For Mike Ryan M.D., his music studio, named the “Baja Room,” is an inspiration. “To be in your creative comfort zone, you need to be surrounded by the things that spark your process,” says Ryan—orthopedic surgeon, songwriter, guitarist and lead singer of Doc Ryan and the Wychus Creek Band. “The studio is a space for the band to gather where they find not only a place in the room, but a place in the sound,” he says. WASHINGTON’S ELK MEATLOAF Makes approximately four 8 oz. servings ++ 1 lb. ground elk meat ++ ½ lb. ground beef ++ ¼ lb. Italian sausage ++ 2 eggs ++ 1/3 cup onion, minced ++ 1/3 cup celery, minced ++ 1/3 cup carrot, minced ++ 1 tbsp garlic, chopped ++ 1 tsp smoked paprika ++ 1 tbsp black pepper ++ 2 tsp kosher salt ++ 1/2 cup of your favorite BBQ sauce ++ 1/2 cup rolled oats ++ 1/4 cup olive oil

++ 1/2 cup BBQ sauce and a few strips of bacon

1. Sweat onions, celery, carrot and garlic in olive oil until softened. Turn out onto a baking sheet and allow to cool. 2. In a mixing bowl, combine all ingredients and mix well. (Pro tip: Patty a small piece of the mixture and fry it in a sauté pan. Check the seasoning at this time and adjust if necessary before baking the full meatloaf.) Portion into either individual loaves or one large loaf. Cut bacon into small strips and either shingle or weave it on top of the loaf. Slather with BBQ sauce. Bake uncovered at 375 degrees for approximately 45 minutes or until internal temperature reaches 155 degrees. Remove from the oven and allow to rest for 5-10 minutes before removing from loaf pans.
