t’s Breast Cancer Awareness month! The time for you and I to do something for the good of others, wear something pink, buy a pink ribbon, or even donate to the breast cancer clinical trials that take place in our very own St. Margaret’s Hospital in Epping. I ponder, what I can do to help those who suffer with cancer? I have put myself on the summit of Mount Kilimanjaro, walked The Great Wall of China and organised many charity balls to raise money for breast cancer and now I can feel a little twitch for some adventure with like-minded people, who like me, want to do ‘their bit’ to help provide the funds to improve the lives of others. On that thought, I contacted the charity, PAH NHS TRUST and an email with a host of events, treks, car boot sales and grand balls for the oncoming year landed in my inbox. I’ve joined the charity on FaceBook and Twitter and you can too. It is never to late to get involved. So, on to our glossy pages. Our main interview is with the ever handsome Ed Shaerf, the brains behind our amazing recipe on page 33. Fashion this month is bought to us by River Island, with wintry velvets and an array of embellishment keeping us on trend. inTErviEw Clare McDonald catches up with Ed Shaerf, the inspiration behind One Blenheim Terrace, London - to talk about his passion with food and living the dream. Ed, what began your food loving journey? I grew up with my mother and grandmother, they looked after me and my brothers. Cooking was a big thing in our house and my mother hosted many dinner parties and I’d get involved in the cooking. It was probably part of the era, very retro. I remember from the age of seven helping to cook the starters. For me, cooking carries fond memories, it’s a great time to get together and share each others day. Mum would return from work and always made an effort to cook. At school, aged seventeen, I decided it was the career for me. I researched culinary schools and Westminster was considered the best. As a first step it was the best experience I had. The first three years, from 8am to 6pm, I was cooking, learning about food and ingredients. So your home life inspired your creative ability? Yes, from a young age I loved cooking and art, the two really tie in together. My mother worked hard for what we had and we were never short although there would be times where I’d go to the fridge and there’d be a cucumber, a tomato and a pack of ham and I’d have to be as creative as possible. I have a photo of a dish I’ve made with those ingredients! My Mum is also a great baker, I get a lot of what I have from her, probably more than I give her credit for. Mum’s publishing her first book ‘The Celebrity Bake Book’ in aid of the charity Ben Kinsella Trust and sponsored by the Food Network. It has recipes from a whole host of celebrities in it. If you like baking, it’s a must buy. Did you aspire to be like any big chefs when you were training? I can’t pin it down to one person but I do have a list of top chefs that help inspire me every day. I look up their recipes, research their restaurants. Gordon Ramsay was a big name when I left college, he was certainly an inspiration. There are others, Heston Blumenthal, Tom Claridge, it’s good to understand what they do. What were the best and worst moments working under Gordon Ramsay at Claridges? One Christmas Eve, David Beckham walked into the kitchen and thanked each of us individually, then Christmas Day we had breakfast with

Gordon, which was fantastic. He owned a number of restaurants and was only at Claridges three times a week, so it was good to actually sit down and spend time with him. As for the worst moment, or at least the most memorable, it was being screamed at by Gordon because the section I was working in was messy. It was a roller coaster. One day it was the best job in the world and the next day you’re thinking, ‘I don’t know how I’m going to carry on.’ It made me stronger; it showed me how difficult it is to achieve Michelin stars. How did an opportunity as fantastic as a position at the Ivy come about? At the age of twenty, I was head chef at a local modern British restaurant, and I felt I needed to further my experience and to get back into London. It was too good an offer to turn down and went on to be a massive learning curve. It taught me what it’s like to work in a massive kitchen; we’d be cooking for around six-hundred covers a day, all of which have to be outstanding quality. Have you ever had a celebrity review that you were particularly pleased to hear? You sort of become numb to who you’re cooking for. At ‘The Ivy’ we’d get a list at the beginning of service with 20-40 names on it, it might be Jude Law, once the Queen was there. We had to make sure the quality of the food was the same whether cooking for a celebrity, or Joe Bloggs. Once we catered for a private party and a Chelsea Footballer John Obi Mikel told the sue chef the food was fantastic.

Opening your own restaurant was a very exciting step to take, what gave you the courage and determination to take that leap of faith? It was always my dream, probably every chefs dream, to own their own place. Really, there’s never a perfect time to open a restaurant but with alot of support I was able to make my dream reality. I could not have got here without a few names, one being my consultant and mentor, David Moore. If there’s a problem he knows how to deal with it and what needs to be done. And obviously with my family support. It all seemed to just fall into place. What would be your advice to others with ambitions similar to your own? You need to take calculated risks. As I said, there’s never a perfect time to open a restaurant. You have to think based on the current time about the risk factor, the location, the prices. You have to dedicate every hour of every day to it. You write off time with friends, you write off your birthdays, you have to put in the time to make it succeed. It’s not easy to crack and you need to be 100% committed. The food at One Blenheim Terrace is focussed on a re-vamp of retro dishes, what inspired this idea? It’s regeneration of retro food, the type of food I grew up eating. Monday we might have a Spaghetti Bolognese and Chocolate Mousse. Sunday afternoons Roast Dinner - for me it’s the best that British food has ever been, bringing back memories of family and growing up. One Blenheim Terrace is classed as a modern restaurant but then so are hundreds of others. So that’s our quirky aspect, retro dishes. Some of the dish ideas are years old, we go home and work our ideas into seasonal menus. We’re really keen to use fresh produce, the restaurant itself is self sufficient, we make all our own bread, our own sauces, all from fresh local produce. Does what you cook in the restaurant influence what you eat at home? Definitely not. I think there’s a time and a place for ‘fine dining’, we’re cooking it 16–18 hours a day. The last thing I want when I get home is smoked duck, I’m much more likely to make a sandwich. On the night the restaurant is closed I make an effort to eat out. It’s good to go out, visit some friends, sit down and have a nice meal. That’s what it’s all about essentially, isn’t it. So Ed, what’s your signature dish? Not to sound arrogant, but it’s the whole menu. You won’t find our dishes on any other menu. The menu at One Blenheim Terrace is as exciting as being a chef!

THE rEPToN PArK fAmILY fuN DAY ToWIE stars Gemma Collins, Billi mucklow and frankie Essex joined over 2,000 local residents from repton Park and the surrounding area to enjoy a charity fun day in aid of Haven House Children's Hospice. The Repton Park Family Fun Day took place in Chigwell in soaring temperatures and raised over £20,000 for Haven House. The money will help to support life-limited children and their families in the local area. Highlights of the day included: celebrity ‘meet and greet’ sessions, a ‘Lovefootball’ charity tournament captained by ex-West Ham United player, Don Hutchison, an auction of Joey Essex’s tandem bike raising £750 and Tommy Sandhu, from BBC Asian Network, who provided the music and was auction MC. Mike Palfreman, chief executive of the Woodford Green hospice was delighted with the turn out and said,

‘We are really pleased that the residents of Repton Park have shown so much support for Haven House and raised such a fabulous sum. Only a fraction of our income is statutory, so we rely heavily on the generosity and support of the local community, to carry out our work.’ A huge heartfelt thank you goes out to Hayley Hunt of Hunt Property Services Ltd, one of the event's main organisers, as well as Alicia Tricker, member of Repton Park Residents Association, without whom this event would never have happened.

The hair and make creations were produced by the talented James Montagu, Studio One, Coco Marine Spa, Sharise Cook and Tilly Mae Brandon. Georgette & Billy Smith, the pioneers of Dingwuddles said, ‘We would like to thank all our guests for coming to support our launch party, and the businesses that we have filmed, not forgetting Miss Penguin PR and Adam Ryan for hosting and helping organise the event. We have got so many exciting new videos coming to Dingwuddles and we are looking forward to filming Essex Fashion Week in October.’

BrEAST CANCEr AWArENESS moNTH To SCrEEN or NoT To SCrEEN This Breast Cancer Awareness Month, Joanne Hill, Breast Care Nurse Specialist at Holly House Hospital, provides her expert opinion on the controversy surrounding breast screening.

A study by scientists from Queen Mary University, London looked into the results of breast screening among five million women. They calculated that for every 1,000 women having regular screening over 20 years, four would be wrongly diagnosed but nine lives would be saved. So any screening is a good thing whilst it is saving lives! Another encouraging progression is undoubtedly in the NHS who are extending their free screening programme to women aged from 47 to 73 years for a mammogram every three years (currently it’s women between the ages of 50 and 70 years) speaking volumes about the value of screening. Whilst every cancer will not be detected by screening, mammography is still the most effective and reliable way of detecting breast cancer early, but it is not perfect. Some cancers will be very difficult to see on an x-ray, particularly in younger/denser breasts. Many breast tumors are first spotted by women themselves either in the time between their screening appointments or in younger women outside of the NHS screening programme’s age range. If you are still in any doubt about the benefits of breast screening and whether you should participate in a screening programme, please talk to your GP straight away – it may save your life! 24 in MAGAZINE

SELf EXAmINATIoN - THE fACTS Self-examination alongside regular screening is important. There’s no right or wrong way to check your breasts. Just try to get used to looking at and feeling your breasts regularly and remember to check all parts of your breast, your armpits and up to your collar bone. The important thing is being aware of any changes which could include: • A change in size or shape • A change in skin texture such as puckering or dimpling • A lump or thickening that feels different from the rest of the breast tissue • Redness or a rash • A change in nipple shape, position or if it becomes inverted (sticking in not out) • Swelling in your armpit or around your collarbone • Discharge from one or both nipples • Constant pain in your breast or armpit.

1. Take the mallard legs off the carcass and confit (slow cook) at oven temperature 150℃ in the duck fat, half the thyme and a clove of garlic for 1 hour 20 minutes until soft. 2. Blitz the remaining thyme and garlic with a little vegetable oil. Marinate the crown of the mallard with this marinade. 3. Place the spelt in the duck stock and cook for approximately 20 minutes until soft, add chopped parsley and half of an orange zested and season. 4. Pan fry the mallard crown in a hot frying pan until golden and roast in the oven on 190C for about 6 minutes then remove and allow to rest. 5. Place a few spoonfuls of the spelt in the middle of the plate and a confit mallard leg on top, carve the mallard crown and arrange the breast on the plate. Segment the orange and arrange with a few pieces of red vein sorrel. 6. Finish with a touch of duck gravy. in MAGAZINE 33

Volkswagen has announced the specs of its seventh generation Golf and the big news is that it will be significantly lighter. Up to 100kgs lighter, in fact, thanks to weight savings in the structure, engine, drivetrain and electrics. The net result is a 23 percent improvement in efficiency across the range. It will be built using a new MQB (Modularer Querbaukasten) platform, which will be used across the VW range and allow for the standardisation of powertrains and technologies. Despite the weight savings the Mk7 will actually be bigger. Length is up by 56 mm, with a longer wheelbase and increased passenger space. It is also wider and lower (resulting in a drag co-efficient that has been reduced by 10 percent for better economy). It is still clearly a Golf, though. The lines are unfussy, there’s new front and rear lighting, and a more angular overall look. Walter de Silva, Head of Design for Volkswagen AG, says:

‘One of the keys to the Golf’s success lies in its continuity... It has been refined, tweaked and enhanced down the decades and thus become timeless.’ We would have to agree and there’s been the same approach inside. Never marvelled for its flair, the Golf’s interior has always been commended for its design clarity, build quality and simplicity and the new one brings more of the same. The most obvious

change being a dashboard that is angled towards the driver and a standard-fit touchscreen interface. The bigger proportions outside translate into 20mm more front legroom, 15mm extra rear legroom and 30 litres more boot space. Space between the front seats has been freed up by the use of an electronic parking brake. Safety has also been improved, with the passive safety of a more sturdy car being added to by features such as a multi collision braking system that is standard across the range. This automatically brakes the car after a collision to prevent it being involved in a secondary accident. Also standard (from SE trim upwards) is PreCrash, it detects the possibility of an accident and primes the car - by pretensioning the seatbelts and closing the windows and sunroof - to best protect you. SE specification will also bring Adaptive Cruise Control, which uses radar sensors to maintain a set distance from the vehicle in front; Front Assist, which can bring the vehicle to a complete stop from up to 93mph; and City Emergency


Braking that can bring the car to an emergency stop at speeds up to 19mph. Economy is very much the watch word for car manufacturers at the moment and the Golf’s new range of petrol and diesel engines will improve it across the range. It will be launched with petrol power in the form of a 1.2-litre TSI 84bhp unit returning around 57.6 mpg and 113 g/km, and a 1.4-litre TSI with 138bhp and Active Cylinder Technology, which can deactivate two of the cylinders, and achieves up to 58.9 mpg and 112 g/km. The launch diesel engines are a 1.6-litre unit with 104bhp, which returns 74.3 mpg and 99 g/km, and a 2.0-litre 148bhp unit, which returns 68.9 mpg and 106g/km. The biggest change when driving the new Golf, aside from the significant reduction in weight, will be the variable-ratio steering, which - says VW - offers agility round the corners, stability on the motorway and easy manoeuvring in city. The MkVII is also available with driver profile selection, which allows the driver to choose from four modes – Eco, Sport, Normal and Individual; with a DSG gearbox a fifth option – Comfort – is also offered. Each of these modes alters the throttle mapping and engine management (among other parameters) to the chosen style. Eco mode, for example, adjusts the engine management, air conditioning and ancillary systems to achieve maximum fuel efficiency. The new Golf’s weight savings and use of a standardised platform are being billed in the industry as game changer, but we’ll have to wait until the cars goes on sale in October to find out. Expect prices to start at around £17,000.

MclaRen’s new F1 When McLaren launched the MP4-12C there were (dare we say it) a few whispers of discontent, it was fast - one of the fastest cars for the money but somehow it didn’t pull the heartstrings in the way many thought it should. McLaren, however, had always punted it as their do-anything supercar. It was their supercar light. The full-flavoured version has arrived now, though, and its called the P1. The spiritual successor to the F1 is tipped to have nearly 1000bhp thanks to a tuned version of the 12C’s twin-turbocharged 3.8-litre V8 producing 800bhp with a KERS system providing another 200bhp for short bursts. McLaren tells us this car has not been built for out-and-out speed although it should manage around 240mph and 0-60mph in less than three seconds - its been built to go round tracks quicker than any other road car. Active aerodynamics will play a big part in this. Nothing’s been confirmed, yet, but they could include electronically controlled spoilers and flaps aimed at helping the car slow down into and go round corners, fans and a lowerable ride height to give maximum downforce and massive ducts to cool the tuned engine. Despite the scary performance on offer the new car is still expected to be useable road-going tool, with the same carbon-monocoque chassis as the 12C it also has the same footprint, will offer great visibility, a new bespoke interior and MPGs better than anything else in its class. Only 500 of the cars will be made and they’ll cost an eye-watering £800,000. More details will be released at the end of the month when the car is officially unveiled at the Paris Motor Show.

I’ll be eating again. I usually alternate between high carbohydrate and low carbohydrate days, but it’s always high in protein. So it will be chicken or lean meats, protein shakes, a huge amount of greens, good fats and sweet potatoes.

I head to the office, it’s a task upon itself keeping up with the two hundred plus emails I receive in one day; these may relate to enquiries about Essex Bootcamp or private training. This week I was contacted by a TV company who want Essex Boot Camp to film for a show in Suffolk. I travel all over, from London to Scotland, training companies which is great as it adds another dimension to the business. It is amazing to see how we have grown. We started with four members, it used to be just me and my business partner, we would know everyone. Now we have 4,500 members and twelve trainers to take care of; naturally my role in the business has changed quite considerably since we started.

7.30am – I have up to four personal training clients every morning, I’m very selective about the clients I choose. I’m lucky in that I can decide on which clients I train. This morning, saying no names but you know who you are, one of my clients said, ‘Can I just pay you to have a coffee for an hour?’. Obviously, I said, ‘No you can’t’ and I put her through her paces! I have a different relationship with my Personal Training clients, I train them in their own homes and get to know them well; I get invited to weddings, birthday’s and the odd dinner! 9.30am – I eat something every three hours, so I base my private training clients around that regime. I always have a Tupperware pot full of food in my bag, and always on the go. No time for a Café stop! It’s very important to make sure you eat something every three hours to aid your metabolism and I’m very strict what food I eat and following the three hourly regime.

‘I’m lucky, I love my job; it’s hard work, and it’s rewarding! A great combination.’ 6.30pm – The time that I get to an Essex Bootcamp session depends on which part of the county that I am in. There will usually be around 30 60 people in a session, some of them will say, ‘Are you Glynn?’ and when I say yes they say, ‘Oh no! We’ve heard of you’. I have a reputation for being tough, but I get results. It’s very different to the Personal Training sessions, we use tyre’s, bags of sand, pieces of rope and sheer will and determination. We like to offer people more interesting sessions that you can’t get at a gym. Many companies out there guarantee weight loss, we are realistic. We don’t know what Joe Bloggs eats at home. It’s not possible to say you’ll definitely lose weight. You certainly won’t if you’re going home and eating rubbish! What we guarantee at EBC is that you will burn a lot of calories, having fun, meet like- minded people and if you follow our advice, you will get results.

8.30pm – Dinner time. I’m very restricted with what I eat, because it’s all about personal goals. Very rarely I allow myself a blow out; I call them ‘Cheat Days’. It allows me a balance, where my body can get some of the fat it needs. I spend the evening with my wife, Holly and daughter who is five month’s old. I’m on the rota for the 11pm ‘Dream Feed’ then it’s bed for me.

11.30am –

I set aside some time for my own personal training which is varied and changes weekly to keep my body guessing, which constantly develops results. For example, on a Monday I may focus on my legs and abs, Tuesday’s chest and back, Wednesday high intensity interval training, Thursday’s compound training, Friday’s legs and body weight, Saturday’s high intensity training and a run with a rest day on Sunday. Week two will be different, this keeps it interesting and exciting for me, which is important. Variation is vital to shock the muscles and make a difference.
