the Woodbridge Ecological Reserve affords excellent viewing of sandhill cranes along with barn owls, pelicans, hawks, shrikes, swans, stilts, ducks, herons and even vultures. The closest major airport to Lodi is Sacramento International Airport (SMF), but travelers may also consider San Francisco International Airport (SFO), Oakland International Airport (OAK) or Mineta San Jose

FOR ELEGANCE IN PREPARING AND SERVING THE DAY'S MENU. Food is like fashion, with trends and fads. The same is true for catering. We sat down with the incredible founders and chefs of Juli Y Juan's Kitchen on how to best prepare and hire expert caterers to create a successful event that stays in your guests' memories for years to come. WHAT IS YOUR BIGGEST PIECE OF ADVICE TO SOMEONE LOOKING TO HIRE A CATERER? We believe that the best practices when thinking of hiring a caterer are to do a self-evaluation and have very clear what message you want your guests to experience. On a scale to 1 to 10, how important is food quality for you? Is there a specific theme? Is time a very sensitive subject? These are just a few of the questions you should ask yourself before finding the right caterer. There are caterers that range from a very simple delivery to a more artistic creative and entertaining performance. Five years ago when we started, most of what we were seeing out there was very simple catering. Today, Juli and I have been trying to offer more to our clients; we are trying to fuse our cultural background from Latin America into Colorado's culture of food and catering practices. So far, it has been a magnificent experiment, and we believe we are getting a great response from our foodies that have hired us and from the industry itself. We always kindly

CHIMICHURRI Chimichurri Serves 10 INGREDIENTS + 12 cloves garlic, roasted + 1 cup Italian parsley + 1 cup cilantro + 1 cup sweet basil + 4 pieces anchovies + 1 1/2 cups olive oil + 1/4–1/2 cup red wine vinegar + Pinch red pepper flakes (optional) + Salt and pepper, to taste METHOD STEP 1: Chop all the herbs, small but not a puree. STEP 2: Puree anchovies. STEP 3: Into the same bowl, add roasted garlic, anchovies puree and a pinch of red pepper flakes (optional). STEP 4: Add the vinegar and olive oil. The sauce is chunky and coarse; it should not be liquid. The vinegar and oil depend fully on your palate. STEP 5: Season with salt and pepper and serve. Usually, the chimichurri tastes much better as it ages, so if you are using it for a roast, make it a couple of days ahead and it will be perfect! Save in an airtight container in the fridge for up to 1 month.

BAKING FOR A CAUSE

WHAT STARTED OUT AS A FUN HOBBY CREATING CAKES AND SERVING FRIENDS QUICKLY TURNED INTO A BIGGER DREAM FOR TKALE RIBBLE, FOUNDER OF DOWN RIGHT SWEET TREATS. What if making these cakes could bring joy to others and support a bigger cause? As her family continued to grow, they found their hearts being pulled in the direction of adoption. More specifically, an adoption with International Down Syndrome Adoption. Down syndrome is downright beautiful, and the inspiration for the name: Down Right Sweet Treats. Tkale takes specialty custom orders and teaches cake decorating classes at Lemons & Lace Boutique. Follow her on Instagram @downrightsweettreats.

TKALE’S BAKING TIPS 1. Have the right tools. Some key tools to have would be a good turntable. It’s pretty much impossible to decorate a cake without one! Another key tool is a cake scraper. This is what gets the sides smooth. My favorite cake scraper is an Ateco cake scraper. 2. Never decorate a warm cake. Always allow the cake to chill before decorating. 3. When baking a cake, bring all the ingredients to room temperature. It makes the cake bake more evenly, and you don’t end up with a huge muffin top. Even just leaving the eggs out for 30 minutes before really helps. 4. Baking in Colorado is sometimes pretty tricky. I find baking the cakes at 25 degrees cooler than the recipe calls for and keeping them in longer helps them bake better.

HOMEMADE PEANUT BUTTER PUMPKIN DOG BISCUITS INGREDIENTS + 1/2 cup creamy natural peanut butter + 1/2 cup 100 percent pure pumpkin puree + 1 cup water + 2 tablespoons of coconut oil + 3 cups of whole wheat flour

INSTRUCTIONS 01 Preheat oven to 350 degrees. 02 Line baking sheet with parchment paper. 03 In a large bowl, add the peanut butter, pumpkin, flour, water and coconut oil. There is no need to melt the coconut oil, solid is fine. 04 Mix until all ingredients are combined. 05 Knead the dough until it forms a big ball. 06 Flatten the dough ball either with your fingers or with a rolling pin spread the dough out to approximately 1/4-inch in thickness. 07 Press your cookie cutter into the dough and cut out the biscuit. 08 Place it on the parchment-lined baking sheet. 09 Place in oven and bake for about 30 minutes. 10 Cool on wire rack. 11 Store in an airtight container in refrigerator up to 2 weeks or freeze for up to 3 months. If your dog has a wheat sensitivity, you can switch out the flour to an oat, rice or coconut flour. The consistency may just be a little different. Recipe from ProudDogMom.com.
