DECEMBER EVENTS: 16 – Day of Reconciliation, 25 – Christmas Day, 26 – Day of Good Will

1931 – Present (83 Years) Trevino’s uncle introduced him to golf when he gave him a few balls and one old club; this is how he began. Trevino started spending his free time sneaking into nearby country clubs to practice. He began to caddy part-time and later on full-time at the Dallas Athletic Club. His job as a caddie gave him the opportunity to practice golf, since the caddies had three short holes behind their shack. After work, he would hit at least 300 balls.

HOW IT GOT ITS NAME: The month of December kept its original name from the Roman calendar where it had been the tenth month of the year. The name was derived from the Latin word “decem” which means tenth. When it was moved up because of January and February it kept the name. HISTORICAL NAMES: Roman: December, Saxon: Giuli, Germanic: Heil-mond (Holy month)

Trevino turned professional in 1960. In 1971 golfer Lee Trevino became the first player to win the U.S., British, and Canadian Open championships in the same year. In 1975, Trevino narrowly escaped death when he was struck by lightning while playing in the Western Open.

1775 – 1817 (42 Years) As a child, Jane and her six siblings were encouraged to read as much as possible from their father’s extensive book collection. This reading led to them writing and performing in their own plays for their family and close friends. They also played charades. Jane and her sister Cassandra were sent to boarding schools while Jane was still quite young. Due to financial constraints in their family, however, they had to return home without formal schooling.

Lang Fitz

1890 – 1976 (86 Years) At the start of World War I, Lang enlisted into the army. Severely wounded in June 1916, he wrote some scenarios for films while convalescing. After returning home and fumbling between jobs he met Thea von Harbou. The two started a relationship and she helped him write the scripts for his most celebrated films. In 1933, Minister Josef Goebbels offered Lang a job as head of the German Cinema Institute. Lang was an anti-Nazi and turned down the job. He then secretly sent most of his money out of the country and fled to Paris. After about a year in Paris, Lang moved to the United States. Over the next 20 years, he directed numerous American films. Unfortunately his reputation for cruelty made his job increasingly difficult and he returned to Germany where he shot his final three films, unfortunately none where well received by audiences.

Legend John

1978 – Present (35 Years) Legend was born a child prodigy, and at a young age his grandmother taught him how to play the piano. Once he had completed school Legend applied and was accepted to attend the University of Pennsylvania. After graduation, he switched gears and started working for Boston Consulting Group. Legend continued to perform in nightclubs in New York City where he became a muchdemanded musician and songwriter. He was soon introduced to up-andcoming hip-hop artist Kanye West, and the two musicians collaborated on one another’s demos. Legend released his debut album in 2004 titled “Get Lifted”, which went platinum. He received three Grammy Awards for the album. His next Album “Once Again” was released in 2006.

As we prepare to unwind, relax and celebrate, it is important to pause for a moment and reflect on the year that has passed. There have been many changes in the Silver Lakes Homeowners Association during this year and a moment of reflection will help us gauge how far we have come and what still needs to be done to accomplish the objectives we had set for this year, and also the planning and objectives that need to be set for 2015.

The Association’s annual general meeting was held successfully in November with all the proposed resolutions being passed by members either present or by proxy. We are also very excited that the most important resolutions with a bearing on the New Year, being the 2015/2016 operating budget, as well as the capital development fund levy were accepted. These resolutions will pave the way for capital expenditures and other projects that will provide tangible results for members and residents going forward with regard to the security, aesthetics and maintenance of our beautiful Estate. The main thing to remember in this process is that the costs involved are for the owners account and can be quite costly, but in saying this the consequences of not following the procedures are serious for the owners should they ever wish to sell their unit in the future. Make sure as the homeowner that all the procedures and processes are known in full before making the decision to go ahead with alterations and additions to a Sectional Title unit.

THE FESTIVE SEASON IS UPON US If you are among the many families breaking away on holiday for the festive season don’t forget another important break and that is for your energy consumption. Many people go away for the festive season and leave their electrical appliances on at their home resulting in energy being wasted and money being wasted on high bills. So before you load up for your holiday take the time to do a few of the following things: • Unplug all electrical appliances such as computers, coffee machines, television sets etc. • Empty your fridge and freezer, switch it off and defrost • Switch off your geyser • Switch off power buttons • Switch off air conditioners and fans • Switch off all unnecessary lights • Switch off water and power supply to water features and fountains in your garden Lastly don’t forget to travel safely and enjoy your holiday.

MAKING ALTERATIONS TO SECTIONAL TITLE UNITS It is very important that the homeowner of a sectional title unit is aware that there may be more restrictions in making alterations to their unit than if they were the owner of a freehold property. Refer to the Sectional Titles Act, Act of 95 of 1986 (“The Act”) The owner will see that firstly consent needs to be obtained from the body corporate and this consent can be obtained in two ways: 1. It might be that the trustees would hold a general meeting and the members would pass a special resolution to agree to the alterations. In order for the special resolution you will require the consent of 75% of the owners that are present at that meeting. 2. You may obtain the special resolution by approaching all the owners individually and obtaining the 75% consent of the owners. Once the consent is obtained the owner would then need to have plans drawn up and go through the approval process at the Local Authority. A Land Surveyor should then be appointed to draw New Sectional Title Plans of the scheme to incorporate the extension to the unit. These plans must be approved by the Surveyor General. The next step after obtaining the approved plans is to make an application for the registration of the amended Sectional Title Plan in the Deeds office; alongside this a transfer duty receipt

STORM WATER AND SWIMMING POOL WATER INTO SEWER LINES There is a growing concern about permitting storm water and swimming pool water that is discharged into the sewer reticulation system. Homeowners are requested to inspect their properties and effect necessary changes (if applicable) to help alleviate surcharging of the sewer reticulation system on the Estate. Lower laying properties suffer unwanted sewerage build-ups and spillages. For ease of reference, see the following Estate Rules: 5.1.11 - Swimming pool, Jacuzzi, hot tub, fish pond or fountain water may not be emptied onto the golf course, any communal areas, neighbouring properties or into the municipal sewer system but shall be appropriately channelled into the storm water drainage system

5.8.3.13 - Storm water may not be discharged into the sewerage system but must be channelled into the storm water system. Members with low-lying Units may not refuse to accept storm water from higher lying Units. 5.9.1.1 - Sewage must only be discharged into the sewerage reticulation system of the Township and not into the storm water reticulation system, streams, and/or dams in the Township and must comply with local authority regulations. 5.9.1.2 - Storm water effluent from hard surfaces such as roofs, paving etc must be discharged into the nearest storm water reticulation system of the Township and not into the sewerage system.

ENVIRONMENT, SOCIAL & ETHICS TRUSTEE

ENVIRONMENTAL NEWS This portfolio not only embraces the gardens and streetscapes of the Estate, it also means the natural environment and the people and animals of Silver Lakes. Firstly, from 1 December we will have The Garden Group looking after our gardens again. We went through a process of selfevaluation, monitoring and decided to outsource the gardens. After negotiations with all the parties, the Garden Group was appointed and started work in December. Together with this we will launch our ‘new look’ Environmental Committee. This committee will consist of our Silver Lakes operational and golf course managers, and the managers from the two service providers of the golf Course maintenance and gardens, Servest and Garden Group.

From these photos, you will be able to understand the feeling we want to re-create in the larger parts of the Estate: openness with lawns and trees, combined with the Colonial style of our buildings in colonial style gardens that are incorporated into our golf course to create a seamless flow from the one to the other. In the New Year, we will be implementing some design into the gardens – new plants, layouts and lots of cleaning up still to be done. Our architects were busy this year with the upgrades at the Club House. All the drawings are available at the HOA offices. They are busy now with the designs of the new gate at the Silver Lakes Drive entrance, the fountain at this entrance, the street corners, and a possible upgrade of the HOA offices and the Solomon Mahlangu entrance.

If any home owner wants to sit in on this committee, please contact Danie van Niekerk at the HOA office, and provide him with your information so that he can contact you regarding times and dates for the meetings.

Our gardens are slowly but surely getting there – we are not only getting the necessary rain, but the new season brings the chance to finalise our new garden layouts. We are slowly getting there with the cleaning-up of the Estate. The fountain has been restored to its previous glory, with vistas over our dams when one looks across the fountain towards the golf course from the upper floors. You will also notice our koi’s are back…with lots of new little ones swimming around! The top fountain will be planted and finally restored by the end of 2014. A bit further on in the article you will see an image of the proposed layout of plants and the design feature of rock laid flat faced just underneath the water surface.

The openness of the golf course, combined with the tree rich streets makes Silver Lakes a very special place.

Our homeowners also go to special efforts to create beautiful gardens as we saw in the two garden competitions we had this year.

A LIST OF OUR ANNUAL EVENTS FOR THE YEAR 2015 Elsewhere in these articles, you will see images of the beautiful gardens.

Despite the outsourcing of the Club House and catering, our regular annual events will still be on the calendar. Remember to keep an eye open for new events as we progress through the year. This year, 2014, as you know we added International Day to the October calendar. From this event, I could pick up that we need to extend this event to a full-blown Silver Lakes event. Next year we will change it to March, possibly the 21st, which will be a public holiday. October is traditionally a very busy month for all, whereas March is a bit more relaxed and does not have so many events. Have a look at the great photos of this day. We had masks from the studio of sculptor Anton Smit that the children painted.

In this graphic, you can see the flowing designs envisaged at the new layout of the island in Pebble Beach Drive as explained in a previous Intra Muros article. This will be implemented in the New Year. As mentioned, we will harvest plants from the Pebble Beach Drive island, and fill up all the bare patches in the Muirfield Islands. Pebble Beach Drive will be re-designed, some of the old plants kept, especially the hedges and new plants will be planted through-out the centre island of Pebble Beach Drive. The island around the fountain will get a little wall to have a level planter around the pond. This wall will be clad in the slate of the fountain spout in the centre of the pond. To neaten our roads and the streetscapes of Silver Lakes we will remove all irregularities and hard elements where possible, such as the humps of lawn, which never get enough water. We will try to lower the slope of the sidewalks along Pebble Beach Drive as well. We will continue to remove the 97 rose corners and replace them with between 12 and 15 new corners with trademark Silver Lakes signage – to neaten up the estate and create a stronger point of reference. This drawing explains another project to be finalised this year. We will finish the top fountain at the Club during December. The short-term planning is thus Muirfield Boulevard and Pebble Beach Drive, the circle and fountain at the Silver Lakes Drive entrance will be upgraded as soon as the designs are done. This will hopefully be before end of April. Then we can start with the building and changes at the ‘Old’ entrance gate at Silver Lakes Drive.

These Anton Smit masks were painted by children from the German school, by Melissa, our artist who joined us on Spring Day and by some of our local Silver Lakes children. Thanks a million to all of you who helped make this day such a wonderful success. We will be auctioning the masks the children painted at our Christmas celebration lunch. The food was fabulous, and as always Seline was there with her smile and presented five stunning dishes for us to taste from all around the world. The Latino band provided the best vibe ever and had all of us dancing. Joel and his team had the best South African and Italian dishes on offer for us to taste and eat. Thanks a million to all the staff at the Club House – we had a wonderful day! As always, there are the clubs in Silver Lakes, i.e. squash, tennis, bridge, art and always some special events for our residents. Golfing: Andrew and his team will as always organise fantastic competitions and events for our young golfers. Fishing: Henk and his Fishing Club always have something exciting up their sleeves. As you would have realised form the past month, they even team up with Andrew at the Pro-Shop and have a golf AND fishing Competition. New events: we started with two new events in October this year – with a Pensioner’s Breakfast every 1st Tuesday and a Moms-andTots tea every second Tuesday of the month. In 2015, we will expand on these ideas and get our residents more involved in these events. We had very few entrants for the rose garden competition this year, and we will re-think this competition with the Garden Group as soon as they are on-board. Have a look at the fantastic gardens of the entrants. SILVER LAKES MATURE GOLFERS NEWS FROM THE MATURE GOLFERS GROUP PLAYING AT SILVER LAKES GOLF COURSE Another great year of golf on our truly challenging golf course is quickly coming to an end. The Mature Golfers wish to thank Silver Lakes for making golf the pleasant experience it has been over the past year and accommodating the 40-odd players every Thursday morning. We also wish to express our sincere gratitude to our wonderful sponsors who have contributed to the success of the Mature Golfers group. Without even considering the “healthy” beverage bill, we guess the MG group has boosted the pro shop-takings by an excess of R175 000 during 2014. The Mature Golfers look forward to another successful year in 2015 at Silver Lakes. Please do not forget that participation with the Mature Golfers on Thursday mornings is open to all senior male players whether you are a Silver Lakes resident or not and the group always welcomes newcomers to join in the fun day with the other old buddies. The after-golf prize giving and function is very relaxing and not without the usual chirps and jokes. The golf results for October are shown and it is not unusual to see such wonderful scores by our seniors striving to outdo their fellow opponents for the day. The away-game at Bronkhorstspruit also produced high scores with the winner’s prize going to Fernando Vieira on 42 points. The magnificent four for the day, Colin, Sidney, Rolf, and Peet took severe punishment for losing 24 golf balls amongst their group. It was their contribution towards filling up the lakes. Do not forget to enter your name for the ANNUAL GOLF DAY for seniors on 20 November 2014 at Silver Lakes. This is open to all seniors including ladies of all ages. It is a shotgun start at 12 noon with dinner and prize giving immediately after the game. Our target is that half the field will win a prize. ALL THINGS C A N DY C A N E When you think of Christmas one of the many things that come to mind are candy canes, with their beautiful red and white stripes, these sweets add fun and excitement to anything! If you are struggling to find something fun and sweet to give to a friend this Christmas then look no further, because this article has got you sorted with all things candy cane!

CANDY CANE SURPRISE MERINGUES

4. Add the cream of tartar. Beat the mixture with a whisk attachment or a hand mixer until stiff peaks form. Stir in the peppermint extract.

These surprise meringues make a beautiful gift with their fun and colourful stripes! Whether you package this delish gift in a beautiful glass jar or a brown paper box, these meringues are sure to put a smile on anyone’s face this Christmas!

5. Using a small paintbrush, paint 2-4 stripes of red food coloring to the inside of the pastry bag. Spoon in the meringue (you may need to add more meringue once you have started piping, depending on the size of your pastry bag)

INGREDIENTS

6. To pipe the meringues, you want to create a swirling effect, completely covering the kiss. Start at the bottom and swirl upward around the kiss, and then pull up on the pastry bag to create a pretty tip at the top.

3 egg whites ¾ cup granulated sugar ¼ teaspoon cream of tartar ¼ teaspoon peppermint extract 35 Lindt chocolate balls Red food coloring Small paintbrush Pastry bag, coupler, and #12 tip (you can skip the tip and just use a cut pastry bag, but you may get a line from the bag seam)

INSTRUCTIONS 1. Preheat oven to 175 degrees. Separate three cold eggs; set aside egg whites for 10-15 minutes (room temperature egg whites will create a higher volume of meringue!). 2. Line 2 baking sheets with parchment paper. Place 35 Lindt chocolate balls about 5 cm apart on baking sheets. Set aside. 3. Combine egg whites and granulated sugar in a heat proof bowl. If you have a stand mixer, the stainless steel bowl works great and is easily transferable for the next step! Place the bowl over a pot of simmering water, stirring gently until the mixture feels warm and the sugar is completely dissolved. This step will prevent your meringues from getting gritty! Remove from heat.

Bake meringues for 1 hour, 40 minutes. Turn off oven and leave oven door open to allow for slow cooling. Store in an airtight container as soon as they have cooled to keep them crispy.

CANDY CANE SUGAR SCRUB This scrub is easy and affordable to make! The fun thing about this sugar scrub is that you can make it as smooth or as fluffy as you like. If you want a fluffier scrub use less of the liquid ingredients with the sugar.

INGREDIENTS

2.5 Cups Plain white sugar 0.25 Cups Baby Oil A liquid peppermint soap / Peppermint Essence

Combine these three ingredients and place in a Consol Jar and crush some candy canes and sprinkle on top before you close the lid. This crushed candy is not to be used for exfoliating but can be used as a beautiful way of finishing off the gift. Just make sure to tell your friends to remove the candy cane before they use it.

Add your own creative embellishments onto a gift package by knotting bells, candy canes or even beads onto embroidery or thin ribbon and wrap it around your gift to make it uniquely beautiful!

FESTIVE CHRISTMAS EATS FOR THE KIDS

CANDY CANE CAKE LOLLIPOPS

WHITE CHOCOLATE CANDY CANE POPCORN 475 ml white chocolate 1 Cup finely crushed Candy Canes (About 10 - 12) Popcorn (About ½ Cup popcorn seeds) Slowly melt the white chocolate on the stove while making sure to stir often as to keep the chocolate from burning. Add ½ cup crushed candy canes into the white chocolate. Put the popped pop corn into a large bowl and pour the melted white chocolate and candy cane mix over it. Make sure to gently stir all the popcorn to coat it while sprinkling the remaining crushed candies over the popcorn. Leaving it sweet and crunchy!

3. Dip Dye Wrapping:

1 box white cake mix (baked as directed on box) 1 can vanilla frosting – 1/2 tsp peppermint extract White Chocolate Crushed Candy Canes Styrofoam – sheet or blocks White Lollipop Sticks Red Ribbon Glue Gun (or clear-drying glue) Step 1: Cook the box cake and crumble it into a large bowl once cooked and cooled. Then mix the mixture with 1 can of the vanilla frosting. Step 2: Use your fingers to mix everything together and then roll it into R5 coin sized balls and place these onto wax paper. This recipe will make around 45 – 50. Step 3: Melt your chocolate in the microwave for 30 sec intervals while stirring in between. Then dip the tip of your lollipop sticks in a bit of the white chocolate and then insert these into the cake balls you made earlier. Place these in the freezer for a few minutes to cool the cake off.

FOR THE PARENTS CANDY CANE MARTINIS 36 ml vanilla vodka 36 ml white creme de cacao 22 ml peppermint schnapps Garnish: Candy Cane candy Combine the vanilla vodka, white creme de cacao, and peppermint schnapps in an ice-filled cocktail shaker. Shake and strain the mixture into a cocktail glass. Garnish by dipping the rim of the glass about 1 cm deep into water and then dip this into a plate of the crushed candy canes. This will allow the candy canes to stick to the rim and make a beautiful finish to your Christmas Martini.

Step 4: Once cooled, carefully hold the lollipop stick and rotated it in the bowl of white chocolate until the entire cake ball is covered. Then, while still wet, roll the cake lollipop in the crushed candy canes and place it in a piece of Styrofoam to dry. For a gorgeous dessert table display on Christmas Day, cover the styrofoam with fake snow or coconut shavings.

To achieve the candy look, one doesn’t have to stick to the real deal. Try dip-dying your wrapping paper by using food coloring and a rice paper! Here’s what you will need! - Food coloring - Water - A container - Porous Rice Paper (At craft stores) - Paper clips

Step 1

- To achieve a striped pattern, fold the sheet of rice paper into a thin accordion strip, and attach a paper clip to the ends. - For a diamond pattern; fold a square sheet in diagonally in half (to form a triangle), then fold it in half again for another triangle, and then fold it once more. Making sure the widest angle is on top, fold the other two corners upward so that all three meet and secure them with paper clips.

Step 2

Add 7 or more drops of food coloring with half a cup of water and quickly dip the corners of the square and long sides of the accordion paper fold into the dye mix. Make sure to unclip the paper, unfold it, and then spread it on craft paper to dry.

Step 3

To achieve different shades of pink, use different strengths of the dye mix. The more dye you want the paper to absorb, the longer you will need to dip the paper. This DIY is quick and easy to do, and adds a whole different look to a gift, all you need to remember is to have fun!

THE COOK ON THE CORNER From Seline van der Wat December has finally rolled in and we can feel the excitement of the impending holidays like electricity in the air. Whether or not you’re leaving the city, at least everybody will have a few days off to catch his or her breath after what’s been a crazy year. Most Gautengers migrate down to the beach for a week or two, flooding the beaches with our T-shirt-tan bodies whether the sun is out or even if it’s raining – earning us our nickname of vaalies from the locals. My mother grew up in the Cape and only moved up to the north after marrying my dad and I remember every year we went down to the sea, she’d always tell us “you’re such vaalies” when we asked if we could go to the beach in the screeching wind and slight sky drizzle. I guess it’s one of those cases where the locals don’t know how great they have it with the beautiful beach laid out in front of them. Perhaps they are waiting for the perfect day to get sand between their toes? All I know is that I always want to maximise my time in the sand, with the sound of the waves in my ears – and I don’t care much about the sunshine… Regardless of where you’re from or where you go on holiday, however, almost everybody picks up weight during December. In general, the extra alcohol, bags of sweet treats lying in the cupboard, late night snacking and lengthy braais and celebrations add those extra kilograms before you even notice it. AS a result, I have come up with this recipe below for you, which is sugar, fat, and gluten free. And the best part? It tastes absolutely amazing! Frozen yogurt has taken the world by storm in the past 12 months, with places like Wakaberry and Smooch being every teenager’s go-to place on a Saturday afternoon. I cannot attest to what they put in their product, but if you make this at home you can be sure that you are enjoying a truly healthy snack, free of preservatives or artificial flavours and obviously with the natural goodness to be found in your yogurt, including calcium! Try this recipe with any of your favourite fruits – I love making it with just nectarines or peaches! If the fruit is properly ripe you will not need any additional sweetness, but if for your taste you would like a little extra, simply add some natural honey or agave syrup to your frozen yogurt. SUGAR, FAT AND GLUTEN FREE GREEN MELON AND WHITE NECTARINE FROZEN YOGURT WITH A SUMMER FRUIT SALSA INGREDIENTS: (Serves 6)

450g Green/wintermelon 300g White nectarines 250ml Natural yogurt Honey, to taste (See recipe) 250ml of your favourite summer fruit (Strawberries, raspberries, cucumber, etc.) 3ml Black Pepper 80ml Champagne 10ml Lemon zest WHAT TO DO:

1. Peel the melon and remove any pips from the flesh. Cut it into rough cubes and place inside a sealed bag/container in the freezer to freeze hard. 2. Wash the nectarines and cut them in half to remove the stones, before cutting them into wedges. Place these inside a sealed bag/container and place it in the freezer to set. 3. To make the fruit salsa, cube the summer fruit into 1cm cubes and place into a little bowl along with the black pepper, champagne, and lemon zest. Cover and allow it to stand for at least 30 minutes in the fridge. 4. Once the melon and nectarines have frozen solid, remove, and place it into a blender with the yogurt. Blend the mixture until perfectly smooth and creamy. 5. Taste the mixture and add honey to taste if you’d like it a little sweeter. 6. Place the mixture into a piping bag fitted with a star nozzle and pipe into dessert bowls, topped with the fruit salsa. If the mixture is too soft you can place it back into the freezer to set a little before piping.

How Long Will It Take? Each area takes a few minutes to treat. While an upper lip takes a lot less time than a man’s back, any area can be treated completely in one short session. Depending on the area being treated, you will return in 4-8 weeks for your next treatment. What Is The Post-treatment Routine? Use SPF 30 (or higher) sunscreen on the treated area between treatments and for 6 weeks afterwards. You are encouraged to continue any of your previous maintenance treatments (such as shaving), but you should not pull or pluck the hair, as having the hair in the follicle is important to future treatment success. In order to maintain the treatment results, we highly recommend you apply a moisturizing cream and sunscreen to the treatment area every day. Why Does It Take Several Treatments? Scattering of the light on your skin, along with variations in pigment in the follicle, often make for variations in the ability of the AFT light to create the thermal injury necessary to disable permanently an individual follicle. In most cases, successive treatments will eventually treat every follicle effectively, as long as there is pigment in the hair and no other identifiable factors that could affect the success of the treatments. The time between treatments is needed to refill the follicles that are not completely damaged, so they can have a pigmented hair available for the next treatment.

POST-TREATMENT CARE Handle your treatment area gently and avoid shaving for 24hours. Also, avoid hot water and strenuous activities for 24 hours. Protect your treatment areas from direct exposure to sun or artificial sunlight for 3 weeks before and 3 weeks after treatment, using broad-spectrum sunscreen with total block protection. Tanning after treatment sessions may result in skin discolorations. Remove hair in treatment area 24 hours prior to treatment by shaving or clipping. Do not tweeze, wax, bleach or use depilatories for 3 weeks before treatment and discontinue completely during AFT hair removal. Apply Aloe Vera or hydrocortisone cream to treatment areas to ease temporary discomfort. Ice packs may also be used if swelling occurs. Makeup may be applied immediately after facial treatments unless blistering or crusts develop. Since the skin is sensitive during this period, take special care while removing makeup to avoid damaging the skin and risking infection. If a blister develops, contact your provider. Which areas of the body can be treated? Commonly treated areas include legs, arms, bikini line, back, or stomach. Hair removal on the face and neck is also possible. What alternatives are there? Creams and Lotions can be used at home but, they usually provide only a slight benefit and must be used indefinitely to maintain even modest results. Other laser and light-based devices work well, but they typically focus on just one aspect of skin rejuvenation (colour, texture, or tightening). They may be quite painful, have significant down time and may not be suitable for all skin types.

Before we know it, it is the end of the year and the holidays are upon us. After an exciting and full of year of action, it is time to rest, wine and dine with beloved friends and family. Whether you are heading to the bushvelt, the coast or even overseas to explore other countries, here are a few Christmas dinner recipes for you to try. If you are so lucky to catch fish when you are at the coast or if you buy from the local fish markets along the coastal areas, be sure to try these herb infused delicious recipes.

Salmon with Pistachio Basil Butter Ingredients 1/4 cup pistachios 10 -15 basil leaves 3 -4 cloves garlic 1/2 cup butter 1 teaspoon lime juice 1/2 cup white wine 4 (6 ounce) salmon fillets Directions 1. In a food processor, combine the butter, pistachios, garlic, basil and lime juice together. Season it with salt and pepper. Once you have processed the food, refrigerate it.

Yellowtail Ceviche Starter Ingredients Ceviche: 1/2 lb. sushi-grade yellowtail (also known as hamachi), diced small 1 medium jalapeno, seeds removed, minced 1 1/4 teaspoon yuzu juice (Japanese lime) 2 tablespoons jackfruit, diced 1 teaspoon fish sauce 6 leaves Vietnamese mint, chiffonaded

2. Preheat the oven to 200 degrees Celcius. 3. Place the salmon in buttered baking dish and cover it with wine. Season the fish with salt and pepper. Bake it untill “opaque�, about 10 minutes. Place 2-3 tablespoons of the butter mixture on each piece of salmon. 4. Continue baking it until the fish is done in the center, about 5 more minutes or more (depending on thickness of your salmon). 5. Garnish it with additional basil leaves and serve it with rice or angel hair pasta.

Prawn crackers: 1 bag small prawn crackers, found in Asian markets oil for frying

Directions 1. Combine all ingredients, except the prawn crackers and oil, in a bowl until thoroughly mixed. Refrigerate it until you are ready to assemble it. 2. Fry the prawn crackers in very hot oil until it is fully puffed. Remove it from the oil and drain it on a paper towel and reserve it until you are ready to assemble it. 3. Spoon a small amount of ceviche on each prawn cracker and serve.

Ingredients 1 tablespoon olive oil 4 x 200 g Kingklip portions, filleted Green asparagus, blanched, for serving For the champ mash: 5 medium-sized potatoes, peeled and quartered 2 tablespoon cream 50 g butter 3 spring onions, finely chopped For the salsa: 4 ripe plum tomatoes 3 spring onions, finely chopped 1 tablespoon white-wine vinegar 1 teaspoon olive oil For the lime beurre blanc: 1/2 small onion, finely diced 1/2 zest of lime 5 tablespoon lime juice 1/4 cup white wine 1/2 cup cream 1/2 cup cold unsalted butter, cubed Directions 1. To a hot, nonstick frying pan, add 1 tablespoon of oil. Season the fish and place it in the pan, skin side down. Allow it to brown then reduce the heat, turn it over and cook through. 2. To make the champ mash: Boil the potato in salted water, until thoroughly cooked. Add the cream and then season it and return to the stove. Slowly add the butter, while using a whisk to incorporate, then add the spring onion and cook it for a further 2 minutes. 3. To make the salsa: Blanch the tomatoes in boiling water for 10 seconds then refresh it in ice-cold water. Remove the skins and cut it into quarters. 4. Using a knife, cut away the pulp and seeds so that only the flesh of the tomatoes remains. Cut it into small cubes, and then add the spring onion, vinegar, olive oil and seasoning. 5. To make the lime beurre blanc: To a saucepan, add the onion, lime zest, lime juice and wine, and simmer it until it is reduced to 2 tablespoons. Add the cream and bring it to a boil, then reduce to a simmer again. 6. Whisk continuously while adding the cold butter cubes – take care not to allow the sauce to become too hot or it will split. Season with salt and pepper to taste.

1/4 cup kosher salt 1 tablespoon chopped fresh rosemary 2 cups boiling water 12 ice cubes Pork Loin and stuffings 1 3-pound pork loin, trimmed 2 tablespoons canola oil, divided 1/2 cup chopped pancetta or prosciutto 1 1/2 cups chopped fresh cranberries (see Tip) 1/2 cup fresh coarse whole-wheat breadcrumbs 2 tablespoons packed brown sugar 1 tablespoon chopped fresh rosemary 3/4 teaspoon freshly ground pepper, divided Directions 1. To prepare brine: Place 1/4 cup brown sugar, salt and rosemary in a 9-by-13-inch baking dish. Pour in boiling water and stir to dissolve. Stir in ice cubes. 2. To butterfly & brine pork: You’re going to double butterfly the pork loin so it can be flattened, stuffed and rolled. To do that, you’ll make two long horizontal cuts, one on each side, dividing the roast in thirds without cutting all the way through. Place the roast on a cutting board. Holding the knife blade flat, so it’s parallel to the board, make a lengthwise cut into the side of the roast just above the center, stopping short of the opposite edge so that the flap remains attached. Rotate the tenderloin 180°. 3. Still holding the knife parallel to the cutting board, make a lengthwise cut into the side opposite the original cut, just below the center, taking care not to cut all the way through. Open up the two cuts so you have a large rectangle of meat. Cover with a sheet of plastic wrap and pound to an even thickness of about 1/2 inch. Place the butterflied pork in the brine, adding more water to cover, if necessary. Cover and refrigerate for at least 2 hours and no more than 4 hours. 4. To prepare stuffing: Meanwhile, heat 1 tablespoon oil in a medium skillet over medium heat. Add pancetta (or prosciutto) and cook, stirring, until crisp, about 4 minutes. Transfer to a medium bowl along with any drippings from the pan. Stir in cranberries, breadcrumbs, 2 tablespoons brown sugar and rosemary. Refrigerate until ready to use. 5. Remove pork from brine (discard brine); rinse well and thoroughly dry with paper towels. Season the pork with 1/2 teaspoon pepper. Spread the cranberry stuffing over the pork. Roll tightly and secure in 4 places with kitchen string. Sprinkle with the remaining 1/4 teaspoon pepper. 6. Preheat oven to 375°F. Line a rimmed baking sheet with foil. Heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the pork; brown on all sides, turning often, 5 to 8 minutes total. Place on the prepared baking sheet. 7. Roast the pork, turning twice, until an instant-read thermometer inserted into the thickest part of the meat (not the stuffing) registers 140°F, 45 minutes to 1 hour. Transfer to a clean cutting board and let rest for 10 minutes. Slice and serve.

Cranberry-Rosemary Stuffed Pork Loin Ingredients Brine 1/4 cup packed brown sugar

Tips - Lightly wrap stuffed and tied pork loin and refrigerate for up to 1 day. Let stand at room temperature for about 20 minutes before proceeding with Step 6 and while the oven heats. - To make quick work of chopping cranberries, place whole berries in a food processor and pulse a few times until the berries are coarsely chopped.

KIDS STORY

- Just Nuisance So for the last part of this year – a bit more about the Navy dog Just Nuisance. If you remember from last month, the sailors who bunked with Just Nuisance were chatting about how much easier it was to be a dog instead of a human in the navy. This included that Just Nuisance would never get into a bath and ‘lying in his own dirt’ but he enjoyed a shower. He would go to the shower hut, one of the seamen would soap him down, and then he will stand under the shower until all the soapsuds were gone – every day. The first time Just Nuisance went back to Simons Town where the ‘Institute’ was, his old home with Superintendent Chaney and his mate Ajax the bulldog, he jumped off the lorry and headed straight for the Institute. He went up the stairs where he gave a low deep bark. Ajax came running out and Just Nuisance gave him a hug’ by placing one of his enormous large paws on his back. Benjamin Chaney was so delighted to see his old charge that he gave Able Seaman Just Nuisance a few large bones! Just Nuisance thanked him by giving him his large right paw.

As you can guess all seamen had to sign out when they went on shore leave. They usually all were off to Cape Town by train after evening meals. They did so by handing in an identity card that they received back when they returned to the boat or the naval base. Just Nuisance had no such card and because he went on shore leave just as the other seamen, it was decided that he also needed ‘watch card’. One was duly made on a hard piece of double folded cardboard and tied onto his collar with a piece of chain. This did not go off well with Just Nuisance. The evening when he was standing in the queue to leave for the train to Cape Town, the seaman on duty checking the watch cards, found Just Nuisance’s chewed to a pulp. The seaman did not know what to do, so he reported it. The card was taken off to never be replaced since it was believed that no matter what they do, Just Nuisance will find a way to chew up the next one as well. Ajax, who previously would never have thought of eating one of Just Nuisance’s bones, joined him in the feast and got a bone from his old friend when Just Nuisance dropped a chewed bone in front of the small flat-nosed bulldog. They chewed together in a complacent silence, every now and again just giving a sigh of contentment with bones crunching steadily in the big dog’s massive jaws. When Just Nuisance realised it was time to go back to Froggy Pond, he gently nudged his sleepy friend and as he left the building, at the front door gave an enormous bark, waking up a few sailors sleeping on a couch in the foyer. He trotted off and got into the lorry back to Froggy Pond with his new mates. His best and most favourite mate of all, after being stationed at Froggy Pond for only two weeks, was - you guessed it - the PO cook. Just Nuisance was excused from duty to take a few naps during the day, on his bunk off course. No other Able Seaman was allowed this luxury, but Just Nuisance was. He never missed a parade, so was granted a few naps in-between. The other seamen thought that it’s a dog’s life not being a dog. They got into trouble for wasting the officer in charge’s time for reporting Nuisance and he had the PO cook as best friend. Just Nuisance would make the trip to the galley once or twice in-between meals and would find a plate with all kinds of nice meaty tit-bits. The cook declared that he does not want one of his seamen starving, and that if the other seamen only half as much appreciated and enjoyed his cooking skills as Just Nuisance, they would have had even better meals. Like any other seamen, Just Nuisance’s name was always on the duty list, but he was excused from all duties, except parades. He attended all parades dutifully wearing his cap and dog collar. The seamen were all inspected for untidy hair and clothes, because no sloppiness was tolerated. Obviously, Just Nuisance never heard the complaint about his hair being too long. The only complaint was from the inspecting officer that Just Nuisance’s tail never wagged when he walked past because Just Nuisance kept his tail vertically straight and still when on parade.

MAKE YOUR OWN paper ornaments This Christmas, get the kids to help make these colourful ornaments and adorn your Christmas tree! Put on some holiday tunes and get to crafting!

Steps: Step 1: Punch or cut out 6 cm circles for the body of the ornament. You will need 7 circles for each ornament. Use a starburst craft punch or hand-cut a circle out for the ‘collar’ of your paper ornament. Punch a hole in the middle of each circle with a small hole punch. Step 2: Fold each of your 6 cm circles in half. Apply glue to the outer half of a folded circle. Then place another folded circle on top of the glued portion, aligning edges (folded edges should be facing the same direction). Leave the last flap unglued. Step 3: It’s time to assemble your ornament! Cut a piece of fishing gut, approximately 25 cm. Tie a bead at the end and place it through the center of one of the prepared paper ornaments and seal the open flap closed with glue. Next thread onto the same piece of yarn: a collar circle and a glass bead. Step 4: Lastly, pull the long portion of the fishing gut, to hang from the top of the ornament and make a loop knot to finish it off.

New Year, NEW YOU 2015 is around the corner and if you want to succeed with your New Year’s resolutions, stop thinking of them as resolutions and start framing them as daily habits to develop into your day-today life. You may have wondered though; where do new years resolutions come from? Well let this article enlighten you while you carry through the tradition of resolutions, and be a happier person in the year 2015!

THE ORIGIN OF NEW YEAR’S RESOLUTIONS New Year’s Day celebrations began with the Babylonians in pre-Christian times. They initially celebrated in March based on the early eighth century B.C Roman calendar which consisted of 10 months and 304 days. The calendar fell out of sync with the sun over the centuries and in 46 B.C the Roman Emperor Julius Caesar added 90 extra days to the year in order to realign the Roman calendar with the sun. This calendar was called the Julian calendar and it portrays similar aspects to the more modern Gregorian calendar that most countries use today. With this improvement, Caesar established that January 1 would be the first day of the year to honor the month’s name; Janus, the Roman god of beginning. Janus’s statue was set on the bridge Ponte Fabricio which crosses the Tiber River in Rome. He would look backwards into the old year and forward into the new. He was believed to be the god and protector of bridges, arches, gates, doorways, endings and beginnings. This tradition began the custom of ‘New Years Resolutions’ during this period in Rome, with the intentions to be ‘good to others’. In order to earn the favor of the gods, the Babylonians made promises to start the year off on the right foot. To this day, it is believed that if the head of Janus is touched as you cross the Ponte Fabricio Bridge, it will bring good fortune. When the Roman Empire took Christianity as its official state religion, these resolutions were replaced by prayers and fasting.

NEW YEARS RESOLUTIONS TO TRY FOR SUCCESS IN 2015 We all have our own resolutions we might want to work on in the coming year, but if you are still looking for things to work on try and follow these simple tips to improve your general wellbeing and outlook on life. I will help the environment. Thoughtless food waste is a problem around the world in many households. Try implementing less food wastage by planning meal portions and try and face what’s on your plate, instead of just throwing it in the bin. I won’t slouch. Our body language shapes who we are and how others perceive us. Adapting a good posture can make a person feel more confident! I will set aside quiet time for myself. To be our best selves, setting aside time for creativity and growth is of utmost importance. These can include; exercise, writing, reading, art and spending more time outside in nature. I will commit myself to more random acts of kindness. Write more love letters; to your partner, or friend. Smile more at strangers. Reach out to those whom you normally wouldn’t reach out to. Giving often helps one realize how blessed they are.

With the practices of honoring the pagan god Janus, came many indulgences and celebrations that the Christians tried to avoid. Instead, they urged their children to reflect on the past year and adopt the old ways of making resolutions for the year to come. These would be known as commitments these children would make to improve on their cultural talents, and treatment of others.

DID YOU KNOW NEW YEAR’S TRADITIONS AROUND THE WORLD Most people celebrate New Year’s Eve on the evening of December 31 and continue into the early hours of January 1. Different countries have different ways of celebrating and often enjoy meals thought to bring good luck for the coming year. Here are a few dishes and traditions certain countries follow: Spain and other Spanish speaking countries: People stuff down a dozen grapes in their mouth, right before midnight, believing to achieve good luck for the year ahead. In Italy: New Year’s dishes feature lentils, which are thought to resemble coins and signify future financial success. In The United States: Black - eyed peas are featured in dishes which are thought to resemble success and financial growth in the family. Step one: Complete the home business application form and register your home business (Cost R900).

Guesthouses first need local municipality approval before completing the “request to register a guesthouse” form.

If your home business is already registered, complete the business renewal form (Cost R360). The annual renewal of all registered businesses conducting operations in Silver Lakes (including home enterprises, guesthouses and estate agents) is compulsory. A Certificate of Registration for the year will be issued by the Silver Lakes HOA which must be displayed on the premises at all times. A business must be in possession of an original valid Certificate of Registration.

Guesthouses will also need to annually complete the business registration renewal form and will receive a Certificate of Registration for the applicable year.

Step two: Once the business is registered, apply to list the business. This step is not compulsory.
