MAKE IT FUN. A little fun goes a long way, but don’t be afraid to keep things simple. YOGURT PARFAIT WITH STRAWBERRY CHIA JAM Yields: 1 serving
INGREDIENTS + 1 cup diced strawberries (fresh or frozen — for the jam) + 2 teaspoons honey (for the jam) + 3 tablespoons chia seeds (for the jam) + 1 cup vanilla yogurt (Noosa Yoghurt is a local favorite) + 2 fresh strawberries (sliced) + 1⁄4 cup granola (Purely Elizabeth is a local favorite) + 1 teaspoon local honey (for drizzling) Note: *The jam ingredients will make more than you need in your single parfait. Store the rest in an airtight container in the fridge for up to 10 days
To make the jam: Add washed and sliced strawberries to a small saucepan over medium heat. Stirring often, bring to a simmer and add the honey. Lightly mash the strawberries until you reach your desired consistency. Remove from heat and stir in chia seeds. Let sit until cooled. Store in the refrigerator for up to 10 days.
To make the parfait: Spread a generous layer of the chia jam at the bottom & sprinkle with half of the granola. Add all of the yogurt, then top with more jam, granola, fresh strawberries and a drizzle of honey. Enjoy!

HOW-TO Hard boil eggs — bring small pot to full rolling boil. Add in eggs and let boil on high for 8 minutes. Then remove eggs and put them in an ice bath (fill small bowl with ice, then cold water). Set aside. Cook the ramen noodles — bring large pot to full rolling boil. Add in ramen noodle blocks and let soften for approximately 3 minutes. Use a fork to help separate the noodles, then reduce the heat to medium and cook for an additional 4 minutes. Once softened and separated, strain the noodles over a large measuring cup saving 1 cup of the hot ramen water. Rinse the noodles under cold water then put them in a large bowl. Stir in 1 tbsp of sesame oil with the noodles. Set aside. Saute the garlic, ginger and green onions in sesame oil for a couple of minutes, then add in the remaining broth ingredients. Stir with a whisk. Then stir in the noodles. Garnish with toppings: peeled and sliced soft boiled eggs, red pepper slices, red cabbage, micro greens and seaweed (optional).

WINE FESTIVALS CAN BE TEDIOUS AND DIFFICULT TO APPROACH FOR THE AVERAGE DRINKER. Without a refined tasting palate or a guide to the wines, sips begin to bleed together while the pressure to appropriately discuss a nice Bordeaux begins to mount. For Boulder Wine Merchant Owner Brett Zimmerman, his hope is the Grapes & Grass Wine Festival will have attendees throwing all preconceived expectations about wine festivals out the window. He just wants people to have a good time. It was part of why he got involved in the first place. “This was an opportunity to be like ‘ok, let’s take away all pretenses associated with wine and break it down.' Wear your flip flops, drink out of a nice plastic glassware from Govino, listen to great music, enjoy the outdoors, and just take it down a notch.” Zimmerman wants people to learn how to appreciate the fun of wine in an expectation-free environment and take note when a wine surprises them. With other deep conversations about to be had at other wine festivals or even at his own shop, Grapes & Grass should be a celebration of high-quality beverages while listening to some tunes. “I would say just get a general idea of something that catches your attention. If it’s just a particular flavor profile or a different grape variety, take note of that, rather than trying to take detailed notes.” Grapes & Grass will also offer an exciting new feature for attendees that allows people to download wine profiles onto their phone, rate the wines and even place an order request for a specific wine through Boulder Wine Merchant. People may not be able to match Zimmerman's seemingly endless amount of insight, but they'll at least be able to find a new favorite wine or two from the festival.

MEET FINN OSULLIVAN. An incredibly talented and inspirational sixteen year old who has a beautiful passion. Creating music. This young lady who currently attends New Vista High School in Boulder, sat down with us recently at her CD release party to discuss all things music, inspiration and future plans. HOW DID YOU GET INTO MUSIC AND DEVELOPING A LOVE FOR THE ART? I've been around music from an early age. I think that hearing both of my parents play and sing to me as a little kid definitely sparked an interest. I started off by playing the piano, and then eventually started taking voice lessons. Music always really spoke to me in a way that other things didn't, and I felt that it was such an important idea to have something that people of all genders, sexualities, races and ages could connect to. I'd always hear songs by artists I like, and wish that I could write something like that. Once I started playing guitar, I really fell in love with it, and eventually started writing songs that I actually felt proud of and was willing to share with people. It's something that I've always found myself to be extremely passionate about.

HOW WOULD YOU DESCRIBE YOUR MUSIC STYLE? This is always a little bit difficult for me to pinpoint, but I'd say my music style is sort of indie/alt pop. WHO ARE SOME OF YOUR FAVORITE ARTIST/SONGWRITERS THAT HAVE INSPIRED OR HELPED INFLUENCED YOU? I have a ridiculous amount of favorite artists, all of whom have had influence on my style. I think I take inspiration more from ideas than sound, and sometimes find concepts that really speak to me. I really love David Bowie, The Smiths and The Shins. Their lyrics are all very powerful, and their sound is really unique. I love Dodie Clark (she plays the ukulele too, so that's awesome!), and also Regina Spector, The Regrettes and Ezra Furman as well. I love finding artists that use strong metaphors, and I also really enjoy people who aren't afraid to push boundaries with their art, whether that's in a new sound, or in the lyrics that they write. WHERE DO YOU HOPE FOR THIS PATH TO TAKE YOU? ANY FUTURE PLANS? As of right now, I'm hoping to go to college for music (although I'm not really sure where yet). It would be amazing to potentially form a band, and maybe even do a regional tour one day. The most important thing for me is that I'm able to keep writing and performing, and share my thoughts and ideas with an audience. My ultimate goal in writing is to create something that other people can connect to, and that they can feel like they're taking something away from my songs after hearing them. WHERE CAN WE HEAR YOU? DO YOU PLAY ANYWHERE AROUND TOWN? I've started playing a lot more around local venues. I played at The Laughing Goat (I'll be playing there a few more times later this year), the Stone Cup in Lyons and Full Cycle. I'll also be playing at Innisfree pretty soon, and have some more gigs coming up later this year. DAYS ENSUE, KEEPING YOUR SKIN WELL AND MOISTURIZED CAN FEEL LIKE AN UPHILL BATTLE. It can be particularly difficult when skin conditions, such as eczema, arise for you and your family. Even in these cases of particularly dry, irritated skin, and even in Colorado’s arid climate, it is possible to maintain nourished, healthy skin. “Eczema is a skin condition characterized by itchy, red, rough patches of skin,” says Dr. Holly C. Paugh, MD, FAAD, and Board certified pediatric and general dermatologist with Dermatology Center of the Rockies. “It can be caused by multiple factors, including environmental interactions, and flares up when the skin barrier doesn’t function as well as it should.” According to Dr. Paugh, eczema is very common in children, with about 60% of eczema patients being diagnosed in their first year and 85% being diagnosed by age five. While eczema often improves gradually as children age, the discomfort that comes with outbreaks can be treated and properly managed every day with a variety of practical solutions. “Here in Colorado, it’s especially important to use a moisturizer twice daily since the climate is so dry,” says Dr. Paugh. She recommends that children use only mild soaps when washing, apply moisturizing cream within five minutes of getting out of the bath or shower, and stick to creams made for sensitive skin with fewer ingredients and fewer fragrances. Depending on the severity of eczema, topical medications and antihistamines can also be used as appropriate. In some cases, however, eczema needs to be professionally treated. Dr. Paugh notes that, if over-the-counter creams have not helped during an outbreak, visiting a dermatologist to design a treatment plan is advisable. If you notice open sores, crusting or yellow drainage from areas affected by eczema, it’s time to call the dermatologist, as escalating eczema can lead to secondary skin infections if left untreated. While some of the causes of eczema are genetic, there are ways to lessen the severity of an eczema outbreak. Throughout the year (yes, all year long), wear sunscreen to protect your skin from harmful UV rays, and stay shaded from the sun when possible. Be diligent in establishing a moisturizing regimen as well to ensure that you, and your family, maintain healthy, clear skin no matter the season and climate.
